Members of The Local Answer recently enjoyed an evening out at Gloucester’snewly refurbished Spice Rooms & Steakhouse. Here’s what Alison Hambling –one of the editorial team – thought about the experience ...I must admit I am not always a fan of too hot a curry, so do tend to order with an air of

caution – but I need not have worried. We ordered an array of dishes to share and everyone was absolutely heavenly – full of wonderful flavours without ruining your tastebuds. And, best of all, with prices ranging from £5.95 to £10.95 for maincourses, you don’t need to break the bank – fantastic value!The Spice Rooms is a family run business – they have managed highly

successful restaurants in Cheltenham for over 20 years. Delicious Dishes

5 Bake in the oven for 30 minutes. Test one by lifting and gently pressingon the base of a meringue- it should be crisp but give way with a bitof pressure - they will crisp more when cooling. Turn off the oven, andleave them in there to cool with the oven door slightly ajar for bestresults. If possible, let them cool completely in the oven.

6 When ready to serve, make the raspberry cream. Put the raspberriesand sugar in a food processor and whiz until smooth. Push the mixturethrough a sieve into a bowl to remove the pips. Fold as much pureeas you wish through the whipped cream to give a lovely pink colour.

7 Dollop a generous tablespoon of the cream on one half of themeringue and sandwich together with another meringue. Serve withsome fresh raspberries and any leftover puree.

Ingredients:For the meringues: 4 egg whites; 1 pinch salt; 300gcaster sugar; 1⁄2 tsp vanilla extract; pink food colouring.For the raspberry cream: 75g fresh or frozen raspberries; 2 tbspicing sugar; 400ml stiffly whipped cream.Method:1 Preheat the oven to 140C/gas 1. Line two baking trays with

greaseproof paper.2 Put the egg whites into a large clean bowl with a pinch of salt. Whisk

until soft peaks form. Gradually add the caster sugar one tablespoonat a time, whisking between each addition, until it has all been addedand the meringue is satiny and forms stiff peaks when the whisk islifted from the mixture.

3 Fold in the vanilla extract with a large metal spoon. Using a piping bagfitted with a 1.5cm nozzle or a spoon, pipe or scoop the mixture intoindividual meringues about 7cm wide onto the prepared baking trays.

4 For the ripple colour effect, dip a wooden or metal skewer into thefood colouring and swirl it through each meringue.

Every Thursday and Saturday evening you couldattend a Greyhound Race Meeting in Longlevens. The stadium – now lost under new housing

developments, part of which is aptly namedGreyhound Gardens – stood just off CheltenhamRoad by the main roundabout on the A40.Longlevens stadium opened its doors in 1935

and, at its height, attracted over 1,000 spectators anight – all eager to place a bet with one or other ofthe on-site bookmakers.A decline in interest during the 1960s and 70s led

to the closure of the course in October 1983.Essentially the “poor mans horse racing”,

greyhound racing in Gloucester had its origins viaGloucester Football Club,founded in 1873 whereRugby, Football and DogRacing all took place, butit was not until after theGreat War that a custombuilt centre for dog racingwas established atLonglevens.The principal race

became known as TheGrand National of theWest, where the dogsraced over a distance of 500 yards for amagnificent challenge cup. This was last staged in1965.Apart from Greyhound Gardens, the only other

tangible reminder of its existence is the GreyhoundPublic House – no dogs allowed!

February is the time of year we come to set ourbudget – allocating money to our priorities, anddeciding the level of council tax that residentshave to pay.

Itʼs never an easy time, with many competingdemands. With the current economic climate, it iseven more difficult as councils are expected toplay their part in helping to reduce the nationaldeficit and manage with less cash from centralgovernment.

Weʼve been making substantial savings over thelast few years – around £6 million in total out of abudget of £18 million. Weʼve managed to do thiswhilst protecting the services that matter to you.Weʼve slimmed down as an organisation, cuttingout levels of management and working inpartnership with others. This has meant we donʼtneed as much office space, so weʼve leased threefloors of our North Warehouse building to Regusplc, a global serviced office provider – reducingour costs, bringing in an income and generatingjobs for the local economy.

Our partners, like Enterprise – who provide ourrefuse and recycling, street cleaning and groundsmaintenance services – and Aspire, who run GL1and the Oxstalls Tennis Centre, will be workingwith us to achieve the savings we need.

Weʼve managed to make savings at the sametime as keeping the council tax down. This yearwe are proposing to freeze the council tax for athird year running. This means that the averagerise over the last nine years has been just over2% – compared with an average of 10% for theprevious decade.

Weʼre also planning to leave parking chargespretty much as they are, after the major changeswe made last year in reducing the tariff. Thenumber of people using the car park hasincreased, despite the poor weather last year,meaning we were right to make the bold changesthat we did.

As I write this article in January, I really don’t know whatMother Nature has in store for us weather wise.However, even if it is mild and sunny don’t be fooled intostarting to sow too much too soon unless you have agreenhouse or you will get into all kinds of difficulties!All that said, you can buy some early potatoes such as

the variety ‘Accent’and put them in individually in eggboxes to ‘chit’ in a cool, bright place (don’t let them getfrosted in an unheated greenhouse, so if frost is forecastcover in fleece and then uncover again in the morning).Chitting is just a term for sprouting, and you want sproutsabout 1.5cm long ready to plant out in late March.This is the perfect time of year to get to grips with

putting stakes in your borders. You remember whathappened last year (and if you were like me probablyevery year before that too!) when you didn’t get roundto it and by the time your peonies, or poppies orwhatever had started flopping it was too late! Hazel orbirch is the ideal thing to use for ‘pea sticks’ (not just forpeas!) and now is a great time to cut it as the sap rises andit gets a little more pliable, and before the leaves appear.Make different sized support structures to suit the plants,weaving and tying in with garden twine. Things like Astersor Achilleas work well with black plastic netting stretchedbetween four stakes – it soon disappears when the plantsget going and you can always add a higher level of nettinglater on using the same stakes.If the weather is good and the soil fairly dry underfoot

you could even take the first lawn cut of the year (I knowit doesn’t seem like 5 minutes ago that you werethankfully putting that mower away for the year). Keepthe blades high so that you only take off the very top ofthe grass, this will keep the grass stronger and you canreduce the height as the season progresses thus makingit harder for moss and weeds to take hold.
