I bet some of the newer Texans are struggling to adjust to the hot summer days we are having. I love the Texas heat. Some of you may think I am crazy when I tell you this...one of my most favorite things to experience in the summertime is that moment when I walk out of a freezing store or restaurant and am hit with the hot summer Texas air. Many of you may not know that I am a native Texan myself, born and raised southeast of Katy in Friendswood, Texas. I love Texas so much that aſter high school I decided to aend college in Texas. Aſter college graduation I got my start in health care when I opened an assisted living community in San Marcos, Texas. At first, all I wanted to do was develop budgets and create business plans, but once in my first community, I met the residents, their families and the associates that made the community a vibrant tight- knit home, I realized I had found a career that was so much more. It completely changed the course of my life. I have spent my career rounding out my knowledge of our Texas aging population and the challenges faced by residents and their families. Working in the senior housing industry has become more than a career to me, it is my lifestyle. It has taught me that there will always be budgets, but the real reward is being able to change the lives of our residents every day. The Life Of Olive Craig

Olive Craig was born in Cranford, New Jersey. When Olive was growing up, she was very active. As a young adult she spent a lot of her time helping others. Olive got married and moved to Houston, Texas, and started her family. Olive was blessed with two wonderful children that she loves dearly.

Olive was a housewife who enjoyed sewing, gardening and being a mother as well as being a wife. In Olive’s spare time she really enjoyed volunteering, playing cards and mentoring others. Olive did not watch much TV; she loved to read and put her mind to work with different crossword puzzles.

The Life Of Altha SmithThe delightfully delectable papaya is a tropical fruit

that is widely popular in Central America and Mexico, but can found in most markets when in season. It’s something one might dub “large and in charge.” Why? Several reasons. On average, a single papaya weighs roughly one pound, but obviously it can be much larger (or smaller). But a pound? That’s a decent-sized fruit right there. And it is fully in charge due to the massive health benefits the fruit offers. Here’s the short list:• The fruit’s flesh is easily digested since it contains a great

deal of soluble fiber. • It’s both cholesterol free and low calorie, and is packed

with Vitamin C — as in, just 61 grams of the fruit provides more than one’s recommended daily value of Vitamin C. That’s more than the average orange provides. Plus, it’s also loaded with folic acid and potassium.

• In addition, papaya has been used as naturally-occurring remedy for a variety of stomach ailments and conditions like ringworm. This is likely because it’s multifaceted, being analgesic with anti-parasitic and anti-inflammatory properties. With characteristics like this, it seems pretty logical to

consider incorporating papaya into your diet. So if you’re interesting in testing the proverbial papaya waters, here are a few things you should know:

• Green, hard papayas aren’t mature. Be sure not to eat the immature fruit raw, as its insides are toxic. The fruit is said to be ripe and ready with a skin that’s amber to orange and indents when you squeeze it gently. Remember the skin is totally inedible, too.

• It can be used in more than just fruit salads and smoothies. Papaya makes an excellent salsa ingredient, and can be used in all sorts of poultry and seafood dishes. Plus, papaya seeds can be substituted for peppercorns since the seeds are naturally a little spicy.

• Also note that some people are allergic to the milky coating inside a papaya, aka latex. So be extra cautious when handling for the first time. Otherwise, enjoy!

All About Papaya

INGREDIENTS 30 ounces shredded papaya

36 cherry tomatoes, halved

6 ounces green beans

6 ounces peanuts, ground

12 chiles

6 cloves garlic

2 1/2 ounces fish sauce

6 ounces lime juice

10 ounces sugar

DIRECTIONS

Heat a pot over medium-low heat. Add the sugar and fish

sauce. Cook for 2 to 4 minutes. Transfer to a bowl and refrigerate until cool.

Mince green beans, chiles and garlic. Add to a serving bowl along with the

shredded papaya, cherry tomatoes, chilled sugar sauce and lime juice; mix well.

Garnish with peanuts and serve.

Altha Smith was born on July 4, 1929. We’ve always said the whole country celebrates with her! She grew up in Cooper, TX, later moving to Dallas and then Houston. It was while working in Houston that she met the love of her life, Gene Smith. They met on a blind date arranged by Altha’s best friend. After a courtship of 7 months, they were married on June 22, 1957. Altha continued her work as an executive secretary while Gene furthered his education and earned his Master and PhD degrees at Texas A&M University. They lived in both Houston and College Station during this time. In 1965 Altha and Gene welcomed their daughter, Kim, to their family. Altha stayed home with their daughter while Gene taught at Texas A&M.

In 1976 Altha and her family moved to Silver Spring, Maryland. They lived there for 7 years and Altha continued caring for her family as a homemaker and volunteering with several organizations. When their daughter graduated from high school, Altha and Gene moved back to College Station. They continued to live there through their retirement years and were very active in their church and Sunday School classes and enjoyed traveling together with friends and family. Altha also spent several years volunteering at the George Bush Presidential Library.

Altha and Gene were very excited to celebrate the marriage of their daughter to her husband, Allen, on the day before their 40th wedding anniversary. Nothing made Altha happier than when she became “Mimi” to first Emily, and then Melissa. Her granddaughters are the apple of her eye! Altha has lived at Caydance since March of this year. She enjoys participating in all the activities and outings.

Many people say they are “at a loss for words,” or struggle to pinpoint exactly the right thing to say. In some instances, being at a loss for words is only natural. In others, however, the word to describe an exact feeling exists … just not in the English language. Here are a few words that didn’t make the cut when it came to crafting the English equivalent translation. • Torschlusspanik – This German word is generally

used to reference a fear of fewer opportunities that comes with aging.

• Tartle – This Scottish word references a hesitation that arises when a person has forgotten someone’s name but needs to introduce him or her to another person.

• Wabi-Sabi – This Japanese phrase refers to accepting beauty as a way of life despite all the flaws of the world and embracing the peace found within the natural cycle of life and death.

• Hyggelig – This Danish term is often used to describe a warm and welcoming demeanor, or perhaps a very good

friend and the safest, most supportive environment one could imagine.

• Duende – This Spanish word generally refers to being moved by something, whether that is art, nature, spirit, beauty or another force.It seems like one or more of these words should’ve made the

jump to English. Consider incorporating these new vocabulary words into everyday speech. Maybe one of them will come in handy at some point!

Not Exactly Lost in Translation

Taking Stock of Woodstock“Three days of peace and music” turned into a historic movement like no

other. The Woodstock festival, more than 400,000 in attendance, began on Aug. 15, 1969, and ended with the sounds of Jimi Hendrix on August 18. This legendary Bethel, New York, music and arts festival occurred at a pivotal time in history, as the Vietnam War was in full force, and the Civil Rights and Women’s Movements were at the forefront of societal issues.

The upstate New York town had no idea what it was in for when the festival took shape. The weekend was welcomed by some, and shunned by others. Barefoot beauties danced in the grass. Long-haired, bell-bottom wearing hippies were everywhere. A host of volunteer nurses and medics tended to the wounded, with cuts to the feet being among the chief injuries at the concert. Tales of Woodstock births have circulated, but proof is minimal. Whether viewed as inspiring or angering, the Woodstock festival remains a climactic, influential and memorable point in American history.
