The best can beseen at Levens Hall and Gardens. Dating from 1694, and the work of MonsieurGuillaume Beaumont, these famous topiary gardens have survived in theiroriginal design. Head Gardener Chris Crowder and his team spend months eachyear carefully clipping the intricate topiary work and giant beech hedges. Amagnificent Elizabethan mansion is the home of the Bagot family, and is filled

with a beautiful collection of fine paintings and Jacobean furniture. The Butteryis worth a stop for tasty home-cooked food, with fruit and vegetables from thegarden in season. WHY NOT LEARN SOMETHING NEW ON VACATION THIS SUMMER, AND

why not learn it at that most hallowed of learning institutions, theUniversity of Oxford? The Oxford Experience is a one-weeksummer course open to all, with no requirements, no exams and

no papers. The program runs from June 30 to August 10 at Christ Church, themost prestigious and beautiful of Oxford colleges. Here participants live inrooms where English prime ministers and poets once lived, dine on High Tablein the magnificent Hall featured in Harry Potter films, and learn about some 60varied subjects, ranging from The Age of Churchill, Oxford Murder, TheVictorian and Edwardian Home, the Gothic Novel, Enjoying the Cotswolds andThe Life and Times of Richard III, to An Introduction to Particle Physics, FromRasputin to Putin, Political Philosophy, the Operas of Verdi and the Pleasures ofPoetry. Classes, with a maximum of 12 students, are made up of Anglophilesfrom all over the world, with the youngest in their thirties, the oldest in theirnineties. During the week there are tours of Christ Church and Oxford, as wellas excursions to stately homes, cathedrals, museums and such, riverside walks inChrist Church Meadow and boating on the Isis (as the Thames is called inOxford). At night there might be a pub crawl, a special lecture, wine and croquetin the Master’s Garden, a performance by Morris Dancers, and Evensong in thecollege chapel, which is also the Oxford Cathedral. Once a week each participantis invited to dine on High Table and on the final night there is a champagnereception in the Cathedral Garden (with much picture taking) and a gala dinnerin Hall. Weenjoyed a wild taste of Spain in Carmel at Mundaka Restaurant. Mundaka islocated in a small charming courtyard off a side street in downtown Carmel,and is named after the province of Biscay, a community of the Basque Countryin northern Spain. As if we were exported to the coast of Spain, Mundaka wasfull of dance, laughter, music, and locally-grown produce, fish, meats and

cheeses. This is surely the place to land if you are tired ofthe walking the more touristy streets of downtown. Greetedby charming waiters, the owners and the chef, we took a seatto music being played by a local DJ. We felt like we were inthe hip cities of Barcelona or Madrid, and delightful smellsfrom the kitchen filled the air. Mundaka is an intimateculinary experience decorated with the crafts of Spanishculture, with a small stand-up bar. Extraordinary wine from

the wild grapes of the Canary Islands was poured. The delightful chef-owner,Brandon Miller, greeted the many locals who came to drink, dance and enjoythe tastes of regional cuisine and culture. Mundaka’s menu states the followingwith respect to the type of cuisine you can expect: “fresh, local, organic, biody-namic, free-range, line-caught, sustainable, fair-trade, homemade, from scratch.NO: antibiotics, hormones, pesticides, high fructose corn syrup, artificialanything.” Changes to the menu occur during the week to reflect seasonalvariety of the food grown in Monterey County and harvested from theMonterey Bay. The menu has its own vernacular that speaks to the spices of theMediterranean. The Paella Valenciana “che” with traditional saffron rice andseafood paella (that included farmed clams from Washington and regionally-caught ridgeback shrimp) was served as our main course, and was delicious. Wealso ordered tapas that included a delicious wild arugula, braised pepper, andboiled egg salad with Basque cheese and “ugly” (heirloom) tomatoes withhomemade mozzarella cheese and fried garbanzo beans. Fandango is a very special old-styleEuropean-style restaurant situated in the historic downtown of Pacific Grove.Pierre Bain, the restaurant owner and proprietor, is a truly charming Europeanhost, who has overseen the cuisine and every detail of the restaurant with hisdazzling beauty of a wife for over 20 years. Pierre was born in Provence at theHotel Bain in Comps-sur-Artuby, the inn his family has owned and operatedsince 1737. His French background shines thorough in every aspect ofFandango, from the abundant fresh flowers, to an impressive wine collection ofover 1800 varieties. The décor feels as though you are in France, with a softbreeze of the Mediterranean. We decided to try Sunday brunch at Fandango, andwere not disappointed. The “Filet Mignon Fandango,” with broiled medallionsof beef topped by two perfectly poached eggs, béarnaise sauce, vegetables &potatoes, was delightful. We also feasted on a rare delicacy: wild abalone,prepared with a lemon caper sauce, lightly breaded. A specialty dish atFandango, this is something worth trying. Each dish came with lovinglyprepared vegetables and roasted potatoes. We will be back, hopefully for dinnerthe next time. If you are staying in Carmel or Monterey, Fandango should be adestination.
