Spinach & Bacon Stuffed Beef TenderloinYield: 24 servings

1½ pounds sliced SYS CLS bacon, cut crosswise into ¼-inch pieces

3 small onions, diced¼ cup minced garlic cloves6 tablespoons WHLFARM unsalted butter3 tablespoons fi nely chopped fresh

tarragon leaves1½ pounds baby spinach¾ pound SYS IMP cream cheese, cut in

small pieces2¼ cups Italian seasoned dried

breadcrumbs1 tablespoon SYS CLS fresh lemon juice Kosher salt and IMP/MCC ground

black pepper to taste3 (3-pound) BCH IMP center-cut

beef tenderloins Olive oil

1. In large skillet, cook bacon over medium-high heat until crisp. Add onions and cook until onions begin to soften; add garlic and cook 1 minute, stirring frequently. Add butter and tarragon, and cook until butter is melted. Stir in spinach and cook until spinach is wilted. Remove from heat; stir in cream cheese, breadcrumbs, lemon juice, salt and pepper. Transfer spinach mixture to 2-inch hotel pan and refrigerate 30 minutes or up to 1 day.

2. To butterfl y beef, cut 1 tenderloin lengthwise down center, but do not cut all the way through, leaving ½ inch uncut. Open beef and lay fl at between plastic wrap on cutting board. With fl at end of meat mallet, pound beef to fl atten to ½-inch thickness. Remove plastic wrap, and evenly spread 3 of spinach mixture over beef, leaving about 1½-inch border around edges. Starting at one side, roll up beef and fi lling to form a pinwheel. With twine, tie beef crosswise at about 2-inch intervals. Tie beef lengthwise

with second piece of twine, threading through crosswise ties. Repeat with remaining tenderloins and fi lling.

3. For each tenderloin, heat large skillet over medium-high heat. Sprinkle beef with salt and pepper. Add oil to skillet and sear beef 1 minute on each side or until outside is browned. Place beef on sheet tray and roast at 375° for 35 to 40 minutes or until internal temperature reaches 135° for medium-rare. Let beef stand 10 minutes before removing twine and slicing to serve 8.

Cranberry- Walnut RugelachYield: 8 dozen cookies

Rugelach Dough 1 pound SYS IMP cream cheese, softened1 pound WHLFARM unsalted butter,

softened½ cup WHLFARM sour cream1 cup powdered sugar2 teaspoons salt2 teaspoons SYS CLS vanilla extract5½ cups SYS CLS all-purpose flour plus

additional for dusting

Cranberry-Walnut Filling2 cups finely chopped dried cranberries2 cups walnuts, toasted and finely

chopped1 cup granulated sugar plus additional

for sprinkling2 teaspoons IMP/MCC cinnamon

½ cup SYS CLS honey¼ pound WHLFARM unsalted butter,

melted and cooled

1. Prepare Rugelach Dough: Beat cream cheese, butter and sour cream on medium speed until light and fl uff y, scraping bowl occasionally. Add powdered sugar, salt and vanilla, and beat until combined. Reduce speed to low; gradually beat in fl our just until blended. Gather dough into ball and divide into 12 equal pieces. Flatten each piece into a disk and wrap tightly with plastic wrap. Refrigerate 2 hours or up to overnight.

2. Prepare Cranberry-Walnut Filling: In medium bowl, combine cranberries, walnuts, sugar and cinnamon.

3. In small bowl, heat honey in microwave oven until heated through. Sprinkle work surface with fl our and roll out 1 disk into 9-inch circle. Brush dough with some of the honey. Sprinkle dough with 3 tablespoons fi lling; lightly press fi lling into dough. Cut

dough into 8 equal wedges. Starting with curved edge, roll each wedge into jelly roll shapes, and place, point side down, onto parchment paper-lined sheet trays. Repeat with remaining dough, honey and fi lling. Brush cookies with melted butter and sprinkle with sugar.

