style school

With a unique curriculum, blending a progressive focus on business management with all the artistic tools an

aspiring student needs, The Colorlab Academy of Hair in Bel Air prepares women for a successful future.

BeautyLaunching a Career in the

Industry

No beauty school drop outs here. Harford County's only beauty school is leading the way in beauty education.

The Colorlab Academy of Hair in Bel Air, has come a long way from it's humble beginnings, largely in part to the current Dean and owner, Clare Santiago. Her background was a perfect mix of business and beauty which prepared her for this leadership role. Clare and her husband, Raymond, own and operate Unique Auto Body in Fallston, and her mother, Hrissi Alevras, owns Color Lounge Salon in Hickory. Her formal education prepared her for a career in nursing, but her mother encouraged her to get her cosmetology license. "You just never know when it might come in handy," said her mother. Even though she had no plans to use it, Clare took her advice and received her license in 2000.

Her mother received her cosmetology license at the old International Beauty School, which some of you might remember, was perched atop the 7-11 on Route 1 for many years. The original school was founded in 1982, but in 2003 Clare's parents bought the academy at it's current location on Archer Street in downtown Bel Air, right behind it's original location. Her father added a second story, and the school continued to train local women, as well as provide a clinic for local patrons.

As it turns out, Clare's Mom was right. When the economy started to change, Clare made the decision to go to work with her Mom at the Color Lounge. It wasn't long before her parents asked her to take a look at the Beauty Academy and see what she could do to update their programs and improve their overall curriculum and practices.

Three years ago Clare decided to buy the academy from her parents, and threw herself into the challenge of updating the facility. Absconding with her best employee from Unique Auto Body, she brought in Barbara Buckley as her right-hand woman. The two started a complete overhaul on the school and launched a re-branding campaign. The first thing to change was the name. The ColorLab Beauty Academy was inspired by Clare's encouragement of her students to be mad scientists with color. "It's all about the color." said Clare. "We use only Wella, Nioxin and Sebastain products, and we encourage our students to be creative when using them", she concluded.

The rules were the next thing to change. Students used to come and go as they pleased, and as you might expect with a group of young girls, you never knew when drama would erupt. A half day orientation was developed by Clare

and her staff to explain what was expected of the students. Motivational speaking is part of the every day curriculum and focus is on the spirit of cooperation and mutual support. With staff always on hand and Clare's door always open, students maintain a real sense of camaraderie.

The school always taught the basics needed to earn a cosmetology license, but Clare expanded their curriculum to give her students the basics for a successful career, which includes financial responsibility and business skills. Booking clients, selling product, resume writing, working the front desk and controlling their income through repeat business and referrals, is covered in ColorLabs Nuts & Bolts program.

Finally, the clinic was overhauled to a full-service salon. Students had always "practiced" on the local population, but the experience had been lacking in many ways. Clare strove to make the experience feel more like a salon, to benefit both the students and their clientele. Senior students provide every service imaginable to local patrons who benefit from the great service at substantially discounted prices. Instructors work with students and clients every step of the way to guarantee the students success, and the clients satisfaction. When the students mentioned they needed more men to practice on, Clare declared every Wednesday "Free Men's Haircut Day". They have a promo/special for everyday of the week. You can find them online at our website or stop in to grab a calendar. "I wanted the experience to be as real for the students as possible... show them what it feels like to work in a busy salon, and then teach them how to thrive in that environment", said Clare

Not only is ColorLab Beauty Academy the only beauty school in Harford County, Clare has raised the level of education to one of the best

available anywhere. They have just been added as a Wella Signature School, there are only 29 others in the country. "Or goal is to prepare these girls to go anywhere in the field of beauty and succeed," said Clare.

So what does a ColorLab education entail? Every student is given a comprehensive beauty kit when they enroll, complete with their own practice head. The curriculum which is taught in theory, lecture and demonstration, comprises 1,500 hours of education. Students spend their first 240 hours in the classroom as Freshman. They study theory, practice on their model heads, and practice on each other. Topics include hairstyling, manicuring, permanent waving, hair relaxing, chemical pressing, coloring, draping, fingerwaving, waxing, soft curl permanents, facials, make-up artistry, hygiene, bacteriology, cells, sterilization, anatomy, and professional ethics, just to name a few.

The next 180 hours are spent on the salon floor. Shadowing the Seniors and working closely with staff, the Juniors learn more advanced skills while performing manicures, shampoos, eyebrow waxing and practicing the basics. Students take turns working the front desk and scheduling appointments. A small student to teacher ratio guarantees that students are getting the support they need to function in a real-world scenario, and ColorLab clients leave satisfied.

Seniors spend their remaining 1,080 hours working in the salon with their instructors, honing their newly learned skills on real clients. Guest speakers and field trips, like the one to the NY Hair Show, add excitement and inspiration to the lessons. Vidal Sassoon, M•A•C Make-up and other companies provide other outside-the-classroom learning experiences. Students aren't the only ones who benefit from this type of education. Instructors are constantly updating their knowledge and keeping abreast of current trends. Some of the staff will be traveling to California this February to take their training to become a Vidal Sassoon Academy, which is their next goal.. "It would be a huge honor, and a real benefit for our instructors and students," said Barbara.

Some more trendy techniques taught at the ColorLab are chalking (think tie-dye color), ombre, feathers, fantasy extensions and color hair threads. "Braids are big too this year, they were all over the runway," said Clare. "We also teach our students how to work with ethnic hair, it's important for them to be able to perform any of these new techniques on any hair type," she concluded.

At each stage students are evaluated to make sure they are ready to proceed to the next level. The ultimate goal of their education is to pass the Maryland State Boards and receive their cosmetology license, so the first Tuesday of every month is State Board Day. At the real exam, the students are given a 100-question written test pertaining to theory, the remainder of the test is practical technique. The students must demonstrate their skills exactly as described by the board moderator. Practice days work just like the real thing. Students must show up on time, show their ID's and pass the test. By the time a Senior has graduated they have run through the practice drill twelve times. "Our graduate success rate is almost 100% on the first try. The girls are prepared, and it shows. We're proud of every one of them," said Clare.

When students graduate from the ColorLab Academy, they are ready to start their careers, or continue their education and specialize in a specific area. If they are planning to get a job in a salon, their instructors have prepared them to be discerning in their choice of potential employers. Is the salon clean, do they play the right music, is customer service an important part of the job? If not, than maybe it's not the right salon for them. Many students choose to go on and continue their education for a myriad of potential careers in the beauty industry. "We tell all of our students that a cosmetology license doesn't mean you'll be standing behind a chair. You can go on and work on movies, do make-up for movie stars, become a rep for a beauty based company and travel all over the world. The sky is the limit and your ColorLab education will open the door," stated Clare.

If you are interested in a career in beauty, you couldn't find a better foundation than the education offered at ColorLab Academy of Hair. New classes start every month, and with day and evening sessions, it can fit into anyones'' schedule. The finacial aid office works with prospective student and helps evaluate the options available to them. They explain the financial assistance options, help with grants and acquiring student loans.

If all you need is a little pampering, than you can't go wrong at the ColorLab Salon. The services are top-rate, but you can't beat the prices. How does $35 sound for a haircut, blow-dry and make-up package? Manicures are $8 and pedicures $18. They use Wella color and color services start at $40 for a retouch. For more information on the ColorLab Academy of Hair and a complete list of salon services and prices, log onto their website at www.colorlabacademy.com.

While many young girls were daydreaming of a future Cinderella-style wedding or beauty pageant in which they are adorned with a

towering diamond tiara, Heather Ziehl of Bel Air never had those kinds of dreams. “I definitely never thought I would be in pageants”, Heather said, expressing continued disbelief over her new title of Mrs. Maryland. She was crowned on November 3, 2012 when she competed as Mrs. Northern Chesapeake Maryland America 2012 against four other contestants.

It was Heather’s second try for the title, which is open to married Maryland women in their 20’s to 50’s. Heather, who is 35, and a lifelong resident of Harford County, lives with her husband Michael and 15-year-old stepdaughter Brianna, who has Down Syndrome. The pageant winner learned from an early age exactly what tenacity looks like. Brought up by her single mother who never had the opportunity to follow her own dreams because she was always focused on providing for her daughter, Heather is quick to say her mother has always been a role model; teaching her to be fiscally responsible and independent.

