    The progress of mankind and civilization has, since history began, been

    closely alike with his diet. Even today the leading action and nations capable

    of becoming strong are those, which can obtain food and abundance for their

    people.

    It has been often said that the cow is a machine that

    converts raw materials (plants) into food in a surprisingly efficient manner.

    There are more than ! breeds of cattle and " breeds of buffaloes in the

    world. India has #$ and %$ distinctive breeds of cattle and buffaloes

    respectively. The characteristic hump, long ears and bushy tail distinguish

    the Indian cow from the others. &orld over cows dominate milk production

    but in India, the buffaloes are the ma'or contributor to the total milk

    production. India has the worlds largest (#*) buffalo population. ++* of

    milk animals in India are buffaloes and they contribute over $* to the

    Indias milk production. India has over .+ crore breed able cows and +."

    crore breed able buffaloes (%!- cattle census) thats about one cow or

    buffalo for every ten of us.

    ILK ESSENTIAL FOR NOURISH ENT:

    /ilk is natures ideal food for infants and growing children in our country,

    e0cept in rare cases of lactose intolerance. The important place milk

    occupies in our diet has been recognized since 1edic times, and all modern

    research has only supported and reinforced this view. In fact, milk is now

    considered not only desirable but essential from the time the child is born.

    The baby is recommended to be breast-fed until it is weaned and thereafter

    given cow2buffalo2goat2sheep or similar domesticated mammals milk till he

    What is Milk?

    /ilk may be defined as the whole, fresh, clean, lacteal secretion

    obtained by the complete milking of one ore more healthy milk animals,

    e0cluding that obtained within % days before or days after calving or such

    periods as may be necessary to render the milk practically colostrums-free

    and containing the minimum prescribed percentages of milk fat and milk-

    solids-not-fat. In India, the term 4milk, when un5ualified, refers to cow or

    buffalo milk, or a combination of the two.

    These are accessory food factors which are essential for normal

    In %%# a co-operative union was established in 7llahabad and after

    that all over the country such unions were established.

    Cince %+ long distance refrigerated rail transport of milk from

    7nand to 6ombay was started.

    8asteurization and bottling of milk as large scale for organized

    distribution was started at 7arey (%$), &orli (%A%), ?alcutta

    (%), 9elhi (%), and /adras (%A#).

    Establishment of /ilk plants under :ive Dear 8lans for 9airy

    development all over India. It was undertaken with the dual ob'ect for

    increasing the national level of milk consumption and ensuring better

    returns to the primary milk producer.

    the third largest dairy co-operative amongst the dairy cooperatives in the

    country. In Couth India it stands first in terms of procurement as well as

    sales. Fne of the core functions of the :ederation is marketing of /ilk and

    /ilk 8roducts. The 6rand 5Nandini6is the household name for 8ure and

    :resh /ilk and /ilk 8roducts.

    consumers in various Towns2cities2Gural markets in arnataka.

    The first ever &orld 6ank funded 9airy 9evelopment 8rogram in

    the country started in arnataka with the organization of 1illage ;evel

    9airy ?o-operatives in %+. The 7/B; pattern of dairy co-operatives

    started functioning in arnataka from %+- with the financial assistance

    from &orld 6ank, Fperation :lood II H III. The dairy co-operatives were

    established under the 779 pattern in a three tier structure with the

    in %, the Bnion is constantly striving to further the dairy development

    and marketing activities in its milk shed area. It is a /ilk 8roducer :armers

    organization for dairy development activities. The philosophy of this co-

    operative milk producers organization is to eliminate middlemen and

    organize institutions owned and managed by the milk producers by

    themselves, by employing professionals. 7chieve economic of scale H to

    ensure ma0imum returns to the milk producers, at the same time providing

    wholesome milk at reasonable price to urban consumers. Bltimately, the

    comple0 network of cooperative organization should build a strong bridge

    between masses of rural producers and millions of urban consumers and

    as an independent body 6angalore 9airy, a 'oint venture of BI?E:,

    3overnment of India H 3overnment of /ysore was dedicated to the people

    of arnataka Ctate of "#rdJanuary %A by the then =onble 8rime /inister

    ;ate Cri ;al 6ahadhur Chastri'i. The 6angalore 9airy scattering over an area

    of " 7cres of land, the 9airy had an initial capacity to process $,$$$ liters

    of milk per day. This 9airy was handed over to arnataka 9airy

    9evelopment ?orporation (99?) in 9ecember %. 7s a part of Gural

    /ilk Ccheme of /ysore, =assan H udige under Fperation :lood-II and

    then transferred to arnataka /ilk :ederation (/:) in /ay %!+ as a

    successor of 99?. To cater to the growing demand for milk by the

    consumers of 6angalore ?ity, the capacity was increased to %. lakh liters

    per day under the Fperation :lood-II during %!% and later increased to #.

    lakh liters per day under Fperation :lood-III during %+.

    The 6angalore Brban H Gural 9istricts /ilk 8roducers ?o-operative

    Cocieties Bnion ;td., (67/B;) was established in the year %. The milk

    shed area of the Bnion comprises 6angalore Gural and 6angalore Brban

    9istricts, having "A%% revenue villages. The Bnion has organized %,+

    9airy ?o-operative Cocieties (9?C) in ",$# villages, thereby covering !*

    of the total villages in these two districts. In these 9?Cs, there are ", ,%A"

    The 67/B; reserves the right to cancel this order. If the cancellation of

    the order is due to non compliance by the suppliers with any or all the

    terms and conditions of this order, the supplier shall be responsible for

    any direct and2 or indirect loss that the 67/B; may suffer in making

    at /ega 9airy has been stopped. ow the milk collected from the villages

    is immediately sent to the near by chilling centers as milk, in its natural

    state, contains numerous micro organisms which double in every % to "$

    minutes which leads to deterioration of milk., to avoid this and ensure good

    5uality raw milk, the milk is chilled and the chilled milk is transported from

    these chilling centers to /ega 9airy by tanker. 7t the dairy society, a milk

    sample is taken and tested for the :at and C: percentage and any impurity.

    Testing of milk sample is done using 3erber method of testing milk fat and

    lactometer for C:. In many village coops now milk is tested using

    electronic milk tester and C: analyzers. :armer members are paid on the

    5uality of the milk they pour (fat and C: *age in milk) rather than the
