8 Surface Cooking

CookwareUsing proper cookwareThe size and type of cookware will influencesettings needed for the best cooking results. Besure to follow the recommendations for usingproper cookware as illustrated.

Cookware material typesThe cookware material determines how evenly andquickly heat is transferred from the surface elementto the pan bottom. The most popular materialsavailable are:• Aluminum - Excellent heat conductor. Some

types of food will cause it to darken (Anodizedaluminum cookware resists staining & pitting). Ifaluminum pans slide across the ceramiccooktop, they may leave metal marks which willresemble scratches. Remove these marksimmediately.

• Copper - Excellent heat conductor but discolorseasily. May leave metal marks on ceramic glass(see Aluminum above).

• Stainless steel - Slow heat conductor withuneven cooking results. Is durable, easy to cleanand resists staining.

• Cast iron - A poor heat conductor however willretain heat very well. Cooks evenly once cookingtemperature is reached. Not recommended foruse on ceramic cooktops.

• Porcelain-enamel on metal - Heatingcharacteristics will vary depending on basematerial. Porcelain-enamel coating must besmooth to avoid scratching ceramic cooktops.

• Glass- Slow heat conductor. Not recommendedfor ceramic cooktop surfaces because it mayscratch the glass.

Cookware should always:• Have flat bottoms.• Have tight fitting lids.• Be well-balanced.• Be made of material that conducts heat well.• Be easy to clean.• Match to the size of the element.

• have acurved orwarpedbottom.

• hang overthe surfaceelement bymore thanone-halfinch.

• be smallerthan theelement bymore thanone-halfinch.

• have aheavyhandle thattilts the pan.

Cookware should not:

For more information about the ceramic cooktopsee “Cooktop Cleaning & Maintenance” in the Care& Cleaning section.

Cookware shouldhave flat bottomsthat make goodcontact with theentire surfaceheating element.Check for flatnessby rotating a ruleracross the bottomof the cookware.

About the radiant surface elementsThe element temperature rises gradually andevenly. As the temperature rises, the element willglow red. To maintain the selected setting, theelement will cycle on and off. The heating elementretains enough heat to provide a uniform andconsistent heat even during the off cycle. Forefficient cooking, turn off the element severalminutes before cooking is complete. This will allowresidual heat to complete the cooking process.

How the cooktop worksAbout the ceramic glass cooktop

The ceramic cooktop has radiant surface elementsmounted below the surface of the glass. Heat istransferred up through the surface of the cooktopto the cookware.

The design of the ceramic cooktop outlines thearea of the surface element underneath. Yourrange is equipped with radiant surface burners withdifferent wattage ratings. The ability to heat foodquicker and in larger volumes increases as theelement wattage increases.

The type and size of cookware, the number ofsurface elements in use and the settings, are allfactors that will affect the amount of heat that willspread to areas beyond the surface elements. Theareas surrounding the elements may become hotenough to cause burns.

NOTES• Radiant elements have a limiter that allows

the element to cycle ON and OFF, even at theHI setting. This helps to prevent damage tothe ceramic cooktop. Cycling at highersettings is normal. Cycling may also occur ifthe cookware is too small for the radiantelement or if the cookware bottom is warped(refer to Using Proper Cookware on page 7).

• Read the detailed instructions for ceramicglass cooktop cleaning in both the Care andCleaning and Before You Call sections ofthis Use and Care Manual.

Unlike the surface elements, the keep warmzone will not glow red when it is hot.

Always use potholders or oven mitts whenremoving food from the keep warm zone ascookware and plates will be hot.

Radiant surface elements may appear to havecooled after they have been turned off. Theglass surface may still be hot and burns mayoccur if the glass surface is touched before ithas cooled.

Do not place flammable items such as plasticsalt and pepper shakers, spoon holders orplastic wrappings on top of the range when it isin use. These items could melt or ignite.Potholders, towels or wooden spoons couldcatch fire if placed too close to the surfaceelements.

CAUTION

Be sure to read and observe all the followingpoints when home canning using yourappliance:

• Use only quality flat bottom canners when homecanning. Use a straight-edge to check cannerbottom.

