Cheesecake. It’s the delicious des-sert that launched Kristi Eber-hart from a stay-at-home mom

and farmer’s wife to a successful business owner and baker extraordinaire.

“I was looking for something that I could do to supplement the farm in-come – something that would give me the flexibility I needed as a mom,” says the mother of two daughters, Keeley, 9, and Alysa, 23. “My family has always wanted me to pursue something with my cheesecakes.”

Making cheesecakes became a passion of Eberhart’s in her teens.

“I can’t remember what sparked my interest, but when I was in high school I began looking for a recipe I liked and started making cheesecakes. In my fam-ily that’s what I’m known for,” she says.

Upon the urging of her family, Eber-hart, 41, purchased the necessary equip-ment in 2006, converted a 10-by-12 bedroom in her home to a commercial kitchen and started Grassland Good-ies as a concession stand. She sold her cheesecakes and Kuchen at area fairs and festivals.

When she started, Keeley was 3 and Alysa was in high school. On the weekends Alysa would join her mom to help run the stand and Keeley would stay at home and farm with Eberhart’s husband, Corey, on their row crop and cow/calf operation near Java, S.D.

“It was something I could do on the weekends during the summer and still be home with my daughters.”

As in every start-up, there were chal-lenges along the way. However, Eber-hart says because she started small, the challenges were ones she could over-come – mainly figuring out how many cheesecakes and Kuchen she should make and bring with her.

“This was my first business venture. Starting out the way I did was a big leap financially, but we still took things slow enough,” she says.

Admittedly, her biggest challenge was developing winning recipes that were consistently delicious. For help with this, she called on her friends and fam-ily for feedback.

“They have done a lot of taste-testing for me over the years.”

Kuchen SnacK PacKS

When the end of outdoor fair and festival season rolled around, Eberhart didn’t want her investment to hibernate, so she began brainstorming how she could market her baked goods over the winter.

Kuchen snack packs were the answer.

“Up here Kuchen is a daily part of your life. You eat Kuchen for breakfast, for dessert or a snack,” she says of the German sweet dough dish that is South

Dakota’s state dessert.

Kuchen is made with a sweet dough, fruit or chocolate filling, custard and topped with streusel. Eberhart bakes 20 flavors of the popular dessert. She devel-oped her Kuchen recipe by tweaking a local one an older community member gave her.

Instead of making the traditional 9-inch Kuchens, she was inspired by her dad’s request to have a Kuchen he could pack in his lunch, so Eberhart made smaller, one-serving Kuchens, packaged six together and Kuchen Snack Packs came into being.

Because her Kuchen was packaged differently than others sold in her local grocery store, the local grocer agreed to sell them.

“They really took off,” Eberhart says. “Families like them because they can buy a variety of flavored snack packs

and the older generation likes them because they can have a piece of Kuchen without thawing out an entire 9-inch pan.”

She marketed her snack packs to other area grocery stores, began shipping them across the U.S. and soon enough, her commercial, home-based kitchen was busy all winter long. In fact, only two years into her business venture, she felt like she was living in her kitchen and knew it was time to expand.

Grassland Goodies moved to a ranch-style home on state Highway 10 which runs through the town of Eureka, S.D., only 17 miles from the farm. Eberhart and Corey converted the house into a bakery, where she enjoys baking today.

Goodies continues to feature three products – Kuchen, cheesecake and custom-designed sugar cookies. Al-though Kuchen is always available for purchase at the bakery, cheesecakes and custom-designed sugar cookies are sold by order only.

Since the beginning, the community of Eureka has been Eberhart’s biggest fan.

“The people who live here are my big-gest supporters. Whenever possible they

purchase my product and spread the word.”

Her business continues to grow. Last year she baked 30,000 Kuchen. Today her Kuchen snack packs are available in six area grocery stores and a floral and gift shop in Groton. Growing primarily by word-of-mouth, she has expanded her business to include customer-appre-ciation gift baskets, custom decorated sugar cookies, cookie bouquets, fund-raisers and more recently, she returned to cheesecake – where it all began - making cheesecakes for weddings, school fundraisers and other special occasions.

