father. At 18, she learned how to DJ and started playing

the LA night circuit at venues such as The Mondrian Sky

Bar, The Standard Hotel, Thompson Hotel, and quickly

moved onto playing shows in New York and London.

How was the Photoshoot for JPy maga-zine? So much fun! From the makeup artist to the

photographer to the art director, it was one of

the more fun and easy shoots Ive been on.

You are active as a DJ, model and so much more, what do you enjoy themost?I enjoy DJing and hosting the most. I love mu-sic, and whenever I DJ the energy from the

crowd is just addicting. And when I host, I love

the camera crew that we work with because

we always have so much fun together.

What made you become a DJ? What kind of music do you like?My brother taught me how to DJ, and Ive

been DJing for 5 years now. I already love mu-sic, and I used to dance competitively, so DJing

definitely came more easily to me. Personally

as far as music goes, I think that a good, well

written song is a good song no matter what

the genre. So I love all types of music. My fa-vorite to DJ, however, is hip hop (especially old

school/ 90s/ classics).

Naturally the first thing anyone says is the

weather, but honestly to me LA is home. I was

born and raised here and I couldnt imagine liv-ing anywhere else. I love that so many people are

pursuing and encouraging of creative careers.

My favorite spot in LA would have to be LA Cafe

honestly because I go there way too often for my

own good and Ive never been disappointed (The

Kitchen Sink sandwich on a croissant is killer).

What is your favorite fashion? Do you have a favorite brand?I dont have a favorite really, all things Im drawn

to fashion-wise is an accumulation of every-thing that inspires me. Music is a heavy influ-ence on my style, because Im always looking at

old photos of punks, Teddy boys, mods, etc. and

emulating their style in my own outfit choices. I

always have a soft spot for vintage, pin-up, 50s

aesthetics, and also punk/ grunge elements. I

dont have a favorite brand! Anything that gets

the job done really (and at the lowest price pos-sible, Im a big bargain shopper).

What is your goal?All my life, the only goal I have is to make sure

my family is financially stable. My family is eve-rything to me.

What do you like about living in LA? Where is your favorite spot in LA?

JPy and JOBOT supports all women who follow their dreams! In every issue, we interview people living their dreams in Los Angeles. This time we are going to put the spotlight on Ms.Aya Maeda, the owner of RING Baked Tofu Donuts which just opened this winter. She told us about her career, life and her store.

Im absorbing a lot from books written on desserts and

various cooking techniques...It feels like Im having a science

experiment in the kitchen, one gram at a time.

Congratulations on the opening of the new RING baked tofu donuts shop in Woodland Hills! What made you decide to open a donut shop? I have worked in a restaurant in the past, but it didnt

feel like it was the best job for me. Thats when I came up

with my Baked Tofu Donuts. With the help from people

around me, I saw great potential for a new business.

Could you tell us the reason why you chose BTD as your main product?

I did think about opening a fresh sweets shop however it

was financially smart to go with BTD because it doesnt

require any capital investment. Also since Los Angeles

is a major car-society, I had to come up with something

that could last through long delivery drives. After hours

in the kitchen, I came up with the Baked Tofu Donuts.

I was hoping to create something people can bring as a

gift or to share with friends. Since Japanese baked goods

such as dorayaki is not very familiar in the US, I decid-

ed to go with baked donuts. At first, LAs dry weather

seemed to affect the texture of the donuts but when I

baked it with tofu I was able to get the texture I wanted.

It was a great discovery because it added a healthy image

and Japanese flavor to it.

Your concept is very distinctive and the designs are very refined. How do you come up with your ideas?

The labels and the logo are all designed by my favorite

designer, Yuko Okada. I always discuss and decide on the

concept and direction together with my partner.

What were the challenges in opening your store?

I started trial productions in 2012 and came up with

over 200 recipes. I still fine-tune ingredients so I still

dont have a final recipe. I think the donuts will keep

evolving as the ingredients slightly change. BTD is my

original recipe so its not available anywhere else. Im

learning from a lot from books about desserts in general

and various cooking techniques. It feels like Im having a

science experiment in the kitchen, one gram at a time.