Though these days she’s known as the bubbly statuesque blonde, the pageant winner says it was a slow transformation that brought her to where she is today. That physical transformation would begin with a 50-pound weight loss just two years after she graduated from High School. The turning point for the future head-turner would be one born in self- discovery. Fed up with being overweight and feeling sluggish, Heather began researching diet and exercise in an effort to improve her health. By then creating what she describes as a modified version of the popular weight-loss program Weight Watchers and combining it with regular cardio workouts, she reached her weight loss goal.

At the time, still a very young woman, she enrolled at Harford Community College studying business, Heather says she was still unsure of what she wanted to do with her life. But the physical transformation sent her confidence skyrocketing. It turns out that confidence would become the secret ingredient to Heather’s many future successes. Landing jobs in promotions and marketing, with only experience and her magnetic personality backing her, Heather found herself enthusiastically working in the tradeshow industry where her beauty and confidence were key attributes to success.

When she reflects on that time, Heather recalls things going along much as she had planned. She met up with a former high school friend and kindled a romance that would lead to her intimate wedding day. Skipping the lavish and large ceremony one might imagine for a pageant-type, Heather and her husband Michael opted for a small wedding at the Bellagio Hotel in Las Vegas, Nevada where the two were wed in front of the hotel’s famous fountains; a tribute to their joint love of the famous film “Oceans 11”, in which the fountains serve as the backdrop in several popular scenes.

"All of a sudden, everything was ripped away,” Heather said, explaining how she and her husband went from a two-income household to living on his salary alone. “I was looking for work, but couldn’t even land interviews”.

3Harford STYLE Winter 2013411

Just when Heather thought she had accomplished her own version of the American Dream, she joined the ranks of many other American’s suffering from the crumbling economy, and lost her job in the tradeshow industry due to downsizing.

“All of a sudden, everything was ripped away,” Heather said, explaining how she and her husband went from a two-income household to living on his salary alone. “I was looking for work, but couldn’t even land interviews”. Heather says that time in her life gave her a deeper appreciation for her husband’s willingness to support her, and also a stronger drive to forge her own way. “I had become an instant housewife, without a choice”. It was something Heather had never considered for herself.

Shortly after, in what she describes as a “fluke”, Heather launched a networking organization in Bel Air in an effort to help herself and others find job opportunities. The group consisted mostly of women, who enjoyed each others company and formed strong friendships. One day while spending time with girl friends, Heather would jokingly refer to her networking group as the “True Housewives of Bel Air”, mocking the popular TV reality series of a similar name. She then took it a step farther, having black tank tops designed, emblazoned with the name across the front. She and other women from her social circle began wearing them around town. And then, much to Heather’s surprise, the name caught on within the community and women she didn’t know began approached her asking if they could purchase a matching shirt, or participate in the ladies’ many outings.

Heather, always thinking of ways to promote her way to the next big thing, began seeing an opportunity for the “True Housewives of Bel Air” to be more than just a networking group. After all, if so many people were paying attention to the ladies donning black shirts, then maybe she could capitalize on all that attention and somehow focus their efforts on local charities, small businesses and nonprofit events.

By syncing up with Bel Air’s First Friday events and the Bel Air Downtown Alliance, Heather and the “True Housewives” began providing groups of volunteers to nonprofit and charity events in Bel Air. Once she brought a clearer mission to the “True Housewives”, Heather noticed the group’s name could sometimes puts people off, especially other women, giving the impression that the volunteers may be similar to the outrageous personalities portrayed in the reality TV show. In an effort to avoid misrepresentation of a group of what Heather says is extremely dedicated volunteers, few who are even housewives, she recently decided to rebrand her group by launching a contest for a name that better represents the group and its community-minded goals. Heather says she would like people in the community to help her decide on a name this time, and she will soon be announcing details about the competition on her Facebook page.

Much like her ability to create a volunteer organization nearly by mistake, Heather’s

energy and knack for self promotion scored her the Mrs. Maryland title and then

promptly landed her a long-awaited career opportunity. Now serving on the Events

Committee for the Northern Chesapeake Region Chapter of The Arc, Heather found

herself involved with an organizationthat has the goals that align with her

Mrs. Maryland platform. Creating inclusion for individuals with intellectual and

developmental disabilities like her young stepdaughter Brianna, so they have more

opportunities in the workforce.

Though she says she is still learning all of the ways she can use her crown to benefit causes she believes in, Heather says there are a few ingredients she considers necessary in making anything a success when it comes to promotions. The backbone of her career this far, Heather says networking is key. All it takes is a quick glimpse at her Facebook page to see this is something she mastered long ago, with daily posts to her followers including inspirational quotes and event announcements.

Heather says hands-on experience in any business or venture is also a key to success. And perhaps the ingredient Heather has used the most of-something she likes to call “hustle”. She says “hustle” is much like it sounds, moving quickly but also always going above what people expect. Sometimes that means making one more phone call than expected of you, or developing one more new idea, she says. Heather says even after applying all of these skills, there must be a balance so that being enthusiastic never becomes obnoxious.

Heather has certainly mastered that balance, as evident when she exhibited grace and poise in the state pageant. And now just a few months after that win, she’s already intently set on the next goal: the Mrs. America competition set for August 2013. She says she would have been unable to compete in the Mrs. Maryland pageant without the support of many local businesses that donated their time, services and funds to sponsor her. And for the next pageant, she will need even more support and has already begun seeking more supporters.

With a full plate, Heather spends her time first and foremost, as a wife and mother. The rest of her time is spent providing marketing and events consulting services to local businesses, Mrs. Maryland appearances, volunteering in the community, and promoting The Arc and several other Intellectual & Developmental Disabilities organizations, hoping to ultimately create more opportunities for those with IDD. She says she intends to use her title as Mrs. Maryland as an opportunity to “create the ultimate level of awareness” for those with IDD, like her stepdaughter Brianna.

Maintaining her fit physique and polished image requires upkeep, much of which she credits to her personal trainer and friend Debra Curry, who taught her the discipline and skills required to achieve what Heather says is the best physical appearance she’s ever had. Pageant judges agreed with her, awarding Heather champion of the Fitness Competition at the Mrs. Maryland pageant. Not surprisingly, the ever-popular Heather also won the Pageant’s Entourage award, bringing the rowdiest and most supportive crowd from Harford County out to loudly cheer as she took the stage, strutting her way to one more major accomplishment.

If you would like to support Mrs. Maryland in her upcoming run for Mrs. America, she welcomes you to email her [email protected] or visit www.heatherziehl.com.

dealing with addiction

"Welcome to Ashley... the nightmare is over." - Father Joseph C. Martin, S.S., Co-Founder

Located on a picturesque, 147-acre campus by the banks of the Chesapeake Bay, this world-class addiction therapy center is leading the way in progressive treatment for the

growing problem of prescription medication addiction & pain management.

Father Martin's Ashley

At first glance, Father Martin's Ashley appears more a country club than a rehabilitation facility for alcohol and drug

addiction. The rambling tree-lined drive leads to a 147-acre campus that houses the 85-bed residential facility. With beautiful views of the Chesapeake Bay, the property consists of several buildings, which proudly maintain the grandeur of their past. The property, originally named "Oakington Estate", is located outside of Havre de Grace, and was originally owned by the Tydings family, before it was purchased by the non-profit in 1982.

To understand why this facility is so unique, you need to know a little about the founder, a Baltimore native, Father Martin. After ten years in the priesthood, Father Martin was asked to get help for his alcoholism. He entered Guest House in Michigan, a treatment facility for the clergy. After his experience at Guest House, the Father's life changed dramatically. A gifted speaker, Father Martin brought

by Anne Fullem

a fresh voice and new perspective to addiction therapy. He went on to touch the lives of millions of recovering alcoholics and addicts, through his unique ability to educate on the disease of addiction.

In addition to his award-winning lectures, he is the author of several publications including the well known; Chalk Talks on Alcohol. In 1983, Father Martin's Ashley was founded. Ashley is a private, non-profit, non-denominational treatment center whose program integrates 12-step support with the science of addiction medicine and the art of therapy. With a compassionate and caring staff, they treat nearly 1,000 patients each year.