“When Kuchen took over cheesecakes fell by the wayside. Cheesecake is where my passion for baking began, so a few years ago I put my focus back into them,” says Eberhart, who makes 10 different flavors of cheesecake.

More than 40 years ago Mary Fitzgerald’s mother suggested she take up quilting. At that stage of life, Fitzgerald had five

young children, worked full time and already had plenty of crafts she didn’t have time to do.

Then one day, as she puts it, she “broke down and tried quilting.”

Seventy quilts later, Fitzgerald’s passion for the craft and history of the textile art led her on a journey of preserving the history of quilting in South Dakota.

In 2010 she started the Eastern South Dakota Quilt Documentation Project with the intent to docu-ment 1,000 quilts made before 1970 and their makers’ history.

“The project is not only recording what textiles were made at what time, it is recording the women’s lives who made them and their connection to South Dakota and our culture,” says Fitzgerald, a retired school administrator who spent the early part of her career teaching home economics.

She was inspired to document the history of quilt-ing in South Dakota after reading a book on the Kentucky Quilt Documentation Project in the 1980s.

Tackling a project of this scope would intimidate some, but not Fitzgerald. Once she retired in 2004, she was ready to make her vision a reality.

“I’m a self-starter. I’ve always felt that if I see some-thing I want to do, I do it. I have so many things I

Livestock | 7want to do yet that I need to live to 147 to get them all done,” says Fitzgerald, who spent her first few years of retire-ment preparing for the project by getting a master’s in the history of textiles from the University of Nebraska-Lincoln.

She goes about documenting quilts from across South Dakota by coordinating with local museums to set up docu-mentation weekends where she visits a community for two days, inviting anyone who has quilts they’d like documented to attend quilts in hand and their history ready to share. Almost two years into the project, she’s visited more than 20 South Dakota communities and documented 807 quilts.

“It’s a wonderful opportunity to visit with women from across the state, hear their stories, and see the wonderful, wonderful quilts that are stored away in boxes and in attic corners – some of these quilts haven’t been out of their boxes for 40 or 50 years,” she says.

The quilts don’t have to have to originate in South Dakota, but they must reside in South Dakota.

“Any quilt made before 1880 was prob-ably made in another state or country,” she says. “This project is about so much more than the history of the quilts. It tells of the migration from east to west, or the migration from Europe to South Dakota.”

She shares an example of an 1859 Signa-ture Album quilt made in Ohio.

“All the signatures in the quilt are made by relatives or women from the same small community in Ohio, and husbands were all in the same military unit. It’s signed, so we know it was made in Ohio. It’s now in Burke, S.D., so when we doc-umented it we recorded how it ended up in Burke from the woman who owns it

today. It is a quilt her great-grandmother worked on. The quilt has never been used

because it is such a family treasure.”

Like the stories and family histories that accompany them, each quilt Fitzgerald

reviews is unique in the pattern, stitching and fabrics used; from Wholecloth and

Log Cabin to Medallion, Fitzgerald has seen them all. Although it’s difficult to pick a favorite, when asked which quilts are the most unique, she describes a four

eagle quilt she documented in Chamber-lain and a crazy quilt she documented in Pierre.

“When the state was searching for which city would host the state’s capital per-manently, some towns made ribbons showing their support. This quilter had so many Pierre ribbons she used them to make an entire block in her crazy quilt,” she says, adding that there is a sister quilt to in Sioux Falls with more documenta-tion ribbons – which of course include more Sioux Falls ribbons than Pierre ribbons.

Working with local volunteers, or quilt-ing friends, each quilt is given a number, then a volunteer sits down with the quilt’s owner and records information about the current owner and biographical informa-tion about the quilt maker, her name, date of birth, where she was born, date of death, where she died, her maiden name, occupation, children and their names, her husband, his name and occupation.

