David Butterfield studied viticulture and oenology at CFPPA, in Beaune, graduating in 2003. From 2001 to 2004 he worked with producers in New Zealand and Burgundy before opening his own project in 2005. The soils of Les Boucherottes premier cru feature a deep clay. You can expect a lushly textured, relatively full-bodied Pinot that could reward a further 5-8 years of ageing.

Pommard is noted for producing Pinot Noir with considerable tannins. The vines are planted at altitudes ranging from 250 to 350 metres elevation, and the soil composition moves from ancient alluvium at the lower levels through clay-limestone to Jurassic marls to brown limestone at the highest points. The wines are sleek, with dark fruit and a richly textured mouthfeel, and need time in the cellar.

MILLER-CYROT VOLNAY 2017AC

The Volnay area of Burgundy has a reputation for producing Pinot Noir with a refined, delicate nature. These are characteristically aromatic, velvety wines that can be approached relatively young. Expect lifted violet tones with gooseberry and red cherry. With time in the cellar, this will develop spice and dried fruit notes. The style is particularly suited to braised and roasted fare.

PRESTIGE CLOS DU ROI BEAUNE 1ER CRU 1995AC(Robert Ampeau et Fils)

The Clos du Roi vineyard is regarded as one of the best parcels in Beaune. It was once responsible for much of the wines served to the French kings at Versailles. This one from Robert Ampeau et Fils will have evolved flavours of dried herbs and fruit, but these are wines built for longevity, and you will encounter a wine that’s still retaining considerable freshness and vitality in its red fruit. Expect an elegant, refined wine, with mineral, earth and smoke notes wrapped around a core of red cherry. This 25-year-old will have many years ahead of it yet.

David Butterfield is a Torontonian now living in Beaune, where he studied viticulture and began his own project in 2005. Expect this Meursault to possess all of the characteristic powerful aromatics the region is known for, with a complex, buttery, creamy palate that reflects significant richness, elegance and charm.

BUTTERFIELD PULIGNY LES FOLATIÈRES MONTRACHET 1ER CRU 2017AC

The Les Folatières premier cru site is quite steep and comprises rocky limestone soils. The vines have to work very hard and dig very deep to find water and nutrients. This imparts a great concentration and intensity to the fruit of the Chardonnay grown here, as well as infusing the wines with a precise minerality. These are Chardonnays of considerable depth.

This muscular and robust effort delivers sneaky good length and while it needs to develop more depth, it has the potential aging curve to do so. Drink 2029+. The star behind the unique, distinct white wines of Condrieu is Viognier. Amazingly, the grape fell out of favour in the 1960s and very nearly became extinct in the 1970s. The efforts of a small group of dedicated producers have seen Condrieu’s gorgeously textured, floral wines, with their lavender, apricot and exotic spices, become one of the most coveted styles in the world.

DOMAINE DE LA MORDORÉE LA REINE DES BOIS LIRAC 2017AC

TASTING NOTE: Not yet bottled at the time of my visit, but the 2017 Lirac La Reine des Bois was blended. It’s 40% Syrah and 30% each Grenache and Mourvèdre, with 10% aged in barriques and the rest kept in tank. There is a slight cedary note and hints of baking spices, but the focus is on layers of plush, ripe fruit. Cherries – both red and black – mark the full-bodied, velvety-textured palate, lingering on the long finish. Tasted twice (once blind), with consistent notes. Drink date: 2019-2027. Creamy-textured, rich and layered, this finishes with impressive persistence and grip for a wine that’s so approachable now. Drink date: 2020-2035. TASTING NOTE: Luminous pale golden yellow. Very elegant lemon curd, flower and mint aromas and flavors have a complex, multilayered quality. Very sweet but also very refined Gewürz thanks to bright acidity (56 g/L r.s. and 4 g/L total acidity) and really impeccable balance. The grapes were harvested on October 12, which strikes me as fairly late given the hot year and that Gewürz is a low-acid grape variety. But the willing-ness to run risks is what ultimately separates great wines from good ones, and this is a truly outstanding Gewürz, one of the best such wines I tasted all year. I also tasted 2009 and 2008 and I feel they have managed to extract less drying tannins in 2011 than in the past. It has abundant notes of Belgium chocolate, smoked peat, leather and blackberries. A big, powerful Toro that needs time and powerful food. It is a little closed and was not so expressive at first, which is not negative in my book and often denotes a serious and balanced wine. TASTING NOTE: The one white produced here, the 2018 Plácet Valtomelloso comes from a cool and wet vintage that has produced fresh wines with an Atlantic profile even in this Mediterranean part of Rioja. It’s Viura from 33-year-old vines fermented in oval oak casks where the wine matured for some seven months. I tasted the wine quite early, and it felt quite primary. It’s very intense and has notable acidity, with a remarkable pH of 3.29 after malolactic. 2018 was a year of mildew, but they controlled it even though they are organic in the vineyard. It’s really fresh, elegant and balanced, and it looks like one of the finest if not the finest vintage of Plácet. Drink date: 2020-2030. CHÂTEAU CALON SEGUR 19963e cru, AC Saint-Estèphe

