Higher Achievement Program Cooking Workshop

Taught By: Certified Executive Chef Richard J Romani (Fordham Prep In-House Chef)

Week 1: Fundamentals of Basic Knife Skills and General Kitchen Safety and Sanitation.

Week 2: Fundamentals of Basic Cooking Method. You Will Learn the Four Most Common Cooking

Method (Sauté, Braising, Roasting, Grilling)

Week 3: Fundamental Method of Sauces/Stocks. You Will Learn the 5 Mother Sauces and How they will become Secondary Sauces, and Basic Stock Methods.

Week 4: Fundamentals of Presentation and Grand Buffett Tasting to Hap Faculty.

Latin Language

and the Greek & Latin

Roots of English Program

The program focuses on Latin, but includes Ancient Greek alphabet and basic

vocabulary. Greek and Latin are important in the history of English, and the HAP

program will increase and develop your English vocabulary through its Greek and

Latin roots.

All materials will be provided by the instructor.

Mr. C. Lauber is a graduate of Fordham Prep, and has taught Greek and Latin for over 20 years.

Did you ever dream of being on Broadway or becoming a professional actor?

Ever wonder about the magic behind light and sound design

or what it is like to work backstage?

In this four session theatrical workshop, students will engage in a variety of theatrical forms

ranging from scene study, improv, technical operations, playwriting, and theatrical movement.

HAP students will see the inner workings of the Prep’s professional Leonard Theatre and gain a

general understanding of lighting and staging, performance, and collaboration.

Fee for participation: $50

Instructor: This program is directed by Mr. Thomas O’Sullivan, Fordham Prep ’98. Mr. O’Sullivan

is a school counselor at Fordham Prep and the Director of the Prep’s Drama Society. He also

runs technical operations for the Prep’s Leonard Theatre.

Mr. O’Sullivan has been directing and choreographing students for over fifteen years.