Once this information is collected, Fitzgerald photographs the quilt and studies it, documenting the fabrics used, the print, stitches per inch, the quilting pattern, block name, size and method of construction.

She spends hours researching and calls upon her years as a quilter and what she learned during her master’s work to in-sure each quilt is accurately documented.

“I can get lost for hours reading a book about a certain type of fabric,” she says. “The history and research has been so enjoyable.”

Throughout the state, one pattern which commonly resurfaces is the crazy quilt, made from a variety of fabric remnants. Fitzgerald describes this as being one of the first patterns to be used by some of the state’s first quilters – Native American

women and the missionary women who introduced quilting to them - a topic which happens to be the focus of the book’s first chapter.

“They used some of the most gorgeous fabrics because the missionary women contacted their friends in the East to send dresses for the Native American women. Well, they sent last season’s silk dresses; which was lovely for them to do, but what were women going to do with

a silk dress on the prairie? So, they cut them up and used them to make quilts,” she says.

Once she has documented 1,000 quilts, she won’t quit documenting, however, she will spend more time on putting the book together and less time traveling to communities across the state documenting. Fitzgerald says she will also need to begin looking for a grant to help finance the book, as she has covered most of the

expenses associated with the project herself.

Fitzgerald will be documenting quilts in Brookings March 24 at the South Dakota Agriculture Heritage Museum.

Every May Jim Schiltz travels to New York to meet with food ed-itors. As the president of Schiltz

Foods, which produces more than 90 percent of all the goose food products sold in the United States, the Sisseton, S.D., businessman says introducing his product to these food connoisseurs is his best marketing tool.

“Goose is a high-end, specialty food item. If food editors try it and like it, they will write about it and their read-ers will want to try it. In fact, some customers say the only reason they tried goose is because they read about it in their favorite magazine,” says Schiltz,

who raises, processes and sells more than 200,000 geese each year as co-owner of the family business his father began in 1945.

A few years ago during his annual NYC trip, Schiltz realized he needed to revamp his product off ering to include a pre-cooked product.

“I realized that the whole goose I gave the editors to try was either spending the rest of the year in their freezer, or given away to the doorman before I even left the building,” Schiltz said. “Th at’s when I realized we needed to develop a pre-cooked product.”

Livestock | 11To help him commercialize the prod-uct, Schiltz turned to South Dakota Value Added Agriculture Development Center (SDVAA). A not-for-profit organization established in 1999 by a contingency of 14 rural-based com-modity groups, trade organizations and cooperatives, SDVAA’s mission is to assist established South Dakota agribusiness owners such as Schiltz or entrepreneurs just starting out. Today the ag contingency continues to sup-port and guide the SDVAA as its board of directors.

“We are there to help them with what-ever they need – whether that is con-cept analysis, feasibility and marketing assessments, business development

strategy, financing, networking – basi-cally we’re a one-stop shop to help agri-businesses and entrepreneurs through the process. We’re here to help develop and foster economic opportunities for South Dakota’s agricultural producers and rural businesses – that is what we do,” says Cheri Rath, executive director of SDVAA.

In Schiltz’s case, SDVAA connected him with meat scientists at South Dakota State University to help him perfect the pre-cooked, smoked whole goose and smoked goose breast and develop processing procedures. After more than a year of refinement and hundreds of tastings later, the second-generation goose processor had two

Helping South Dakotans like Schiltz succeed is what Rath enjoys most about her work; she says she was born with a passion to help the state’s No. 1 industry succeed.

“Agriculture’s been in my blood forever. When I travel the state meeting with agriculture producers and business people, I see a lot of opportunity for growth within our industry,” says Rath, who worked in the Governors Office of Economic Development for several years before becoming the executive director of SDVAA in 2005.

Until March, Rath was SDVAA’s only full-time employee. Alone she was responsible for working with SDVAA clients, connecting them with resources available outside SDVAA and coordinating all the

organization’s efforts. This year the board approved the hire of Karen Webber-Boyer to aid Rath in these efforts.

