The FOM 310 food oil monitor measures frying oil quality directly in the fryer. Through regulartests, it is possible to achieve consistently good quality of fried products, in accordance with thefood hygiene regulations (HACCP). The user has the greatest possible assurance that he ischanging the oil at the right time.The measuring range is 0°C ...+220°C (32°F ... 428°F), polar compounds are 0% ... 40%.(see p. 22)

The TFX 422 thermometer is particularly suitable for measuring core temperatures and mea-suring the temperature of deep-frozen food products.The measuring range is -50°C ... +200°C (-58°F ... 392°F). (see p. 7)

The PHT 810 pH meter measures pH values in meat, cold cuts, cheese and liquids. The devicefeatures user-friendly calibration with keypad.The measuring range is 0 pH ...14 pH. (see p. 21)

The TLC 730 Dual Infrared thermometer with laser pointer for food is suitable for fastchecks on refrigerated goods during storage, goods receipt checks and process monitoring.It avoids product contamination by using a non-contact measuring process. The SSX 210 salt meter is used to measurethe salt content in semi-solid food products,such as meat, cold cuts, cheese, salads etc.To achieve this, the electrical conductivity ismeasured, since this is dependent on the saltcontent. It is important that the medium to bemeasured also has a water component. Thismeans that salt measurements cannot be com-pleted in pure oil (does not contain water).

Every dish requires a specific salt content toensure proper taste. The taste of each dish isdifferent, however, which means that the usermust prepare his or her own salt content table.If, for example, it is determined that the optimalseasoning of cured ham yields a value of 86, allfurther hams can be cured and seasoned untilthey reach this value.

With the EBI 90 system, you always have continuous access to allrelevant measurements - no matter where you are. You can have thedata sent to your mobile phone or you can retrieve the data on theinternet.

European law applies since 1.1.2006. The so-called hygiene pack-age replaces corresponding national rules such as the Germanfood hygiene regulations (Lebensmittelhygieneverordnung (LMHV).What is new in this regulation?

· Food safety is monitored at the EU-level. Corresponding national regu-lations are no longer in force.

· The documentation of food hygiene is mandatory. It should, however,be appropriate to the nature and size of the business.

· Raw materials must be stored separately from processed products.

· The temperature monitoring of food products requiring refrigeration isset down as a binding requirement.

· Every business that handles food products must instate a hygienemanagement system in accordance with HACCP.

INTRODUCTIONDuring the production, handling, transport and during the intro-duction of food products into the market, temperature control andthe adherence to specific temperatures play a decisive role incontrolling the undersirable propagation of microorganisms.

In the past, various regulations with corresponding temperature requi-rements for food products have been issued; however, these were notcoordinated. The DIN 10508 was first published in October 2002 andnow revised with respect to the new food hygiene law as well as prac-tical experience.The temperature specifications of this standard aimed at facilitatinguniform procedure. (Regulations according to the ATP agreement areconsidered).

APPLICATION AREAThis standard specifies temperatures that apply for deep-frozen, fro-zen, refrigerated and for food products that a kept warm as well as forice cream.

These temperatures are partially established in statutory provisions, orthey are recommended by the NAL study group on food hygiene.These recommendations are not legally binding. They can be consultedfor one´s own monitoring as well as for official monitoring.

Requirements• Easily perishable food products of animal or plant origin should, as

far as not specified by other regulations, be stored at no higher than+7°C (44°F).

• For packaged food products requiring refrigeration, a temperature ofmax. +7°C (44°F) should be assumed during transport and storage.

• When letting hot food products cool, the cooling down in the rangebetween +65°C (149°F) and +10°C (50°F) should take about 3 h toavoid germ multiplication.

NOTERefrigeration alone can only slow down, but not prevent the multiplica-tion of spoiling agents or disease agents. The multiplication of micro-organisms also depends on the duration of storage as well as addi-tional internal and external factors.

Special characteristics of ground meat** In order to maintain the traditional marketing forms for ground meat, itcan be refrigerated immediatley after processing to a core temperature ofno more than +4°C (39°F). This ground meat may only be brought into circulati-on on the day of the production.The ambient and core temperature of +4° (39°F) also applies for pre-pack-aged ground meat with a consumption date after the packaging is opened.