Father Martin built Ashley with the philosophy that every addict and alcoholic is worth saving.

Having treated over 35,000 patients from all over the world, Ashley offers the best care available. The comfortable environment and serene atmosphere are complimented by the fabulous meals prepared

by Chef Mac, a graduate of the Culinary Institute of America, and his team. In addition to more traditional therapies, Ashley incorporates yoga, massage, relaxation classes, arts and crafts, therapeutic drumming, indoor and outdoor recreation choices and optional spiritual services.

"We had the perfect mix of counselors. It was great working with five of the best in the field."

- Jason, Renew Recovery Enhancement Program Participant

In addition, Father Martin's Ashley is at the fore-front of addiction therapy practices. In 1986, they became one of the first alcohol and drug addiction treatment centers to offer specialized Relapse Treatment for patients who had a period of sustained sobriety and then relapsed. Recognizing that treating a person in relapse with a primary treatment regime was not delivering success, Ashley sought the help of renowned relapse researcher Terrance Gorski to design an inpatient relapse program, which incorporates the Gorski Relapse Prevention Model,

Page 16: Harford Style Winter 2013 Test

12 Step approaches and Father Martin’s treatment philosophy. This program addresses the specific problems associated with relapse such as triggers, warning signs and avoiding stress.

More recently, Father Martin's Ashley identified a need for a specific treatment program for individuals who are addicted to pain medications and suffering from pain. The number one reason people visit the doctor is to relieve pain. Left untreated, pain contributes to other serious health issues such as insomnia, depression and anxiety. It can greatly limit an individual's ability to work, go to school, or enjoy the most basic activities that bring enjoyment to life. These individuals aren't looking for a "high", but a way to maintain their quality of life. Unfortunately for some, the pain medications prescribed, often cause more problems than they solve.

Prescribing highly-addictive, opioid pain medications has become a common practice. Treatment of acute and chronic pain with these medications has resulted in an escalation of opioid addiction. Often people with pain, who have no previous history of addiction to mood-altering substances find themselves reliant on increasingly high doses of addictive medications in an attempt to manage their pain. Life becomes a vicious cycle of pain and drugs.

Ashley, realizing that there is a distinct physiologic and psychological difference between a patient who has become addicted to medications intended to manage the symptoms of pain, and one who started using the drugs to get "high", developed their new Pain Recovery Program to address this gap in health care. The program simultaneously treats their pain and their dependence on medications.

Ashley's goal is to help individuals gain independence from addictive medications and achieve a life of reduced pain, increased mobility and an improved quality of life. Until now, people who found themselves in this predicament could find treatment for pain management, or they could find treatment for addiction, often with the two treatments in blatant conflict with one another. Ashley's integrative approach is designed to treat the pain patient - one who, without medical intervention has chronic pain to the degree that it limits their activities, diminishes their quality of life, and has resulted in an increased dependency on medications.

The Pain Recovery program provides an individualized recovery treatment plan for every patient, which begins with a multidisciplinary, bio-psyco-social assessment. Patients have direct contact with Ashley physicians throughout the program, and are given many other resources as well. Personalized physical conditioning plans - complete with a fitness coach, yoga, massage, reflexology, acupuncture therapy, meditation training and non-addictive medications for pain, are but a few of the resources provided for patients.

For these individuals, the cause of the pain may be complex and could be the result of multiple, co-occurring physical conditions or a single, chronic, but perhaps, progressive disorder. Many pain patients don't realize they are dependent on their pain medication. And, since these medications are usually legally prescribed by a health care provider, many people feel it is impossible for their dependency to be at an unhealthy level. Convincing the patient, and their family members, to seek help means first overcoming the perception that they couldn't possibly be addicted.

"Whole families get sick. Whole families need therapy." - Mae Abraham, Ashley Co-founder

So, what do you do if you are worried about a loved one's addiction to prescription medication? Fortunately, Ashley also provides answers to people living with loved ones who are struggling with addiction through their Admissions department (800-799-4673 ext 213) and also their Family Wellness Program (410-273-2227).

Alcoholism and drug addiction also takes a toll on adult family members, significant others and children. Ashley provides counseling and education to help family members understand the disease of addiction, co-dependency and recovery. The Family Wellness Program focuses on understanding the disease and its impact on others, problem resolution, and continuing care planning for the whole family. Children and youth can attend the Rainbow of Hope Program. Both programs benefit families by addressing problems in a healthy manner and in a safe place. Emphasis is placed on building trust, and respect, and teaching the skills needed to take responsibility for healing the pain caused to them by the disease. The programs are open and available to the community, as is their DWI/DUI education program for those who have had drug or alcohol related legal offenses.

We are truly fortunate to have such a wonderful resource here in Harford County. For more information on Father Martin's Ashley, check out their website at www.FatherMartinsAshley.org

Add light, sparkle and timeless glamour to out-dated furniture

Mirror, mirror...“Mirror, mirror on the wall”…Oh, the famous line from the lovely Snow white, one of my favorite fairytales! I will be the first to admit that I can totally get the Queen’s obsession with mirrors! They make any space (or castle) look bigger, amplify gorgeous natural lighting from windows, and most importantly, they add a bit of glamour to any room or event. And they are not just for walls anymore; they are for furniture. However, if you are interested in purchasing a mirrored dresser or table, it takes more than a little pocket change, so of course, why not do it yourself?

I am not one for matching end tables as my style is a daintily- eclectic one (don’t you love my descriptions?). So I had this old nightstand in the basement and decided to turn it into a pretty, little end table for our living room. Who is the fairest one of all?

Ingredients• Dresser, table, any piece of furniture that needs a little beautifying. Go to a consignment shop or antique store if you do not have one on hand.• Mirror cut to size• Glue that holds firm glass to glue.• Paint (if you want to re-paint the piece)• Drop cloth• Tape measure• Tools to unscrew hardware (if redoing anything with drawers).• Pretty knobs (if redoing drawers)

Steps1. Let’s say you are doing a dresser or something similar to the above. First, you need to take measurements of the length and height of the face of each drawer or cabinet.2. Go to your hardware store and ask them to cut mirrors to the dimensions you have. They are more than happy to help!3. Prepare your piece! Unscrew the hardware (in my case, the drawer knob), give it a good scrub down, and let it dry.4. On a drop cloth, paint the piece the color of your choice. For a clean look, I went with white. For a little more glamorous look, go for gold or silver! Ooh la la.5. Once the paint is dry, you are ready to glam-ify. Follow the directions on the glue and cover the face of the drawer and let dry for a few hours.7. Once the glue on the drawer face is firm, measure evenly to the center of the face of the drawer and apply the decorative knob using the same glue and let dry.8. I like to let it set over night. Once dry, decorate and watch guests oogle over your new, gorgeous piece!

Tips1. Cover the top of the dresser as well as the drawer faces using the same directions. 2. If you have a small or big table, follow these guidelines and turn it into a mirrored dream. Measure the legs and cover them in the same way. If you have a rounded table, go to a craft store and purchase smaller cut mirrors to create a mosaic look on sides or on the top, especially if there are rounded edges!3. After it is dry, sand the edges of the mirror and/or add a bit of caulk around the edges. This will make the sharp mirror edges safer for little ones!

Making a mark on Hollywood, from her

by Anne Fullemphotography: Amy Joneswww.amyjphoto.com

Gina didn't know she was going to wind up a make-up artist to the stars, but she did know her creativity would drive her career. She started doing makeup in 1990 after attending Von Lee school of Cosmetology. Her first experience with makeup for a TV show was HBO’s Homicide: Life on the Streets. "My father introduced me to my first producer in 1994, on the HBO series Homicide Life on the Streets which filmed in Baltimore for several years.....since the mid 80’s, there have been tons of things shot in and around Maryland...we have a very talented crew here that work in all departments of film making, and production companies realize that" said Gina.

Since then, she has worked on numerous shows, commercials, and films including Step Up, Tuck Everlasting, The Wedding Crashers, Ladder 49, and currently the Netflix production, House of Cards, and the HBO show VEEP.

