This weekend we will be featuring some of our specialties from Spain. We have four
Spanish cheeses, all freshly cut.
Manchego is a sheep's milk cheese that is aged a minimum of 8 months. It displays a buttery,
nutty flavor and is one of the most popular Spanish cheeses.
A less known Spanish cheese is Iberico, a mixed milk cheesethat you might consider amore mysterious and nuancedcousin of Manchego. It can beaged from 6-12 months and, bylaw, the minimum blend of milks is50% cow, 30% goat, and 10% sheep. This com-bination results in an unusually complex flavor profile. It's is a fantastic table cheese to be sure, and happily complements a wide variety of wines, both reds and whites.
One of our favorite cheeses is Spain's Drunken Goat.
Drunken goat is soaked in red wine for two to three days, giving the outside of the cheese a thin purple rind.The rind typically remains fairly soft and pliable, just likethe texture of the actual cheese, and is edible (although
whether or not you actually eat the rind is up to you).It is not too mild and not too strong - this is the reason
Drunken Goat cheese is such a crowd pleaser. It has a slight sweetness and pleasantly sharp finish.
Arpea cheeses are not pressed,
resulting in a soft and supple texture.Somewhat reminiscent of such
French cheeses as Brie andCamambert, the aromas are
pungent, smelling of damp cellar andearth, and the flavors are very rich,
milky, and buttery, with notes of grass, wood, andmushrooms.
