Level 1 Award in Food Safety in Catering has been developed to ensure that employees from all food sectors are equipped with a basic knowledge of food safety to enable them to produce safe food.

This course is recommended for anyone who works in a food production premises handling low risk food - butchers, fishmonger, bakery, confectionary & kiosk staff handling low risk products, service personnel, stewards, porters, grocery / supermarket staff, delivery persons, food delivery vehicle drivers, etc.

Course duration: 4 hours

Course cost: AED 150 per person

AED 60 extra for Dubai Municipality Certificate attestion charges per company per session.

The aim of the Level 2 Award in Food Safety in Catering qualification is to provide candidates with knowledge of the basic food safety practices that are essential in the catering industry.

This course is recommended for anyone who works in a food production premises or in any retail outlet selling food products, which are medium & high risk such as . This course is for bakery, confectionary & kiosk staff handling medium & high risk products, chefs, caterers, restaurant managers, food handlers in nursing homes, day care centres, schools & hospitals.

Course duration : 6 hours

Course cost: AED 300 per person

AED 60 extra for Dubai Municipality Certificate attestion charges per company per session.

Those who operate in a supervisory role in the workplace need to be aware of their responsibilities with regard to food safety. Most food poisoning outbreaks can be traced back to a failure of those responsible for communicating and implementing hygiene standards.

This course is recommended for supervisors, team leaders and line managers working in the kitchen, catering and restaurant industry.

The qualification is also suitable for those owning / managing small catering businesses.

Examination: The examination has 2 parts. A 30-question multiple-choice examination and a written examination. Pass mark is 60 out of 100 across the two parts of the exam. Merit will be awarded to 70% and above and Distinction will be awarded to 80% and above.

The duration of the examination is 2 ½ hours.

This qualification is suitable for supervisors, team leaders and line managers working in the catering industry, in Dubai, UAE which are of low / medium risk in nature.

Course duration : 2 days

Course cost : AED 600 per person Course content: Ensuring food safety by managing personal hygiene & prevention of food borne

This qualification is suitable for supervisors, team leaders and line managers working in the catering industry and for those owning / managing small catering businesses in Dubai, UAE, which are of medium or high risk in nature.

Course cost : AED 900 per person

Those who obtain more that 75% in the examination can pay AED 200 extra for International certification in Level 3 Award in Supervising Food Safety in Catering.

Food businesses are legally required to have documented food safety programs in place for the safety of their customers. The Hazard Analysis Critical Control Point (HACCP) system is the internationally accepted methodology for assuring food safety and is also used to ensure product quality.

The course will be especially useful for those involved in maintaining HACCP in a catering environment, and for those who are or will be part of a HACCP team.

Course duration: 4 hours

Course cost : AED 125 per person AED 100 for 5 persons or more

The Level 2 Award in HACCP for Catering is a qualification aimed at caterers and other food handlers. The course is intended for candidates already working in catering and those who are preparing to work in the industry. The course will be especially useful for those involved in maintaining HACCP in a catering environment, and for those who are or will be part of a HACCP team.

Course duration: 1 Day

Course cost : AED 1,500 per person

Course content: Importance of HACCP based food safety management systems

Hazard Analysis Critical Control Point (HACCP) is a systematic, preventive approach to food safety. In order for a HACCP system to work effectively, it is essential that all staff are aware not only of the safety procedures, controls and monitoring that must be followed but also why they are necessary.

This qualification is for Staff who may be in charge of all, or part, of the process within a food business or in the catering industry and for those who wish to train in HACCP implementation.

Course duration : 3 days

Course cost: AED 2500 per person Course content: Importance of HACCP based food safety management systems

Level 3 Award in HACCP

Level 3 Award in Food Allergen Management

The Level 3 Award in Food Allergen Management for Caterers is a qualification aimed at all those responsible for the purchase, delivery, production and serving of food in the catering industry.

Learners gaining this qualification will know and be able to apply the knowledge relating to the control of food ingredients, including allergens, at all stages of food purchase and production. They will understand the process for ensuring that accurate ingredient information is available for consumers at point of sale and service and the controls that need to be in place in order to reduce the risk of allergen contamination.

Course duration: 1 day

Course cost: AED 700 per person

Course content: The different roles in ensuring that food ingredients and allergens

Common allergens and intolerances

Procedures relating to the accurate communication of ingredient information, from supplier to consumer

Hygiene considerations with regard to allergen and ingredient control

Procedures relating to the control of contamination and cross-contamination of allergenic ingredients

Examination: This qualification is assessed by a learner workbook set by HABC and marked by the centre.

