Dear Parents and Students,

Welcome to Summer Excursions in Learning 2012! We are pleased to offer many expanded programs in July and several new classes in August.

For starters, there are some changes in our July programs. Junior Culinary Camp has been renamed: “The Junior Culinary Institute” and has been expanded to include two levels of instruction. There are two sessions of an introductory level (Junior Culinary Institute I) and one session of an advanced level (Junior Culinary Institute II: Advanced). Also by popular demand, we have created a culinary workshop for younger students (grades 2-4) called “Make Your Own Ice Cream and Gelato!” In this workshop, students will learn how to create ice cream, sherbet, gelato and sorbet from scratch! They’ll also create many of their own sundae toppings such as caramel sauce, hot fudge, and homemade waffle cones.

Also in July, Technology Camp I returns with its ever popular “Lego Robotics” and “Explorations in Aerodynamics.” Technology Camp II offers two brand new courses this year: “Going Green with Technology” and “Magnetic Levitation and Hovercraft.” In addition to all these programs offered in July, we have also added a second session to “Adventures in Leadership.”

August brings along our two-week academic enrichment program for gifted, talented and high-achieving students. This portion of our programming has been renamed: “The Summer Academy for Gifted and Talented Youth.” This summer, the academy offers 31 courses to choose from; 11 are brand new!

TECHNOLOGY CAMPS

Technology Camp IJuly 9 -13Lego Robotics

How does a robot move? Does it sense what is going on around it and react? Does it know what it’s going to do from the beginning? Let’s explore the fascinating field of robotics. Students will learn about different sensors. We will have a hands-on experience with all aspects of robotics and teams will design, build and program a robot out of Legos® to perform certain tasks. Teams will compete to see which robot can successfully complete the most tasks.Instructor: Jesse Wilkinson

Explorations in AerodynamicsRockets, gliders, hot air balloons—ever wonder how they get off the ground? During this class you will explore, design and fly rockets, paper airplanes, balsa gliders and hot air balloons. Test different airplane designs so you can observe how minor folds and adjustments change flight patterns. Explore how different design modifications impact rocket flight characteristics as you launch both paper rockets and bottle rockets. Witness how changes in envelope volume increase the payload capacity as you fly a hot air balloon. All this and more will keep students looking to the sky!Instructor: Gregory Kane

NEW Going Green with TechnologyAre you interested in learning how technology can help our

environment? Explore engineering and green technology as we learn how they can improve our natural environment. You’ll learn about the future of construction and automobile design. In this hands-on class students will build and test solar racers, create a variety of different wind mills, and explore geothermal and clean energies. Let’s go green! Instructor: Behn Sikora

NEW Magnetic Levitation and HovercraftEver hear of a vehicle that runs on a track but has no wheels?

Ever see a vehicle that can run as well on water as it does on land? Well here is your chance. Students will be exploring Magnetic Levitation “Mag Lev” and Hovercraft vehicles, designing one of their own and building it. While these models are small versions of the real vehicles, the full size hovercraft and mag lev vehicles are being used around the world. These represent some of the means of transportation that are embracing green technologies. Join us to learn more about what the future has in store! Instructor: Gregory Kane

Junior Culinary Institute I2 Sessions: July 9-13 or July 16-20

Attention junior chefs! Join us in MCC’s professional kitchens to cook up delicious dishes. Prepare picture perfect vegetables—healthy kebabs, sculptures and garnishes. Try puffy popcorn balls, pretzels, salt-dough creatures and grilled pizzas with homemade sauce, loaded with cheese and vegetables. Perfect your skills with imaginative “animal cakes,” fruit smoothies and pot stickers. The prodigies of Junior Culinary Camp 2012 will please parents and guests with a delicious feast for parents and families at our final day. Take your culinary skills to the next level! In this class we will be working with mother sauces, emulsified dressing, breakfast cookery, desserts and advanced cooking techniques. You will also learn how “tongue mapping” can increase your knowledge of seasonings and flavorings. Every day we will have a theory lesson on the topic of the day, create the food and have lunch! At the end of the session invite your parents to a sit down dinner where you the chef create and serve the meal! Make Your Own Ice Cream and Gelato!Grades 2-4: July 6 or 7 • Grades 5-8: July 14