Gina's not afraid of a little blood and gore either. "I did blood and gore in Blair Witch 2, and a few other horror films, aging and beards in a few, and several other types of effects that come up all the time. We are always asked to make someone

"I love my job because everyday is something different, someone new, and hopefully something fun and interesting...I'm definitely not an office type of chick."

look different than how they actually do... making someone look older, younger, homeless, tired, drunk, crying, even dead. I've made several dead people....adding facial hair, tattoos, scars, the list goes on" said Gina.

You might think it would be difficult to work on Hollywood productions from Harford County, but as a member of the union, Gina does most of her Hollywood work in Maryland and DC, with a few exceptions. There are downtimes in filming in Maryland, and during those times, Gina builds relationships with local photographers. "I enjoy working in fashion, and on editorial shoots because I get to be more creative, and occasionally have artistic license to do what I want, rather than what the director or client wants" Gina remarked.

" I find inspiration everywhere....all over the internet..magazines, television, films, my beautiful daughter and her friends."

health & technology

When technology works like magic... the result is

No anesthesia, surgery, scars, or down-time, this innovative new procedure finally solves the problem of how to get rid of that stubborn last 5lbs that just won't go away.

CoolSculpting

When I received this assignment I got excited. I recently gave birth to a second child and am in my thirties, so health and fitness have

become more important to me as I age. With new techniques coming along every year it can be difficult to decide which treatments may be right for me.

Enter cool fat sculpting. Pioneered by scientists and researchers at Harvard, it relies on extremely cold temperatures that freeze fat cells, causing their death, and eventual flushing from the system. For more information I visited board certified plastic surgeons, Drs. Ronald Schuster and Jeffery Schreiber at their Falls Road office in Lutherville. After spending a little time with both of the docs I can see why their practice is thriving. Not only is the office staff warm and professional, but the doctors are visibly committed to their work. They see it as a calling and not just a job. The pair met at Hopkins University and decided to go into practice together because of their shared philosophy of investing in strong research and appreciating the artistic aspects of their profession.

Dr. Schuster says, “ . . . we definitely don’t have a cookie cutter practice. I want to listen to the patient's concerns and goals and make it happen for them.” That’s what made the coolsculpting technique so attractive. Not only does it have the reputation of Harvard University behind it, it is on the forefront of modern non-invasive fat removal techniques.

“The research is there, its from Harvard, and its been studied for years. The results are incredible, no anesthesia, no scars, no recovery, I did it to myself, and worked out that night. People were amazed,” said Dr. Schreiber.

I spoke with one of their patients, I will call her Ms. K, and she agrees that the procedure is remarkable. Ms. K is a recovery nurse, so she knows a thing or two about what happens after many cosmetic surgery procedures. She was always interested in rejuvenating the areas of her stomach that have changed over the years, but knew that a tummy tuck would require pain and down time while healing. After hearing about coolsculpting from Dr. Schreiber she thought that it was worth a try. With no down-time, no cutting or scaring and little pain, it sounded like the perfect option. After one session in one area she went down one pants size and was comfortable enough to wear a bikini on a recent trip to Jamaica.

What makes this technology so different is the use of cold versus heat to destroy fat cells beneath the skin. Dr. Schuster explains “ . . . the procedure freezes the tissue instead of burning it with lasers or cutting it out with surgery. It is safe because fat freezes before anything else, so it doesn’t damage blood vessels, nerves, or the skin.” The price is also attractive.

Depending on how many areas you choose to treat and how many sessions you would need, the cost is much lower than traditional liposuction or laser treatment. Coolscuplting is not for everyone though. It works best on patients who have areas of diet and exercise resistant fat and who are looking to remove that last inch or so from their figure. It is not a replacement for larger areas of treatment or for people who have loose hanging skin after major weight loss or childbirth. But for those who fit the bill this treatment has a fantastic track record and can offer long lasting results.

How can this age old practice benefit you?

The practice of yoga, which is more than 5,000 years old, is beneficial for

much more than a person’s self confidence. Healthcare professionals are known to tout the benefits of regular yoga practice.

“Yoga is a practice of breath,” Isabelle Cameron, a lean and sculpted yoga instructor at The Arena Club in Bel Air softly says to her students at the beginning of every class. And for the brave students who take to the 96-degree room on the basement level of the fitness facility for “Transformation Power Hot Yoga”, a 90-minutes class, instructors (oftentimes Isabelle, known to her students as “Izzy”) lead them from one yoga pose or “asana” to the next. That sometimes means students are twisted from the torso upward, sometimes balanced on one foot, and sometimes you find yourself staring at your toes. No matter the pose, Izzy is right. In yoga, breathing is of utmost importance.

Those who attempt the postures for the duration of a class, without also focusing on when they inhale and exhale, are likely to stop breathing all together in an effort to focus on what their body is doing now or going to be doing next. And yoga breathing is slightly different than the breathing we do every second or so throughout the day. In fact, most of us never take a “yoga breath” all day long. The most fundamental practice in yoga is deep belly breathing, exhaling and inhaling through the nose.

With students simultaneously balanced on one foot, with another stretched behind them in Dancer’s Pose, Izzy reminds them, “You look beautiful. You are perfect, just as you are”.

Sure, accolades like those are great for any yogi’s self esteem, but the practice of yoga (which is more than 5,000 years old) is beneficial for much more than a person’s self confidence. Healthcare professionals are known to tout the benefits of regular yoga practice. Yoga is credited with cleaning blood of waste materials, by stimulating the body’s lymphatic system. Regular yoga practice allows for more body awareness, balance, flexibility and a better focus on how we move and use our body in daily life. Sun Salutations (a series of yoga poses strung together and repeated) are used to get the blood flowing, and to help build lean muscle and bone strength. And more than just physical benefits, many people believe yoga sharpens and frees the mind. More traditional yoga practices include meditation, while more Westernized yoga classes tend to focus on physical fitness.

So what kind of yoga is best for you? That depends on what you would like to get out of your practice. There are yoga classes that are specialized for just about anyone, from “Yoga for Athletes” which oftentimes focuses on stretching often-used muscle groups, to prenatal yoga which consists of modified poses which are safe for pregnant women.

Step-by-Step:1. Stand at front of your yoga mat. With an exhalation, step your feet 3.5-4 feet apart. Raise your arms parallel to the floor and reach them actively out to the sides, shoulder blades down, palms down.2. Turn your right foot slightly to the right and your left foot out to the left about 90 degrees, as shown. Align your left heel with the right heel, both heels down on your yoga mat. Firm your thighs and turn your left thigh outward so that the center of your left knee is in line with the center of your left ankle.3. Stretch arms away from the space between your shoulder blades, parallel to the floor. Do not lean your torso over your left knee; keep it directly over your pelvis. 4. Stay for 30 seconds to a minute, as you breathe. Inhale before straightening your knee to release. Reverse feet and repeat for the same time on opposite side of body.

Benefits of Warrior II:• Strengthen and stretch legs• Stretch groin muscles, chest and lungs, shoulders• Stimulates abdominal organs• Increases physical stamina• Relieves backaches, especially through second trimester of pregnancy for women• Used to treat physical discomfort related to Carpel tunnel syndrome, flat feet, and osteoporosis

Benefits of Dancer’s Pose:• Releases tension• Develops sense of balance and focus• Strengthens spine and legs• Stretches thighs & shoulders

Step-by-Step:1. Begin by standing at the front of your yoga mat. Inhale and bend the knee of the non-standing leg, bringing it backwards and grab hold of

the ankle or foot with the hand of the same side. Take a moment to balance and then move the knees so they are in alignment with the hips. Hold here and breathe into the stretch as you move into your fullest expression.2. Inhale and extend the arm of opposite side-body directly up from the shoulder, Feel energy move all the way through the fingertips. Hold here for several breaths. You may want to remain in this phase of the posture and work up to the final pose.3. To move deeper into the pose, simultaneously lengthen the arm and torso up and forward while the opposite leg lengthens back and up. 4. As you hold dancers pose, breathe into your stretch as you inhale and relax as you exhale, but do not leave the pose until you have held for several full breathes. Your gaze should rest slightly above your extended hand or to the horizon.5. To release, Slowly bring your torso back to center and release your bent knee, returning to standing position. Reverse and practice pose on the other side of your body for the same length of time.

