The award presentation ceremony was held at PARKROYAL on Pickering. This is the highest number of winners, since the biennial award was inaugurated in 2009. Hotel nominees, graded by a panel comprising representatives from BCA, NEA, PUB & SHA, were judged on their performance in the key areas of solid waste minimisation, energy conservation and water efficiency. The Guest-of-Honour for the event was Ms Grace Fu, Minister, Prime Minister’s Office, Second Minister for the Environment and Water Resources and Second Minister for Foreign Affairs. In her opening speech, Ms Fu applauded the 28 hotels for their efforts in environmental sustainability and urged them to keep up with their good work. The 33rd FDAWU/NTUC/SHAProductivity Seminar andAwardsPresentationtookplaceon 21 July 2015 at ConcordeHotelSingapore.

The 6th edition of the‘Productivity Idea’ Award sawShangri-La’s Rasa SentosaResort & Spa, Singaporeemerging as the overallchampion with their simpleyet innovative ideaofreducingbreakfast queue time with theuse of hand puppets to guidecustomerstotheirtable.

Industry Mentorship Programme @ SHATEC – Harnessing the Power of Mentorship

On31July2015,theSingaporeMarriottTangPlazaHotelborewitnesstothelaunchoftheIndustryMentorshipProgramme@SHATEC,yetanotherdefiningmomentinthelonghistoryofSHATEC,thetrainingarmoftheSingaporeHotelAssociationandSingapore’spioneeringhospitalitytraininginstitution.

TheIndustryMentorshipProgramme@SHATECservestoaddvaluetotheeducationofhospitalitystudentsinSingaporeandenablethemtobeadequatelyequippedwithsoundadvicetohelpthemintheirlearning.Thisinnovativeinitiativeisthefirstofitskindtobelaunchedinanindustryschoolandseekstopairexperiencedandaccomplishedprofessionalsfromthetourismand hospitality industry asmentors to SHATEC students inordertoprovidethemwithguidanceintheirfledglingcareers.

Withthesupportofleadersfromtheindustry,itishopedthatthelaunchofthisprogrammewillinfluencethenextgenerationofleadersinthehospitalityindustry.InthewordsofMsWeeWei Ling, Chairman of the SHATEC Mentorship AdvisoryCouncil,“asexperiencedhoteliers,wecanmakeadifference”.

Currently, 23 mentees from the three faculties at SHATEC- Hospitality and Business Studies, Food and BeverageStudiesandCulinaryandPastryStudies-areenrolledinthisprogramme.Theyhaveallbeenconnectedwithmentorswhopossess the background and expertise that commensuratewith the mentees’ interests and career goals. Mentor Olivier Lenoir has Begun Opening Doors for Mentee

HavingworkedhiswaythroughtherankstobecometheHotelManager at Grand Hyatt Singapore, Swiss-born Mr. OlivierLenoir, a mentor in the Industry Mentorship Programme @SHATEC, isafirmbeliever thata littleelbowgreasegoesalongway.

Mr. Lenoir believes that mentoring “adds the professionalaspect of [working] life into the academic part of life” forstudentsinSingaporewhereapprenticeshipprogrammesareathingofthepast.Besidesforgingvaluableconnections,healsofeltthattheIndustryMentorshipProgramme@SHATECisagreattooltoinspireGenerationYstudentstoseehospitalityasacareerandnotjustanotherjob.

Mr.Lenoirbelievesthattheprogrammewillpreparementeesbyproviding themwitha “strongbase thatwillallow [them]togrow[their]careersandtobesuccessfulinthehospitalityindustry.” The programme also provides mentees with amorerealisticexpectationoftheindustry;thisinturnwillalsoimprovetheirchancesofdoingwell.

Chef Toni Robertson – Grooming the Next Generation

The biggest change that Mandarin Oriental Singapore’sExecutive Chef Toni Robertson has noticed in Singapore’shotel culinary scene since she last worked here in the late1990s is the presence ofmore local talent in toppositions.Therefore, “Supporting the next generation” to achieve thisprogress isvery important toChefToniand isakey reasonwhyshe felt “honouredandprivileged”whenasked tobeamentorintheIndustryMentorshipProgramme@SHATEC.

OnechallengethatChefTonifeelsisinevitabletonewcomersoftheculinaryindustryisthesheerlevelofcompetitiontheyface.Withthepopularityofcelebritychefsanda“glorifying”image of what it means to be a chef, she feels that morepeople are coming into the industry with high hopes andunrealisticdreams.ThisiswhereaninitiativeliketheIndustryMentorshipProgramme@SHATECisimportantinastudent’sdevelopmentofbecomingahospitalityprofessional.

Amentorcanprovideguidancetoamentee,butitisimportantthat mentees have ambitions that they want to fulfil forthemselves.“Wecannurturethem,coachthem[buttheyneedtotellme]‘ThisiswhatIwanttoknow...Iwanttoknowaboutthis’,”saysChefToni.

1) What is your most memorable experience whilst as a student at SHATEC?

I do not have a singular fondest memory; rather the entiredurationthatIwasatSHATEChasbeenarewardingjourney–fromthetimeIspentoncampusinMt.Sophiatothetransitionto the Bukit Batok campus. The friendship cultivated withfellowstudentsandthementorshipreceivedfrommylecturersweretrulyfulfillingforme.

2) Share with us your success story and how SHATEC has played a part in your career development through the years.