Class 9 a.m.-4 p.m. • Ice Cream Party 4-4:30 p.m. Join us to create different types of homemade ice cream! We’ll be making French and American style ice cream, sorbet, sherbet and granite, and learning about the difference between them all. Students will also make their own edible bowls, homemade waffle cones and toppings such as caramel sauce, hot fudge, marshmallow and whipped topping. Parents – join us from 4-4:30 p.m. for an ice cream party to sample all of the amazing treats we created all day! Make sure to bring containers and a cooler to bring home samples of everyone’s creations! Students please pack a lunch and drink. ADVENTURES IN LEADERSHIP

Adventures in LeadershipToday’s world needs great leaders! What does it take to be one? Come find out by spending a week with us on the Manchester Ropes Challenge Course for an unforgettable experience. You will have the opportunity to develop your leadership skills through a series of fun, challenging adventure activities that will change your life forever! With a focus on safety first, participants will join with others to overcome group challenges while pushing their personal limits. The course is run by highly-trained, experienced Ropes Course Facilitators and professional educators and coaches that know how to awaken that inner leader within you! This class is a balance of physical activities, such as tree tag and nature hikes, and quiet times, such as sponge painting to mimic clouds and building bird houses out of sticks. various uses of math in their everyday lives. Students will be engaged in all areas of math, from measuring the height of objects around the room to conducting a shape scavenger hunt. Each day will also focus on a different piece of literature, followed by the exploration of math in the book. Then, students will discover practical applications of math in their world. In this class students will explore poetry in many different ways. They will get to read some of the work of great poets and discover how they used words to convey imagery and meaning. reading terrific texts! We’re looking for enthusiastic readers and culinary wizards! Students will be reading a variety of chapter books, poetry, magazines, picture books and biographies, and then making foods found in these books. For example, green eggs are perfect with a Dr. Seuss author study, and food from other cultures will be prepared based on Cinderella stories from around the world. Crafting Clay (Grades 2-4)Create lifetime treasures while having fun. We’ll learn how to coil, pinch, roll slabs and sculpt clay, all while creating colorful fish, critter bowls, mobiles and more. Ed Argenta is currently a Teacher Consultant with the Connecticut Geographic Alliance and a Nautilus Educator with the Sea Research Foundation. He is a retired public school teacher, having taught Science at Vernon Center Middle School for many years before becoming the Science Department Head at Rockville High School where he taught Marine Science, Environmental Science, and Biology. He joins Excursions with his class, “Diving in with NautilusLive I and II.”

Lisa Argenta is currently an Art Educator at Bolton High School where she teaches many course in the visual arts. She is CT certified K-12 and has over 10 years of teaching experience. Lisa will be teaching Watercolor and Printmaking!

Linda Armstrong, a mother of two enthusiastic Excursions’ teaching assistants, returns to Summer Excursions for her tenth year. She now works as a University Assistant at Eastern Connecticut State University’s J. Eugene Smith Library. She is a Library Assistant for the Bolton Public Schools. She will be supervising “A.M. à la Carte.”

Chris Buonacquisto currently teaches media and television production at Odyssey Community School. He is CT certified in Technology Education K-12, and has 11 years of teaching experience. He returns with “Web Design” and “Computer Game Design.”

Amy Burris earned B.A. degrees in Art and French before gaining her teacher certification. She has taught abroad, and in area schools since 1993. She returns with “Exploring Art through Nature” and “Design Your Own Comic Book.”

Jodi Clare earned a B.S. in Elementary Education and an M.S. in Early Childhood Education at Central Connecticut State University. A kindergarten teacher in Manchester, she returns to Excursions with her colleague Claudine Polochanin to co-teach “Build Your Designs … Test Your Creations.”

