Life at Fox Fire Farms is ever varied and always busy, but rarely hectic.Although a Farmer’s chores are neverdone, producing true free range, organic, food is good work that we truly enjoy. It’s fulfilling to create a kind, ethicalenvironment for animals and to see them thriving on the pasture.

The foundation of our work is grass and soil management. Our animals spend their whole lives eating thenutritionally rich diet that natureprovides, and we foster, in our lushpastures. Ruminants like cattle, sheepand goats are designed to live withgrassland ecosystems so they are able toharvest their own diet in a well-managedpasture. Basically, we raise great grass and the animals do the rest, naturally.

Fox Fire Farms tour: pastures

Ag Fact:Right now there are no nationallyrecognized definitions for the terms“pasture-raised” or “grass fed;”which can make it hard to know if thefood you buy spends all of its life onpasture, or is eventually sent to aconfinement facility. The best way toensure you are buying true pasture-raised or grass-fed products is to getto know the farm – and farmer – youbuy from.

One of the most important managementtechniques we employ at Fox Fire Farms is rotational grazing; which means wemove our animals from pasture-to-pastureregularly, allowing the grass to recover.Since each species forages for a differentdiet in the pasture – and leaves a differentfertilizer – the soil is continuouslyimproved without requiring chemical additives.

Over time, our grass management hasimproved the soil on the farm and we now grow a healthful “pasture salad” thatnourishes our livestock and has increasedthe number of wild birds and animals onthe farm. In turn, our livestock nourish us,physically and emotionally, and we areable to be confident that the food we areeating is the tastiest, safest, and mosthealthful nature has to offer.

From 1908, when it was built, until the1930s the Lower Spring Creek schoolhousewas an important part of Parry family life.Grandmother Parry and her sister, Evelyn, attended school there as girls and Evelyngrew up to become a teacher there. Likemost rural schools, Lower Creek SpringSchool was used for community meetings, celebrations and gatherings and was animportant part of country life for all theresidents in the area

Today, the old one-room school house hasbeen newly restored for tours and serves as a guest house for visitors. This quiet, secluded retreat has a complete kitchenstocked with Fox Fire Farm’s homegrownmeats and eggs and all the usualammenities.

Ag Fact:Farmers working large-scaleconfinement operations often sufferfrom dangerous respiratoryconditions due to high levels of dust, ammonia, and carbon dioxide in theair. In contrast, farmers on grassfarms are outside, breathing easywhile they work alongside the animalsin the open pasture. Like the stockthey husband, pasture-based farmerssuffer from less stress and lessrespiratory illness. Grass-fed farmsare truly a haven for everyone on the farm.

The first animals to enter a pasture in theFox Fire Farms grazing rotation are cattle.Unlike most cattle raised in the U.S. today, our cattle are never fed grain. Instead, theyforage the pasture for grasses, legumes, and other plants they favor. Cattle eat alot, so they are moved to another sectionof the farm after several days to avoidovergrazing.

Grass-fed Mothers produce nutritionallyrich milk and are able to suckle and reartheir young in the pasture. It’s best for thecalf and the first step in producing thesavory cuts of meat our beef is known for.

Fox Fire Farms tour: beef

Ag Fact:Meat, eggs and dairy products raisedon pasture grass are healthier foryou. They contain higher levels ofvitamins A, D, E and K and omega-3and omega-6 fatty acids. They alsohave more of the cancer fightingagent conjugated linoleic acids(CLAs). In addition, pasture-basedfarms allow their animals to grow at anatural rate instead of using growthhormones to force weight gain.

Since we use rotational grazing, we’reable to stay in close contact with ourlivestock and constantly monitor theirhealth and well-being; which means wedon’t have to rely on constant doses oflow-level antibiotics to protect thehealth of our animals.

Organic grass fed and grass finishedbeef is healthier eating too. It’s higher inomega-3 acids, vitamin E, conjugatedlinoleic acid, and polyunsaturated fatty acid.

Grapes grown on conventional farms areheavily sprayed with chemicals, which are absorbed through the skin of the fruitand the root system of the vine. This chemical bath is devastating to the soil and surrounding environment. At Fox Fire Farms, we grow grapes like we grow everything else – withoutchemicals and with a passion for creatingthe highest quality products sustainably.

Organic vineyards are particularlybeautiful because they are home to anarray of insects, bees, birds, and bats thatexist in a mutually beneficial symbioticrelationship with the grapevines.

Fox Fire Farms tour: wine and table grapes

Ag Fact:Like wine, the flavor of grass-fedmeat and dairy products offer uniqueflavors and characteristics dependenton the soil, landscape and climatewhere the animal was raised, and theexpertise of the farmer. Meat isextraordinarily rich, succulent andtender; eggs have savory, firm, darkyokes. Your Grandparents probablyremember food tasting this good fromthe days before factory farming, but ifyou’re new to grass-fed food; you’rein for a delightful surprise.

Farmers tend to be a thrifty bunch, loatheto waste anything “someone can get somegood out of” and at Fox Fire Farms, we areno exception. Our 100% organic orchardsproduce beautiful apples – but we’re notcurrently in the apple business. So, webought some pigs!

Feeding our USDA certified organic applesto our pigs means we are able to offer oneof the rarest and most sought-after flavorsin the pork industry: apple fed pork.

Fox Fire Farms tour: pork

Ag Fact:Large-scale factory farms arenotorious for polluting theenvironment because of the largeamounts of manure that build up insurrounding area, overloading the soilwith nutrients and fouling the groundwater. Manure contaminants havebeen linked to algal blooms, massivefish-kills, and a variety of humandiseases, some of which are deadly. On a grass-based farm manure isspread over a large area, providingfertilizer for pastures and helping tocreate a healthy “pasture salad.”