Cautionary Notes: Not every yoga pose is designed for every person’s body and personal ability. It’s always an option to practice yoga while near a wall for support. If any pose is uncomfortable, modifications can be made to meet individual needs. Please consult your physician and/or a professional yoga practitioner before beginning

any fitness routine, including any new yoga practice.

Peat Purol, who owns Fluid Earth Yoga in Bel Air focuses on personalized and private yoga classes at students’ homes. He believes bringing a personalized yoga practice to a person’s residence offers them the privacy and comfort of practicing in their own space, while receiving one-on-one instruction. Peat teaches several different types of yoga including Therapeutic, Hatha and Vinyasa and when not teaching private lessons, he is also a regular instructor at Peace Yoga in Bel Air where classes vary from “Yoga Basics” to “Hot Vinyasa” to “Mommy & Me” where students actually bring their babies to class and marry parent-and-child bonding with gentle stress-relieving yoga poses.

Since January is a time for change and renewing and identifying personal goals, it’s also a great time to begin your personal yoga journey (or reintroduce yourself to your practice). If an enviable lean and toned body isn’t enough motivation to get started, take a deep yoga breath and close your eyes: now envision yourself with increased flexibility, less stress and less anxiety and better nights of sleep.

Visit a local studio and find a practice that benefits your mind and body and fits into your life. Namaste!

Step-by-Step:1. Come onto your yoga mat, on your hands and knees. Set your knees directly below your hips and your hands slightly forward of your shoulders. Spread your fingers on both hands, index fingers should be parallel and toes turned under.2. Press spread fingers actively to your mat, and lift along your inner arms from the wrists to the shoulders, pushing your shoulder blades together as you rise, drawing them toward your tailbone. Keep your head between your upper arms as to not strain your neck by letting it hang loosely.3. Push back into feet that are firmly planted about 6-8 inches apart near the back of your yoga mat. Press your heels as close to the ground as comfortable, and settle into your fullest expression of the pose as your shoulder blades are actively being pulled toward one another and back toward your tailbone and your heels are reaching for the mat.

Step-by-Step:1. Laying on your yoga mat flat on your back, bend your knees and set your feet on the floor with your heels as close to your tailbone as comfortable. Bend our elbows and spread your palms on the floor beside your head, palms flat on mat and close to your ears on either side of your head, fingers pointing toward feet.2. Press your feet actively to the mat, exhale as you raise your tailbone up toward the ceiling or sky, and lifting the buttocks off of the floor. Keeping your arms parallel, continue to take 2 or 3 deep breaths. 3. Press your feet and hands firmly into your mat, as you pull your shoulder blades together and toward your tailbone. Turn your upper thighs slightly toward one another, lift pubic bone toward your naval.4. Turn your upper arms outward, keeping your weight focused on the middle of your fingers on both hands. Spread your shoulder blades across your back and gently let your head hang toward your mat. 5. Stay in the pose between 5-10 seconds and gently release by lifting head and lowering body slowly.

“I believe the Kaufman Cancer Center will turn out to be one of those milestones in the history of healthcare in Harford County. The incredible community support

will make it an important legacy for all of us who live and work here.” 1 Lyle E. Sheldon, FACHE, UCH President/CEO

The average cancer patient makes more than 100 visits for treatment during his or her first year following diagnosis. This means that individuals

from Harford County diagnosed with cancer have, in the past, had to commute an average of 45 minutes each way to receive their treatment. Upper Chesapeake Health (UCH) has been working for many years toward creating a cancer center providing a comprehensive array of services. The vision has always been to provide a community-based, healing environment that fully integrates with the high-quality clinical and research programs at the University of Maryland Marlene and Stewart Greenebaum Cancer Center (UMGCC). The cancer programs at Harford Memorial Hospital (HMH) and Upper Chesapeake Medical Center (UCMC) are already accredited by the American College of Surgeons' (ACS) Commission on Cancer (CoC). UCMC also received accreditation from ACS as a Comprehensive Cancer Center and HMH as

a Community Cancer Center. The question was how to integrate these services and this partnership in one place, under one roof.

Last year, Upper Chesapeake Health (UCH) broke ground on its long-awaited comprehensive cancer center located on its Bel Air campus. How did it finally happen? It took a great deal of planning and partnership. First, Upper Chesapeake Health (UCH) joined in a strategic and formal affiliation in 2009 with the University of Maryland Medical System and just recently, the University of Maryland Marlene and Stewart Greenebaum Cancer Center (UMGCC). The announcement of the formal partnership is a result of a two-year collaborative planning process in which Upper Chesapeake Health has strengthened its multidisciplinary cancer services and expanded opportunities for clinical trial enrollment for patients.

What does this affiliation and new facility mean for individuals with cancer and their families? It means access to:

• Multidisciplinary care where specialists in medical, surgical, and radiation oncology meet with new patients during a single visit• The most advanced cancer therapies, state-of-the-art technology, enhanced supportive services, and clinical research trials in one centralized neighborhood location• Experts and cancer specialists from UMGCC, ranked 11th out of 900 cancer centers by U.S. News & World Report• A community-based healing environment that fully integrates with the high-quality clinical and research programs at UMGCC• A $60 million cancer care facility designed with the patient’s needs in mind (e.g., dedicated parking, ease of access, healing garden)

That covers the clinical care. Now, there needed to be a plan to establish the center and its technological needs, enhancing services in one centralized location and providing an endowment to sustain the Cancer Center well into the future. In October 2012, Upper Chesapeake

Health Foundation announced its fundraising campaign: Hope and Healing Close To Home – The Campaign for the Cancer Center at Upper Chesapeake Health. It’s first big announcement? The Patricia D. and M. Scot Kaufman Cancer Center (Kaufman Cancer Center) is named for the generosity of Patricia D. and M. Scot Kaufman, Churchville residents and visionary philanthropists who see the impact a comprehensive Cancer Center will have on the quality of life and healthcare available in their community. Scot and Patricia hope that “the thousands of our neighbors that will be treated and healed close to home will have the energy to focus on their healing as opposed to commuting.”

Construction of the Kaufman Cancer Center began in November 2011; when it opens in the fall of this year, all UCH cancer services will be consolidated under one roof. Lyle E. Sheldon, FACHE, UCH President/CEO, says, “I believe the Kaufman Cancer Center will turn out to be one of those milestones in the history of healthcare in Harford County. The incredible community support will make it an important legacy for all of us who live and work here.” To learn more about the Kaufman Cancer Center or to make a donation, please visit www.uchcancer.org or call 443-643-3460.

Volunteers Take the Pledge

The Harford Memorial Hospital Volunteer Auxiliary has teamed up with the Upper Chesapeake Medical Center Volunteer Services Association to raise $1,000,000 over the next ten years in support of Hope and Healing Close to Home Campaign to support the new cancer center. The combined volunteer organizations have already raised a substantial amount of money, but this will be their largest goal to date. Harford Memorial volunteers have pledged $250,000, and Upper Chesapeake a whopping $750,000.

"Book sales, Ravens sales, $6 sales... all kind of in-house sales, plus the gift shops, all proceeds go towards our pledge" said Joan Pacifici, head of the Harford Memorial Volunteers. With the added pressure, the volunteers are going to be testing new waters and are planning to step up the fundraising with some events in 2013.

"We receive tremendous support from the hospital staff spending tons of money on our sales, but we need to expand our efforts to reach more of our neighbors," said Janet Dunne, head of the UCMC Volunteers. The support they have received from the community for the campaign and The Kaufman Cancer Center can only be described as extraordinary. Local businesses and foundations have stepped forward to pledge more than $2,000,000 in support. With each member of our local community that has learned of the campaign, they have made their own personal "stretch" commitment to the effort, pledging their support in a personal and meaningful way.

Breast Reconstruction

New kinds of treatment as well as improved reconstructive surgery mean that women who have breast cancer today have better choices.