Samantha Cyr is currently a teacher of the Hearing Impaired for Bloomfield Public Schools. She has a bachelor’s degree in Early Childhood Education and a master’s degree in Deaf Education and Aural Habilitation from the University of Hartford. She has experience teaching grades K-5. She returns with “Animals, Animals, Animals,” and “Ooey Gooey Science and Art.”

Jennifer DeRagon is an enthusiastic 5th grade teacher at Nathan Hale Elementary School in Manchester. She holds a master’s degree in Special Education from St. Joseph’s College and recently graduated from the University of Connecticut with a 6th year diploma in Curriculum and Instruction. Jen loves working with kids of all ages, motivating students so they become invested in learning by helping them engage in higher level, real-world problems. In addition to teaching, Jen tutors students from kindergarten through high school, teaches hip-hop at Manchester School of Dance Arts, and coaches the Nathan Hale Math Olympiads team. She joins Excursions with “Devouring Books” and “Math in the Real World.”

Carole Dibble is a Nationally Board Certified Teacher with more than 13 years’ experience working with students. She enjoys reading, writing, and attending sports events like baseball games and track meets. She co-authored the book 100 Easy, Wacky, Crazy Activities for Young Children. She joins Excursions with “Poetry Café” and “Math Mysteries.”

Thomas Ebersold has a sixth year degree in Gifted and Talented Education from the University of Connecticut, and a sixth-year degree in Reading from Southern Connecticut State University. He has been a TAG teacher for eight years and is entering his ninth year as an Excursions instructor. He will be teaching “Computer Creations” and “Science Safari.”

Winthrop Ford earned an M.S. in Science and is known as the “Bug Man” to many school children throughout Connecticut. He has been a consultant, team leader and guest speaker in many public school enrichment programs. His passion for science and engaging teaching style, have captivated young and old audiences alike. An avid collector, he has had the privilege of having two insect species named after him. He returns to teach “Things that Go Bump in the Night” and “The Violent World of Plants.”

Scott Goldsmith is a school psychologist who enjoys facilitating leadership and adventure programs for children. He looks forward to promoting leadership and problem-solving skills with his colleague Michael Kakalow in the one-week “Adventures in Leadership.”

MEET OUR INSTRUCTORS

Jim Griffin worked in the insurance industry for many years before earning his Master’s in Education and beginning a second career as a teacher. He taught in the gifted and talented program at Lebanon Elementary School where he won an award as the District Teacher of the Year. He teaches grades 2-5 in the gifted program at Somers Elementary School. He returns to Excursions with the popular “Running Your Own Business.”

Richard Hoyer earned an M.A. in Educational Media and Television. He is a fine art, portrait and location photographer who has had more than 20 years of fun and profit in the photo world. His work is exhibited regularly at galleries around the State. An instructor at MCC, he returns to Excursions with an animation course “Computer Animation,” and “Digital Photography.”

Michael Kakalow has a bachelor’s degree in Physical Education and a master’s degree in Sports Management. He’s taught Physical Education and Health in the Manchester public school system for 12 years. In addition to teaching, Michael enjoys coaching middle and high school sports and has been a ropes facilitator for over six years. He joins his colleague, Scott Goldmith, in the one-week “Adventures in Leadership.”

Gregory Kane earned both undergraduate and graduate degrees in Technology Education. Before becoming a Consultant for the Connecticut Department of Education for grades K-12, he taught in the Manchester Public Schools. Currently a faculty member at Central Connecticut State University, he shares an ongoing interest in robotics with students through participation in the VEX Robotics competitions. He will be teaching “Technology Camp I: Explorations of Aerodynamics” and “Technology Camp II: Magnetic Levatation and Hovercraft.”

Rachael LaPorte is a graduate of Johnson and Wales (Culinary Arts) and Central CT State University (Education). She has traveled across the country working as a chef in various styles of cooking. Having decided that teaching was her vocation, she returned to her alma mater, Windham Technical High School to teach Culinary Arts. She will be teaching “Junior Culinary Institute I and II” and “Make Your Own Ice Cream and Gelato.”