NoteAlthough some easily perishable food products areexplicity listed by name in the above table, manyother products, for example from the area of pro-cessed meat and fishery products, also fall into thiscategory, but these could not be listed individuallybecause of their diversity. Scope of validityFood companies are obligated, in accordancewith regulation (EC) no. 852/2004 regardingfood hygiene, to meet the general and specifichygiene regulations of article 4 as well as thespecifications regarding hazard analysis andcritical control points in accordance with arti-cle 5. The adherence to suitable temperaturesand temperature control play a decisive role.

This guideline for a good practice in the senseof article 8 of regulation (EC) no. 852/2004includes temperatures for the storage and fil-ling of specific food products of animal originin operations in retail trade in the sense of arti-cle 3 no. 7 of regulation (EC) no. 178/2002.These include in particular the operation ofchain and non-chain foodstuff retail trade aswell as gastronomy operations, butcheries andbutchers shops.The scope of validity and extent of this guide-line are oriented along the rules of regulation(EC) no. 853/2004. This guideline only appliesfor operations in retail trade that are not sub-ject to the application area of regulation (EC)no. 853/2004 and thus the general hygieneregulations (EC) no. 852/2004. In addition, theguideline only comprises product groups thatare relevant with reference to § 7 in connecti-on with appendix 5 chapter VII of the nationalRegulation regarding hygiene requirements inthe production, processing and distribution ofspecific food products of animal origin(Lebensmittelhygiene-Verordnung TierischeLebensmittel, LMHV-Tier).In consequence, this guideline only applies for• operations in retail trade that distribute/sell

self-processed food products of animalorigin to the consumer in loose or self-pak-kaged form;

• retail trade operations that distribute, storeand/or transport food products of animalorigin to other retail trade operations andwhere this constitutes a secondary business.

Temperatures for food products ofanimal origin requiring refrigerationRefrigeration alone can slow down, but notprevent the multiplication of microorganisms.Significant for the absolute bacterial countsare the duration of refrigeration and the refrig-eration temperature. The multiplication speedof microorganisms is also dependent on addi-tional internal (e.g. pH- and AW-value) and ex-ternal factors (e.g. atmosphere).In the table (see page 72) temperatures forsome food groups requiring refrigeration arelisted. The listing only comprises the productareas for which there are explicit temperaturespecifications in appendix III of the regulation(EC) no. 853/2004 or in appendix 5 of the regu-lation for Food hygiene regulation animal foodproducts and that can be differentiated accor-ding to chapter VII of appendix 5.With regard to fishery products and livingshells, reference is made to regulation (EC) no.853/2004 appendix III section VIII no. 2 andappendix III, section VII no. 3.Additional temperature recommendations andproduct groups can possibly be included in therespective guideline for good hygiene prac-tices by the different industry associations.The temperatures named in the table onlyapply for food products of animal origin that inretail trade operations• are transferred to the consumer in loose

form; or• are self-packed and then transferred to the

consumer.

Food products requiring refrigeration in fin-ished packs packed by the manufacturer andprovided with an expiration date or best befo-re date are to be stored and transported in theoriginal packaging at the temperature inaccordance with the manufacturers specifica-tions on the packaging. From the time the orig-inal packaging is opened, for example in thecase of bulk pack, the temperatures of theguideline apply.

Temperature recordingTemperature recording plays an important rolein both internal control measures as well as inofficial monitoring. For internal monitoring, thedetermination of the storage temperature orambient temperature of the products is gen-erally deemed to be sufficient; this makes anon-destructive measurement possible.

F-Value Calculation

Heat treatment of meat essentially has two objec-tives:1. Preserving desired characteristics such as aroma, colour, taste and

structure.

2. Killing off bacteria and microorganisms sufficiently to achieve the de-sired preservability.

Today, the effect of killing off certain microorganisms is expressed bothfor pasteurization and for sterilization using the F-value.For the cooking of meat products, the F-value is applied with thereference temperature (+70°C / 158°F) and the Z-value (+10°C / 50°F).

