Nominationpapers turnedin for springelections

Three seats on the Village board

and one on the school board will

be up for grabs in the spring elec-

tion.

Voters will choose from four

candidates to fill three Village

Board seats. All three incumbents

and one newcomer turned in their

nomination papers by the January

7 deadline. Incumbents include

Brett Edgerle, Susan Jaberg, and

John Pethan. (Susan Jaberg was

appointed to replace John Renzel-

mann who moved out of the Vil-

lage). Newcomer Michael C.

Zimermann has thrown his hat into

the ring hoping to displace one of

the incumbents.

For the school board, Christina

Koberstein is the only one to sub-

mit a declaration of candidacy for

the seat that will be vacated by

Laura Kohler, who is not running

for reelection.

Once again, Kohler Original Recipe Choco-

hand-painted Raspberry Champagne Hearts.

Each artfully crafted dark chocolate heart-

I had a chance to try a couple of the hearts as

I sat down with Anette Righi DeFendi, head

chocolatier at Kohler Original Recipe Choco-

lates. We met at the Craverie Chocolatier Café,

home of Kohler Original Recipe Chocolates, lo-

cated in The Shops at Woodlake.

DeFendi said the chocolate hearts are one of

the more popular seasonal items. Though she

wasn’t the original creator of the pieces, they

proved to be so popular that there was no reason

to discontinue them.

I was reluctant to bite into my sample hearts.

I don’t think I’ve ever seen a piece of chocolate

that shiny. I wanted to wear them as jewelry or

display them on a knickknack shelf for a while.

They taste as delectable as they look.

The exquisitely packaged confections are

The Holiday Trio, which de-

buted this past November, was

Defendi’s creation, as well as

some upcoming candy bars, in-

cluding a new peanut butter vari-

ety.

Defendi said the chocolate pro-

duction is cutting edge just like all

of Kohler’s ventures. All chocolates are hand-

made at the Forbes Five-Star The American

Club resort, and personally approved by the

Chairman/CEO of the Kohler Co., Herbert V.

I ended our interview by posing a few ques-

tions posted by visitors to The Kohler Villager

Describe the process of developing newchocolates or flavors. What is the mostchallenging aspect?

“It’s really fun, actually. It’s a really creative

process,” Defendi said. She draws from tradi-

tional and popular flavors, but also

likes to experiment with flavors

that she thinks might make for a

unique pairing. “Part of my plan is

to create items that aren’t out there

or put a spin on the classics,” De-

fendi said. “It involves a lot of trial

and error. It’s frustrating some-

times, but it’s really rewarding

when you come up with a piece

that people love and enjoy. That’s

really satisfying for me and makes

me happy that I’m able to make

other people happy and enjoy the

chocolate.”

Some of the other more unique flavors avail-

able include Green Tea, Lavender, Asian Spice,

Defendi also considers personal favorites

when developing a new line. The inspiration be-

hind the cranberry clove chocolates that were

part of the Holiday Trio was a spiced cider that

her mother would make for the holidays when

she was growing up. “It was cranberry and or-

ange juice with cloves and cinnamon . . . and I

was thinking about the holiday line and I

thought ‘Gosh, what reminds me of Christmas?’

and it’s always that spiced cider.” So Defendi

wondered if she could make a ganache with

spiced cider, and she did. The Cranberry Clove

joined The Caramel Apple and Mint Leaf to

make up the Holiday Trio.

When will their clean line be available?

Defendi said most of their products are

“clean,” meaning all natural ingredients with no

preservatives. The ones she could think of off-

hand were the Terrapins, toffee bark, trail mix,

dark chocolate and milk chocolate bars, and all

candy bars. There are also gluten free choco-

lates available. People seeking clean chocolates

are encouraged to call the Craverie for more in-

formation.

Do you plan to offer chocolate covered

strawberries?

Defendi said they won’t be offering chocolate

covered strawberries, because their goal is to

produce items that can be sold online and

shipped. Their chocolates have a three-month

shelf life, something that can’t be achieved with

chocolate covered strawberries.

out of his 1930s-style radio one

beloved songwriting tal-

ents of the twentieth cen-

tury.