“Karen brings with her an abundance of knowledge of South Dakota’s agri-culture industry,” Rath says. “She will be able to help clients build business plans and help SDVAA create connec-tions and synergies between clients and partners for success.”

Since it began 13 years ago, South Dakota Value Added has helped launch more than 140 projects and business ventures in 51 counties throughout the state. Its services have helped create and retain an estimated 1,748 jobs, and helped generate nearly $63 million in grants and loans.

“Even during the economic downturn, interest in the services we provide con-tinues to grow. I think that people are seeing this time as an opportunity to build a new business so it’s online when things pick up,” Rath says.

Akin to South Dakota’s agriculture

landscape, when SDVAA first be-gan, Rath says most of the projects it worked on centered on adding value to traditional ag commodities. However, in recent years, she’s seen an entrepre-neurial evolution that includes specialty crops and niche businesses like hops, lamb, wineries, bio-pharmaceuticals

and locally raised foods.

“We’re seeing many niche markets develop in South Dakota. Finding new uses for our traditional commodities and expansion of specialty products are creating new opportunities in the mar-ketplace,” says Randy Englund, SD-VAA president. “When we first started

the Value Added Agriculture Center our state was behind our neighbors in the value-added agribusiness sec-tor, but we’ve really caught up. Today, South Dakota is experiencing acceler-ated agriculture activity and diversity of projects.”

example of a growing industry meeting a distinct need within the state, says Pat Garrity, the coordina-tor of South Dakota’s Buy Fresh, Buy Local chapter and part of SDVAA’s Local Foods Development team.

Buy Fresh, Buy Local is a national non-profit orga-nization, which Garrity was asked to start by South Dakota State University professors and Extension specialists in 2008 to increase the awareness and con-sumption of local foods in South Dakota.

“Our state was woefully behind our neighbors in un-derstanding what local foods were,” explains Garrity, who prior to starting Buy Fresh, Buy Local had spent his first career operating Garrity’s Prairie Gardens, near Yankton, S.D., with his wife, Jan.

The couple opened Garrity’s Prairie Gardens in 1985 when they planted 3,000 apple trees. From the ground up, they built Garrity’s Prairie Gardens to become a successful agri-tourism destination and processor of jams, jellies and apple products.

SDVAA calls upon its knowledge and resources to

help specialty growers develop successful business models and unite to form cooperatives which can share transportation, processing and marketing ex-penses while more efficiently providing local consum-ers with the product volume and quality they need.

“By partnering SDVAA and Buy Fresh, Buy Local have built capacity in terms of meeting the needs of consumers and producers in the state,” Garrity says.

The collaboration also addresses the “food desert” situation which plagues portions of rural South Dakota by working with residents to develop com-munity gardens.

“As you develop community gardens, you’re devel-oping gardeners, some of whom become trained as Master Gardeners who are capable of raising veg-etables commercially,” says Garrity, of working with communities, some of which are 150 miles from a grocery store.

farmer, Angela Sasse-Jackson to streamline her busi-ness and work with other growers to market her produce.

“There are many benefits to pooling our resources and marketing our produce together. I’m such a small producer that if someone wants 50 pounds of potatoes – I can’t provide that, but as a group we can fill that order,” says Sasse-Jackson, who raises about 400 organic broilers and raises vegetables in one, 100-foot-long high tunnel near Vermillion, S.D.

A couple years ago Sasse-Jackson opened a small or-ganic market in Vermillion. Last year she transferred the storefront to Red Earth Coop. Soon what she produces on her farm will be marketed along with products from 25 area local specialty crop growers. The coop plans to share transportation costs when marketing goods to Sioux Falls and surrounding communities. Together the growers are converting a portion of the building into a light agricultural processing facility. They are also working to institute quality control measures.

“South Dakota Value Added Agriculture is a great catalyst for change in our rural communities,” says Lucas Lentsch, director of Agricultural Development for South Dakota Department of Agriculture. “Value added agriculture captures dollars locally and rein-vests them in Main Streets across the state.”

