It’s all a matter of taste…

It has been six months since the last Menu Guide was

delivered to your door and what a six months it has been!

The choice of exquisite restaurants and great bars on

our doorstep appears to grow almost daily, constantly

reminding me of how lucky we are now to live in a real up

and coming cosmopolitan city as Plymouth. There really is

something to suit everyone - it’s all a matter of taste!

Hot off the press, this issue brings you the latest new stories from in and

around Plymouth’s quality eating and watering-holes, plus a low down on all

the hottest new openings, menu launches and new chefs about town.

There’s a profile of one of Plymouth’s trailblazers in the restaurant scene,

Edmond Davari, and for everyone that loves a glass of wine with their meal,

you will be interested in our guide to the best wines for the best meals.

Despite launching without any fanfare lastyear, word has spread about the foodoffering and it is becoming increasinglydifficult to secure a booking, especially atweekends. Proprietors Nic and Steve havespent the winter visiting local farms and

traders to build up a truly local supply. Theiravowed intent is to produce a menu with everyingredient (apart from spices says Steve!) travelling

only twenty food miles or less into the kitchen.Their lobsters travel a lot less than that as they arecaught just in the Sound, but Steve admits that ithas been an uphill struggle to complete hismission. “The distribution network here favoursLondon, and I have been in the ridiculous positionof having meat transported to London and thencouriered back to me. MINERSARMS&GARDENRESTAURANT

The Miners is up for sale”, my fathercasually dropped into conversationone winter’s morning as he calledfrom his home in Devon. Myhusband, Paul and I were

attempting to get our five month olddaughter ready for a walk in the park. Wewere happy and quite content with our lot inthe west end of Glasgow and the thought ofuprooting our life and moving the 500 milessouth to deepest darkest Devon had neverentered our heads; always thinking that wewould be patrons of a trendy west end barand eatery! So, to find ourselves installingheating and stripping walls and carpets in this300 year old property some seven monthslater came as quite a shock for some timeafter we moved into the pub.

Our ancient property has been in my family for over 100 years, with the Honey’scontinuing its tradition as a working farm. Itsrole changed in the earlier part of the lastcentury. The residents of Hemerdon: workersfor Hemerdon House and local miners, allshared the responsibility for being hosts of thevillage cider house, but as one of the largestproperties in the middle of the village it madesense for the Honey’s farm to take on the fullmantle. For many years only cider and thenale was sold in the front room of the buildingand animals could still be seen (and smelled!)in the outhouses. It began to be the life-bloodof the village and surrounding areas andcontinued to develop as liquor licences weregranted, and upgrades were made to the bar.

When we moved in, in 2003, the lastupgrade had taken place in the early 1970’s;she was a tired giant of a property in need ofsome tender loving care.

This rewarding, yet difficult job was begunwith the installation of our Garden Restaurant;a 110 seater glass atrium and patio to the rearof the building in our expansive gardens.

With views over Plymouth and thesurrounding countryside it never fails to takemy breath away. It must have had the sameeffect on our customers who not only use iton a day to day basis but have taken the jumpto booking weddings and celebrations with us.

The bar area which has the original beamsand 2-feet thick walls, has been enhanced,taking care not to strip its ancient personality.We have a fantastic log fire in the coolermonths and have live music in the bar mostFriday nights with outside events such as our2007 music festival which will be taking placein the summer utilising the bar to its fullestpotential. The large outside children’s play

area has also been upgraded to give ourpatrons with children some respite in thesummer – although we do rue the day as ournow 4 year old daughter feels understandablythat it is her right to play on it for hours atevery conceivable opportunity – shouts of“it’s your turn to take her!” are often heard.The improvements on a property of this kindare never finished and every year we try todevelop different areas.

Having been spoiled with bars and restaurantsin Glasgow, it gave us great satisfaction bringingthe friendly yet efficient service style we wereused to, to the Miners Arms.

We change our menu every few days tokeep up with the best produce available atthat time and to keep it interesting for ourcustomers. We have balanced the menu sothat you have the best in flexible dining. Ifyou want to have a three course gastronomicfeast in your Saturday night finest, chill outwith a beer and burger or bring the family for

Sunday lunch that’s fine too, the same menuis available in the bar, restaurant, patio andswing-park. Our dedicated team of chefsheaded up by our very talented RichardStephenson prepare everything we serve fromscratch. They take care to source the best inseasonal produce from seafood to localmeats, vegetables and cheeses, keeping thefood simple yet interesting which allows themain components of the dish to shinethrough in every case. We take that ethosthrough to the children’s menu which is alsoall freshly prepared with healthy options.