What is the most essential element in making RING baked tofu donuts?

If I have to choose then it comes down to the taste and

ingredients. I always use local, organic and non-GMO

ingredients as much as I can. I talk to the storeowners

and gather ingredients that I can really trust. I love go-

ing to the Farmers Market, Cafes and bakeries and find-

ing new flavors and ingredients; its so exciting to me.

What are your future plans for the shop?

I want more people to know about my RING baked tofu

donuts and have them stop by my shop. I also plan on

experimenting even more with flavors. Trying differ-

ent flavors are so much fun for me, like Japanese style

such as soy sauce, miso, yomogi, spinach and also trying

gluten-free donuts.

Can you leave a message or advice for the JPy readers and JOBOT users?

Im the one who should be asking for advice, really

[laughs]. Im still learning but I feel blessed because Im

surrounded by wonderful people and opportunities, so

I think its important to keep doing my best and not let

any chances slip through.

Aya MaedaInspired by her mother, Aya started baking sweets & desserts at a young age. During her study abroad in San Francisco, her craving for Japanese sweets led her to start baking her own. After she got accepted to California Culinary Academy (today: Le Cordon Bleu College of Culinary Arts) she studied Baking and Pastry arts.

After working as a patisserie in a Japanese restau-rant, she moved to Los Angeles to open her own shop. She started RING Baked Tofu Donuts in 2012 with her partner. What started as a made-to-order business turned into their first brick & mortar store in Woodland Hills in November 2014.

[Ingredients] Makes 1 Tube PanMillet Sugar : 2.04ozEgg York : 3Rapeseed Oil : 1.02oz Milk : 1.53Oz Cake Flour : 5.1oz Baking Powder : 0.085oz Green Tea : 0.34Oz Egg White : 6 Millet Sugar : 1.53oz Whipping Cream & Red Bean Paste : As You Like

[Ingredients] Makes 12 Rice Flour : 60g Silk Tofu : 100g Black Sesame Paste : 0.51 oz Beet Sugar : 0.51 oz Water : 0.34oz Soy Sauce : 0.085oz

[Ingredients] Makes 6 Rice Flour : 60g Water : 2.72oz Beet Sugar : 0.51 oz Salt : As You Like Walnuts : 20g Red Bean Paste : 120g Soybean Flour : As You Like

[Directions]1. Place all the ingredients (A) into a bowl and combine well until soft and shape them into balls.2. In a different bowl, put (B) and mix well to make black sesame sauce.3. Boil water in a pan and place the mochi balls from (1)4. When mochi start floating, wait for 3 minutes. Take them out and place them in ice water.5. Drain well and remove excess water and place them on a plate. Drizzle the sauce from (2).

[Directions]1. Put (A) in a bowl and mix well. Place the whole bowl into a steamer and heat for about 3 minutes.2. Take the bowl out and mix about 10 times3. Place it back in the steamer and steam for about 3 min-utes. Repeat the process in [2] again.4. Add the walnuts and sprinkle soybean powder on top and divide the batch into 6.5. Wrap them with the red bean paste and shape them. Sprinkle with soybean powder.

[Directions]1. Put the egg yolk in a bowl and mix gently with a whisk. Add the millet sugar and mix well until the mixture turns slightly white. Add flour, baking powder and green tea and combine well (Photo 1).2. In a different bowl, put the egg whites and beat with a whisk. Add half of the sugar and mix well and add the rest and beat until very stiff (Photo 2).3. Add 1/3 of the beaten egg whites to the mixture (Step 1) and combine well with a whisk. Add the rest of the egg whites in two additions and fold them into the mixture (Photo 3).4. Once mixture is well combined, put the batter into a tube pan and hit the tin onto a surface gently to remove any air bubbles (Photo 4).5. Bake at 356 for 28-30 minutes.
