    Easy Easter Cup Cakes

    Ingredients

    For the cakes

    150 g butter, softened 150 g sugar 3 eggs, beaten 150 g self-raising flour, sifted 1 tsp vanilla extract 1 tbsp milk

    For the icing

    75 g butter, at room temperature 150 g icing sugar 1 tbsp milk 1 tsp vanilla extract a selection of pretty food colourings.

    To decorate

    A selection of - Sweets - mini eggs look particularly nice Sugar flowers Sprinkles

    Method

    For the cakes

    Preheat the oven to 180C/ 160C fan/ gas 4.

    Cream together the butter and sugar until light, fluffy and pale. Gradually beat in the egg, adding a little flour if the mixture looks like it might curdle.

    Beat in the vanilla extract and milk.

    Place 12 paper cupcake cases into a

    cake tin and divide the mixture between them.

    Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool on a wire rack.

    For the icing

    In a mixing bowl beat the butter with a wooden spoon or in a mixer until smooth, then sift in the icing sugar, beating regularly.

    Add the vanilla extract and milk and beat for five minutes. The frosting should be really light and fluffy.

    Mix your chosen food colouring colours into the icing to give an even colour. You can use one colour or split the icing and use several.

    When the cupcakes are totally cool, spoon or pipe the icing on top. Finish with your chosen decorations..

    Simple to make and children love them. Why not let them join in with the decorating?

    St. Patricks Day

    Which, roughly translated, is St Patricks Day blessings upon you all.

    March 17th is St. Patricks Day. Patrick is the patron saint of Ireland (both Northern Ireland and Eire). You may be surprised to learn though that he wasnt Irish at all. He was English!

    So how did an Englishman become the symbol of all things Irish?

    Patricks early life was the stuff of a boys own adventure. He was kidnapped as a teenager and sold as a slave in Ireland. There he worked as a shepherd, in harsh conditions, for six years. Then one night, so the story goes, he heard God speak to him and tell him it was time to escape. This he did and he travelled back to Britain by boat. Once there though he was recaptured and returned to slavery. But Patrick didnt give up. He escaped again, this time successfully, and journeyed through Europe before he finally settled in a French monastery, where he trained to be a priest. Then he returned to Britain.

    One night he heard voices calling him back to Ireland. He decided that his

    mission was to convert the pagan Irish to Christianity. First though, he resumed his studies in France and was eventually made a bishop, whereupon he finally returned to Ireland.

    The High King of Tara was the most powerful man in Ireland and was initially angered by Patricks arrival, but the bishops quiet confidence in his faith won him over and the

    King gave Patrick permission to preach Christianity around the land.

    St. Patrick is famous for having used the shamrock to explain the Holy Trinity, There is one stem but there are three leaves on it. So it is with the Blessed Trinity. There is one God but three persons stemming from the same divinity.

    Hes also famous for having banished snakes from Ireland though in fact this story is symbolic. The snake was a symbol of paganism and was therefore banished only by way of being replaced with the Christian cross.

    Patrick died on March 17th, 461AD and is believed to buried in Downpatrick, Northern Ireland.

    Today St. Patricks Day is celebrated enthusiastically even by people whove never set foot on the Emerald Isle. Its a chance for everyone to celebrate their love of Ireland and all things Irish.

    Why not join in the celebrations. Order a green beer, a Guinness or an Irish Whiskey in your local Irish pub, then raise your glass and shout Slinte...thats cheers to you and me!

    Albert Einstein supposedly declared that, If the bee disappeared off the surface of the globe then man would only have four years of life left. There is much debate over whether the great man actually did make such an assertion as he was a physicist after all, not an entomologist, but whether he did or not, its a scary thought.

    Theres no doubt about it, honey bees and bumble bees are of enormous agricultural importance. It is estimated that more than a third of the worlds crop production relies on these bees. Without them were in trouble and they are in decline. Pesticides, loss of habitat and disease are all thought to be playing a part.

    Bees are fascinating and beautiful creatures and as gardeners we can play our part in their continued survival. Its simple: bees need flowers for sustenance, flowers need bees for survival and gardeners need flowers to garden!

    First its important to think ahead and provide flowers for bees throughout their lifecycle, which runs from March to September. Here are some suggestions.

    Spring Bluebells, bugle, flowering cherry, forget-me-not (Myosotis), hellebore and rosemary are all good spring plants.

    Summer Aquilegia, sweet peas, fennel, foxgloves, potentilla, roses, stachys, teasel, thyme and verbascum

    Late summer / early autumn Aster, buddleia, dahlia, eryngium, fuchsia, heather, lavender and sedum.

    Second, unfortunately not all flowers are

    created equal. Frilly double flowers, for example, are too elaborate. They have so many petals that the bees struggle to get to the nectar and pollen. This is the reason that single dahlias attract lots of bees, whilst double varieties are generally ignored. Single flowered rose varieties are also good, such as the rambler Seagull, with its flat open white blooms, large yellow stamens and heady scent. Any similar rambler grown over a fence or wall will do. Some, like the pale pink Little Rambler, will even repeat flower. Ramblers are terrific roses. They are vigorous, disease resistant and great for covering bare fences, unsightly sheds and walls. Best of all they need next to no pruning!

    The main thing is to keep it simple: a few flowers for each part of the bee life cycle and no overly fancy varieties. Im not saying that you shouldnt grow double flowered dahlias if thats what floats your boat, its just that Mr Bee would appreciate a few single flowered varieties thrown into the mix. Lets make this the year we all be nice to bees: our future may depend on it!