The Miners Arms is our life and giving thatpersonal touch to our customers unlike so

many of the faceless pubs and restaurantsowned by large conglomerates, is somethingwe are really proud of as a family of three –soon to be four – we can only count ourblessings that we have a few years before ournew addition starts her own demands to betaken to the swing park!

SOMETHINGTODRINK

The first thing to remember aboutmatching food and wine is toforget the rules. Choosing what todrink with a meal is not a scienceand there are no rockets involved.

It's largely about common sense, so trust yourjudgement and follow your tastebuds. Whilethere are no strict rules, there are, however, afew pieces of friendly advice that might addto the enjoyment of a good meal.

First and foremost, I’d recommendchoosing a wine that you would want todrink even if you weren’t having something toeat. Despite all the guff written aboutmatching wine and food, you will probablydrink most of the wine without the benefit offood – either before the food is served orafter you've finished your meal. Therefore,you will not go too far wrong if you makesure the food is good and the wine is, too.That way even if the match is not perfect,you will still enjoy what you're drinking.

Some wine buffs suggest that mediocrewines can be improved by serving them withthe right food. The flaw in that reasoning,however, is the scenario described above. Ifthe match does not quite work as well as youhope, you're stuck with an average wine. Sodon't try to get a wine to outperform itself.Just pick a good wine in the first place.

This is where common sense comes in. The old rule about ‘white wine with fish and red wine with meat’ made perfect sense in the days when white wines werelight and fruity and red wines were tannic andweighty. But today, when most Chardonnaysare heavier than most Pinot Noirs and evensome Cabernets, the old colour-coding ruledoes not always work.

This tried-and-tested approach willminimise real dud choices, but it will alsolimit the possibility of your having one ofthose exhilarating moments when an unlikelycombination hits the jackpot and creates atruly memorable experience.

And while food has got more complicatedin recent years, so too has wine. While redwine might once have ranged from Bordeaux

to Burgundy and back again, supermarkets,off-licences and restaurants now stockCabernets and Pinot Noirs from a dozendifferent countries in just as many styles.Unfortunately, one result of this huge varietyof choice is that the chances of making a badmatch are exponentially increased.

Red wines as a category are distinct fromwhites in two main ways: Tannins – many redwines have them, few white wines do – andflavours. White and red wines share manycommon flavours; both can be spicy, buttery,leathery, earthy or floral. But the apple, pearand citrus flavours in many white winesseldom show up in reds, and the currant,cherry and stone-fruit flavours of red grapesusually do not appear in whites.

In the wine-and-food matching game, theseflavour differences come under the heading ofsubtleties. You can make better wine choicesby focusing on a wine's size and weight. Like restaurant-goers, wines come in all shapesand sizes. To match them with food, it's usefulto know where they fit on a spectrum, withthe lightest wines at one end and fuller-bodied wines towards the other end. Heartyfood needs a hearty wine, because it willmake a lighter wine taste weak.

With lighter food, you have more leeway. Lighter wines will balance nicely, ofcourse, but heartier wines will still show youall they have. Purists may complain that full-bodied wines overwhelm less hearty foods,but the truth is that anything but the blandest food still tastes fine after a sip of a heavyweight wine.

These simple observations explain why aflowery Muscadet or a steely Riesling is apleasing complement to a plate of freshoysters, why a robust Cabernet enhances lambchops and why a meaty Burgundy is great withroast beef. You can add variety to yourselections by moving up and down the scale,while remaining roughly in the same quartile.

The wine needn’t stop flowing at the endof the main course, so don’t be afraid to carryon quaffing when the pudding trolley arrives

on the scene. Dessert wines are a great wayto finish off a meal and can really add to the enjoyment of a third course, whether it be an apple tart, chocolate mousse orcheese selection. Dessert wines, such asMuscats and Sauternes, are a fabulousaddition to a sharp fruit salad, while a spicyglass of port will cut through the stodge of a chocolate torte. Although Stilton istraditionally served with port around theChristmas table, why not try a late harvestGewürztraminer or Riesling? And don’t juststick to whites – there are some fabuloussweet red dessert wines to chose from.

