Even we, being Italians ourselves, are sll oen sur-prised by the excellence of the products of our land, which were given life by local producers who are dedicated to the taste of tradion. We met hun-dreds of them and have selected those we consid-ered the best for the quality of their products, their reliability and the respect for tradion.

Now we would like to provide the opportunity for our Chinese customers to discover and taste the fruit of their labor. For this reason we have estab-lished Italiana Ltd. Italiana is a "lile piece of Italy" in Hong Kong. With us, it is as if talking directly to our network of specialized producers and suppliers, as we know everyone of them personally.

They provide a wide variety of tradional Italian gastronomic products: in fact there is much, much more to Italy than wine. And they place the quality of their products as their top priority. And thanks to them, Italiana is able to provide not only the most famous Italian products such as wine and oil, but also other parcular products which would other-wisewise be difficult to aain through in other Italian im-ports in Hong Kong.

Also, over the years in the search for and selecon of suppliers, we have acquired the skills to find spe-cific companies that can meet parcular requests desired by the client. And we always keep the qual-ity of the producon as our main aim.

This is a wine you will be able to recognize “blind” once you have tasted it: a fine, fresh, elegant am-bassador for Veneto, a unique region of steep hills covered in a dense coverlet of vineyards.

MadeMade from 100% Prosecco grapes, it has a straw color and small bub-bles. The aroma is of ripe apples and pears with a touch of acacia flowers.

There are 41 wines in Italy that are labeled DOCG. In order to safe-guard this precious treasure cre-ated by man and nature, only the best ones are awarded this label and our Prosecco di Valdobbiadene is one of them.

Fine wines are as sacred to civilized cultures as Leonardo DaVinci is to fine art…. Salento, the southern-most region of Puglia, is a land of dark red, iron-rich soil bathed in Mediterranean sunlight and con-stantly swept by the salty air cur-rents from the sea. With its historic nave grape variees and superb old vineyards, it is a perfect envi-ronment for viculture.

We selected three excellent wines made from local Salento grapes which are almost unique to this area: Primivo, Negroamaro and Verdeca. While Primivo and Ne-groamaro are famous grapes with intense aromas, Verdeca is the only saliesalient example among the whites in this hot, hence red wine domi-nated region.

Our oil is made exclusively with the freshest olives from southern Apulia region, one of the Italian leading producers of the finest quality olives, thanks to its sun, its climate and its ancient olive trees.

TheThe processing is done in a few hours from the harvest at a tem-perature lower than 27 °. It is very aromac and zesty to taste with an amazingly low acidic content.

This is a very pure and untreated oil, with perfect organolepc prop-eres, produced with state of the art technologies in full respect of our ancient tradions.

All of our infused oils are hand craed by local Apulia arsans in small batches and naturally fla-voured using 100% a very pure and untreated Extra Virgin Olive Oil, with a maximum acidity as low as 0,5%. TheThe cold extracon method and the use of fresh and natural ingredients result in oils that are unique and delicious, meant to set off the taste of dishes in a quick and easy way.

OurOur choice includes a variety of fas-cinang flavours for a delighul marriage of aromas, such as Porcini mushroom, White Truffle, Orange, Lemon, Mint, besides the more classic Basil, Chilli and Garlic.

Parma Ham is a jewel in the culi-nary tradion of Europe. It is an all natural product, steeped in Italian tradion. By law, only hams pro-duced and cured in the hills around Parma may become Parma Hams: the unique condions of this region make it possible to produce a very special ham that has been appreci-ated since Roman mes.

It is sweet and savoury at the same me (thanks to skilful tricks regard-ing salng and maturing), it is suit-able for the most varied possibili-es and preparaons, ranging from the quick and straight forward bread roll prepared in the aer-noon to the most elaborate and re-fined menus.

Prosciuo coo literally means cooked ham in Italian. It is made from the finest, carefully selected pork thighs, deboned and cured using the most tradional method.

AA lengthy oven backing with satu-rated steam at high temperatures is what produces a unique flaky tex-ture, while the skin is le on the top of the product to keep in mois-ture, a disncve delicate flavor and an intense aroma. This ham is easy to digest and also very low in sodium.