Meat products which can also be preserved through refrigeration havebeen given a heat treatment known as «pasteurization».Preservation varies from a few days to a few months, and is highlydependent on the storage temperature.Pasteurized products are also known as «semi-conserved» products.At refrigeration to below +4°C (39°F), the product lifetime being tar-geted is 6 months.Investigations have shown that sufficient coagulation (stiffening) isalready achieved at a cooking or core temperature of 60°C (140°F).Although the product is already cooked, this does not mean that it isalready sufficiently well-preserved. For this, a minimum F-value isrequired. To pastuerize effectively (killing off the so-called vegetativeorganisms), temperatures of between +60°C (140°F) and +90°C(194°F) are required.

Products which are to be stored for longer periods without refrigerationneed a heat treatment known as «sterilization». Apart from the vegetati-ve organisms referred to above, it is also necessary to kill off heat-resis-tant bacteria as well. However, that process only starts at temperaturesof over +90°C (194°F).This high cooking temperature produces relatively high levels of damagethrough cooking (damage to the structure and the appearance of de-posits of jelly and fat, as well as quality loss in terms of colour, aroma andtaste).

Sterilization

The key to proper sterilization is adequate killing-off of bacteria.Microorganisms are killed by using heat. To be able to judge whether themicroorganisms present have been killed off sufficiently, in most casesheat-resistant microorganisms are taken as the measure. When proces-sing meat, the organisms concerned are the D-streptococci. The D-strep-tococci begin to be killed off at a temperature of +55°C (131°F).The other microorgaanisms exhibit lower temperature resistance. Themicroorganisms are not killed off all at once; instead, there is a relative-ly exponential pattern.When one talks about killing off microrganisms, then one is talkingabout the microorganisms in the thermal centre.The heat being fed infrom the boiling vessel, boiling chamber or autoclave reaches this centrelast of all.The thermal centre is not necessarily the geometric centre, but is depen-dent on the shape or on the packaging. The type of heat sourcealso determines the position of the thermal centre. Working hygienicallymeans lowering the required F-value.To pasteurize meat products with normal best before dates, F-values be-tween 20 and 80 are required. The precise value depends on the initialbacterial level, the pH-value, the AW-value and the desired best beforedate. If hygiene is not taken so seriously (which is surely the exception),then this has effects on the bacteriological quality of the meat.Working hygienically also means that fewer microorganisms need to bekilled off. The consequence of this, in turn, is that the F-value can also belower.Generally, for pasteurisation the F-value is at values of up to 40. Cookingand measuring the core temperature is not an adequate check. Previ-ously, it was assumed that at a core temperature of +68°C (145°F) meatproducts were cooked sufficiently. However, this traditional view isdemonstrably not necessarily correct.A «Knackwurst» type sausage, for example, which was treated with afinal core temperature of +68°C (154°F), is absolutely not safe to be pre-served. This is also true of pork sausage. A cooked ham weighing 4.5 to5.5 kg with a final core temperature of +68°C is cooked to the point ofbeing unuseable. If these products were cooked with an F-value of 60,the final core temperature for the «Knackwurst» would be around +75°C(167°F), for the pork sausage around +73°C (163°F), and for the hamaround +63°C (145°F). From this, it is clearly apparent that the bestbefore period is not only dependent on the final core temperature, but iseven more dependent on the relationship between the core temperatureand the cooking time.

The measurement of the F-value is simple.With the newly developed ebro® temperature logger, measuring theF-value is very simple. Before the treatment, the probe is inserted in thethermal centre of the product.The core temperature alone doesn´t indicate much about the quality ofthe heat treatment. For a high-quality, safe product, it is absolutelynecessary to carry out the heat treatment while monitoring the F-value.Working with the F-value optimizes the treatment of meat products.

Background Information

Temperature threshold values

After deep-freezing, the temperature must be kept at -18°C (0°F) or lowerat all points until the time the product is transferred to the consumer.The following (upwards) deviations are permissible:· During shipment, short-term fluctuations of no more than 3°C (5°F).