While these choices might seem obvious ifyou are eating in a traditional French, Italianor modern English restaurant, what if you’veopted for an Indian, Chinese or Thai meal?

These restaurants all serve wine, but why doso many of us still opt for a pint of lager or abeer rather than asking to see the wine list?

The answer is partly down to an old-fashioned ‘hot food=cold drink’ philosophy,but in reality it is more due to the fact thatbeer works extremely well with spicy food,and that hot curries and peppery flavours areenhanced by a well chosen lager-beer.

If you do fancy a glass of wine with a spicydish, then there are plenty of options tochoose from. If you are sticking to whitewines, then those with high acidity levels, likeSauvignon Blanc, will work well with the boldflavours found in spicy seafoods, like prawns.Conversely, red wines with plenty of tanninsor a weighty Shiraz are a good match forheavier meat dishes, while something lessrich, like tandoori chicken for example, is justas happy with a lighter-bodied Beaujolais as itis with a pint of ice-cold Cobra.

In fact there are many meals to be had atmany restaurants – not just Chinese andIndians – where a beer is an equally suitableaccompaniment to the food as wine.

Beer works excellently with robust foodslike stews and casseroles, or indeed any mealthat uses beer as an ingredient, such as asteak-and-ale pie. So don’t be afraid to ordera beer, however many Michelin stars arepinned to the chef’s jacket.

The other plus for beer drinkers is that abeer generally tastes the same, when andwherever it is drunk. There are no vintages, nogood and bad years, so you can be sure of aconsistent flavour – which is more than canbe said for many wines, even those whosegrapes were picked from the same vineyardduring the same week.

Lastly, if reading a wine list is like lookingat a Russian translation of the bible – oryou’re too busy chatting to give the wine listmuch thought – hold up your hands and let

the wine waiter or sommelier make asuggestion based on what you’ve ordered toeat. Don’t be afraid to give them a roughbudget – although make sure it’s out ofearshot of your guests!

What are your names: Pete May and Neil Kinger.

Where do you work now?We currently have the joint head chef’sposition at the Fishbone Restaurant onPlymouth International Business Park.

Where have you worked before?Pete trained in the Navy as a chef for 5 years, cooking in some exotic and somehostile environments whilst serving. Amongst other places, Neil cooked finedining for an outside catering companycalled Choice Cuisine.

Who taught you to cook?Pete trained mainly under a chef called Matt Schofield in the Navy. Upon leaving he continued training under Greg Smith, head chef for the Commodore of DavenportDockyard. Whilst Neil probably learnt themost from his former head chef at theFishbone – Wayne Bowman.

What is your speciality dish?Pete likes to cook herb crusted rack of Lambwith dauphiniose. Neil likes to cook with fishand particularly fillet lemon sole, stuffedwith vegetables and served with shallotvinegar and spiced potato terrine.

Which chef do you currently admire?We both admire Anthony Bourdain for hishonesty in his book Kitchen Confidential:Adventures in the Culinary Underbelly. He’s not afraid of telling the truth. I can alsoreassure anyone who has read the book thatnothing like that happens in our kitchen.

Where else do you eat out locally?We both recently ate out at Bella Napoli onthe Barbican and enjoyed it very much. Thefood was lovely and presentation was greatalong with the atmosphere.

Is there anywhere you haven't eaten thatyou're dying to try?One of our good friends now works at

Chloe’s restaurant and we would like to tryeating there. Hopefully mentioning him willgive us a good discount when we do getaround to eating there!

If you could cook for two famous people whom would they be and whatwould you cook them?Pete has already cooked for the Queen sotopping that would be hard. It would be funto cook for Lee Evans and we would have todo a pasta dish to help keep his energy levelsup. We would let Sacha Baron Cohen joinhim for a fun-filled night in the Fishbone.

In your experience what is the mostimportant thing about cooking?We both believe in fresh ingredients andpresentation. We make all our own stocks,sauces and desserts, keeping everything asfresh as we can to give our customers a great experience.

