The term “diet” defines the eating habits and organization of food rations over time. Following a diet means to draw maximum benefit in health and physical fitness from food. A diet is essentially a lifestyle, a dietary pattern that can be continued. Life long the food culture of a people is linked to the nature and the climate, traditions, social and economic conditions. The Mediterranean diet is not an abundance of bread and pasta. First the bread and the pasta is integral, and pasta, not only wheat but also various types of cereals. Meat is not much. Preference is given to white meat and blue fish. Few fats using mainly extra virgin olive oil. Many fresh fruit and vegetables, also nuts and wine.A special characteristic of the Mediterranean diet are “flat dishes” linking first and second. Some examples are pasta with meat sauce with the addition of cheese and extra virgin olive oil. More over, soups with vegetables, Napolitan pizza with anchovies, mozzarella and tomato, etc…The meal accompanied by a glass of wine, always concludes with a portion of vegetables and fresh fruit.