Theresa McKeown teaches gifted and talented students in West Hartford’s QUEST Program. An elementary school teacher in Math Quest, she also engages students in creative problem-solving exercises such as those she uses in “x-+ Got Math +-x ?”.

Ashley Pereira is currently completing her master’s degree in Secondary Education Biology at Eastern CT State University. She is also a recent graduate of the University of Connecticut with a B.S. in Animal Science. Ashley has been involved in a wide range of activities with young children including Mad Science, 4-H programs, and summer camps, and has a great interest in all kinds of science. She will be teaching “An ‘Ologist’ a Day” and “Exploring Animal Science.”

Claudine Polochanin earned a B.A. in Social Work and then an M.Ed. A teacher in the Manchester school system, she was nominated for the Disney Teacher of the Year Award. She joins her colleague, Jodi Clare, in “Build Your Designs … Test Your Creations.”

Marjorie Porter is a “highly qualified” science teacher, committed to supporting the development of innovative learning environments. She has participated in many technology-based professional development programs and has embraced the use of technology as a teaching and learning tool. She joins Excursions to teach our innovative class: “iP.O.D.S.– Presenting Observations and Discovers in Science.”

Behn Sikora is a Technology Education teacher at Silas Deane Middle School. He has a B.S. in Technology Education and master’s degree in Educational Leadership from Central CT State University. Mr. Sikora teaches Engineering, Electronics and Technology at SDMS and Robotics at Wethersfield High School. Mr. Sikora will be teaching “Technology Camp II: Going Green with Technology,” “Stop-Animation!” and “Lights, Camera, Action!”

Rich Storrs is a middle school Social Studies teacher in East Hampton. He has his 6th year degree in Educational Leadership and is certified to teach grades 7-12. Mr. Storrs has 15 years of classroom teaching and outdoor education experience. He is creative and innovative about cross-curricular activities and interested in new ways to learn and teach. He joins Excursions with his “Big Adventures, Crazy Challenges!”

Tony Susi earned B.S. and M.S. degrees in Music Education. He is presently the Band Director at Captain Nathan Hale Middle School in Coventry. He has served as a guest clinician for several State Jazz Bands, festivals and conferences. He returns with “MCC Junior Jazz Ensemble.”

Janine Turgeon holds a master’s degree in Ceramics. She has taught ceramics to children of all ages at the Farmington Valley Arts Center and the after-school program in Marlborough, CT. A professional ceramics artist, she has exhibited in several arts centers around the State. She returns with “Crafting Clay” and “Advanced Ceramics.”

Jesse Wilkinson earned a B.S. in Technology Education and is a middle school technology teacher in South Windsor. An avid model builder since first grade, he continues his interest in technology as an advisor to both the FIRST Robotics Team and the FIRST Lego® League. He returns with “Technology Camp I: Lego Robotics.”

MEET OUR COORDINATORCarleigh Cappetta is a CT certified teacher in elementary education grades K-6 and theatre arts grades K-12. She has taught grades pre-K, K, second and fifth, as well as three years experience as a K-12 Theatre Teacher. Carleigh was a teacher and administrator for the Hartford Stage Company as their Education Associate for Community Based Programs, as well as the Youth Director for their production of A Christmas Carol in 2008 and 2009. She was also the founder and director of The Cow Town Players, a teen summer theatre troupe in North Branford.

• A letter describing your needs and any extenuating circumstances that would help us to evaluate your financial situation.

REFUND POLICYIf your child cannot be accepted into the program, or their class is cancelled due to low enrollment, you will be notified and your payment will be refunded in full.

All refunds must be written and submitted by email, fax or mail (address & fax above). A $70 fee will be assessed for all refund requests received after June 18, 2012, for July Programs and July 2, 2012, for August program. Refunds are issued by the State Comptrollers’ Office and take approximately four-to-six weeks to process.