What is your speciality dish?I prefer using fresh fish. I think it’s somethingpeople don’t tend to buy a lot and it’s such ashame, as it’s cheaper than most meats plusyou can do so much more with it. Although I don’t have a specialty dish it woulddefinately be a fresh fish dish.

Which chef do you currently admire?Even before Gordon Ramsay became a bigcelebrity chef I’ve always admired hispersonality and commitment.

Where else do you eat out locally?Lewtrenchard Manor in Okehampton.

Is there anywhere you haven't eaten thatyou're dying to try?Louis XV in Monte Carlo, a magnificentrestaurant owned by Alain Ducasse.

Iknow they would give me a good judgmentof the standard of food I’m producing. Which chef do you currently admire? Gary Rhodes because of his dedication andperfectionism and Gordon Ramsay for hissheer showmanship and passion for food!

With such a legacy to hisname, one cannot helpwonder what sort ofperson takes on thechallenge of turning a city

such as Plymouth - 20 years ago - into acosmopolitan and fashionable centre -somewhere people want to be seen eatingand drinking. He is a charismatic man with aflare for creativity and meeting people, thishe tells me is down to his star sign - Pisces.He is also a headstrong and ambitiousbusinessman with a huge ego and a desire tobe recognised and known.

Edmond's appearance speaks volumesabout his personality and his passion forattention to detail in his restaurants. He isimmaculately dressed in an expensive three-piece suit, his hair combed and his shoespolished. He tells me: "Good presentation isessential for a successful restaurant."

And it is upon this basis that Edmond hasbuilt up his empire of vibrant restaurants inPlymouth and Exeter, each one special in itsown way. But Edmond hasn't always had lifeso good. He came to study computerprogramming in England 30 years ago andlived comfortably on money sent to him fromhis father in Iran. But when the revolutionstruck his homeland, Edmond was left withno income and no support. He clearlyremembers one desperate day: "I had gonewithout food for 24 hours and I had nomoney to put in the electricity meter. I wentthrough my settee and found 23p in pennies. Iwent to the local shop and thought, 'whatcan I buy for 23p that will fill me up?' I founddesiccated coconut and I took it home andate the flakes sat at the table telling myself'mmm it's delicious'." In spite of the hardship,Edmond firmly believes he learnt invaluablelessons during those times.

Edmond's first job was cleaning toiletswhile he was at university. He then went onto become the washer-up boy at a nightclub,in Oxford, and it was here that he got his

lucky break. After an interview as "senior"washer-up boy at another club, he was calledback the next day for a second interrogation,where he learnt the company wanted to hirehim as general manager. "I couldn't believe it,"he said. "I tried to play it really cool and said Iwould think about it. I went back to my otherjob and they said I couldn't take it becausethey wanted to offer me a job as generalmanager as well." Eventually he accepted thejob at Oxford's Downtown Manhattan club.And shortly after, he landed the post ofgeneral manager at a leisure club in London.He has never looked back.

"In my restaurants, a lot of my seniormanagement are people who have actuallystarted as a washer upper and I am veryproud of those people as they have followedthe same path that I have. I don't have tailor-made managers - most have started at thebottom like me.

"I like my staff to be very creative people,almost like artists. They have to have freereins. Once you get someone who has gotthe personality you have to leave them freeto put out their personality. Once I've

employed them I leave them to it."So far I haven't failed," he said.Each of Edmond's restaurants has been

new and exciting, introducing another cuisineto the city or a new concept of dining. Whenhe first came to the South West, in 1984, hesaid all you could get was pizza and pasta.Edmond was working as catering manager atthe Theatre Royal but his dream was to havehis own business. Every day he walked pastan empty premises next to the theatre. Hisdream was to turn it into a New York-stylerestaurant where people could pop in anytime of the day, before or after a show.

I'VE NEVER OPENED SOMETHING THAT IS ORDINARY - I BRING SOMETHING THAT IS DRAMATICALLY DIFFERENT. AND IN A SMALL WAY, MAKING PLYMOUTH A MORE PLEASANT PLACE TO EAT.

After five years at the theatre he finally went for it. Sardi’s Brasserie opened in 1989 -it’s now Lorenzos.

The first nine months were very quiet,since Plymouth wasn't quite ready for a"brasserie" - the majority of customers askedif they sold women's underwear. A quickname change - to Sardi’s Restaurant - andbusiness started to boom .

