I love food.The things I enjoy most often include food, drink, friends, and

family. Family recipes, ones shared among friends, meeting friends for a meal. Anniversaries,

birthdays, Friday nights. It seems all things, from everyday moments to special occasions, become just a little more enjoyable with the

right food and drink.

This year, with the new economic realities, we are all spending a little less. However, when you do spend, you should recognize that your local spending has a huge impact. Your patronage of Upstate businesses helps ensure local jobs and provides tax revenue that supports schools – our future. Local restaurants are a vital part of our

community. Typically, every dollar spent in restaurants generates $2 in sales for other industries, according to the U.S Department of Commerce.

Good times are often as easy as meeting for a meal, hosting a wine tasting or summer cookout,

or having a picnic in the park. Remember to enjoy, and celebrate the fact that your support of

Eating well in the UpstateOne thing is for sure. The Upstate has an array of amazing

restaurants. It’s been said more than once: if you figure the number of people who live here and compare that to the number of eating establishments, the Upstate has more places to eat out per capita than any other area in the country.

And there’s lots to do and see nearby before and after dining.

DOWNTOWN GREENVILLEBack in the 1970s, downtown

Greenville was little more than a handful of locally owned restaurants catering to downtown workers. The four-lane, almost treeless Main Street closed up at night. Buildings that had long held major department stores stood empty after the stores moved to area malls.

Fast-forward 40 years and a two-lane, almost forested Main Street has become a vibrant place of pedestrians

at most any hour of the day venturing into retailers that do brisk business. The most dynamic bit of “traffic” comes via the Swamp Rabbit Trail as this popular walking/biking path traverses through downtown’s Linky Stone Park on its way to Travelers Rest.

One-third of all the office space in the Greenville and Spartanburg metropolitan area is in downtown Greenville. Every week from April through September, free outdoor concerts take place downtown—everything from folk to jazz.

Downtown is also the location of Heritage Green, which includes the Upcountry History Museum, the Greenville County Museum of Art, a satellite gallery of the Bob Jones University Museum of Sacred Art, the Greenville Little Theatre and the Greenville County Library as well as the Children’s Museum of the Upstate. continued on 15

On South Main is the Peace Center for the Performing Arts and nearby on Richardson is CentreStage Theatre. The BI-LO Center is located on North Academy.

WEST END/AUGUSTA ROAD – GREENvillE

The West End, which some consider an extension of downtown, has become a center for dining and entertainment, largely due to the creation of Falls Park on the Reedy at a cost of $13.2 million, paid for with money from the city’s hospitality tax.

The focal point of the park is the $4.5 million Liberty Bridge, a pedestrian bridge that’s 355 feet long, 12 feet wide

over the river designed by architect Miguel Rosales of Boston. Bryan Hunt designed the sculpture at the Main Street entrance.

Fluor Field at the West End is home to the Greenville Drive, a minor league team affiliated with the Boston Red Sox. The field includes a replica of Fenway Park’s Green Monster and offers a stunning view of the downtown skyline.

Retailers are beginning to fill the historic buildings in the area. A longtime fixture is the Greenville Army Store, loaded with any and all military surplus and products used by police, SWAT, fire, EMS and rescue workers. Augusta Road features a variety of homegrown merchants and specialty shops offering everything from jewelry, antiques, home décor, fashion, fine arts, flowers and more.

The South Carolina Children’s Theatre office is located in the area but performances are held at Gunter Theatre at the Peace Center. The Historic West Pendleton Arts District is nearby as well.

revitalize downtown Greer and have seen the tide turn. The 12 square blocks of downtown, also known as Greer Station, include more than 40 buildings on the National Register of Historic Places.

The buildings house retail, dining, entertainment and professional offices. City government has new offices a few blocks from its longtime home at the corner of Poinsett and Main streets. Next door is City Park, with walking trails, a children’s playground, a picnic shelter, a pond, gardens, tree-lined promenades, open lawn areas and an amphitheater.

Greer is also home, of sorts, to the Greenville-Spartanburg International Airport.

SPARTANBURGSpartanburg is home to more colleges

than any city of its size in the state: Converse College, Wofford College, University of South Carolina Upstate,

Anderson has been in the throes of revitalizing downtown ever since the county government built its new office complex on Main Street in 1991.

The Anderson County Arts Center includes exhibits of work by artists both local and national. The arts center also sponsors an annual juried show, which draws work from artists from all over the southeast.

The city also benefits from its proximity to Hartwell Lake built by the U.S. Army Corps of Engineers between 1955 and 1963. It has nearly 56,000 acres of water and a shoreline of 962 miles and draws millions of visitors every year.

