Message from the General Manager

Before immersing yourself into this livelyedition of Resort Happenings, I wish tocongratulate the team from Bruce LyntonBMW in staging the 10th annual charity ballheld in the Resort’s Benowa Ballroom. Thisyear’s gala event attracted 800 guests andincluded fabulous fashion, great food andentertaining live performers. Through thewonderful generosity displayed by localbusinesses, individuals and all guests, theauction raised over $150,000 for importantcommunity organisations such as Surf LifeSaving, Young Care and the Cancer CouncilQueensland. And on the subject of supportinggreat causes, RACV Royal Pines fielded a teamof 90 in this year’s Mother’s Day Classic walkand run and we were able to raise over $2,000for breast cancer research. The ‘Royal Pines’team included our residents, many families,children and resort staff and for the secondyear running, the team received the prize forthe largest participating corporate group. A bigthank you to everyone who participated.

Just when you thought it was time for a littlewinter hibernation and indoor activity, thenthink again, winter on the Gold Coast is awonderful time to get-out and enjoy yourself.With its crisp mornings and beautiful warmdays, a bountiful feast of Resort activities is sure to help you make the most out of this season.

To begin, we have assembled internationallyand locally acclaimed Chefs for the Masters ofThe Kitchen event in June. Noted chefs suchas, Cheong Liew from Adelaide and BrazilianChef, Paolo Seqeira will dazzle in liveperformances and to cap-off the epicurean’sdelight, a selection of superb wines will bepresented by RACV’s Sommelier, ChristianMaier. Whether you want to sharpen your

chef’s skills at the cooking workshop orsimply be tantalised by some magnificentdishes and wines, then put 26 June in yourdiary for this unique Gold Coast event.

If gardening is your thing, then why not join ourGolf Course Superintendant, Paul McLean ashe takes you on a personalised Garden Tour ofthe Resort. This informative morning willprovide some insight on how to care andmaintain 200 hectares of manicured environsand with his in-depth knowledge of local flora,you may even take home some valuable tips onhow to get the most out of your gardening.

Golf at the Resort is a pleasure at any time, but during the cooler months, it’s a golfer’sparadise. There are plenty of socialcompetitions, great specials in the golf shopand once you have finished your perfect round,enjoy a superb Italian dinner in our newTrattoria Amici.

If you are stuck finding something different forthe kids to do these holidays, drop them intoour golf and tennis school holiday camps.These supervised camps are for mixed agesand skill levels and are designed to be lots offun while they learn. And if the little ones preferthe sweet tooth option, back by populardemand is our behind the scene kids’ cookingclasses. Just think, this can happen in the onespot while you take some ‘me’ hours beingpampered in the Resort’s Day Spa !

Lexus Masters of the Kitchen – Bite Size

Masters of the Kitchen is an exciting culinaryevent for food lovers, chefs and home cooks.This event is scheduled to take place in July2011 over four days, however on Saturday 26June, 2010 we are holding a Masters of theKitchen Bite Size event to give food lovers,chefs and home cooks the opportunity totaste what is in store for 2011.

The Bite Size event will include a full dayworkshop followed by a gala dinner. GreatAustralian chefs such as Cheong Liew andDaniel Ridgeway will be conducting classestogether with Brazilian chef Paulo Siqueira.The RACV City Club’s own Sommelier,Christian Maier, will work alongside DanielRidgeway to educate the audience on wineappreciation. We are also excited to introduceSicilian food blogger, Marisa Raniolo Wilkins.

Masters of the Kitchen - Cheong Liew

Cheong Liew was born in Kaula Lumpur,Malaysia and moved to Australia in1969 tostudy electrical engineering but insteadbecame a chef. He is very well-knownthroughout Australia and in particular inSouth Australia where he opened his firstrestaurant Neddy’s.

Cheong then proceeded to open theprestigious The Grange Restaurant at theHilton Hotel in 1995 where his creativecuisine was showcased. As well as runningextremely successful restaurants Cheongalso devoted his time to teaching the art ofcooking and was honoured for his service tothe food and restaurant industry in 1999when he was awarded the Medal of the Order Of Australia.