With more than fifty

top ten singles on the

rhythm and blues charts, Louis Jor-

dan was a great composer, band-

leader and saxophonist who

brought a popular new slant to

jazz, paved the way for the rock-

and-roll of the 1950’s, and collab-

orated with the likes of Louis

Armstrong and Ella Fitzgerald. His

hand-clapping soundtrack to the

A group of Kohler friends led more than

200 Sheboygan Polar Bear Club members

into the frozen waters of Lake Michigan on

New Year’s Day for the 44th annual Polar

Bear Plunge at Deland Park in Sheboygan.

Air temperature that day was about 8 degrees,

with the wind chill hitting -6. Water temper-

ature was near freezing.

Per tradition, participants turn out in cre-

ative swimwear chanting “It’s not cold

enough!” before charging into the water.

The Crusaders shield of armor

was too hard to break through for

a victory January 4, as the

Bombers lost on the road to She-

boygan Lutheran 61-48.

Lutheran jumped out to an easy

first quarter lead but the Bombers

jousted their host in a dueling bat-

tle in the second quarter to pull

ahead at halftime for a 21-20 lead.

The Crusaders rode in and re-

stored order in the third quarter to

take a 22 point advantage and kept

building from there, proving to be

too much for the Blue Bombers to

handle.

“We got off to a slow start in the

first quarter but came back strong

in the second to take the lead by

one at the half,” said guard Eric

Bauer. “Unfortunately, our defense

couldn’t shut down Jake Jurss

from beyond the three point line in

the second half to pull off the win.”

Brennan Ladwig had a double-

double along with the team high of

13 points in Kohler’s road loss,

while Jake Jurss led the Crusaders

with 30 points.

Like Lutheran, we also share in

the journey of a crusade. Ours may

not be a holy endeavor, but a cru-

sade nevertheless…as our boys

continue to push forward for a vic-

The Friends of the Marshformed in 2005 to help protect andpromote the Marsh. The Friendsset their sights, literally, skyward.In 2006, soon after formally be-coming an entity, the Friendsstarted to raise money to constructthe State of Wisconsin’s tallestwooden observation tower.Fundraising started by collectingspare change in buckets at localevents and progressed when manyboth large and small donationsfrom local citizens, foundations,and employers started accumulat-ing. Their vision became reality in2009 when Sheboygan Countywas blessed with another greatamenity, the Sheboygan MarshTower.The Friends have not lost their

drive and determination to makethe Sheboygan Marsh an even bet-ter resource for the County. Usingtheir knowledge and success fromthe Tower project, they are nowembarking on a new mission to de-velop an environmentally friendlymulti-purpose educational andmeeting facility. The new facilitywould sit where the existing ex-tremely dilapidated storagegarages are currently located. Theprimary function of the facilitywould be to house Camp Y-Koda’sever-growing environmental edu-cational classes along with otherenvironmental stewardship activi-ties. The facility would also beused for meetings and gatheringswhen classroom activities are nottaking place. The tired, worn-out

campground showers, now housedin the old Marsh Lodge, would bereplaced and housed in the new fa-cility as well. The goal is to makethe building as environmentally re-sponsible as budget will allow.Initial estimates place the price tagat roughly $660,000, includingcontingency. While no formalfundraising has taken place, theFriends have already raised over$40,000 in seed money.The Friends encourage people to

take a special look at the hiddenjewel which is the SheboyganMarsh. It is the largest restoredwetland complex in the LakeMichigan basin providing habitatfor many species of birds, wildlifeand other critters. Step back, stepup, and enjoy the wonder of the14,000 acre Broughton Marshfrom the observation tower; seewhat boaters, hunters, fishermanand snowmobilers have enjoyed

for years. From the tower’spanoramic view, you will experi-ence a breathtaking landscape,hidden treasures, massive water-ways, abundant wildlife and recre-ational opportunities. Then, onceyou have taken in the beauty,imagine a beautiful new, purpose-ful, building housing the classes ofthe next generation of scientists toprotect, manage, and preservemagnificent resources such as theSheboygan Marsh.The Friends encourage people
