Oven Baked Chicken with Melted Mozzarella and Garlic Butter Pasta

Sea salt & pepper to taste6 ounces fresh mozzarella, slicedPasta:1 (16 ounce) package of whole-wheat pasta1/3 cup unsalted butter, melted4 garlic cloves, minced1 teaspoon dried parsley1 teaspoon dried basil1/4 teaspoon sea salt

Ingredients1 block (8 ounces) Mozzarella cheese, diced into 1/4-inch cubes1 cup diced roasted red peppers2 green onions, cut diagonally into thin slices3 tablespoons thinly sliced fresh basil2 teaspoons extra-virgin olive oil Freshly ground pepper to taste 1 head Belgian endive, separated into leaves

PreparationCombine Mozzarella cheese, red peppers, green onion, fresh basil and olive oil in me-dium bowl; mix well. Season with pepper. Cover and refrigerate 1 hour or overnight. Serve on endive leaves with whole grain crackers. Yield: 3 cups

Mozzarella Pepper Salsa

Two-Cheese Mediterranean Stuffed Chicken

Servings: 4Prep Time: 30 minutesCook Time: 40 minutes

Ingredients2 tbsp olive oil 1/2 cup chopped onion 1 cup diced tomatoes 1 tsp minced garlic 1 6 oz. bag baby spinach 1 cup part-skim, shredded Mozzarella cheese 1/4 cup shredded Parmesan cheese 4 boneless, skinless medium chicken breast halves (approx. 1.5 lbs) 2 tsp Italian seasoning blend 1/2 cup low-sodium chicken broth

PreparationHeat oil over medium heat in a nonstick

skillet. Add onion and cook, stirring until onions are tender, about 5 minutes. Stir in tomatoes and garlic. Add spinach, cover and cook for about 3 minutes until spin-ach is soft. Remove from heat. Let mix-ture cool slightly; stir in Mozzarella and Parmesan.

Heat oven to 375. Beginning in the center of the thicker end of the breast, insert a small knife horizontally, stopping about 1 inch from opposite end. Open incision to create a 1-inch-wide pocket and pack 1/4 of the lling mixture into each breast.

Season chicken with Italian seasoning blend and place in 13 x 9 x 2-inch baking dish. Pour broth over chicken. Cover loose-ly with foil and bake for 40 minutes; keep warm until served.

Touchdown Taco Salad

Servings: 8Prep Time: 10 minutesCook Time: 20 minutes

Ingredients1/2 lb. lean ground beef 1 1./2 cups (6 oz.) shredded Cheddar cheese, divided 1/2 cup salsa, divided 8 cups salad greens 1 cup chopped tomato 1 1/2 cup black beans

PreparationBrown beef in large non-stick skillet; re-move from heat. Stir in 1 cup shredded cheese and 1/4 cup salsa; mix until blend-ed. Spoon onto serving platter. In a large bowl, toss together salad greens, toma-toes, black beans and remaining cheese and salsa. Spoon salad over meat mixture and serve.

PreparationPreheat oven to 350 degrees F. Sprinkle salt and pepper over chicken breasts. Dredge chicken in our. Place in a greased baking dish. Bake for 20 minutes and then top with sliced mozzarella. Bake an additional 10 minutes.While chicken is cooking, cook pasta according to package. While pasta is cooking, heat butter in large skillet over medium heat. Add garlic, parsley, basil and salt. Cook over medium low heat until pasta is done, stirring occasionally.Drain pasta, reserving some pasta water. Add pasta to butter sauce and toss well. Add a few tablespoons of pasta water as needed to extend the sauce. Serve with chicken.
