Lunch Ideas:

Cucumber boat stuffed with shrimp and mango salsa

(Shrimp and mango salsa consists of chopped shrimp, chopped cucumber, chopped avocado, mango pieces, torn cilantro leaves and lime juice)

Mixed green salad with lentil or vegetable mix soup

(Vegetable mix may include green beans, sweet potato, zucchini or squash cubes, peas, baby corn, cabbage, onions, garlic, carrots and celery)
