Paddy’s Palms has an excellent menu for all the family and is located just up the hill from White Sand Beach.The menu offers a wealth of classic pub dishes such as Irish stew, breakfasts, fish and chips and pies. The Beach Club is a waterfront restaurant on Klong Son Beach located within the exclusive Siam Royal View development, which is also home to the island’s only Golf Course and a Yacht Marina. The restaurant is housed in an airy and tastefully decorated modern building beside a large infinity-edge swimming pool that diners are welcome to use. It is a great location for an afternoon meal accompanied by a swim and some beachside relaxation. In the evening, it becomes an atmospheric spot to watch the sunset over a drink, followed by a delicious dinner. Given the location, prices of the many mouth watering menu options are very reasonable and the wines on the extensive wine list from all over the world is served at even surprisingly low prices. The food menu includes all the standard Thai dishes, as well as a number of interesting Western selections (mainly Swiss/Italian/French) such as a variety of Risottos, Pastas, Steaks and Seafoods. Signature dishes are the Chinoise and Bourguignonne Beef Fondues, and Swiss Cheese Fondue.

nd If you ask a Thai person what the fundamental flavours of Thai food are they will usually reply “Preao, wan, man and khem”. This translates as sour, sweet, “creamy” and salty and is a widely accepted definition of the different tastes that make up the rich complexity of Thai cuisine. This old saying doesn’t quite cover it though. There is actually much more going on amongst the rich and complex mixture of tastes, sensations and flavours that comprise Thailand’s famous cuisine.

Tastes Scientists still can’t agree on all of the different tastes that the human tongue can taste. They are sure about five of them though; sweet, sour, salt, bitter and umami.So of the four Thai tastes only three are actual tastes as such. Also very important to Thai cuisine are the bitter and umami tastes. Bitterness is brought into Thai food mainly by the use of raw vegetables. For example the various species and sizes of egg-plant are often served raw, when they taste very bitter, in salads, cooked dishes and as accompaniments to chilli dips. Also the marvellous bitter melon with its spectacularly bitter flavour is frequently used in soups and with meat dishes. It is certainly an acquired taste but in a Thai meal of several dishes it can be used as a bitter counterpoint to some of the rich, sweet and creamy Thai curries.

Umami? Long recognised by the Japanese, umami is the fifth taste that is now universally recognised by science. It can be best described as a rich and meaty wholesome flavour – although it doesn’t just come from meat. In Western cuisine foods with a strong umami flavour are Marmite, Vegemite and Parmesan cheese. In Thailand fermented sauces like the famous nam pla fish sauce and soy sauce are ingredients that are rich in umami, and since these are added to almost all Thai dishes it’s probably fair to say that umami is also a key Thai taste. MSG – The infamous monosodium glutamate is very rich in umami taste, in fact the enhancement of the umami taste of food is its principal function. Modern research suggests that MSG isn’t bad for you when taken in small quantities but shouldn’t be used to excess - like everything else then. But if you’re scared of it don’t worry, adding a few dashes of nam pla fish sauce or even a teaspoon or two of Marmite to your stews can give you that satisfying umami richness just as easily. Pungency and Coolness You can’t leave spiciness out of the Thai food experience. You just can’t. Apparently the heat provided by the capsaicin in chillies and also the coolness you experience from menthol aren’t actual tastes as such. Chemicals within these foods react with the heat receptors in your tongue to fool you into feeling that foods are hotter or cooler than they actually are. But that burning chilli sensation of a delicious Thai stir-fry is such a fundamental part of Thailand’s national cuisine that spiciness has to be considered to be one of the key characteristic “tastes” of Thailand.

Smell, Temperature & Texture It turns out that the human nose is way more sophisticated than the tongue. It is thought that you are able to detect over a trillion smells. And of course the true experience of food isn’t about taste alone, the aroma of a dish is a huge factor in the overall appreciation of food. The use of aromatic herbs such as basil as a garnish is a great example of how to bring in the nose. And it goes without saying that the temperature and texture or, more modernly, the ‘mouthfeel’ of food is fundamental to the eating experience. The juxtaposition of colde crunchy raw vegetables and soft warm meat or prawns in a Thai yam salads are a splendid example of how to combine and contrast temperatures and textures in teh same dish.

BalancePerhaps the key to appreciating all of the myriad tastes and textures of Thai food is to enjoy them in combination with each other, that way the extremes of the various dishes work in harmony with each other to create balanced and flavoursome whole.

