SALMON SKEWERS WITH POMEGRANATE AND BALSAMIC VINEGAR GLAZE This is one of the well-known old favourites with a little twist – pomegranate and balsamic vinegar glaze instead of a very commonly used soya derived glaze. The combination of pomegranate and vinegar glaze works just heavenly together making this dish one of my all time favourites. And above everything, it’s healthy too: packed with omega-3 fatty acids, proteins, insoluble fibre, B and many other vitamins while still being low in fat. My whole family loves this easy to make nutritious and highly flavoursome recipe.

CORN AND COD SOUP This light and easy to make Asian-inspired soup is bursting with masses of nutrients and flavours. The sweetness of sweet corn combined with the subtle flavour of the cod and aromatic flavours of herbs make this dish one of my favourite soups of all time. Cod is an excellent source of easily digestible proteins, iodine, selenium and B vitamins while sweet corn is packed with magnesium, manganese and C vitamins. This is a soup for all seasons and is best served as a wonderfully delicious appetizer or as an indulgent and flavourful main course

GRILLED TUNA STEAK WITH WHITE BEANS AND CHICKPEA MASH I love to make this dish with a grilled tuna steak as long as the tuna is from a non-endangered species. If you cannot find any, it also works a treat with a grilled organic salmon steak. Tuna is naturally rich in omega-3 fatty acids and is also packed with selenium, which has proved beneficial for the health of the skin as an anti-inflammatory. On the other hand, the flavoursome and creamy chickpeas and butter beans combination is a healthy source of dietary fibre, proteins and key vitamins and minerals. Chickpeas are rich in folate, copper and manganese while butter beans are a good source of iron and potassium. So healthy and delicious!

POACHED COD WITH SWEET PEAS PUREE Delicious, light and simple, this poached cod and sweet peas dish is packed with proteins and protective phytonutrients. Puree of green peas, having a starchy texture and being sweet in taste, delicious and healthy alternative to regular mash potatoes. This dish is very tasty, easy and quick to prepare as well as pleasing to the eye due to its bright colours.

CHOCOLATE MOUSSE WITH BLUEBERRIES This is an indulgent and rich chocolate dessert made in minutes, without any flour, sugar, eggs, dairy, soya or nuts but with plenty of healthy nutrients and tons of flavour. This really does sound too good to be true, but the richness and smoothness of avocado, the bitterness of raw cocoa powder and the sweetness of date syrup and fresh blueberries blend together to create an irresistibly delicious chocolate dessert loved by all. I like to serve it chilled in a small cute espresso cup, decorated with a piece of fresh fruit. Raw cacao powder acts as a slight antidepressant by promoting a production of the ‘feel good hormones’ in the body and is also packed with antioxidants. Avocados are naturally rich in energizing B vitamins and easily digestible monosaturated fats, date syrup is a good source of iron, potassium and magnesium while beautiful blueberries are bursting with vitamins C and E, antioxidants and zinc.
