How to make Chicken Burrito
Ingredients Required
•flour tortillas - 4 large •chicken thighs - 1 pound (boned and skinned)•refried beans - 1/2 cup•chopped onion - 1/2 cup•chopped tomatoes - 1/2 cup•chopped bell peppers - 1/2 cup•chopped garlic - 1/2 teaspoon•Salt and pepper - to taste•Sour cream•Guacamole•Pico de Gallo or salsa
Heat a pot. Add the tomatoes, chicken, bell
pepper, onions, salt, and pepper to the pot and cook over medium heat.
Mix and coat the chicken with the ingredients. Cover the pot with a lid and cook for 45 minutes. Stir occasionally to
allow the chicken to braise.
Remove from the heat and allow the
chicken to cool.
Shred the chicken into pieces with
your hands or a fork
Heat the refried beans in a saucepan over medium heat for 5 minutes or until it gets warm.
Use a frying pan or griddle to heat the flour tortillas. Fry for 1 minute on both sides.
Spoon a scoopful of beans in the center of
the tortilla. Spread it out vertically.
Add 1cup of the chicken mix to the tortilla. Sprinkle this out along the refried beans.
Add your toppings. Don’t forget the guacamole, salsa, and sour cream.
Fold in each side of the tortilla. Just continue to roll until the center is
resting on the other end.
Serve hot!