TASTING NOTE: Tasted at the château, the 1996 Calon Segur is a blend of 65% Cabernet Sauvignon, 7% Cabernet Franc, 25% Merlot and 3% Petit Verdot. This was always a feted wine in its youth by Robert Parker and myself. Now at 20 years of age there is fine delineation on the nose with more detail than the 1986 tasted alongside. The oak is a little more present here (50% in this vintage) married with plenty of redcurrant, cedar, loam and undergrowth aromas. These aromatics can develop further. The palate is medium-bodied with grippy tannin on the entry, perhaps one of the most youthful and backward of the 1996s that I tasted during my visits. It feels firm in the mouth, masculine, very Saint Estèphe. To critique this wine, the oak is not quite knitted to the fruit as much as it should after two decades (something that has been addressed now). It is an enjoyable Calon-Segur if not quite matching up to my admittedly high expectations. Drink date: 2016-2035. Score: 91 (Neal Martin, robertparker.com, Oct. 28, 2016)

Always more structured and powerful than the Reserve Auguste Favier release (no doubt due to the Mourvèdre component), it hits the palate with full-bodied richness, building yet polished tannins, flawless balance, and a great, great finish. Altesino’s 2014 Brunello di Montalcino Montosoli (with 10,000 bottles made) is one of the most consistent year in and year out. The wine boasts a beautifully refined and complex bouquet with an embroidery of wild berry notes that segue to spice, tar and grilled herb. I love the wine’s intensity. I can’t believe it was easy to achieve without significant sacrifices in the vineyard (including rigorous green harvesting). The mouthfeel is smooth, silky and long. TASTING NOTE: The Dal Forno family considered the idea of releasing their Amarone ten years after the harvest. If that plan had been implemented, this would be the vintage on the market now. The 2009 Amarone della Valpolicella Monte Lodoletta is a full and generous expression that delivers thick lines and robust flavors of dried blackberry, camphor ash, exotic cedar wood, licorice and tarry road pavement. This vintage saw average temperatures throughout the growing season with a few hailstorms along the way. Very dry weather led to some mild drought in July and August, with ensuing ripening and concentration of the clusters. I found this monumental wine to be irresistible when I first tasted it five years ago, and I consider it to have improved since then. This is one of the most complete and comprehensive vintages produced at Dal Forno, and it gives us an ample 360-degree view onto the might, brawn and potential of this icon wine from the Veneto. TASTING NOTE: The 2013 Amarone della Valpolicella Monte Lodoletta is my favorite wine in the retrospective, along with the amazing 2011, 2009 and 1996 vintages. This wine was released at the beginning of this year, and because Dal Forno skipped over the 2014 vintage, this is the only Amarone we will see for a while (until the highly anticipated 2015 is released). The 2013 vintage is characterized by a slightly more streamlined mouthfeel (which isn’t saying much given the baseline enormity of these wines) with carefully etched aromas of black cherry, rum cake, dark chocolate and toasted espresso. The 2013 vintage was balanced overall without the sudden heat waves we saw in the summers of 2011 and 2012. The grapes finished a slow and steady ripening process over an extended growing season. TASTING NOTE: I’ve always liked their 100% Monastrell bottling that’s named after the year the property was created, and the 2015 1771 is from a classical Mediterranean vintage, to which the variety is perfectly adapted. It has a textbook Monastrell and Mediterranean nose of ripe berries, tree bark, esparto grass, hay, straw, thyme and rosemary. This wine is always an elegant expression of the rusticity of the grape, and the 2015 has a classical style. The grapes were picked under very good conditions, and the wine shows quite relaxed. The wine is polished and drinkable, but it has the stuffing and balance to develop nicely in bottle. It matured in 700-liter French oak barrels for 12 months. Drink date: 2019-2025.