· During local distribution and in deep-freezers in retail trade, deviationsof no more than 3°C (5°F). (§ 2 (4))

· Local distribution is the local delivery of deep-frozen food products toretail trade, hotels, restaurants, installations for communal care, such ascanteens or hospitals, as well as directly to private households. (§ 2 (5))

Atmospheric temperature measurement

· The person or party responsible for transport as well as for the storageinstallation for deep-frozen food products has to ensure that during theoperation of transport equipment or storage installations, the atmosphe-ric temperature of the deep-frozen food products is monitored with suit-able measuring devices.

· These temperature measurements must be recorded at regular inter-vals, so that the progression of the temperature is traceable.(§ 2a (1))

· In deep-freeze installations smaller than 10 m3, the atmospheric tem-perature is to be measured with a clearly visible thermometer. In openrefrigerated cases, the atmospheric temperature is to be measured onthe side of the air return flow at the level of the maximum filling height.(§ 2a (2))

Regulation Regarding Deep-Frozen Food Products (TLMV)With this regulation, the 89/108/EEC guideline has been implementedin German law.

General

· The TLMV applies to all food products whose temperature through suitable freezing processes in all points amounts to at least -18°C (0°F)and with the direction that they are brought into circulation in deep-frozen form. (§ 1 (1))

· Ice cream is not subject to the provision of these regulations (§ 1 (2))

1. General1.1 These Conditions of Delivery and Payment shall apply as binding

conditions to the business relationship as a whole, to the presentagreement, to all deliveries arising from future business transactionsbetween the parties and to other performance.

1.2 Other conditions applied by Customer and not expressly acknowl-edged by us in writing shall remain non-binding for us, even if notexpressly refused by us.

1.3 All other agreements, changes or supplements to agreements andancillary agreements must be confirmed by us in writing. Statementsby our staff and representatives shall be deemed effectivein law only when confirmed by us in writing.

2. Offer and Order Confirmation2.1 Our offers are subject to confirmation. The scope of our obligation to

perform shall be determined solely by our written order confirmati-on.

2.2 Any documents forming the basis of an offer or order confirmation,such as sketches, drawings, cost estimates and other documentati-on, shall be utilised by Customer for the agreed purpose only andshall not be reproduced or made available to third parties by Cus-tomer without our express permission. Said documents shall bereturned to us at our request.

3. Delivery and Delay3.1 Punctual adherence to delivery deadlines assumes the timely supply

of documentation and other necessary information to us byCustomer and furthermore assumes that payment obligations onbehalf of Customer do not fall into default.

3.2 In the case of our inability to comply with binding delivery dates forreasons of force majeure or other unavoidable circumstances suchas war, industrial action, lockout or delay in the provision to us ofparts, goods or services ordered from third parties, Customer shall beentitled to specify an appropriate extension of the deliveryperiod with a minimum of four weeks, after the expiry of which Cus-tomer shall be entitled to withdraw from the contractual agreementin the form of a registered letter.

3.3 Should our delivery of the goods or services be rendered imposs-ibleunder the circumstances given for reasons beyond our control, weshall be deemed exempt from our obligation to deliver. This shall alsoapply if said circumstances affect our operations to such an extentthat our fulfilment of the agreement is hindered.

3.4 Customer shall be entitled to claim compensation against us,whether for withdrawal from the agreement or delay in delivery,in the circumstances given above. This shall not apply in caseswhere gross negligence or intention is imputed to us.

3.5 We shall be entitled to execute part-deliveries.

4. Acceptance and Transfer of Risk4.1 Unless fixed acceptance periods are agreed, Customer shall under-

take to accept the delivery item within eight days of notification of itscompletion.

4.2 If Customer has submitted an order on call, he shall undertake to callup the delivery item – or all items, in the case of multiple orders –within a period of twelve months from the date of ordering. IfCustomer fails to call up the order within this period we shall beentitled to undertake unsolicited dispatch and invoicing of the goods,or to withdraw from the contract and demand the return of any bulkdiscount already granted on the basis of the on-call order for earlierorders.