"It really had its heyday," said Edmond. "It was the first place you could eat all dayand that became our concept."

Papa Joe's, in the Barbican Theatre, wasEdmond's second restaurant and that became

extremely popular. It was followed byBougies, Cuba, Shoeless Ed's (Fuel) and the Painter (Chloe's). He then ventured toExeter and opened Havana, Al Farid andCohiba. Returning to Plymouth he createdZucca's and Souk on the Barbican, and FatMama's on North Hill.

Edmond's flare for new and creativerestaurants has slowly encouraged others todo the same. Twenty years ago, he went witha Spanish concept, "because that was the hipthing". He has since brought Mexican, Cuban,Italian and Moroccan cuisines to Plymouth,and his forthcoming restaurants are Asian andCatalan tapas. "I try to keep up with thetrends and the fashion", he said .

And the key to his success?"What I'm good at is manipulating senses. I

feel that if a customer's walking through the

door they have to see something that'spleasing to the eye, something that smellsgood, something that obviously tastes greatand the music you play must fit. When you'vemastered the five senses you have a successfulconcept and you've created the atmosphere.

"It's also important for me to have adesigner restaurant. When I open a restaurant I design it - I have a vision in my head. I designmy restaurants around a particular item offurnishing, it could be a cushion or a vase, andthen everything evolves around that."

Since setting up his first restaurant, Edmondhas seen many "great changes" in Plymouth."I'm glad in a way that a lot of the big nationalcompanies haven't realised the potential inPlymouth so local entrepreneurs have beenleft to get on with it. We've had a free runreally, particularly in the last five years.

"Plymouth businessmen are taking biggerrisks. Before they wouldn't do that. Now,people are more daring and I feel I've beenvery influential in setting that trend.

"Spending £600,000 on a new business is agamble. I've never opened something that'sordinary - I bring something dramaticallydifferent. And in a small way, makingPlymouth a more pleasant place to eat."

Plymouth's future is bright, according toEdmond. New shops are opening and thecouncil's vision for Plymouth is "exciting", he says, although he still struggles with redtape in other areas. "There are a handful ofentrepreneurs who are moving the industryforward, and finally the council have realisedthat the city's dependent on them for itssuccess," he said.

So to all those budding entrepreneurs inPlymouth, Edmond's advice is to "follow yourdream and don't give up".

Look out for Edmond's two new andexciting restaurants coming to Plymouth'sSutton Harbour in May. One is a New York-style, chic, sophisticated and sexy dim-sum bar,called Asia Chic. The other is a contemporary,Catalan tapas bar called Rocco and Lola.

Anybody who has lived in Plymouth for a few years will have heard of Edmond Davari,or at least his legacy of restaurants. In his time in the South West he has opened ninerestaurants in Plymouth and also a handful in Exeter. He has played a pivotal role indeveloping the vibrant gourmet ambience that exists in Plymouth today and his plansfor the future are just as exciting. Story by Helen Wasilewska

throughout the year to take advantage of freshseasonal produce. The meats too are locallysourced, from a traditional butcher inGunnislake, in South East Cornwall. Homemadepork and apple sausages, Westcountry rumpsteak, succulent lamb shanks, Cornish hen andthe best-selling Westcountry faggots are allprovided by the surrounding farms.

True to its name, Fishbone Restaurant & Barhas a good selection of fresh fish - but withoutthe bones. The restaurant scene in Devon has really comeon in the last few years too. Of all the recentopenings I guess Joined Up Whiting is my favourite because it really is a fantasticreflection of what West Country life is all about.

After a tough day at work I love to saunterdown to Sutton Harbour. It's such a pleasure

to gaze at the yachts, breathe the sea air andwatch the swans gliding around the marina.We generally ask for a window seat so that wecan enjoy that beautiful blue light that falls onthe harbour just before the sun goes down.

My wife always orders their thick fish soupand then a fillet steak while I generally go foroysters or mussels and a fresh lobster. It's notat all expensive and the wine list is really wellput together - try the Sharpham, it's afantastic wine. Inside they've got a greatnautical thing going on with sails hung fromthe ceiling and an oyster bar in the shape of aboat with port holes. The staff are reallyfriendly and you can see the chefs beaveringaway in the kitchen. Occasionally one of the

kitchen brigade appears to whisk away alobster from the tank in the restaurant.

