ABOUT SGS ACADEMY

ABOUT FSMA

As a leader in professional training, we draw on our years of worldwide experience to provide effective learning and development opportunities. We make the difference to individuals, teams and business, nurturing talent and enabling continuous organisation progression.

Our courses covers a wide range of industry-recognised certifications in management systems areas such as quality, health and safety, environmental, social responsibility, sustainability and many others to help you realise market opportunities to continually develop your business and career.

The US Food and Drug Administration (FDA) Food Safety Modernization Act (FSMA) is considered to be the most sweeping reform of US food safety laws in more than 70 years. Unlike previous food safety regulations, FSMA focuses on preventing contamination and requires organisations in the food industry to ensure safe practices throughout the supply chain.

FSMA covers food, pet food, feed facilities and produce farms within and outside the US, as well as US importers and food transportation companies.

FDA’s seven foundational rules for FSMA compliance:

1. Preventive Controls for Human Food

2. Preventive Controls for Animal Food

3. Produce Safety

4. Foreign Supplier Verification Programs (FSVP)

5. Accredited Third-Party Certification

6. Sanitary Transportation of Human and Animal Food

7. Mitigation Strategies to Protect Food against Intentional Adulteration

GET READY: TRAIN YOUR STAFF ON FSMA REQUIREMENTS

SGS offers a variety of FSMA training courses to educate and qualify personnel at all levels of the food facility.

FSMA PREVENTIVE CONTROLS QUALIFIED INDIVIDUALS (PCQI) FOR HUMAN FOOD

Developed by FSPCA as a “standardised curriculum” recognised by the FDA, this course is taught by a Lead Instructor for the FSPCA Preventive Controls for Human Food. Successfully completing this course is one way to meet the requirements for a “preventive controls qualified individual”.

COURSE BENEFITS

• Qualify as a preventive controls qualified individual

• Gain your official FSPCA PCQI certificate, issued by the Association of Food and Drug Officials (AFDO)

• Take part in training developed by FSPCA, using the FDA-recognised standardised curriculum

UNDERSTANDING US FDA FOOD AND ALLERGEN LABELING REQUIREMENTS

The course covers FDA’s food labeling requirements and also covers allergen labeling as a FSMA requirement.

COURSE BENEFITS

• Gain knowledge of FDA food labeling requirements for various categories of food

• Understand and implement allergen labeling requirements

• Categorise food label elements including nutritional facts and allergen declarations

• Understand the elements of conditionally required labeling

• Identify special labeling requirements for certain food categories

ENVIRONMENTAL MONITORING PROGRAM TRAINING FOR FOOD FACILITIES

This course covers the design and implementation of an Environmental Monitoring Program (EMP) - a requirement of FSMA Preventive Controls for Human Food - starting with a determination of the pathogens of concern, based on raw materials and finished products. Using case studies and practical examples, learn how to conduct a thorough investigation to determine that the primary contamination source has been located and eliminated.

COURSE BENEFITS

• Learn how to utilise an EMP to verify sanitation

• Identify contact and noncontact surfaces within the hygiene zone

• Understand the steps necessary to investigate the cause and source of a positive sample and take corrective action

• Learn when and where to test for pathogens

• Create a plan specific to your organisation

• Interactive workshops and discussions designed to facilitate training transfer

• Discuss available options for indicator organisms

• Understand implications for Food Contact Surface (FCS) and Non FCS sampling

• Learn how to use baseline data and zone designations to support sampling plan design for routine monitoring and data trending

• Identify sampling results that indicate which investigative sampling tactics should be used

• Learn about sanitary design principles and how to apply targeted sampling for equipment and facility layout concerns

• Learn to identify gaps in equipment design where product can become contaminated

DEVELOPING AND IMPLEMENTING FSMA PREVENTIVE CONTROLS FOR HUMAN FOOD

This course covers the practical implementation of FSMA Preventive Controls for Human Food rule, including GMPs (Subpart B), Hazard Analysis, Preventive Controls and Food Safety Plan. Using case studies and practical examples, learn how to conduct hazard analysis, identify and manage Preventive Controls, develop documentation and comply with the requirements of FSMA.

COURSE BENEFITS

• Learn the 21 CFR 117 Subpart B, components of GMPs and regulatory considerations

• Know about the hazards – Biological, Chemical, Physical, Economically Motivated Adulteration

• Understand the Food Safety Plan, preventive controls, parameters and values associated with process controls

• Be aware of the corrective actions for process control deviations, critical control points

• Learn how to do food safety plan reanalysis

• Take part on the practical workshops and learn from the actual case studies

IMPLEMENTING GMP, HACCP AND FSMA PREVENTIVE CONTROLS FOR HUMAN FOOD

The course provides the knowledge required to implement a combined GMP, HACCP and FSMA Preventive Controls system. Students learn through a series of workshops the requirements of HACCP and FSMA Preventive Controls for Human Food, and how to successfully implement those requirements.

COURSE BENEFITS

• Understand HACCP and Preventive Controls concepts and commonalities between HACCP and FSMA

• Learn to develop flow diagrams, review Good Manufacturing Practices and HACCP-food safety plan

• Know how to do quantitative/qualitative hazard analysis methods

• Review Good Manufacturing Practices under subpart B of 21 CFR Part 117

• Establish CCP and preventive controls management requirements

• Establish effective record keeping procedures to document the food safety system

• Create a working HACCP-food safety plan

FSMA FOOD HYGIENE PRACTICES

FSMA Preventive Controls for Human Food rule specifies training in food hygiene as a basic requirement for individuals who manufacture, process, pack, or hold food. This course teaches the everyday aspects of FSMA food hygiene requirements.

COURSE BENEFITS

• Gain an overview of the key elements of FSMA food hygiene and Preventive Control requirements related to production and manufacturing personnel

• Understand the requirements for maintaining a working environment that minimises risk due to food hazards
