Fine Dining Suggestions From Our Clients Around The World Dear Friends, I am beyond excited to dine at The Goring’s new restaurant - when it opens this spring, it will be the hotel’s first in more than 108 years. Promising the city’s best and freshest seafood offerings, renowned Cornish chef Nathan Outlaw is bringing a more casual dining outlet to the hotel - which until now has offered guests the elegant, Michelin-starred Dining Room (which will continue to operate). Jeremy Goring says, “We wanted to major on Cornish produce because of its extraordinary quality, and it just so happens that Nathan’s probably the best seafood chef in the country. Knowing Nathan he’ll do whatever it takes to ensure we produce the goods.” British architect Russell Sage has designed a new orangery setting for the new fish restaurant, overlooking The Goring’s secluded garden and ensuring that indoor and outdoor spaces are linked throughout the seasons. Nathan Outlaw says, “Creating a new restaurant with such an iconic British hotel is a huge highlight in my career. Opening soon is The Goring’s new fish restaurant.

The Goring: Introducing an Exciting New Dining Venue

This will be an exciting year at The Goring, thanks to an inspiring project underway that will see the

addition of a fabulous new fish restaurant, to complement the Michelin-starred Dining Room. With

the help of Nathan Outlaw, the new restaurant will offer simple seafood dishes of understated

brilliance that showcase the best of Cornish seafood and produce. The Bar & Lounge will also be fully

refurbished with a new look and feel. British designer Russell Sage will once again be working with

the hotel to create a bespoke design, accentuating the impeccably English and perfectly individual

feel of this unique hotel. Transformed into a bright, lively space serving classic cocktails and British

spirits, the bar is set to become a destination in its own right.

A wonderful selection of Italian Food, Café Fiorello, New York City.

Beyond Times Square: A Can’t-Miss New York City Dining Experience, Café Fiorello

Café Fiorello is the ideal spot for a delicious meal anytime of the day. Located just across the street

from Lincoln Center, the classic café offers a great selection of Italian food, including excellent

cocktails and desserts. If you’re stopping in before your event begins, don’t worry - the staff has

been getting its diners to the opera, philharmonic and the ballet on time for years. Or, since Café

Fiorello is open late, it makes the perfect stop for those post-theater eats. What’s the signature dish

to order? The thin-crust pizza in any of its variations: margherita, with nova smoked salmon and dill

creme fraiche, with meatballs, sausage and wild boar ragu - they’re all amazing. Follow it up with an

indulgent specialty of the house dessert: a bucket of chocolate mousse and whipped cream, served

tableside.

Fine dining in Antigua awaits at Curtain Bluff’s restaurants.

Curtain Bluff, Antigua: A 360-Degree Dining Experience

“Fine dining” means a lot more than great-tasting food. At its best, it’s an experience that stirs all

five senses. And at Curtain Bluff, the culinary team takes that definition to heart, offering truly great

food in an exceptional setting with an atmosphere suited to every meal.

The resort’s two restaurants shift in style throughout the day. At breakfast, The Tamarind Tree is

bright with morning sun, as a soft sea breeze and garden scents flow through its open walls, while in

the evening, the room takes on a quiet sophistication. The tables flicker with candlelight and a

constantly changing, five-course menu offers salads, outstanding fish and meats and so many desserts

that they have their own menu. Every night there is a different band and, as the tempo builds after

dinner, couples dance on the terrace under the spreading arms of an ancient tamarind tree.

The second restaurant, The Seagrape, is secluded from the rest of the resort, right on calm Bay

Beach. It serves the resort’s famous buffet lunch as guests filter in from the beach in casual beach

dress. At dusk, tiki torches are lit along the beach, curtains catch the breeze and the restaurant is

transformed into an elegant and intimate sanctuary serving healthy dishes influenced by

Mediterranean flavors.

Lake Fish served at Wild Coast Tented Lodge, Sri Lanka.

Resplendent Ceylon: Tea-Infused Dining

Sri Lanka’s culture and heritage is complex and rich due to strong historic links to Indian kings and

queens, European colonial invaders, Arab merchants and all those that came with the island being a

key trading port between east and west. The food philosophy of Resplendent Ceylon’s collection of

tastefully designed luxury boutique hotels is anchored by a “Modern Sri Lankan” theme - where

flavors and ingredients are inspired by the country’s multi-ethnic heritage.