15Fox Fire Farms - A family tradition since 1913

Our young, hand-caught halibut are moreexpensive than what you find in a grocerystore, because it takes the captain the same amount of energy to catch a 60pound fish as it does to catch an older, 300 pound fish. But older fish aresusceptible parasites and mercuryaccumulation. We’re just not willing to eat or sell that kind of fish. The captaintakes great pride in the catch and is very concerned with quality.

“That seafood was outstanding, tosay the least. Quite honestly it justmelted in our mouth. All yourproducts are superb. Thank you!”

The exquisite, almost sweet, taste of this pasture raised, apple fed pork issomething you have to experience tobelieve – but order right away becausewe’ve had a waiting list ever since weannounced Fox Fire Farms is raising this pork.

Does an apple a day keep the veterinarianaway? Judging from the health of our pigs,we suspect so. Just as important, porkraised on an organic, chemical-free diet ishealthful for people and an excellentsource of protein as well as essentialvitamins and minerals.

Copper River one of the only sustainablefishery in the United States and Fox FireFarms is proud to offer their Sushi gradeand #1 grade fish. We buy from a smalloperation, the captain and his small crew, that carefully hand selects for us the 10%of the catch that is #1 quality. The fish is processed at sea, flash frozen withinhours, which ensures it tastes and stays fresh.

To remain a sustainable fishery, theCopper River has some of the strictestcommercial fishing regulations in thecountry. It’s an honor to fish the CopperRiver commercially, because very fewpermits are issued each year, even thoughthe Salmon are highly prized for their darkred meat - a result of the diet availableonly in the Copper River.

Ag Fact:Pasture-based farming is one of themost important things human do forthe welfare of wildlife. The lush farmenvironment attracts and fosters awide range of birds and other wildanimals. Grass farms are a refuge formany species that are being crowdedout of their natural habitat asformerly wild areas are developed forhuman use. In return, wild speciesbenefit the farm by controlling pestsand increasing pollination. It’s a win-win relationship for everybody.

Fox Fire Farms chickens are raisedoutdoors on a natural, soy-free, organicdiet – which means lots of grass, leaves, seeds, and bugs - just like Nature intends. In the pasture, chickens also eat smallrocks, which help them digest their food and provide them with importanttrace elements. We do not use any soy feed, because soy is harmful to the chicken’s reproductive systems, and can have damaging effects on thehuman body too.

Fox Fire Farms tour: eggs

Ag Fact:Did you know most eggs labeled “freerange” come from chickens thatnever go outside? Eggs can be labeledfree-range if there is a chicken doorin the coop – even if the chickensnever use it. The fact is, there are somany misconceptions – and so littleoversight – about free range food, it’sdifficult to know what you are gettingunless you buy from a farm thatraises all their animals on well-managed pastures.

Goats love an eclectic diet of flowers, herbs shrubs, grass and tree bark. They are fantastic for gobbling up weeds, which gives pasture grass grazed by goats an advantage over less desirableplants. Since our goats do such a good job of keeping invasive weeds at bay, we are spared the expense and danger of using chemical herbicides in Fox FireFarms pastures.

“The kebobs are unbelievablydelicious. I simply marinated themovernight in a custom mixture andbroiled them in the oven the nextmorning.”

Goat is a heart-friendly meat andabsolutely delicious when raised on grasspastures. The flavor is often compared to lamb, but it is much sweeter and very tender.

In fact, goat is the most consumed meat inthe world and has less fat and cholesterol, and more iron, than beef, pork, or evenskinless chicken. Goat is also a rich sourceof conjugated linoleic acid. If you’ve beensearching for an earth-friendly, nutrient-rich source of protein, try Fox Fire Farmsorganic goat. It’s especially good in Indianand Caribbean dishes.

Ag Fact:Large-scale factory farms forcelivestock to live in dark, crowdedconditions where they may never beallowed to go outside, exercise, orpractice their natural behaviors, andthey cannot escape the stench oftheir own manure. Animals are fedprocessed foods made up mostly ofgrain and soy and “supplemented”with by-products animals should notever eat. These conditions makestock much more susceptible tostress and disease. Let’s be honest, a lot of lamb tastesdistinctly gamey. And strong. But our lamb, raised on organic grass has a delicate, delicious taste that needs very little seasoning to create an elegant feast everyone will enjoy.

Like all our animals, Fox Fire Farms lambs are raised entirely on organic grass and never receive growth hormones, “preventative” antibiotics, or grain-based feed.

Fox Fire Farms tour: lamb

Ag Fact:Some farms raise their animals ongrass and label their meat grass-fedor grass-finished, but use chemicalfertilizers and pesticides on theirpastures. Many of these artificialfertilizers contain acids, which raisethe acidity of the soil, kill beneficialorganisms that live in the ground, and ultimately interfere with plantgrowth. Worse, chemicals in the grassmeans chemicals in your food. Tomake sure you’re eating clean, healthy food, make sure you buy froman organic farm.

At 9 to 12 months of age, our lambs areprocessed at a certified USDA processingplant in Colorado.

Grass-fed lamb has less fat and moreprotein than grain-fed lamb and is an excellent source of vitamin B-12,vitamin E, beta-carotene, niacin, zinc, iron, and omega-3 fatty acids. Bet you didn’t know lamb was such a healthy choice… It’s the grass.