SENECA /CLEMSONSeneca is a small town with a big past as

it is home to several properties identified on the National Register of Historic Places. Among these are the Lunney

Museum, the Miss Sue Gignilliat House and the Whit Holleman House.

Also of historical significance is the area known as Ram Cat Alley. A commercial center for Seneca since the late 1800s, Ram Cat Alley continues to house businesses, restaurants and retail shops.

Seneca shares beautiful Lake Keowee with the nearby city of Clemson. Boaters, kayakers and scuba divers delight in the 18,500 acres of water and over 300 miles of shoreline. And, if the waters of Lake Keowee are not enough to satisfy them, Clemson borders Lake Hartwell, too.

Clemson is perhaps best known as a college town with Clemson University as its epicenter. Clemson Tiger sports drive much of activity in the area with events at Death Valley, Littlejohn Coliseum and Doug Kingsmore Stadium.

Sightseers also enjoy visiting the South Carolina Botanical Garden and several historical homes. For more adventurous types, the Clemson Experimental Forest offers areas for hiking, mountain biking, bird watching and horseback riding.

a nyone who goes beyond the occasional glass of “house wine” is bound to wonder how to make

sense of the world of wine. Millions of labels compete for attention in an increasingly

chaotic market. Even the selection at the grocery store can be a bit much for a

beginner to comprehend. All too frequently, folks just give up trying to reason out a choice. They return to one or two favorites and drink them regularly. This is a bit like an eight year old who always wants macaroni and cheese. He gets what he “orders” but he is certainly missing out on the glorious variety of gustatory treats this world offers.

Another approach, employed by more expansive (but probably

no more self-assured) souls is to rely on the popular press for guidance.

Unfortunately, there is no cohesion to these touts. They are “just out to capture your dime”. Besides, when you respond to their coverage with a shopping trip, you discover

that they mentioned eight Bordeaux wines out of ten thousand, and you are competing with one hundred

thousand other readers for the same (highly arbitrary) recommendations. Any hack who can get his stuff

published acquires huge, undeserved influence over the “well read” wine enthusiast.

Drinking a limited selection and following some pundit, are not your only two choices.

Wine enjoyment and wine knowledge come best from tasting and drinking wines, and

considering them in a fresh light on their own merits. Taste for yourself and inform

your taste through your own experience. You are not in a contest to become

“shrewdest wine buyer of the year”. You should be out to enjoy yourself.

With each new wine, make note of the producer and region of origin. Noteworthy wines are proud of their provenance and their heritage. The most important fact on a label is the producer’s name. Some “trademark wines” are sold solely through the strength of advertising and publicity. They may be enjoyable, but they are essentially anonymous and the experience of drinking them leads nowhere. Their producer and region of origin are hidden behind a fancy label (perhaps a brightly colored drawing of an animal). As with many products, the main job is to attract your eye.

Seek out wines from real wineries. Yes, the grape type can figure into the formula, but the “who and where” take precedence. If you enjoy wines of a particular winery (winery, not trademark), it makes sense to learn more about them and try other products they make. Equally, if you like a certain wine from Rioja, try others from the same region. And yes, you might like a wine made from a certain grape type (or blend of grapes) and look for others made from the same grape. Be careful of this last approach. Many “New World” wines name a grape on the label. Not so in Europe. For example, the best Chardonnay s of Burgundy in France will bear the name of the famous town and vineyard of their origin, not the name of the grape.

Folks in the wine trade should be able to assist you. If you can say what you have liked in the past, especially if you can name specific wines, a wine server or retail merchant should be able to

direct you to others you might try. No one can perfectly predict what you will like best, but a professional, even an enthusiastic young professional, should be able to commend new wines to you. (If they spout “point scores” rather than characteristics and origins, seek advice elsewhere).

Want to host your own wine tasting? Richard deBondt of Northampton Wines offers the following suggestions:

Have a theme – the more specific, the better. For example, “wines from Oregon” or, better yet, “pinot noirs from Oregon.”

Limit yourself to six wines.

Organize the tasting so everyone gets a sample – ideally about an ounce – from each bottle.

Make it a “blind” tasting by wrapping bottles in brown paper bags marked only with a number. You can taste in numerical order or not, so long as everyone samples every wine.

Give guests a blank sheet and ask them to take notes; then, vote for favorites at the end: “This proves nothing; but it does help people pay attention to what they’re drinking.”

Have guests vote for their top three preferences; sometimes, a wine won’t be anyone’s number one choice but, interestingly enough, it will be everyone’s second-favorite.

Most of all, have a good time: “Wine tastings should be fun!”