Each property delivers a nuanced menu relevant to its location. Tea Trails delivers a gastronomic ode

to the days of colonial influence, highlighted by “tea-infused” menus whose flavors are delicate, yet

still indulgent. Wild Coast Lodge in Yala features signature dishes that are inspired by very local

ingredients and recipes with a “modern” twist, such as the Wild Coast Lake Fish - while this fish is

local village staple, Wild Coast celebrates it with coconut-based sauce that is infused with a

collection of spices and condiments that melds to become gastronomic passion on a plate. Cape

Weligama features multiple dining options, from private clifftop dinners to a daily five-course Chef's

Table degustation menu that teases both the palate and the mind of the intellectually curious

gourmand.

The rich expression of art, taste and fervent love of the Colombian restaurant, Helena Adentro.

Amakuna: Dining Across Colombia, from Cartagena to the Coffee Region

We’ve drawn on the extensive knowledge (and palates) of Amakuna for these delectable suggestions

for Colombian dining:

Carmen, Cartagena: Carmen is a gourmet delight run by a pair of Cordon-Bleu-educated chefs. Their

cuisine is a beautiful reflection of their American-Colombian backgrounds infused with their

California training. They focus on dining as a whole experience, providing an intimate setting with a

warm and highly skilled staff. Amakuna frequently sends its clients to Carmen for a fabulous class in

Colombian cuisine preparation.

Restaurant Leo, Bogota: At Restaurant Leo, fearlessly explore traditional flavors and ingredients,

masterminded by the critically acclaimed Leonor Espinosa (Latin America’s Best Female Chef by

World’s Best 50 Restaurants), and her sommelier daughter. Expect to walk away with more

gastronomical knowledge about Colombia’s most exotic ingredients, including wild rodents, ants or

fish sourced from the Amazon.

Helena Adentro: Set in the coffee region’s charming town of Filandia, Helena Adentro is a tangible

expression of art, taste and fervent love for Colombia. Between the small and large plates options,

specialized cocktails and tantalizing desserts, you will have no trouble finding something you fancy.

Start with the eggplant as an appetizer and then try the trout with coconut rice or the pulled pork!

A beautiful view to match the delights of expertly crafted cuisine at The Nare.

The Nare: Impeccable British cuisine with Views to Match

With spectacular sea views over Cornwall’s Carne Beach, the Dining Room at The Nare is renowned

for its traditional British dining experience. Enjoy canapés in the cocktail bar before indulging in five

courses of exquisite cuisine.

Menus change each night and use only the finest local produce, including lobster caught fresh from

the bay. Waiters serve from the renowned hors d’oeuvres trolley and cook fiery flambé dishes at your

table. To finish off the perfect meal, choose a selection of homemade puddings and local cheeses

from the dessert trolley.

Sunday lunch is a special treat and reservations in advance are recommended. Recent menu

temptations have included a warm butternut squash and brie tart, braised ham hock and pea risotto,

roast rib of prime Cornish beef and Crêpes Suzette.

The Nare also has a sea-view restaurant, The Quarterdeck, offering à la carte dishes in a more

informal atmosphere with classic yachting decor. During the warmer months, you can charter the

hotel boat with its coxswain and a luxurious picnic packed on board - a sublime way to soak up the

English summer.

With a Michelin star to its name, the dining experience at Great Fosters is rightfully renowned. But

Chef Ross Stovold using ingredients from the Torridon farm and two-acre kitchen garden. The 3 AA

Rosette restaurant offers two dining options in which to indulge: a seven-course tasting menu or

four-course seasonal menu, including dishes such as Highland beef, barbequed leek, seaweed and

smoked hollandaise or Loch Torridon langoustine, preserved carrot and seabuckthorn. Stovold, who

avidly champions local suppliers, believes “amazing ingredients lead to amazing plates of food.”

Guests are encouraged to take a tour of the farm with the chef so that they’ll gain a deeper

understanding of their meals’ origins.

Bodysgallen Hall & Spa: Dine Back in Time

Diners at the distinguished 17th-century Bodysgallen Hall & Spa are treated to renowned cuisine that

has been recognized by the AA with 3 AA Rosettes consistently over a number of years. Whether

enjoying breakfast, lunch or dinner in the fine-dining restaurant, guests’ meals are complemented by

hilltop views across the gardens to a backdrop of Conwy Castle and the Snowdonia mountain range.

This gives the restaurant a particularly pleasing atmosphere of calm and space, and on some evenings

a dramatic skyscape as the sun dips behind the mountains.

The kitchen is led by Head Chef John Williams, who not only directs the culinary team but also has

input to what is grown in the estate’s organic gardens. His menus incorporate fresh seasonal

vegetables, fruit and herbs from the estate, and the best produce sourced from local suppliers. The

long-standing restaurant manager, Nicolette Musgrove, has a keen eye for detail, supervising the

restaurant and ensuring service is impeccable and the whole dining experience is sublime.
