1. First weigh and measure all of the ingredients.

2. Sift the flour, cinnamon and mixed spice into the bowl and rub in the butter.

3. Next, take the wooden spoon and stir in the currants, mixed peel and yeast.

4. Now make a hole in the centre of the flour mix and pour in the water, milk and beaten egg.

5. Mix everything together to form a sticky dough, then knead on a floured surface for five minutes until

the dough becomes soft.

6. Next, place the dough in a large bowl, cover with a slightly damp tea towel and leave to rise in a warm

place for one hour.

7. After one hour, remove the dough from the bowl and knead for another five minutes until there are

no air bubbles left in the mixture.

8. Take the dough and divide into six equal pieces and shape into round buns. Place on a large greased

baking tray, making sure there is plenty of space between each bun.

9. Pre-heat the oven to gas mark 6 or 400 °F (200°C). Cover the buns with the tea towel again and

leave for 30 minutes until they have doubled in size.

10. Now it is time to decorate the buns. Mix the extra flour and water together to make a dough. Roll out

the mixture and cut into thin strips long enough to cover the top of each bun.
