It all began in Mexico, and, con-trary to what is believed, it wasnot in the middle of the country.The first civilization which har-vested and consumed cacaowere the Mayans more than2,500 years ago. One of themany facts is that the namecacao comes from this civiliza-tion, cac in Mayan means red, inreference to the color of the skinof the fruit, and cau expressesthe ideas of strength and fire.

The Aztecs learned from theMayans that the harvesting anduse of cacao, as well as the namechocolate, comes from their lan-guage. They called the cacao“cacahuat” and “xocolatl” - a

For centuries the delight of“xocolatl” was spread about andknown among other culturesclose to the Mayans and theAztecs. This valuable resourcewas appreciated as a magicaltonic that provided strength andenhanced sexual appetite. Cacaoseeds were used as currency forcommerce. The xocolatl was acommon food among Mayansand Aztecs and they prepared itin the following manner: broadbeans were first toasted and thenminced to make a paste that wasmixed with water. This mix washeated up until the fat of thecacao was on the surface, and, tothis base additional ingredientswere added according to perso-nal taste. Among those ingre-dients were pepper, achiote,vanilla and honey as sweetenerand corn flower to absorb thecacao’s fat with the result beingan extremely energetic, but sour,spicy beverage.

Years later, after the Aztecsreceived the cacao from theMayans, they attributed to it adivine origin, as the Aztec legendstells us that in the region of Tulalived Quetzalcoatl, the good andwise god that representedknowledge and wisdom.Quetzalcoatl gave his people,among other benefits, the fruitof cacao, for the Aztecs were

Elxocolatl era un alimento muycomún sobre todo entre losAztecas y Mayas, ellos lo prepara-ban de la siguiente manera: lashabas eran primero tostadas yluego trituradas para hacer unapasta que después se mezclabacon agua, esta mezcla se calenta-ba hasta que la manteca o grasadel cacao subía a la superficie, aesta preparación de base se leañadían según los gustos, dife-rentes ingredientes como chile,achiote, vainilla, miel como en-dulzante y harina de maíz comoemulsionante básico para absor-ber la manteca de cacao, el resul-tado era una bebida sumamenteenergética pero también muyamarga y picante.

Los aztecas, años después dehaber adquirido el cacao de losmayas, le atribuían un origendivino, ya que una de las leyen-das aztecas relata que en losalrededores de Tula vivía Quetzal-coatl dios bueno y sabio que re-presentaba el conocimiento y la

assured that cacao seeds camefrom heaven. The magnificentgarden in which the cacao treeblossomed served Quetzalcoatlas a tool to teach agriculture,astronomy, arts and medicine tohis disciples.

This provided Quetzalcoatl withpopularity and esteem among theAztec villages. Nevertheless, therewas the god of evil, Tezcatlipo-ca, who envied Quetzalcoatl andgave him an alcoholic beverageto discredit him with the assu-rance that it would heal his heartand rejuvenate him. The goodgod accepted the drink, and dueto it’s effect on him, lost cons-ciousness for a couple of days.When he woke up, he felt deeplyashamed of his choice since hehad sinned for his vanity. Quet-zalcoatl could not bear the shameand for the good of his people,decided to go very far away, andabandon the Aztecs. Before lea-ving, he promised to come backon the year of “cuño”, whichtook place once every 52 years inthe calendar he created for hispeople. (It is more accurate thanthe one we use today).

Unfortunately, in 1519, the ex-plorer Hernan Cortes disembarked

Restringido sólo a laélite aristocrática, pocoa poco adquiere presti-gio como estimulante yse extiende por todaEuropa, hasta el sigloXVII, México per-maneció como el mayor produc-tor de cacao, y el cultivo se exten-dió al resto del mundo, a pesarde su expansión, la cantidad deproducción de cacao fue relativa-mente pequeña. It was at the beginning of thenineteenth century that thechocolate became more populardue to the appearance of thechocolate industry. Around thattime, the possibility of separatingthe greasy part (cacao fat) fromthe cacao paste was discovered,an operation that leaves somewhite powder that is soluble inwater or milk (cacao powder).Despite this discovery, the peaklaunch happened after twosmall discoveries:

In 1840, a Swiss man, RutdolfLindt, mixes the cacao fat withthe cacao paste and creates asweeter chocolate than the onethat was known. In 1875 a Swissman, Daniel Peter, discovers anew milk condensation processthat another Swiss man, HenryNestle, uses in 1905 to make thefamous chocolate with milk.

Nowadays, chocolate is pro-duced and consumed in manycountries all over the globe, witha consumption rate of approxi-mately twelve million tons peryear. Additionally, cacao and its

derivates are used to makecookies, cakes, ice creams,beverages, pharmaceutical andbeauty products.

Now it is time to enjoy thiselixir of the gods, and in thisedition, we have developed aselection of the best dessertsin the Riviera Maya that arecreated with high quality

No es hasta el inicio de la eracontemporánea, principios delsiglo XIX que el chocolate se hacemás popular gracias a la apari-ción de la industria chocolatera.Por aquel entonces se descubre laposibilidad de separar la parteaceitosa de la pasta de cacao (lamanteca de cacao), operaciónque deja unos polvos secos y so-lubles en agua o leche (cacao enpolvo). A pesar de esto, la puntade lanzamiento no se consiguehasta después de dos peque-ños descubrimientos:

En 1840, el suizo Rudolf Lindtmezcla la manteca de cacao conla pasta de cacao, obteniendo unchocolate más dulce que es elque usamos actualmente y en1875 el suizo Daniel Peter des-cubre un nuevo método de con-densación de leche, que otrosuizo, Henry Nestlé en 1905, apli-ca al chocolate naciendo así elfamoso chocolate con leche.

Actualmente el chocolate es fabri-cado en muchos países y consu-mido en todas partes del mundo,con un consumo de alrededor dedoce millones de toneladasanuales, adicionalmente el cacao ysus derivados son usados parahacer galletas, pasteles, helados,bebidas, productos farmacéuticosy cosméticos.

Norman Sutton, esposa de Richard D.Sutton, uno de los directores de lacompañía. La Sra. Sutton amó el golf yvivió en Cancún por más de 20 añoshasta su muerte en 1998. En sunombre se estableció un fondo parabrindar apoyo a proyectos de benefi-cencia en Cancún.

Con el paso de los años, el torneo hacrecido considerablemente y es hoy endía una de las competencias más impor-tantes en México para damas golfistasamateur. Se juega de acuerdo con lasreglas británicas Stableford.

Aparte de la competencia y la con-vivencia con otras damas golfistas, elpropósito de este torneo es apoyar a lasinstituciones y grupos que atienden alos sectores más necesitados de lasociedad. Este año las ganadoras deltorneo entregarán donativos al Hos-pital General de Cancún y al GrupoDesafío de Quintana Roo A.C., unaasociación que trabaja en la lucha con-tra el cáncer.