Yes Sir! As long as Plymouth keepsproducing places like Joined Up Whiting Ithink I'll always be a West Country boy!

While some firms may feelthat an environmentalpolicy is another restrainton the business, smart-thinking restaurant owners

in Plymouth are realising that creating disheswith a minimal carbon footprint is in factdrawing more customers through their doors.

Plymouth is surrounded by a wealth offresh ingredients. Its coastal position meansthere is no limit to the amount of fresh fishand seafood available. A matter of minutesfrom the city centre and you are surroundedby meat and dairy farms, vineyards, orchardsand an abundance of healthy crops. Bychoosing to serve the ingredients that aregrown and sourced on Plymouth’s doorstep,some restaurants are considerably reducingthe number of miles the food has travelledbefore it reaches your pallate, thereforeminimising the carbon footprint.

Not only does this concept support thelocal farming and fishing economies, itguarantees that the food is fresh and seasonaland therefore of the utmost standard.

With more and more pressure fromauthorities for people to stop and think, and tochoose environmentally friendly options, suchas energy-saving light bulbs, products with lesspackaging and low-emission cars, diners too aresearching for food, which supports this message.

And the added bonus is that it tastes great.Anthony Loheac, manager of Plymouth’s

Piermasters restaurant, on the Barbican, firmlybelieves in sourcing ingredients from thesurrounding area. When the owner of therestaurant took the business on 30 years ago,she couldn’t believe there was nowhere inPlymouth supporting the local fishing andfarming economy. Today, however, therestaurant is renowned for its fresh fishreputation, as well as other meats.

Mr Loheac said: “We make a point herethat everything is really fresh. We don’t havea paper menu, we have a board, as it dependson what catch is brought in. The menu isoften changed throughout the day if a newcatch is brought in. That’s how fresh it is.”

Not only does Piermasters serve fresh fishand seafood, Mr Loheac said that the beef isreared and bought from a Devon farm andthe venison is from Exmoor. The vegetablesare dependent on what is available at theneighbouring farms. “Nothing travels morethan about 30 miles to get to your plate,”added Mr Loheac.

Piermasters attracts the crowds because itis such good value for money. Mr Loheac said:“We always tell diners where their foodcomes from and they are always so surprisedat the quality. And they always come back.”

He added: “Fishermen and people in

agriculture have suffered so much with madcow disease and other problems so it’s reallyimportant that we support them. I think itwould be stupid and suicidal to not work withthese people – they are giving us a fantasticproduct, we would be mad not to use it.”

There are many other restaurants inPlymouth which have adopted this ethos and,in a way, it is bringing the local communityback together, linking farms to the localtraders and restaurants.

“I know every farmer who supplies us byname. You can’t get more dedicated thanthat,” said Tony Bells, owner of the CaliforniaInn, in Modbury, just outside Plymouth. Thefamily gusto for sourcing the best localproduce, plus an unshakeable enthusiasm forthe trade, has transformed the former stagingpost into a lively pub with a loyal followingand a wealth of fresh, seasonable food.

The Tanners brothers, Chris and James, arealso keen supporters of Devon produce, as isJo Hocking, the owner of Chloe’s. The modernFishbone Restaurant at Derriford adds a touchof tradition to its contemporary décor bychoosing local butchers and fish markets forits ingredients. And the traditional slap up“pub grub” has taken on a totally new form.The Ship Inn in Noss Mayo, The Rose andCrown in Yealmpton, St Elizabeth’s House inPlympton St Maurice and the Horn of Plentyin Gulworthy – all are magnets for city folk atthe weekends because the locally-sourcedpub food that they serve is just stunning.

So while some firms still fearenvironmental change as a burden to therunning of the company, most in thePlymouth area are beginning to welcome itwith open arms, reaping the benefits ofquality produce and attracting newenvironmentally-conscious customers.

THEGREENARMY

Protecting and preserving the environment is an issue which is today at the forefront ofpolitical agendas. From generating renewable energy, building carbon-neutral homes, andrecycling domestic waste, there are many ways of reducing the amount of carbon we useon a corporate and an individual scale.