Helping Women Become Whole Again

According to the American Cancer Society, more than 292,000 American women face breast cancer each year. New kinds of treatment as well as improved

reconstructive surgery mean that women who have breast cancer today have better choices. Many women who have a mastectomy choose reconstructive surgery to rebuild the shape and look of the breast. Breast reconstruction is achieved through several plastic surgery techniques that attempt to restore a breast to near normal shape, appearance and size following mastectomy. The number of women undergoing immediate breast reconstruction after mastectomy for breast cancer has increased drastically in recent years, reports a study in Plastic & Reconstructive Surgery®, the official medical journal of the American Society of Plastic Surgeons.

"Breast reconstruction is not a required part of the treatment of breast cancer, but many women feel that it helps their body image and self-esteem," said Dr. Ramon DeJesus from Upper Chesapeake Health.

Immediate breast reconstruction is done, or at least started, at the same time as the mastectomy. An advantage to this is that the chest tissues are not damaged by radiation therapy or scarring. This often means that the final result looks better. Also, immediate reconstruction means less surgery. There is also a significant psychological advantage, in that the patient never feels the "loss" of the mastectomy.

There are two major types of reconstruction methods, each with their own advantages. Implant reconstruction is the most commonly chosen method by patients. This method employs saline or silicone gel filled implants which are placed in a pocket created in the chest wall. Some patients can undergo breast reconstruction in a single stage. Implant reconstruction procedures have the advantage of being shorter operations, and generally a fairly rapid recovery can be expected. Some women though, are not happy with how the reconstructed breast looks and feels after surgery Breast reconstruction restores the shape, but not feeling, in the breast. With time, the skin on the reconstructed breast can become more sensitive, but it will not feel the same as it did before the mastectomy.

The other major method of breast reconstruction is autogenous reconstruction, which uses the patient's own tissue to create a breast. There are several types of this method but the most commonly used is the TRAM flap. This procedure takes skin and fat from the lower abdomen, and without disconnecting it from it's blood supply, repositions it on the chest. The TRAM flap has many advantages. The use of the abdominal tissue is similar to a tummy-tuck, and most women don't seem to mind. The other advantage is a more natural look and feel to the breast. The main disadvantage compared to implant reconstruction is a longer operation, and hospital stay.

The latest medical breakthrough is microsurgical reconstruction. This technique requires the repair of tiny blood vessels. This allowed the TRAM flaps to be used as "free flaps" which could be completely detached from the lower abdomen and restored on the chest using microsurgical techniques. The advantage is a more direct blood supply which means that more tissue can be safely moved.

Not all plastic surgeons are trained in microsurgery, and many who are, prefer not to perform microsurgical breast reconstruction because of the complexity and possibility of complications. Dr. Ramon DeJesus and his partner Dr. Mathew Thomas are the only microsurgeons in Harford County. They provide microsurgical breast reconstruction, and other highly delicate surgeries to help patients who have lost tissue.

One of only fifty doctors in the country, Dr. DeJesus also offers a procedure called the DIEP Flap. This procedure uses the same skin and fat of the lower abdomen as the TRAM Flap, but does not use the muscle to form the breast mound. Patients who undergo this procedure have less pain and faster recovery time. There is also less risk of abdominal wall weakness, and the benefit of a tummy-tuck.

Editor's Note: It's really exciting that such high quality care is available to the women of Harford County and that physicians like Dr. DeJesus and Thomas have chosen to be part of our community.

Read Between The Wines Book Club is an informal group

of women who gather once a month to discuss a book

they have read while sharing a meal, wine and friendship.

J. Courtney Sullivan takes composites of her own family, friends, and experiences to create a tale of three generations of a totally dysfunctional family. Each chapter gives a separate perspective and narrative by four women, ranging in age from 30 to 80. This gives a multi-faceted view of the same scenarios and issues as interpreted by the different family members. Each of these women truly are the center of their own universe.

The novel pivots around their summer beach house in Maine and the internal turmoil of these women. The beach house serves as an escape, a sanctuary, a womb, a burden and a chance for eternal life. Just like relationships with loved ones, the summer home is often underappreciated by the family and taken for granted. It has always been there; the symbol of unconditional love that they expect to continue to be there for them their entire lives. It is a monument to their patriarch, Daniel, who died ten years prior to the time period of the story. Interestingly, he is the most likable character in the book!

All of the female characters have their struggles and issues. They play off of each others’ weaknesses and vulnerabilities while churning in a sea of dysfunction. They are all trapped in their own individual hells of their own creation. Guilt, avoidance, and fantasy guide their lives and distort the realities that seem so obvious from the outside looking in. They rationalize their decisions, for good or for bad, and they all have to deal with the consequences.

The secrets, guilt and alcoholism of Alice, the mother/grandmother, lead her to scheme her way to eternal forgiveness and immortality -- so she thinks. In reality, what she leaves her family is a legacy of betrayal and bitterness.

The New York Times calls this book “wickedly funny” but it is more like pathetically sad. It is not a feel-good read. However, it will make you thank your lucky stars that your family can’t possibly be as messed up as this fictional one. Thank goodness for that!

Recommendations: Visit the author’s website at jcourtneysullivan.com to read the Q&A about the novel. Compare our review with guest reviewer Laura Dave on amazon.com. She apparently loved the women in this novel and has a completely different take. Then go to goodreads.com to see some unsolicited reviews. Read the book and decide which truth holds for you; page turner or drudgery. We give it an average of 3 stars -- we were a bit torn, too.

Our wine sampling for this novel was a California pinot grigio “Middle Sister, Drama Queen”. It was a little sweet for a typical pinot grigio but it somehow seemed to fit the book this month. Until next time …

Kitchen Make-Over

The kitchen was not the first re-do on the list of priorities it was the most challenging as it was completely dysfunctional and the layout was awkward. From floor to ceiling we worked together to design what is now a beautiful updated kitchen. We replaced cracked plaster ceilings with decorative tin tiles which we painted along with a complimentary tin tile for use as the backsplash. The floor tile was outdated and in serious need of replacement. We knew that there was hardwood floor underneath and proceeded to remove the tile. After removal of the tile we had the floor refinished and although not perfect it is wonderful and totally warms up the space.

One of my favorite elements of this remodel is the pantry that sits just beyond the back door. Just inside you will find original cabinets on the wall in a dark walnut finish and on one of our visits to the attic and basement , I found the base cabinet which we are having placed back into the pantry after it has a bit of TLC. These cabinets are original to the home and complement the new cabinets with the contrast while offering additional storage space which in turn allows for a much more functional kitchen. The lighting that was used in the kitchen, although not original to the house, was taken from the dining room and foyer to work with the stained glass accents in the windows. This project was started in the fall and completed in order for the homeowners to begin entertaining during the holidays.

A neutral color palette was chosen and wainscoting, base molding and chair rails were added to bring this kitchen alive and allow for the new cabinets to be the icing on the cake. With the wonderful high ceilings this brought attention to an existing “skylight” which was currently paneled over. I am replacing this solid wood panel with a specific stained glass insert to allow more natural light into the kitchen and also create a wonderful element of design to the ceiling. Stained glass window panels hang in each of the four windows on the top pain of the double hung window with a simple café style treatment in an embroidered sheer fabric on the bottom. The neutral walls and cabinets allow the punches of color to be added with accessories to create a bit of drama.

Where did you travel?San Francisco Gotera, Morazán, El Salvador

Who did you travel with?I work with Habitat for Humanity Susquehanna, and we actually tithe to an affiliate in El Salvador. My director asked me to report on how our tithe is helping others, so I joined a Habitat Maryland-based team of 12 organized through Habitat for Humanity International’s Global Village Program.

What were some of thegeographical places you visited? We started our week in San Salvador, the capital city of El Salvador, which located about 20 miles from the Pacific Coast. Then, we traveled northeast through the countryside through a range of several of the area’s largest volcanoes. After three hours, we arrived in San Francisco Gotera, the main city in the district of Morazán. During our week-long stay, we also visited the nearby town of Perquín, the site of one of the largest massacres during the Salvadoran Civil War. We closed out the week at the Rancho Estero y Mar, a seaside resort on the outskirts of San Salvador.