This was the case for inventor and animal scientist Jerry Pommer. Pommer owns OVIS, a Canton-based business that supplies sheep for biomedical and agri-cultural research.

A few years ago Pommer developed a serum product with valuable antibodies that can be given to high-risk newborn lambs as a supplement to colostrum. He turned to SDVAA to help him develop his busi-ness model, find financing, mentoring, and research and development.

“South Dakota Value Added is connected with so many resources, that it saves me a lot of time and leg-work,” says Pommer, who markets OVIShield through Pipestone Veterinary Clinic, one of the larg-est distributors of sheep products in the U.S.

BROOKINGS, S.D. - Like most businesses, farming and ranching can benefit from periodic strategic planning says Jack Davis, SDSU Extension Economics Field Specialist, during a recent iGrow Radio Net-work interview.

"Strategic planning takes a long range look at the business to determine how

it may compete in the future," Davis said.

He explains that strategic planning evaluates both external and internal factors to identify opportunities and challenges.

External factors include things out-side the farm, such as interest rates; while internal factors can be broken

into four general areas - production, marketing, human resources and finance. Davis says useful metrics are available to assist with internal check-ups.

"We want to take a look and see how do we stack up production wise? How are our farm resources? Do we have a good line of equipment? Are we producing at high levels for our resources? So, taking a hard look at those internal factors and measuring them against some standards," Davis said.

Davis says produces can work with their financial lenders and SDSU Ex-tension Economics Field Specialist to locate nationally published standards

to see how their operation compares. In depth strategic planning is recom-mended at least once every five years or when considering major business changes.

"Say we have a younger partner com-ing in, or we're looking at expansion or we want to do some changes, strategic planning is a good process to go through," Davis said.

South Dakota State University Fosters Success for Biology Students

BROOKINGS, S.D. - Katherine Kondratuk's interest in medicine began with a toy doctor's kit her parents gave her as a 3-year-old.

"It's been my goal since I was 3," said the South Dakota State University fresh-man pre-med student. "I've been interested in the human body for as long as I can remember."

Originally it was scholarships that attracted Kondratuk to SDSU. Today, she says the hands-on learning opportunities and supportive community she's discovered as a first year pre-professional student within the Biology and Microbiology depart-ment arefactors she can't place a price on.

"I love how hands-on the science education is here," said Kondratuk, 18, who spends time each week working in an on-campus laboratory as an undergraduate research assistant.

To help Kondratuk and her millenial peers achieve the grades and experience nec-essary to pursue pre-professional degrees or careers in biology, microbiology, dairy science and other science degrees, SDSU Biology and Microbiology department updated their curriculum; integrating iPad technology, social media and a peer-mentor program.

"Today's teaching trends are moving into a dynamic world of active learning that is much more than text books and power point," said Volker Brozel, Department head of Biology and Microbiology. "It's pretty clear that the average millenial student isn't keen on the idea of being talked at for 50 minutes. They want to be engaged and contribute to the lecture."

Research shows that integrating technology with lecture can increase students' engagement and ability to learn, says Greg Heiberger, an Advisor and Instructor of Pre-Health Professional Programs.

"For today's students, technology has always been a part of the learning process. Active learning is linked to increased student engagement, more interaction with faculty, higher grades and increased retention," Heiberger said.

To create active classrooms, last fall instructors introduced iPads into all freshman Biology labs. Coupled with AirPlay technology, students can easily share infor-mation with the entire class - a feature Kondratuk says helped her understand a complex concept in her Biology 151 lab.

She and the other students in her lab section used their iPads to map out the processes that go into cell replication. They then shared their maps with the group using AirPlay. AirPlay is wireless technology that projects the screen from student's iPads to a large projector in the front of the classroom.

"It helped me visualize something that is very abstract," Kondratuk said.

SDSU is the first university to utilize iPads and Air-Play to create active classrooms. At only $450 a tablet, the wireless technology not only has educational ben-efits, but is affordable and portable - making it easy to convert traditional classrooms into active classrooms.

