4. HOW DIGESTION WORKS:
Digestion begins with the chewing of food in the mouth. During this
time, the cell membranes of the food are ruptured; this makes
the molecules more easily accessible to enzymatic action. At
the same time, we secrete saliva to moisten the food and to
provide a small amount of amylase enzymes to help break
down starches into simple sugars; therefore, the enzymatic
process is already beginning as we chew our food.
After it is swallowed, the food goes into the stomach. Many people
do not realize that there are actually two distinct and
identifiably different parts of the stomach—the upper cardiac
stomach and the lower gastric stomach. Food sits in the upper
portion of the stomach for between 30 and 45 minutes; at the
same time, the lower stomach begins its process of
concentrating hydrochloric acid and secreting digestive
enzymes for the processes in the gastric stomach.
Throughout this process, the food is systematically broken down
into smaller and smaller elements; eventually, the useful
building blocks, vitamins and minerals can be passed through
the wall of the small intestine and made available to the
metabolic process of the body.
Various studies confirm that as much as 50-60% of the total
digestion of the food can take place in the upper stomach,
thanks to the action of naturally occurring food enzymes.
Cooked food, missing these enzymes (they are destroyed by
heat) is therefore not properly prepared before it gets to the
gastric stomach. This puts the entire burden of digestion on
the gastric stomach and the small intestines, a role that these
organs were never intended to play.
Whatever is left over is converted into feces and excreted after
passing through the large intestine.
Plant-based enzymes like the Acu-Zyme product line are
highly active in this upper portion of the stomach
and can thus replace the enzymes lost through the
cooking and processing of food.
THE MERIDIAN FORMULAS (Nos. 1-14 ) Acu-Zyme also includes 14 meridian formulas in its

on traditional Chinese medicines concept of energy,
known as chi. According to the teachings of Chinese
medicine, the body’s overall physical and spiritual
balance is governed by the smooth flow of chi along
various meridians (or energy pathways) in the body.
If the energy becomes stagnant or blocked in any
way, pain or illness may result. There are different
points along the meridian that can be tested to
determine where the blockages have occurred.
Practitioners of acupuncture place hair-thin needles at
specific points along the meridian to redirect the

The conception of meridians is also the basis of Applied
Kinesiology, a Western approach to the science of
meridians that is often used in combination with
chiropractic. Applied Kinesiology relies on muscle
testing—monitoring the muscles resistance to various
movements—to determine the location of excesses
and deficiencies of energy.
Richard Utt developed a more advanced method of
undertaking the principles of Applied Kinesiology,
known as Applied Physiology. This method measures
the flow of the energy through the meridians. The
practitioner then applies various modalities to release
blockages whereby tremendous amounts of energy

2. WHAT DO ENZYMES DO IN THE BODY? There are three major classes of
enzymes important to human nutrition. METABOLIC enzymes are found in

DIGESTIVE enzymes are secreted by the pancreas and other digestive

3. WHY ARE DIETARY ENZYME SUPPLEMENTS NECESSARY? Enzymes play a
critical role in the bodys overall health. If you are unable to digest the
food you eat, you will be unable to utilize any of the many beneficial
nutrients; instead, these nutrients will simply be stored unused or excreted

Enzymes and Digestion:A QUICK AND EASY GUIDE
1. WHAT ARE ENZYMES? Enzymes are usually described as
protein molecules, but this is only partially true. An enzyme
is actually an energy force which manifests itself through
certain very special types of protein molecules. Think of a
light bulb: The bulb itself is inactive (dark) until an electrical
current is passed through it. In the same way, a protein
molecule (the bulb) is activated by the presence of an
enzyme. However, preserving this energy is difficult;
enzymes are extremely sensitive to temperature. In cooked
foods, enzymes are usually destroyed long before the
vitamins and minerals. Thus, cooked foods might be very
rich in nutrients but totally devoid of the enzymes necessary
to help with the digestion that gives the body access to
those vitamins.
Although they are the most well-known, digestive enzymes are
not the only type of enzymes. In fact, metabolic enzymes
are active in every organ, tissue and fluid of the body. In