The laws and regulations regarding purchase of land and properties in Thailand can be confusing to a foreign investor. The following are a few ideas to get you started in figuring out how things work over here. Remember that this is only a very broad overview and you should do further research.

Legal Representation Basically the best thing that you can do is get a good lawyer with experience in helping foreign investors purchase property. What may seem a high fee in the short term can save you a fortune and a lot of trouble later on. We recommend that you consult a legal firm in Bangkok or Pattaya: there are many in Pattaya who specialise in foreign real estate deals. Since they have a lot of experience they are probably a good choice. Alternatively if you are dealing with a good real estate agency they should be able to recommend good legal representation to you.

Foreign Ownership of Condominiums Foreign nationals can purchase and own apartments entirely in their own name as long as Thai nationals own 51% of the remaining floor space by area in the rest of the condominium.

Foreign Ownership of Thai Land In the case of land, however, foreigners need to establish a Thai company that will purchase and possess the land. By law they must remain a minority shareholder in this company but in reality they can exercise sole control over the company through a variety of directorship appointment clauses and different types of shares and voting rights. The individual investor can then lease the

land and buildings from the controlling company as a further level of protection. Consult your lawyer for details. A common alternative to this approach that is very common in house and condo sales is to purchase a rolling 30 year lease on a property which can be renewed three times giving the buyer a total ninety years of tenure.

Types of Land TitleChanoteThe best and most secure of Thai land title deeds. The boundary markers of this land are measured by GPS and it provides a certificate of ownership of the land.Nor Sor Sam Gor The boundaries of land with this title deed are still fairly clear, being defined with reference to aerial surveys.Nor Sor Sam: The land boundaries for Nor Sor Sam are defined relative to those of neighbouring plots and errors are common. But it is still an assured title of land possession.

Por Bor Tor/Sor KorThese are effectively squatters land titles. Whilst a lot of land with these title deeds on Koh Chang has in fact been developed the development is all, strictly speaking, illegal. NB - Occasionally it is possible to apply to have one of these less secure forms of land title upgraded to Chanote. In practice this can take years and may never happen. If someone tells you that ‘their ’ land will be upgraded then wait until it has been and you have seen all the paperwork before going any further. It is not uncommon for the ownership of land with Por Bor Tor or Sor Kor title to be disputed. It is probably best to only consider land with Chanote, Nor Sor Sam Gor or, at a pinch, Nor Sor Sam land title.

The Koh Chang Property Market Times are changing fast in the youthful Koh Chang Property Market. Koh Chang has only recently developed as a tourist destination and so has only experienced large scale growth in hotels and tourist visits over the past fifteen years. Whilst there has been an explosion in the number of hotel beds and related tourist businesses the potential for residential property construction, with a few notable exceptions, has remained untapped. If you consider the histories of development of Thai resorts like Koh Samui, Phuket and Hua Hin that have been growing for ten or twenty years longer than Koh Chang then the next wave of development is set to see huge demand for housing and condominium development. There are certain factors unique to Koh Chang that have major effects on how the property market will develop. The first is the fact that Koh Chang lies within a Thai Marine National Park. Around 70-80% of the land area of the island falls within national park control and, since it is under government ownership, it cannot (at least in principle) be developed. Also, the Thai Navy own large tracts of land on the island. Add to this the fact that a lot of the remaining land is of tenuous land title (see our section on Thai land types) and the area of land on Koh Chang that is available for development becomes still more limited. The effect of this is that property prices can seem quite high, obviously as a factor of high demand coupled with limited supply. In the longer term of course this limitation on available land means that an investment in a well-built house or condo on a development with secure land title offers fantastic potential for growth in market value. There have so far only been a few organised housing and condo developments on Koh Chang and many people have resorted to buying land and arranging construction themselves - no mean feat. Koh Mak and Koh KoodThe nearby islands of Koh Mak and Koh Kood are also developing as alternative considerations for property and housing investment. The islands are smaller, Koh Mak very much so, but since they lie outside the national park far more of the land can be developed. Koh Mak so far has just a few residential developments and Koh Kood has none so any dream home projects currently have to be built from the ground up. The islands are both remoter and less developed than Koh Chang. Whether this is a good thing or not is a matter of opinion. They are certainly pretty and peaceful but this can come to feel remote and isolated in the low season. It might be a good idea to pay a visit at this time of year to get a feel for things before you buy.
