An authentic Middle Eastern menu.

In 2003 after completing the opening contract for the Ramada Hotel at Glenelg South Australia I travelled with Yazan Akeel as an assistant for his Masters of Gastronomy dissertation “The changing diet of the Bedouin”. We travelled for a month along the border of Syria and Iraq tracking down and meeting with nomadic Bedouin families. It was while we were in the desert that Sadam was captured.

For this month food was sparse and we were always conscious to eat with restraint knowing that anything we ate

took from the women and children who ate after us. However in Amman with Yazan’s parents food was bounteous; they were marvellous cooks and cooking with them and eating out with them opened the authentic world of Middle Eastern cuisine for me in a way that book reading never could.

It is a cuisine easy to replicate in South Australia because we share a similar climate and grow all of the ingredients. Come to the Casbah starts with bread and pickles, some wonderful salads, two meat dishes, a wonderful rice dish and a lovely dessert.

Cooking with Roses Saturday 13th October 2pm-4:30pm

Cooking with flowers is nothing new and there is nothing more perfumed than roses. From rose petal pasta, to rose jelly and rose ice cream and sorbet, to crystalised rose petals, to

rose marzipan chocolates and cooking with rose water.

This is a mainly sweet class with two savoury elements.

Cooking with Citrus Sunday 14th October 9:30am-12 noon

When you run a restaurant you quickly learn what sells and what doesn’t and it has to be said that citrus desserts are universally popular with both sexes.

This class is not lost to the dessert kitchen. It explores two wonderful salads using pickled lemons and limes

and the benefits of using citrus juice rather than vinegar in savoury cooking when matching food and wine.

It then veers hard back into the best ever lemon curd, a citrus soufflé, pastry, lemon or lime delicious and other favourite citrus desserts.

The Best of Bread Sunday 14th October 2pm-4:30pm

This is a hands-on class with only 12 participants!

When you have made bread almost on a daily basis for thirty years to learn to master the nuances of the tricky beast ‘yeast’, this class delights in demystifying something that in actual fact is incredibly simple for the patient and observant cook.

This hands on class will explore breads in all their diversity from pocket bread (yes you can), to a fabulous ciabatta, to two types of wonderful rye bread and much, much more!