4. Bake cookies at 350° for 20 to 25 minutes or until golden brown. Slide cookies from parchment onto wire racks to cool. Store in tightly covered container at room temperature up to 1 week or in freezer up to 3 months.

Holiday Brie in Puff PastryPrep: 15 minutes plus freezing and standingBake: 25 minutes • Serves: 10

e cup shelled SYS CLS pecans3 cup packed dark brown sugar3 tablespoons heavy cream All-purpose fl our for dusting1 sheet frozen puff pastry, thawed as label directs1 wheel (15 to 16 ounces) Brie cheese1 large egg yolk

1. In large skillet, toast pecans over medium heat 5 to 6 minutes or until fragrant and lightly browned, stirring occasionally; transfer to plate to cool. In medium bowl, toss brown sugar, 1 tablespoon cream and pecans.

2. Line rimmed baking pan with nonstick foil or parchment paper. Lightly fl our work surface. Unfold puff pastry sheet on fl oured surface, and with rolling pin, roll out pastry into 12-inch square. Spoon pecan mixture onto center of pastry sheet and spread mixture to about a 5-inch circle. Place cheese wheel on top of pecan mixture; fold pastry up and over cheese to enclose cheese wheel. Place cheese, seam side down, on prepared rimmed baking pan.

3. In small bowl, whisk egg yolk and remaining 2 tablespoons cream. With small brush, evenly brush pastry with egg mixture. Freeze 30 minutes.

4. Preheat oven to 400°. Bake brie 25 to 30 minutes or until pastry is golden brown. Let stand 20 minutes before serving. Serve with crackers, apple and pear slices, or veggies.

Meatballs with Tomato-Herb BBQ Sauce

Meatballs1 package Arrezzio Meatballs

Tomato-Herb BBQ Sauce1 tablespoon olive oil2 garlic cloves, crushed with press ½ cup diced yellow onion1 can (14.5 ounces) diced tomatoes with basil,

garlic and oregano, undrained1 cup barbeque sauce¼ teaspoon ground black pepper¼ cup fi nely shredded Parmesan cheese Chopped fresh basil and Italian parsley leaves

for garnish

1. Cook meatballs according to package directions.

2. Prepare Tomato-Herb BBQ Sauce: In large skillet, heat oil over medium heat. Add garlic and onion, and cook 5 to 6 minutes or until onion is soft. Add tomatoes and barbeque sauce; simmer 5 minutes or until heated through. Stir in pepper. Additional barbeque sauce may be added, if desired.

3. Place meatballs on serving plate. Top meatballs with Tomato-Herb BBQ Sauce, sprinkle with Parmesan and garnish with basil and parsley.

Baked Three Cheese Manicotti Prep Time: 30 Min Cook Time: 45 Min • Serves: 4

Ingredients8 Pasta LaBella Manicotti Shells1 pint part-skim ricotta cheese8 oz shredded mozzarella cheese3/4 cup grated Parmesan cheese2 eggs1 tsp dried parsley salt to taste ground black pepper to taste16 oz spaghetti or pasta sauce

DirectionsCook manicotti in boiling water until done. Drain, and rinse with cold water. Preheat oven to 350˚F. In large bowl, combine ricotta, mozzarella, 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well. Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce. Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese. Bake 45 minutes, or until bubbly.

3. Stir in beef and pork. Cook, stirring occasionally, until meat is browned, about 15 min.

4. Stir in paprika, chili powder, salt and pepper. Cook, stirring frequently, until very fragrant, about 2 min.

5. Stir in tomato juice. Cook over low heat, stirring occasionally until meat is cooked through and very tender, about 20 min. Heat oven to 325°F.Remove meat mixture from heat, drain fat and stir in peas.

6. Pipe ¼-oz of mashed potatoes in bottom of 40, 9-oz ramekins. Divide meat mixture on top of potatoes. Pipe remaining potatoes over meat mixture.Bake until golden brown, about 25 min. Serve immediately.