Entry Requirements: There are no prerequisites for this qualification, however It is strongly advised that learners already hold the Level 2 Award in Food Safety in Catering, or equivalent.

Classes for this program will be booked on registration and payment of fees and the date will be fixed based on mutual convenience of the learner and trainer.

Level 3 Award in Effective Auditing and Inspection Skills

This qualification is intended for use by persons who are, or may be, involved in practical auditing or inspection of food premises, including internal or third party auditors, enforcement officers and persons responsible for verifying HACCP. The main emphasis of the qualification is on practical inspection and audit skills in the workplace.

Course duration: 1 day

Course cost: AED 700 per person

Course content: Overview to effective auditing and inspection Auditing and inspection skills/knowledge, including equipment and checklists

Planning/preparation, the audit process,opening/closing meetings and corrective actions

Preparation, approval and distribution of the report and revisits

Entry requirements: There are no prerequisites for this qualification. However, it is recommended that candidates have suitable technical knowledge of the relevant practices and procedures which will be subject to audit/inspection. E.g. Level 3 Food Safety/HACCP qualification.

Examination: This qualification is assessed through a 30-question multiple-choice question examination. The duration of the examination is 1 hour.

Successful learners must achieve a score of at least 20 out of 30. Learners will achieve a Merit if they achieve 25 out of 30.

1) Definition:1.1 For the purpose of these conditions of enrollment, commencement of registration means: The first day of registration for the course in which the student is enrolled.

2) Course Fees:2.1 May be paid in AED / USD by Cash, Cheque, Credit / Debit Card or by Electronic Fund Transfer (EFT), to ICCA

Dubai account, which ever convenient.2.2 Full Course Fees to be paid before the commencement of Course program. Schedule of classes will be given

only upon receipt of full payment.2.3 ICCA Dubai will not be responsible for any money paid to any representatives or other individuals not

formally authorized by ICCA Dubai. 2.4 All bank transfer charges and other incidental charges, as may be applicable, are payable extra, in actual, by

the candidate.

3) Cancellation and Refunds: Fees once paid are not refundable or transferable.3.1 The Course Fees will be refunded only in the following circumstances, if:

a. ICCA Dubai cancels the course in which the student is enrolled. In this case, ICCA Dubai will refund the Course Fees on a pro rata basis within 14 days from the date of notice of course cancellation;

b. All refunds will be made directly to the student concerned, upon receiving a formal request for the same in writing.

4) Cancellation of a Class / Change of Date:4.1 The intimation for Cancellation of a Class or request for Change of Date for a class must be made a minimum

of 48 hours in advance of the class date by phone / email / sms. Failing which the same will be construed as a No Show, resulting in the cancellation of the class and 100% forfeiture of the class fees.

5) Course Program and Class Plans: 5.1 Contents of one Course program are not interchangeable with the contents of another Course Program, in

short any kind of combination of plans, is not permissible.

5.2 Contents listed within a class are not changeable; any request for a change would be understood as a individual Class and charged for accordingly.

5.3 Students joining as a private group, must continue as a group and cannot breakup as individuals for classes.

6) Validity of Course Programs: 61 The ICCA Dubai Food Safety Course registration is valid for a period of 3 Months from the date of payment

and all classes must be completed within the given period, beyond which the program would be considered cancelled and all Fees thereof, forfeited.

7) Standard Operating Procedures, Class Schedules, Code of Conduct & Rights: 7.1 Students are requested to read the Food Safety Courses - Procedures & Policies, provided upon request, at

the time of enrollment.

7.2 Kindly adhere to the class time schedules.

7.3 It is important that a student or students of a group do not disturb the other classes around in any manner.

8) Compliance, Termination & Rights: 8.1 ICCA Dubai reserves the right to expel a student for serious breach of discipline. Upon which the Course fee

will not be refunded.

8.2 As part of continuous development and quality delivery, ICCA Dubai reserves all rights to amend the course content, course cost, schedules and procedures & policies.

9) Grievance Resolution: 9.1 ICCA Dubai has policies and procedures in place for the hearing of student difficulties and grievances.

9.2 If you are not satisfied with the outcome, an independent dispute resolution can be availed, under the jurisdiction of Dubai, UAE laws and agree that damages are limited exclusively to a refund of the course fee for the course selected and that they are entitled to no other consequential, incidental or punitive damages.
