Asian Candied Salmon Marinade1-1/4 cup Ponzu or soy sauce

1/4 cup sesame oil

1/4 cup molasses

1/4 tsp each cinnamon, nutmeg

& cayenne pepper

1 cup brown sugar, packed

1/2 tsp dry mustard

Whisk together all ingredients. Ensure brown

sugar is fully dissolved. Pour over and marinate

salmon for 30 minutes minimum. Grill salmon 5

minutes on each side or until desired doneness.

Discard remaining marinade.

Shrimp BoilUsing the side burner on your barbecue, bring

4 L of water to a boil. Add half of the Citrus Rub

(see page 12) to the water and simmer for 15

minutes. Cook shell-on shrimp in 1 lb batches

by simmering in boiling water just until they

change colour and are firm. Drain shrimp then

place into a bowl of ice water. Return stock to

a boil and continue with the next 1 lb batch.

Peel shrimp and serve with cocktail sauce for a

delicious appetizer!

Pulled Pork with Apples1 boneless pork shoulder roast

2 fresh apples, cored & quartered

Sea salt & black pepper

2 cups barbecue sauce

2 cups water

Set roast on top of apples in a deep roasting

pan. Season with salt & pepper. Mix your

favourite barbecue sauce with equal parts

water and pour over roast. Add hot water to

the pan until liquid is 1” deep. Prepare grill for

slow indirect-heat cooking by arranging coals

on one side, leaving an area to cook the pork

indirectly with no coals underneath. When

the grill reaches 200-225° F, scatter wood chips

on top of the coals, close the grate and put the

pork in the pan on the grill. Close lid. Cook for

approximately 4-5 hours or until fork tender

and meat reaches an internal temperature

of 165-170° F. Remove pork from grill and

wrap in foil. Return pork to grill for another

1-2 hours of cooking or until it reaches an

internal temperature of 190-195° F and pulls

apart easily. Let rest for 30-60 minutes off the

heat. Transfer braising liquid to a measuring

cup. Skim off the fat and reduce the sauce in a

large sauce pot. Using two forks, break up the

pork into bite-sized strand-like chunks. Serve

tossed in sauce.

Potato Salad2.5 lbs red skin potatoes, peeled

Salted water

1/2 - 3/4 cup bacon, diced

3/4 cup yellow onions, diced

1/2 cup white wine or light beer

Mayonnaise, to taste

Salt & Pepper, to taste

Cube potatoes and boil in salted water until

tender. Drain and set aside. Chop bacon and

onion and sauté until onions are golden and

bacon is crispy. Add wine or beer to pan and

bring to a boil. Simmer until most liquid is

gone. Toss the potatoes with bacon/onion

mixture then fold in mayonnaise. Lightly

season with salt and pepper.

Brisket 101Brisket is a tough muscle of beef that is delicious

and a culinary gem when cooked right. Follow

this simple braising technique for perfect brisket.

CitruS rub

6 tbsp sea salt

1 tbsp chili powder

1 tsp cumin

2 tsp black pepper

1 tsp onion powder

1/2 tsp garlic powder

1/4 tsp ground thyme

1 tsp mustard powder

1/4 tsp cinnamon

1 large orange, juiced & zested

Whisk all spices together. Grate orange zest into

the spice mix. Apply to meat. Save orange juice

for the braising liquid.

braiSing Liquid

4 cups beef broth

1 cup soy sauce

2 cloves garlic, peeled and crushed

Juice from one orange

Coat brisket well with Citrus Rub. Sear brisket on

very high heat on the barbecue. Next, set in a

deep pan and pour braising liquid over top. Heat

barbecue to medium-high heat and set brisket

on opposite side of the fire with fat side up.

Maintain barbecue temperature between 180° F

and 220° F and smoke 1 - 1¼ hours per pound,

turning every 30 minutes. Transfer to a cutting

board and let sit for 20 minutes before slicing

across the grain when meat is tender and falling

apart. Drizzle with a little braising liquid. Great

served on fresh kaiser rolls with fresh sliced

tomato and sharp cheddar.