What activities did you enjoy? We spent five days laboring to build a Habitat home for a couple named Marta and Manuel. When we weren’t busy hauling concrete blocks or mixing cement, we were wandering through the street markets, dining on handmade corn tortillas, playing a soccer game with the local villagers, relaxing in hammocks overlooking the mountain range, or kayaking through the mangrove forests near the ocean.

traveling in styleBy Abrielle Willis

What was your favorite part of the trip?Aside from helping a family realize their dream of homeownership, I would say my favorite part of this trip was the people. El Salvador is a country of warm smiles and carefree living. We were never left wanting a grin or a hug!

Were you surprised by anythingduring your trip? The colors are astounding! No matter how ramshackle the house, it is always painted in the vivid shades of pink, aqua, yellow and orange. Everywhere we went, there were wild tropical flowers in full bloom. The sunshine seemed brighter, and when it filtered through the palm forests, the air exuded an almost emerald quality.

What were your accommodations like?We stayed in a brand new hotel in the center of Gotera. It wasn’t yet open to the public – that’s how new it actually was. Each of the rooms was small, but cozy, with two twin beds and a hodgepodge of sheet sets. My bed was made up with a Dallas Cowboys blanket and pillow, while my roommate’s bed was reminiscent of a teenage girl’s. We had a kitchenette, a dining area, and a third floor with a flat screen television. The hotel was within walking distance of the town square, grocery store, and Pollo Campestre, the Salvadoran equivalent of KFC.

How was shopping? We didn’t have much time for shopping, since this was a service trip. On our first day, we stopped at a market in the city center. It consisted of about 50 vendors, each selling delicately painted souvenirs, hand-strung hammocks and other crafts made by local artisans. The grocery store in Gotera was similar to those found in the states. The produce department had some exotic and unfamiliar fruits, but the shelves contained many of the same products, only labeled in Spanish. There are open-air markets held every day in the city, and you can purchase anything from tortillas to telephones. The storefronts are also open early, with many employees selling their products along the sidewalks.

How was the food? The food was delicious! The diet in El Salvador consists mostly of corn tortillas, chicken, beef, re-fried beans, plantains, and a tasty delicacy called a pupusa. A pupusa is simply a warm corn tortilla filled with a thin layer of refried beans and a slice of cheese. The coffee here is absolutely amazing; after all, it is locally-grown. The coffee was so good, in fact, that I – the queen of milk and sugar - drank it black. Don’t eat vegetables or fruits that you can’t peel; you run the risk of illness if you do so.

What made this trip special?I was blessed with the chance to improve someone’s living situation, even if all I did was carry buckets of dirt around all day long. I traveled with a compassionate and enthusiastic group of people, and met new friends along the way. There was also something about El Salvador’s breathtaking landscape and the clear air that captured my heart. Whether you go for work or play, it’s impossible to leave this country unchanged.

A quote that sums up your trip?“...the world is a giant community now. This excuse of distance, time, doesn’t work...We’re all so connected. We can’t spend every second of our lives worrying about another family miles away but we somehow have to factor it in where we can." -- Ralph Fiennes

healthy harford

By Bari Klein Rubinoff, Grants Administrator, Upper Chesapeake Health & Harford County Health DepartmentHealth Promotion Specialist/Program Coordinator for Healthy Harford

With the dawning of the New Year, many of us resolve to eat better, exercise more, and pay attention to our health. Often referred to as the contemplation stage in behavioral modification, it’s a point when we recognize that there is something we would like to change, but we’re just not ready yet to take the plunge. Real change, when behaviors become habits, those natural actions we perform without even thinking about them, like turning on the coffee pot in the morning or leaving your keys on the hook, happen over time. Just realizing the importance of actually making those changes, however, is an important first step.

To move from the contemplation stage to the action, just try dipping your toe in the water. Make small changes at first, set realistic short term goals, and start establishing routines. For exercise, if you feel you can’t find a half hour every day to workout, start by finding 10 minutes then work your way up. Wear a pedometer to track your movement, and make a concerted effort to take the stairs or walk to do errands. For better nutrition, replace unhealthy snack foods in your home with fruits and vegetables, plan at least three meals for the week in advance, and start gathering quick easy recipes for your new go-to list so you don’t get dragged back into unhealthy dinner time standbys.

There is still debate over how long it takes for a behavior to become a habit, but the general consensus is around four to eight weeks of consistency for a change to become ingrained. After six months the habit will become so much a part of your life you’ll find that if you skip it, you’ll actually miss it. Those that complain when they miss their morning green Smoothy or daily run just might not be that crazy after all.

Black Bean & Vegetable Quesadillas

• 1 small onion• 1 clove fresh garlic, crushed• Two handfuls leafy green vegetables (spinach, kale, Swiss chard)• ½ red pepper• Small hot pepper such as jalapeno (optional)• 1 cup canned or frozen corn• 1 15-ounce can black beans, rinsed• ½ cup shredded cheese (Mexican queso, pepper jack, cheddar)• 6 8-inch whole-wheat tortillas• 1 teaspoon canola oil

Optional toppings: 1 ripe avocado, diced, 1/2 cup prepared fresh salsa

In a pan sauté chopped onion in 1tbs. oil. Add garlic and red pepper(s) and continue to cook for another minute. If corn is frozen, add now, if canned, add after the greens. Add greens, cook for an additional two minutes. Add black beans and sauté just to warm.

Remove from heat. Wipe pan with oil, and heat on stove. Place tortilla in pan and sprinkle with a little cheese. Add bean and vegetable mixture, and top with another sprinkle of cheese and the second tortilla. Using a spatula, flip to brown both sides. You can also use only one tortilla, place the filling on one side, and fold it in half. This recipe is very flexible as you can substitute any kind of bean, vegetable, or cheese you have on hand. You can even substitute brown rice for the tortilla. The vegetable mixture can be made in advance and kept in the refrigerator for up to 3 days.

Wheat berry, Dried Cranberries, & Goat Cheese Salad

A change from rice or pasta, this simple wheat berry salad has a delicious nutty flavor. For a quick dinner, prepare the wheat berries in a Crock Pot so they will be ready to use when you start dinner. They can also be made in advance and stored in the refrigerator for up to two days.

• 1 lb. red winter wheat berries, rinsed and soaked for several hours or overnight in water to cover• 1 large red onion, diced• 3 large carrots, diced• 8 mushrooms, diced• 2 tablespoons olive oil• 1 cup dried cranberries• 4 ounces goat cheese (optional)• Salt and pepper

Mustard Vinaigrette:• 3 shallots or 2 tbs chopped onion• 1/2 cup red wine vinegar• 3 tablespoons honey• 3 tablespoons grain mustard• Pinch salt• 2 tablespoons chopped fresh rosemary or thyme• 1 cup olive oil

Place the wheat berries and their soaking water in a large pot. Bring to a boil. Reduce the heat, cover and simmer one hour or until the grains are tender and beginning to splay. Turn off the heat, and allow the wheat berries to sit in the hot water for another 15 minutes. Drain and chill. Sauté the onion, carrots, and mushrooms in the olive oil. When vegetables are soft, mix with cooked wheat berries.

Prepare the vinaigrette by placing all the ingredients except oil in food processor or blender. Slowly whisk oil into the blended ingredients. Add dried cranberries and vinaigrette to the wheat berries, toss, and top with goat cheese if desired. Salt and pepper to taste. Yield: 8 to 10 servings

Purple power is the inspiration for this football lovers dream den. Mel & Kellie

designed this room with their favorite pastime in mind... watching Ravens football! This room has purple carpet, purple walls, and a matching bar with cold beer on tap and ample stools for fellow fanatics. Several televisions hang strategically over the bar, where friends gather on Sundays to cheer on their team. A beautifully carved pool table provides entertainment in-between games, and a high top pub table and stools provides intimate seating for a snack.

The couple named their Ravens Retreat "Scabbards" and had good friend, and artist Eric Conrad create their welcome sign. Addorned with Ravens memorabilia, collectibles, posters and kitchy items found over years of collecting, you have no doubt who the home team is when you party with this pair. "It's all about hanging out with friends." said Kellie, who came up with the Purple Passion Shot recipe in homage to her favorite team.

Take inspiration from Mel & Kellie and have fun creating your own footabll fan space. If you're not a Ravens fan, it's ok, we won't tell them.

