    A Shift back to local focus

    with the rise of FarmersMarkets

    What weather weve had thispring! It may have placed a damper

    on graduation parties, delayed backyardplanting schedules or spoiled plans foroutdoor wedding photos, but it sure madeeverything grow like crazy! Everythingsprouting throughout the Chicagoand area including the increasedpresence of farmers markets in manymunicipalities.

    Farmers markets have beenround for decades in rural areas,

    beginning as the gathering of localesidence to exchange goods andervices with one another. Whats news the number of urban municipalitieshat have stepped up to facilitate thesemarkets for area residents and vendorslike.

    Personally, the wife and I like theArlington Heights market which we visitevery Saturday morning. We like to stockup on locally grown produce favorites,nd peruse the tents to see what may be

    new and fresh to catch our eyes. Werelways sure to check with my dad before

    heading out so that he can inventory histock of honey, and let us know whetherts necessary to provide him with refills.He claims the taste and freshness of theproduct is unmatched compared to store-bought brands even superior to what hends on his trip to organic grocery stores.

    Its rewarding for us to visit themarket, especially when we talk to thetall owners who have worked all week

    getting ready. Some must begin at 3

    .m. to get their stands set up on time.We already know their prices will beompetitive to the local grocery stores,

    and the freshness is unmatched. To

    be honest, we dont spend much timeanymore comparing penny to pennybecause everything we buy would beworth it at twice the price. Its thatcombination of freshness along withthe recognition of the work put in by themerchant farmers that make us believethat whatever we come home with wasworth every cent.

    Whats important to keep in mindare how valuable these markets are tolocal communities and their residents.

    The goods for sale are as fresh aspossible, reasonably priced, and the

    venue serves to reward the hard work oflocal businesses. The merchants at theFarmers Markets are neither rich norfamous, nor are they household names.

    They are from the local family ownedand operated farms of people passionateabout what they do. And the marketsprovide these nearby residents a placeclose to their community at which theycan sell their goods, and to reap a smallprofit from doing what they love.

    In my opinion, its a good lessonfor the big box stores and big chaingrocers. Apparently, some have already

    jumped on the bandwagon, scrambling towork with local businesses and growersin an effort to get consumers back into

    J ohn William Corcoran (akaACK) is the newest member of the

    Corcoran Heating and Air Conditioning

    egacy. Debuting J une 20, 2013 with thetats of six pounds eleven ounces andwenty-one and one-half inches, he isaining and growing and looking good forhe hand-off a few decades from now.

    J ack was welcomed into thisworld shortly after game four of theStanley Cup Playoffs. In our opinion,is timing in entering this world wasndoubtedly influenced by the rolleroaster ride that played out in this series.

    He was home just in time to witness game, and watch the clincher in game 6.

    If J acks Irish Catholic sidebecomes the most influential, he willbe destined to Notre Dame, playing aport - maybe football as the startinguarterback, hockey as the star center,r leading scorer on the lacrosse teamsomething along those lines). Of course,

    we would be just as happy with himtarting on the basketball teams of eitherf our alma maters: University of Illinois or

    Kansas. He would have to locate someall genes somewhere in his lineage forhat. Regardless of his chosen path, lookor his handsome self among the class of

    035. Wow, we are getting old.In the meantime, his proudparents J ohn and Lindsey, grandparentsTom, J anet, Bill and Marcia, and AuntsKathy and Jamie promise to love himnconditionally, raise him the very best

    Cooking CORNER:Who We Are

    Ingredients

    1 1/3 to 1 1/2 pounds chicken breasttenders, 2 packages from meat case

    Salt and pepper 8 pita breads

    1 ripe lemon, zested and juiced

    3 tablespoon red wine vinegar, eyeball it

    1/2 cup extra-virgin olive oil, eyeball it

    2 tablespoons fresh chopped oregano, 4stems, stripped of leaves and chopped

    We usually alternate our columns, but inview of recent events we strongly felt the needto present a united front this month.

    The strangest thing entered our homea few weeks ago. The parents refer to it asJack, or the baby. It appears to be somemechanical toy, although we cannot determinethe source of its energy. There is no electricalcord attached, doesnt look like it has batteries,and although we are not privy to get TOO upclose and personal, we have not spotted a key or

    crank for windup.This Jack thing has similarities tous. He sleeps in a crate, although it is elevatedfrom the ground and has no top on it. He, too, depends on theparents for the roof over his head and the foodin his mouth, but unlike us, has never been leftto amuse himself, wait too long for a meal, or

    Directions Preheat grill pan over high heat. Place chicken in shallow dish and season with salt and

    pepper. Preheat oven to 275 degrees F. Wrap pita breads in foil. Place in warm oven a

    heat until dinner is served. Combine lemon zest, juice and vinegar in a bowl and whisk in oil. Add oregano, garlic awhisk again to combine into dressing. Pour half the dressing over chicken tenders. Turtenders in dressing to coat.

    Combine remaining salad ingredients in a bowl. Pour remaining dressing over salad andtoss well. The salad should be very lightly dressed. Season salad with salt and pepper antransfer to a large serving platter.

    Grill tenders 4 to 5 minutes on each side. Transfer hot tenders to the salad lined serviplatter. Remove pitas from oven and unwrap. Cut pitas in half and arrange around the eof platter.

    To serve, each person can pile grilled chicken and veggies into pita halves, wrap up oneither side and enjoy!

    June was exciting as hell around here.

    n a good way. I hope it was good for you, too!

    We had plenty to celebrate: a couple

    f new members to our family and another

    tanley Cup Championship for the Blackhawks.

    am still kind of in shock by those, really. We

    njoyed a fun-filled Fathers Day with my dad,

    ame together for the first time a.m. (after

    mom) and reminisced some more about my

    moms great life. Thanks to all of you for the

    ind words, hand-written notes and cards. It

    eems many of you out there have, or are

    xperiencing now, similar family challenges. My

    eart and well-wishes go out to all of you.

    Everything happens so fast these days.One minute we were watching the Hawks in

    ame 4, and the next John is calling me at 3:30

    .m. saying he is on his way to the hospital with

    is wife. Those Hawks really get things going.

    indsey, my daughter-in-law, delivered Jack the

    est looking Corcoran and my first grandchild

    nto this world the next day. That kid has some

    reat timing and lungs. John, Lindsey and Jack

    were home in time to watch game 5 as a family.

    What a great Stanley Cup series this

    ne turned out to be. The Blackhawks and

    Bruins; two strong original six teams going at

    ne another game and game and really leaving

    everything out on the ice what fun to watch!

    I saw the replay of game 6 and to me, that

    was really must see TV. These guys truly arewarriors especially when you hear about the

    injuries they were playing through when they

    faced one another. I mean, not only did Shaw

    take that puck to the face, come back stitched

    up and continue to fight, but he also had cracked

    ribs and a bum shoulder. Who knows how bad

    Jonathan Toews was really hurt after all the big

    hits he took, and Marian Hossa with his bad back

    could barely do more than play defense. The

    Bruins were equally banged up. These Modern

    Day Gladiators put on quite a show.

    One of the coolest things they do inhockey is the handshake line. Two teams line

    up at center ice to offer their congratulations

    to one another and show their respect earned

    from a tough series battling one another. Guys

    who seemed to want to kill each other on the

    ice game after game came together at center ice

    to shake hands. It seemed that no grudges were

    held this year, just kind words and well wishes.

    Id love to perfect this mentally in

    myself. Hockey players are just like most of

    us, out there every day fighting for what we

    believe in, and doing what is best for ourselves

    and our families. We are really all in this