The organic cooked ham is made with pork derived from non-inten-sively farmed pigs, raised on organ-ic feed. All the ingredients used for flavouring are organic.

“Arsan” comes from argiano – an Italian word that refers to the cra of hand-made products, re-sulng in unique and characterful qualies. Anyone can follow a simple recipe, but just as a master chef or winemaker, our master sa-lumieri (expert salame makers) bring the recipes to life with their art and deep knowledge in tradi-onal methods.

We provide a collecon of gourmet salame that are truly unique – hand-stuffed and ed using natural casings, minimal spices and most importantly, they are naturally aged in ancient underground cel-lars which have been used by gen-eraons of salumieri .

Pancea has always been a vital part of Italian cuisine. It starts off as simple strips of pork belly, but aer it’s salt-cured, seasoned in a delicious blend of Italian herbs and spices, and dried for months, it be-comes infused with unmatched flflavor.

Our Pancea is guaranteed to be made from the finest quality of pork belly yielding a remarkable disncve taste with the under-tones of the freshest spices added.

It can be either rolled, arrotolata, or flat, teas. In addion to salt, the cure normally contains ground black pepper. Our choice includes chili and garlic flavored Pancea and even the smoked one.

Dang back to ancient Roman mes, it is one of the world's oldest recorded cheeses. It is produced exclusively from the milk of sheep raised on the plains of Lazio and with lamb rennet derived exclusive-ly from animals raised in the same pproducon area.

Essenal for grang over pastas and vegetable dishes, it has a pleas-antly salty and sharp taste of vary-ing intensity depending on length of maturing, with that characteris-c aroma of sheep's milk.

Pecorino Romano also works very well as an ingredient because it doesn't melt into strings when it's cooked. Available in whole form and porons.

A delicious and full-flavoured table cheese, as well as a key addion to the finest dishes. Our Parmigiano and Grana are classified as DOP cheese: they are from designated geographical zones, each wheel of cheese is tested for quality and theirtheir methods of producon are strictly controlled by a consorum.

Dry and hard due to its extremely long aging, Parmigiano has a granu-lar texture that easily breaks into slivers - irresisble to pop into the mouth.

Grana Padano tends to be yellower and creamier than Parmigiano, with a lower fat content, as it gets two skims.

This scenng flatbread is the gour-met symbol of Liguria: the Italian region of Pesto.TheThe art of Focaccia making relies on three milestones: first quality extra virgin olive oil, dexterity (the sur-face is to show skillful finger inden-taons) and… lots of me for the rising of the dough. As a way to preserve moisture in the bread, olive oil is then spread over the dough.

It comes in variants: round and square, with onions, olives or rose-mary.

Piadina, a tradional Italian flat bread originang from Romagna, is but one of the items in our special bakery range.MadeMade from organic wheat flour, olive oil, salt and water to form a flat dough, it only needs to be cooked briefly on a flat heated sur-face to become slightly brown and crispy. And when you bite through this crispiness, it releases a steamy frfragrance of wheat as it cracks open. For the main courses we chose some great Italian recipes that have been reinterpreted with some cre-avity and gourmet experse. Among them is a classic southern Italian dish – Parmigiana, a deli-cious tradional dish which is suit-able for vegetarian. Prepared by layering aubergines with parmi-giano cheese, tomatoes, herbs and then baked in the oven.

This warm golden Passito is a de-lighul meditaon wine with a el-egant sweetness. Served at room temperature, it is excellent as an end-of-meal wine, but also won-derful as an aperif with foie gras, or accompanied by appezers such as Coppata salami, oysters and sea-food. Made from 100% white Moscato di Trani, a variety of grape that thrives in Puglia's warm, sunny climate, and has been used in winemaking since the mes of the ancient Greeks. They are exclusively hand-picked during mid to late October as they dried on the vines under the sun of southern Italy.Intense, yet elegant on the nose with complex aromas of wood and buery notes, along with a strong presence of dried flowers.