With this issue of Harford County Style focusing on health, we’re going to spend a little time discussing the role wine plays in maintaining a healthy lifestyle. I thought we’d spend a little time discussing a topic that seems to come up on a regular basis… that being sulfites, and the role that sulfites plays in wine. We’ll then finish up with another “hot” topic that comes up often in conversation… that being the health benefits of Red Wine. Let’s start with sulfites:

Sulfites & wine:I’m often approached by customers at The Vineyard Wine Bar who tell me that they love wine but can’t drink it because it gives them headaches, or they feel lousy in the next morning after drinking wine. I’ll ask them if they’ve tried organic wines, or wines that are lower in sulfites, to which they almost always say “no”. Now I am certainly not a medical doctor authorized to prescribe low-sulfite, or organic wines to our wine drinking guests, but I do almost always suggest they might try an organic wine, starting out with only an ounce or two and graduating to a full glass (6 ounces) over the next few days if they have no ill signs the next morning. I have to admit that many of these guests have dropped me an email, or called me a few days later to thank me for helping them to enjoy wine once again… with just a slight modification in the wines they drink.

Now while there continues to be studies done on wine and health, and while some researchers say that sulfites have no contribution to someone’s headache, (with the possible headache-inducing culprit being “tyramine”, an amino acid derivative produced during fermentation), I know that suggesting “organic wine” has helped many of our dining customers to enjoy wine again without the headaches. There are many different forms of sulfites, and they’re used for different reasons in wine production… so while we’re on the topic let’s talk about sulfites for a minute.

First of all, let’s take notice that all wine bottles have a warning label attached to them which states: “Contains Sulfites”. That’s because all wine does contain sulfites. Sulfites are a by-product of fermentation. If grapes have gone through the fermentation process, and have been turned into wine, then the wine will contain sulfites… period! (Without some sulfites wine would turn to vinegar.)

You are not going to get away from sulfites, but it’s the higher level of sulfites that possibly cause problems for those individuals who have allergies to histamines or sulfites. Sulfites are often added to wine to kill certain bacteria, stop

wine in styleby Joe LertchGreetings

Wine Loversfermentation, stabilize it, preserve it, and for other reasons. If you have reactions to sulfites, or simply want to limit them in your wine consumption, then stay away from wines that have added forms/types of sulfites used with the most common being Sulfur Dioxide, Potassium Bisulfite, Potassium Metabisulfite, Sodium Sulfite, Sodium Bisulfite and Sodium Metabisulfite.

Limiting sulfites through organic wines: (Organically grown grapes/organically produced wine):More and more wineries are “Going Organic”… that is practicing organic farming methods, growing organic grapes and staying away from the addition of sulfites to wine making. In the “Old World” (wines made in Europe) organic practices have been used for generations… although you usually won’t find the words “Organic” or “Certified Organic” or other indication to the wine being organic on the label. In the “New World” (South America, North America, Australia, New Zealand, etc) the practice of labeling the wine with organic terms such as: “Made with Organic Grapes”, or “Certified Organic” is something you will see listed on a label.

The levels of sulfites in “Organic Wines” are usually under 10 parts per million, whereas most high-production/commercial wines are bottled with sulfite levels between 50-100 parts per million. Limiting the sulfites to the lowest level possible is best for those who suffer from headaches when drinking wine. (This of course doesn’t mean you can over imbibe and not have a “hangover” headache in the morning. Responsible drinking is certainly recommended.)

For those of you that have problems with headaches when drinking wine in moderation I suggest you try a couple ounces of “Organic Wine” and if you have no headaches, or negative reaction, then increase the amount gradually until you can drink a full glass (6 ounces) without unwanted symptoms.

The Healthful Benefits of Wine:It seems that there is no shortage of studies being done on the health benefits of moderate wine consumption. Evidence continues to mount that drinking wine in moderation goes hand in hand with a healthy lifestyle. From studies on the heart, on delaying dementia, and on other vital organs in the human body, more and more positive finding are coming forward on the healthful benefits of wine. Studies pertaining to moderate red wine consumption (one to two glasses per day) have also shown to help better circulation and support heart health. Other studies have amassed evidence that moderate wine consumption may help delay the onset of Alzheimer’s

disease, while yet other studies are showing that moderate wine consumption may help in preventing arthritis, lowering diabetes risk, guarding against cancer, and benefit overall health in other ways.

Many of the discoveries have to do with a compound in wine called resveratrol. The news on resveratrol awoke the public in 1991 when “60 Minutes” aired a program titled “The French Paradox” where Morey Safer told viewers that wine is good for us, and told us about how the people of France could eat a diet of rich foods and still have lower cholesterol and heart disease than Americans. The story centered on red wine consumption and a compound in red wine known as resveratrol which some reports indicate could be the most potent anti-aging compound found. While studies continue to be done on resveratrol, and whether or not it proves to be a “wonder” compound, it has been determined that after two decades of serious study a huge amount of scientific research has revealed that red wine (if consumed in moderation) along with a healthful diet and exercise, offers significant health benefits.

As far back as 1996 the British Medical Journal published a review of 25 studies that focused on alcohol’s effect on heart disease. Although results in the study varied evidence was clear that people who drank moderately had a 20 to 60 percent lower risk of heart disease than those that abstained, because of the lowering of LDL cholesterol (the “bad” cholesterol), while raising HDL cholesterol (the “good” cholesterol) and preventing the buildup of fatty deposits in the arteries. Evidence suggests that drinking red wine in moderation can prevent sickness and improve health benefits… and one thing I know for sure is this: I like wine and I always feel better with a good glass of wine in front of me!

Cheers to your health.

Rebel’s Dog Park

Rebel’s Dog Park is a public dog park located on more than an acre on the picturesque grounds of the

Humane Society of Harford County (HSHC) located at 2208 Connolly Road in Fallston. Beverly Francis, a

supporter of the organization, founded the dog park in 2005 and dedicated it in honor of her 14-year-old

black lab, Rebel, that succumbed to his illness after a 4-month battle with cancer. Beverly adopted

Rebel from the HSHC and her wishes are that community members visit the park with their dogs and

take a look at all the wonderful animals available to be adopted from the shelter.

The park is separated into small dog and large dog areas. You’ll find benches around the park perimeter

and plenty of space for your dog to run. Dogs from the community are invited to play off leash with

other dogs and their families. This wonderful park allow for dogs to have a safe, enclosed area to play,

overweight dogs to shed pounds, special friendships between animal lovers to be formed and abused

dogs to learn to trust.

Dogs must be vaccinated and licensed with tags visible, over 4 months old, and spayed or neutered.

Come out to the shelter with your best friend and enjoy off leash playtime that creates a special bonding

experience for pets and their families. Rebel’s Dog Park – where a dog can go to be a dog!

If you are interested in helping to support the planned upgrade of the park area, please contact Mary

Leavens at 410-836-1090 ext. 101. Our wish list for the park includes a gazebo, more park benches, and

removal of a few old tree stumps.

Striking Out Pet Homelessness

The Humane Society of Harford County (HSHC) takes in approximately 4,500 homeless animals each year. The staff works diligently to find forever homes for each adoptable animal. The HSHC is an independent nonprofit organization that counts on the support of the community to perform its lifesaving efforts.

Each year, the HSHC hosts a number of fundraising events. Bowl-a-Rama 2013 will be held on February 23, 3:00 – 6:30 PM at Forest Hill Lanes. This is a fun-filled event, for kids and adults alike, that raises funds to help strike out pet homelessness.

The entire bowling alley is reserved for this special event. Teams of four or more bowlers pre-register to participate in the event. If you have less than four bowlers, you will be paired with other bowlers. The registration fee of $18 per person covers bowling and shoe rental. All participants are encouraged to ask friends, family members, co-workers, neighbors and everyone they know for donations to support the homeless animals. Participants can accept the donations by cash or check or they can easily develop their own personalized fundraising page online to raise the funds.

For every $50 a bowler raises, they will be awarded two free raffle tickets at the event. Exciting raffle items will be provided to make the event even more exciting. Awards will be given to the top three fundraisers. The first person or team to raise $1,000 wins a pizza party at your school, home or office.

Please mark your calendars now for this important fundraising event. You can pre-register, create your personal fundraising page and get more information at www.harfordshelter.org or by calling 410-836-1090 x111. Please help us to “strike out pet homelessness.”