My success story comes from the simple fundamentals ofworkinghardandlistening. IbelieveinbeingentrepreneurialandlearningasmuchasIcanintheshortestpossibletime.Iamcuriousandintuitivebynature;inmyopinionknowledgeis the key to everything.How you decipher knowledge anduseittoyouradvantageisyetanotherimportantcomponentaltogether.

Inmycareer todate, I havehad thepleasureofworking inbusiness hotels, private restaurant groups and city clubs.

3) What is your advice to current SHATEC students on how to be successful in the hospitality industry?

Do not be afraid to ask for help or assistance from eitheryourfellowcolleaguesorsuperiors.NomanisanislandandIbelieveinteamworkandthesharingofideastogeteveryoneinvolved,motivatedandworking toachieve thesamegoals.Be inquisitive and ask questions. Keep abreast of markettrends especially in this digital agewhere thingsmove at amuchfasterpacethanbefore.Itisokaytosteeroffthebeatentrackaslongasyouseeitbeingsuitabletoyourcareerneeds.There is nowrong experience, but it is how you utilize thatknowledgegainedtoyourbenefitinyourcareer.

These experiences gave me distinct viewpoints on howeach business unit serves the same purpose, but functionsdifferentlyinthewaybusinessisconducted.

Accor’s Appearance Guidelines Project

SHATECwasinvitedforthefirsttime,toparticipateinAccor’sAppearanceGuidelinesProjectwhichwasheldfromJanuaryto mid-June 2015. The Appearance Guidelines are used atevery hotel to brief employees on their dress code, facialgrooming,hairstylesandmake-up.4studentsfromDHM-01-14A,DaphneTanDenosta,LevinaChan,MelvinAyeKyawZinandPopTaifayongchit,gladlytookupthechallengeofmakingrecommendations to theexistingguidelines.Theypresentedtheirsuggestionsandalsosubmittedatrainingplan,bothofwhichtheirproposalswerewell-receivedbyAccor.Attheendof the programme each student also received a testimonialfromAccorfortheirefforts.

SHATEC Executive Development Programme (EDP) 2015

SHATEC, together with School of Hotel and TourismManagement (SHTM), Hong Kong Polytechnic University,organisedaseriesof4stand-alonemodulesunderthebannerofExecutiveDevelopmentProgramme(EDP)2015.EDP2015,supportedbytheSingaporeDevelopmentAgency(WDA)waswell-subscribedwithatotalof69participants.

Site inspection with the Mayor of Auckland and Auckland Council

SwissôtelMerchantCourt,SingaporeplayedhosttoagroupofVIPson4September2015forasiteinspection.TheMayorofAuckland,Mr.LenBrownandAucklandCouncil,alongwithNationalEnvironmentAgency(NEA)visitedthehoteltolearnmoreontheEcoDigesterMachine.

Daily recycling of food waste is done through the EcoDigester Machine, which decomposes segregated foodwaste;recycledwateristhenproducedfornon-consumptionpurposessuchaswateringofplantsinthehotel.Thissystemhasbeen installedsinceDecember2014and ispartof thehotel’ssustainabilityefforts.

Mayor Brown also shared that as Auckland is looking tobanfoodwastefromgoingintolandfills,theCouncil isthusexploringdifferentprocessesthatwillassistinachievingthisgoal.

World’s First Life-Sized Coffee Capsules Race Car at Royal Plaza on Scotts Singapore

Singapore,21August2015–RoyalPlaza on Scotts Singapore (RP)celebrated Singapore’s eighthnight motor racing season withthe display of a life-sized coffeecapsules race car, the first to becreated in the world. The culinaryteam has created other life-sizedrace cars with seashells, pasta,chocolate, bread andmacarons inpreviousyears.

Tying in with the hotel’s greeninitiatives, this year’s life-sizedrace car featured recycled coffeecapsules,collectedfromthehotel’s511 guestrooms and 11 meetingrooms which provide guests withcomplimentary gourmet coffeefrom Nespresso machines. Theenthralling masterpiece plays upthe vibrant colour palettes, usingcoffee capsules of nine differentGrandCruvarieties.KeepingtothethemeofKopiGP,recycledcoffeegroundsareusedonthewheelstocreateacontrastintexturesonthecar and give guests awhiff of thedelightfularomaofcoffee.

Singapore Remains Asia’s Top Meeting and Convention City for 2014

Singapore’s Recent Event Bid Wins

New S$10 Million Fund to Boost Visitor Experience

Singapore, 18 August 2015–TheSingaporeTourismBoard(STB)has launchedanewS$10millionExperienceStep-UpFund(ESF)underitsTourismProductDevelopmentScheme.

The fund aims to encourage businesses to develop newtourismexperiencesthatwillenhanceoverallvisitorexperienceandsatisfactioninSingapore.InconjunctionwiththelaunchofthenewFund,theBoardisalsocallingforproposalsfortourdevelopmentandtechnologyinitiatives.

“Increasingly, travellers are seeking varied and engagingexperiences that allow them to gain a deeper appreciation

andunderstandingofourstoriesandheritage.They’renotjustgoingforrun-of-the-millcitytoursbutuniqueoneslikeback-of-house visits, precinct or interest-based tours,” said MsChooHueiMiin,DirectorofVisitorExperienceandCapabilityDevelopment,STB.“ThroughtheESF,which isunderpinnedby STB’s Quality Tourism strategy, we aim to spur tourismbusinessestocreateanddelivermoreandbetterexperientialofferings that add to Singapore’s overall destinationattractiveness.