4.3 Risk shall be transferred to Customer on acceptance of the deliveryitem, in the case of groundless refusal on the part of Customer toaccept the delivery item, or in the case of inaction on the part ofCustomer after the expiry of the time limit given in 4.1 and 4.2above or a specifically agreed time limit for acceptance. If dispatchof the delivery item to Customer or a third party is agreed, risk shallbe transferred when the delivery item is passed to the carriage agent(mail, rail, carrier etc.). In all cases risk is transferred with the com-mencement of use of the delivery item. If we accept goods returnedfor reasons over which we have no control, risk shall lie withCustomer until the delivery item arrives at our premises.

5. Prices and Conditions of Payment5.1 Unless otherwise specified, prices given by us are ex works exclus-

ive of statutory Value Added Tax and packing costs. Packing of ourchoice will be invoiced.

5.2 Our invoices are due net cash 30 days after invoice date. Invoices forrepairs are due immediately, strictly in full.

5.3 Prices are valid for a period of four months after receipt of our orderconfirmation. If longer delivery times have been agreed and prices ofraw materials, wages and salaries, freight or public duties increaseafter conclusion of the agreement, shall be entitled to increase pricesby an appropriate amount.

5.4 If Customer exceeds the time limit for payments, he shall be deemedto be in default from receipt of our first reminder. We reserve the rightto charge default interest to the amount of 3% above the GermanCentral Bank discount rate applicable at the time.

5.5 We are under no obligation to accept bills of exchange, which in allcases shall be deemed to be accepted only when the amount hasbeen credited to our account. We accept no liability for the timely pre-sentation, protest, notification or returning of the bill in the caseof non-redemption. In case of default we shall reserve the right toexercise the claims specified in 5.4.

5.6 If Customer fails to meet his obligations of payment to a significantextent, ceases to render payment instalments or fails to redeem a che-que or bill of exchange, or if any serious deterioration in Customer'sbusiness status comes to our knowledge, we shall be entitled todemand payment in advance and call in all deliveries outstanding.

5.7 In the case of requests for modification or alteration issued on the partof Customer after order confirmation, we shall invoice Customer forany resulting additional costs.

6. Retention of Title6.1 The goods delivered shall remain our property until all accounts

arising from our business transactions with Customer have been sett-led in full. Retention of title shall be upheld if individual claims againstCustomer are included in an open account. A Customer indicating hisstatus as reseller when ordering shall be entitled to resell the reservedgoods as part of normal business transactions; however, pledging orcession by security shall not be permitted.In the case of resale of the reserved goods on credit, Customer shallundertake to secure our rights.

6.2 Claims arising from resale of the reserved goods shall be transferredto us by Customer at the time of conclusion of the agreement concer-ning resale of our delivery; we accept said transfer.

7. Warranty7.1 Defects in the delivery items about which we are informed after the

transfer of risk shall be repaired by us at our own option or replacedby us. We shall also be entitled to replace the goods if repair provesunsuccessful. Written notification of defects must be received by uswithin fourteen days of transfer of the delivery items to the Customerin the case of visible defects, or immediately after discovery in thecase of hidden defects.

7.2 Any alterations or modifications to the goods undertaken by therecipient of the goods shall render null and void all obligation on ourpart to replace the goods. Defective items shall be returned freight andcarriage free and shall be retained for our inspection. If thecomplaint proves justified we shall, at our own option, replace thegoods free of charge and carriage free after return of the defectivegoods, or repair the defective goods. Claims concerning rescission ofthe contract, price reduction or compensation shall be excluded.

7.3 We accept no liability for damages arising for the following reasons:Faulty operation by Customer or a third party, inappropriate or im-pro-per use, non-observance of our operating instructions, chemical, elec-trochemical or electrical influence, alterations or maintenance worknot approved by us.

7.4 Further claims on the part of Orderer shall be excluded, particularlyclaims concerning the reimbursement of damages not arising from thedelivery item itself. This shall not apply in cases where intention orgross negligence are imputed to us.

8. Place of Fulfilment, Place of Jurisdiction8.1 The place of fulfilment for delivery and payment shall be Ingolstadt.

The place of jurisdiction for all disputes, including those involving billsof exchange or cheque processes, shall be Ingolstadt.

8.2 If a condition of these Terms and Conditions is or becomes invalid, thevalidity of all other conditions remains unaffected.