That’s why local restaurants are increasingly focused on sustainability. A number of Greenville restaurateurs commit to serving local produce—and a few even grow some of the food they serve. Others use biodegradable to-go boxes. They compost food clippings, and recycle paper, boxes, bottles and more.

“There are 48 Greenvilles in the United States, and we want to be the greenest,” said Russell Stall, executive director of Greenville Forward, which acts as the facilitator for Vision 2025, Greenville’s strategy for the next 14 years.

While the development of parks and other recreational places is important, the green movement also means changing behavior, encouraging recycling in all sectors, including the places we eat, he said.

“I’ve always been environmental my whole life. A lot of the practices that people looked at as different, I’ve looked at them as everyday,” Garcia said.

These practices include using biodegradable take-out boxes made with sugarcane waste products and recycled paper; recycling used fryer oil by converting it to bio-diesel for vehicles; and doing away with disposable cups in the restaurant.

Garcia also owns a 10-acre sustainable farm where he grows produce for Soby’s kitchen. Located just 20 miles from downtown, the farm greatly reduces the restaurant’s carbon footprint and gives

Garcia access to specific produce he wants—produce he may not be able to find on factory farms.

“There are two things in the food industry I’m very passionate about. One is southern food, the second is about being seasonal,” says Garcia. “You should not eat a tomato in the middle of January, and you should not have asparagus in the middle of October.”

The farm allows Garcia to recycle biodegradable waste matter, such as food clippings, by placing it in a compost pile. The compost provides natural fertilizer for the crops.

Garcia believes in buying locally and regionally as much as possible. That’s why Soby’s is among the dozen or so area restaurants participating in Certified SC’s

Fresh on the Menu, an initiative that requires at least 25 percent of its menu items come from South Carolina. Fresh on the Menu’s main goal is to increase the per capita income of rural South Carolinians through the generation of agricultural commerce and provide more fresh food.

“If you keep your dollars local, those local dollars will come back and take care of you,” Garcia said.

SLOW – NOT FAST – FOODGarcia is also a member of Slow

Food Upstate, the local chapter of an international non-profit focused on sustainable food.

Chef Nello Gioia of Ristorante Bergamo embraces the slow food movement as well.

“Slow food is going back to our roots. It is the food that our grandfathers ate and that takes time to grow. It’s natural food with no chemicals, vegetables t h a t are not organically modified,”

said Gioia, who serves as a board member

of Slow Food Upstate. “It’s part of my heritage, part of my life.”

Ristorante Bergamo uses free-range, chemical-free chickens and does not serve tuna, swordfish or shrimp that are not sustainable. During the summer, Gioia buys local produce only.

“I go myself on Monday mornings and buy produce for the whole week. Anything I can find from tomatoes, green beans, to local melons, or eggplant, I go there and buy it locally,” says Gioia.

Ristorante Bergamo also uses organic herbs grown locally and in Gioia’s garden and greenhouse.

Gioia believes by eating more sustainable foods and meat grown chemical-free, health problems such as diabetes and coronary disease will decrease.

which picks up bottles and other recyclable materials from about a dozen hotels and restaurants in the central business district as well as businesses throughout Greenville, Spartanburg and Anderson counties.

“We reduce what goes into the landfill by providing recycling services,” says Ever-Green’s Elizabeth Garrison, noting that participating restaurants receive a “Certified Green” decal as well as a certificate from DHEC to signify their recycling efforts. “Our clients’ customers like to see that they recycle—it shows these businesses care about the environment.”

The City of Greenville has focused most of its sustainable practices efforts on conserving energy, according to Mayor Knox White.

Asked about how the city has supported local farms and restaurants, White said, “We do have a few neighborhood gardens that we support, in what are called special emphasis neighborhoods where we do spend federal dollars for some housing, some housing programs, and parks.”

The neighborhoods use the products of these gardens for personal use and consumption. Also, the Saturday Farmer’s Market in downtown Greenville offers local, homegrown produce.

“These kinds of programs have been very popular, whether it is walking trails or the Saturday Farmer’s Market. Every time we promote these kinds of initiatives they are always well received, and that’s good encouragement in terms of doing more,” White said.

Gioia said he appreciates the downtown market.

“It’s made up of small producers, local people from around here,” Gioia said.

Though residents show interest in the green-oriented programs that exist, White said the City does not extend support, monetary or otherwise, to local organic and sustainable restaurants.

“It has been more of a private effort. Our only link has been with the produce gardens in the neighborhoods,” says White, “The city can’t spend public money on private businesses.”

a clean environment, and fair prices for farmers and food producers,” she said.

Wesley said slow food is about the enjoyment of food, sharing it with friends and family, building a sense of community, preserving cultural traditions, and protecting foods that are disappearing from grocery store shelves.

