Step 1
Preheat oven to 400 degrees. Add veggies, olive oil, garlic, salt and pepper to a baking sheet and toss to coat. Roast in a single layer for 12–15 minutes.
SStep 2
Meanwhile cook pasta al dente according to package directions. Reserve 1 cup of pasta water before draining. Add drained pasta to large bowl or pot.
Step 3
LLower oven temperature to 375 degrees and reheat Texas Roadhouse® Herb Crusted Chicken for 7–10 minutes.
Step 4
WWhile chicken cooks, add chopped red onion to a skillet with a bit of olive oil and saute over medium heat until onion is translucent, about 5 minutes.
Step 5
AAdd roasted vegetables, onion, chicken, lemon juice and all herbs to the pasta. Toss to combine. Add reserved pasta water a little at a time to achieve desired consistency. Top with desired amount of parmesan cheese and enjoy!