"We're harnessing student's energy and desire to be engaged in the learning process," said Brozel, who explains that active classrooms at other universities are hard-wired, and the upfront investment for one classroom is many times greater than his department's investment in this mobile active classroom.

Bridging the generation gaP

Transitioning from high school to college isn't always easy. The reasons students don't stay in college or struggle academically in their first semester are as unique as the students themselves, says Brozel.

"Some miss home, some don't like big classrooms, some don't like big textbooks, some are find it diffi-cult to connect with others - there are many reasons."

Two years ago Heiberger and Assistant Professor, Ken-dra Hill started to develop a student mentor program

to aid underclassman in making a smooth transition.

"There can be a disconnect between students and pro-fessors," Hill said. "They are thirsty for knowledge and sometimes they respond to information better when it comes from an upper classmen instead of a professor."

Each week peer mentors, like Brian Wynia, a junior microbiology and biology major, meet with Hill and Heiberger for training and to discuss topics they will cover during their weekly, in-class meetings with their mentee group.

"I would have loved to have an upper classman take me under their wing when I was a freshman. Just someone who had been through the same things and could remind me to remain focused," said Wynia, who is a pre-med student in the process of studying for the MCAT.

Wynia and other mentors meet with their mentee's one-on-one each month and with their group of 5 to 6 freshmen two times a week during First Year Semi-nar, a general education requirement for all first-year biology and microbiology students.

During these meetings, no topic is off limits. Men-tors discuss everything from study habits and how to prepare for certain tests, to campus activities and how to handle social pressures. The mentors also attend lectures so they can help answer questions.

"It was only a few years ago when we were in their shoes. College can be daunting at times. We want to help them learn from our experiences so they don't have to learn from their mistakes," Wynia said.

For all students, avoiding costly mistakes early in their college career can greatly impact their future success. For pre-professional students, mistakes can be even more challenging to overcome, explains Hill.

"The healthcare field is very competitive. Everything you do in college goes on your records. And, these students have so many years of school ahead of them, that they need to stay on track," said Hill, who sees her role as an assistant professor to not only educate students, but to help motivate them to achieve their goals.

She sees the mentor program as a valuable tool in accomplishing this. Hill, together with Heiberger, dedicates several hours each week to making it suc-cessful. Tom Doerge is a Corporate Life Scientist and Agrono-mist with John Deere & Co., Moline, Ill. Doerge is currently the Corporate Agronomist for John Deere and has world-wide responsibility for identifying agro-nomic trends that could affect the equipment solutions growers will demand. Previously, Doerge worked in the seed industry as an Agronomy Research Scientist with Pioneer Hi-Bred in Johnston, Iowa, and before that as

a Soils Specialist with Arizona Cooperative Extension. He has worked extensively with SDSU’s Gregg Carl-son, Bob Berg and Dave Clay on a variety of Precision Farming topics.

Barry Anderson is currently serving as the Agronomy Research Manager for Pioneer’s Northern Business for Pioneer Hi-Bred International’s Unit based in Mankato, Minn. His focus is on generating agronomic information that has high value for growers by maxi-mizing the benefits of new traits, technologies through best management practices and strengthening com-munication to the grower. Anderson has also worked extensively leveraging precision farming tools and information management technologies to improve crop management and increase the value of Pioneer prod-ucts. He has also worked with SDSU’s Gregg Carlson on variable rate seeding projects.

Don Roose is the Founder and President of US Com-modities, West Des Moines, Iowa . U.S. Commodi-ties is a full service grain and livestock marketing and

management firm founded by Roose in 1986. Prior to founding U.S. Commodities, Roose was a grain analyst for Merrill Lynch and Clayton Brokerage Services. He is a nationally recognized commodity analyst per-forming seminars for both national and international commodity groups. Roose serves on the board at many farm and commodity groups, and is a regular analyst for national groups such as the Chicago Mercantile Exchange Group (CME). His market comments are frequently quoted and can be heard and read through many major media publications, such as Investors Busi-ness Daily and The Wall Street Journal.