“We have something called the Ark of Taste,” says Wesley. “It is a catalogue of over 200 different foods in the United States that are endangered or in need of conservation.”

One of these items is sourwood honey, which is native to the Appalachian area. Another is Tunis lamb, a seasonal specialty at American Grocery, where

chef/owner Joe Clarke is committed to both the Slow Food philosophy and Certified SC’s Fresh on the Menu initiative.

“The question isn’t why (would you utilize local ingredients), it’s why not?” said Clarke, whose menu is upwards of 90 percent fresh and local during peak season. “For us, there’s no other way.”

Clarke believes it is a chef’s responsibility to know the origin of his or her ingredients. “This ensures you’re getting a quality product,” he said. “You can meet the farmers and see how they’re raising the animals, how they’re growing the produce.”

Along with American Grocery, Soby’s and Ristorante Bergamo, other restaurants that have supported the Slow Food philosophy include High Cotton downtown and Stella’s Southern Bistro in Simpsonville. Wesley said she would like to see even more options for Slow Food dining.

Thus Slow Food Upstate has held a variety of “Tastings” in which food education was the central focus. In the summer of 2010, the organization featured a full meal with tomatoes, from appetizer to dessert, and in the fall, a meal highlighting local meat, from goat to beef to lamb. Then in the winter, a dinner focused on foods that are rare and endangered, but that are being sustainably produced. •

On the menu were foods such as Ossabaw Island pork, a pig that came over with the Spaniards to the Georgia Islands in the 1600s, and Sea Island Red Peas, an African Creole tradition from the South Carolina Lowcountry.

“Slow Food believes that the only way to save these forgotten flavors is to eat them, which supports the farms that raise them,” Wesley said. “We believe that food should be a fair price, too—fair to the producer and fair to the consumer.”

Much of society is still focused on speed and convenience, Wesley said, “but Greenville is changing, and there is a new generation of Slow folks out there who want to stop and enjoy the food and respect the way in which it was raised.”

So many, in fact, that Greenville has launched its first Slow Food International Earth Market, which takes place every third Thursday through September from 2-6PM at the McDunn Studio on Rutherford Road.

“It is not just another farmer’s market, but one which is based on ‘Good Clean and Fair’ and will have no genetically modified organisms, no pesticides, no herbicides or growth hormones,” Wesley said. “Just naturally grown and raised food the way your great-grandparents used to eat.” n

1 – Coconut water can be used (in emergencies) as a substitute for

blood plasma. The reason for this is that coconut water (the water found in coconuts – not to be confused with coconut milk, which comes from the flesh of the coconut) is sterile and has an ideal pH level. Coconut water is liquid endosperm – it surrounds the embryo and provides nutrition.

2 – Dynamite is made with peanuts. Peanut oil can be processed to produce

glycerol, which can be used to make nitroglycerin, one of the constituents of dynamite. Note however, there are other processes that can be used to make dynamite without using peanuts at all.

3 – Microwave cooking was discovered accidentally, when

a chocolate bar melted in someone’s pocket. The fact is, Percy LeBaron Spencer of the Raytheon Company was walking past a radar tube and he noticed that the chocolate bar in his pocket melted. He then tested popcorn in front of the tube, and it quickly popped all over the room. He is (obviously) known as the inventor of the Microwave oven.

4 – The Popsicle was invented by an 11 year who kept it

secret for 18 years. The inventor was Frank Epperson who, in 1905, left a mixture of powdered soda and water out on the porch, which contained a stir stick. That night, temperatures in San Francisco reached record low temperature. When he woke the next morning, he discovered that it had frozen to the stir stick, creating a fruit flavored ice treat that he named the epsicle. 18 years later he patented it and called it the Popsicle.

5 – Worcestershire sauce is made from dissolved fish. Worcestershire

sauce, the popular English sauce, is made from dissolved anchovies. The anchovies are soaked in vinegar until they have completely melted. The sauce contains the bones and all.

6 – Refried beans are only fried once. he reason for this misconception is

a translation error. The originals are frijoles refritos which actually means “well fried beans” – not re-fried.

7 – The first soup was made of hippopotamus. The earliest archeological

evidence for the consumption of soup dates back to 6000 BC, and it was hippopotamus soup!

8 – The FDA allows you to sell bugs and rodent hair for consumption.

The FDA allows an average of 30 or more insect fragments, and one or more rodent hairs, per 100 grams of peanut butter. I will certainly think twice before buying my next jar!

9 – The largest food item on a menu is roast camel. The camel is stuffed with a

sheep’s carcass, which is stuffed with chickens, which are stuffed with fish, which are stuffed with eggs.