Masters of the Kitchen - Daniel Ridgeway & Christian Maier

Daniel Ridgeway has over 10 years experienceas a chef with 5 of these in an executive role.He has held various position here on the GoldCoast as well as working in restaurants andhotels in Melbourne, London, Vancouver andThailand. Daniel has won numerous awardsand accolades and aims to provide guestswith creative and well presented qualitydishes. He continues to challenge himself bybeing creative and inventing new and originalcombinations of flavours.

Daniel will pair up with RACV City ClubSommelier, Christian Maier, who has awealth of knowledge and expertise from two decades in the hospitality and wineindustries. Christian has won endlessamounts of awards and accolades and has worked in Australia since 1990 withexperience in France and London as well.

“I have been bitten by the wine bug andprobably will never recover. When I travel to awine region, I have an esky with me containinga spare liver, just in case”. Christian Maier.

Masters of the Kitchen - Marisa Raniolo Wilkins

Marisa is a Sicilian Food Blogger whoseinterest in food is driven by her desire toexplore her cultural origins. She is a firstgeneration Italian-Australian with both herparents born in Sicily. Marisa has always beenpassionate about fresh, local ingredients andshe has an active association with marketstall-holders and food producers.

“Marisa is the real authority when it comes toSicilian food and her passion shines througheverything she does.” Mandy Martin, AdjunctProfessor, Fenner School of Environment andSociety, Australian National University.

Masters of the Kitchen - Paulo Siqueira

Paulo Siqueira is a gourmet chef with over 20years experience. He was born in Brazil andcurrently resides in Rio de Janeiro where heowns and operates a personal chef businesscatering for private residences, parties andevents. Paulo has had a colourful 20 years inthe industry working all over the worldincluding Belgium, England, Holland,Switzerland, Italy, Portugal and Germany. He specialises in mushrooms and has evendevoted some of his years to researching themedicinal benefits of mushrooms.

In recent years Paulo has become the authorof many culinary cookbooks and is currentlyseen on FOX Television in Brazil starring in anew series Homens Gourmet.

Kristy Bates

Kristy holds the position of Demi Chef inTees’ Clubhouse and has been with theResort for just over 18 months. Known toher colleagues as Krissie, she started inthe industry in 2001 and completed herapprenticeship working in Sydney and alsohas certificates in commercial cookery andpastry cookery.

Krissie developed her flair for food whilstcooking at school as well as family dinnersand simply by experimenting. She hasseveral idols including Brett Graham, LukeNguyen and Alessandro Pavoni and lovesusing mint & oregano in her dishes.

Lynn has played golf from an early age of 7 and still enjoys a hit on the course today.One of her favourite aspects of her role ismeeting a variety of people from all overthe world. She has made many friendsthrough the Golf Shop with colleagues,local residents and long time customers.

Community One

Community One is the Resorts fundraisingcommittee and is supported by Royal PinesResort staff and residents.

In recent times the Resort has raised over$30,000 for local charities including $5,000to the Gold Coast branch of the KidneySupport Network and $25,000 to Guide DogsQueensland.

Over the years Community One has achievedsome great results supporting local andinternational charities.

Paradise KidsCommunity One is currently raising funds for Gold Coast organisation Paradise Kids.The Resort is aiming to raise enough fundsto provide two Melbourne families with aterminally ill child a great family holiday onthe Gold Coast. To accomplish this goalCommunity One needs to raise over $8,000.This holiday for both families will includeairfares, transfers, five nightsaccommodation at the Paradise Kidshouse, theme park tickets, meals, andcounselling and therapy sessions.

Paradise Kids is a locally based andfounded organisation established in 1996on the Gold Coast. The founders Rev Dr IanMavor and Deirdre Hanna wanted to createa place where children could come to ‘helpheal their heartache’ when faced with atraumatic situation in their little lives. Theemphasis is on ‘heart work’ which meansParadise Kids takes a holistic approach toaddress all aspects of the child – body,mind and spirit.