• Start with hot tap water to bring water to boilmore quickly.

• Use the highest heat seating when first bringingthe water to a boil. Once boiling is achieved, reduce heat to lowest possible setting tomaintain that boil.

• Make sure the diameter of the canner does notexceed 1 inch beyond the surface elementmarkings. It is recommended to use smallerdiameter canners on electric coil and ceramicglass cooktops.

• When using two canners at the same time, stagger the canners on the left and right sides ofthe cooktop. This will help distribute the heatmore evenly.

Home Canning

Be sure to review the latest online informationavailable for home canning. Some suggestionswould be the U.S. Department of AgricultureFood Safety and Inspection Service or theNational Center for Home Food Preservation(NCHFP).

IMPORTANTDO NOT straddle a cooking utensil over twodifferent surface cooking areas at the sametime. This might cause the ceramic cooktop tofracture.

IMPORTANTDo not allow aluminum foil or ANY materialthat can melt to make contact with theceramic glass cooktop. If these items melt onthe cooktop they will damage the ceramiccooktop.

• For efficient cooking, turn the surface elementOFF several minutes before cooking iscomplete. This will allow residual heat tocomplete the cooking process.

• A glowing red surface heating area extendingbeyond the bottom edge of the cookwareindicates the cookware is too small for thesurface heating area.

• Radiant elements have a limiter that will makethe element cycle ON and OFF, even at thehigh setting. This helps prevent damage to theceramic smoothtop. Cycling at the high settingis normal and will occur more frequently if thecookware is too small for the radiant elementor if the cookware bottom is warped.

Conv roast

How conv roast works

Convection (conv) roast combines a cook cycle withthe convection fan and element to rapidly roastmeats and poultry. Heated air circulates around themeat from all sides, sealing in juices and flavors.Meats cooked with this feature are crispy andbrown on the outside while staying moist inside. There is no need to reduce the oven temperaturewhen using conv roast.

Conv roast may be set with the followingoptions:• Cook time• Cook time with end time

The following oven temperature settings apply forconv roast:• Factory default temperature: 350°F/176°C• Min. conv roast setting: 170°F / 76°C• Max. conv roast setting: 550°F / 288°C

Before cleaning the control panel, turn all controls off, activate controllock (some models) and if needed remove knobs from panel (somemodels). Do not use abrasive cleaners on controls or trim; they canscratch. Clean using hot, soapy water and a dishcloth. Be sure tosqueeze excess water from dishcloth before wiping control panel;especially when wiping around the controls area. Excess water in oraround the controls may cause damage to the appliance. When rinsing, use clean water and a dishcloth and be sure to squeeze excess waterfrom dishcloth before wiping the control panel.

• Stainless Steel(some models)

Clean stainless with warm soapy water using a clean sponge or cloth.Rinse with clean water and dry with soft clean cloth. Do not use harshscrubbing cleaners. Only use kitchen cleaners especially made for cleaningstainless steel. Always be sure to rinse cleaners from the surface as bluishstains may occur during heating that cannot be removed.Gentle scrubbing with a soapy no-scratch cleaning pad will remove mostspots. Rinse with a 1:1 solution of clear water and ammonia. If necessary, cover difficult spots with an ammonia-soaked paper towel for 30 to 40mins. Rinse with clean water and a damp cloth, and then scrub with asoap-filled no-scratch cleaning pad. Rinse and wipe dry with a clean cloth.Do not allow food spills with high sugar or acid content (milk, tomatoes, sauerkraut, fruit juices or pie filling) to remain on surfaces; they maycause a dull spot even after cleaning.

• Porcelain enamelparts

• Broiler pan and broilerpan insert

Remove excessive spillovers from oven cavity bottom before startingself-clean. Clean any soils from oven frame and door liner outside theoven door gasket. For important preparation information be sure to readall the instructions in the self-cleaning section.

• Oven interior

• Oven racks Do not clean oven racks in oven during the self-clean cycle. Removeand clean using a mild, abrasive cleaner following manufacturer'sinstructions. Thoroughly rinse and dry.

• Oven door Use soap & water to thoroughly clean the top, sides and front of the ovendoor. Rinse well. You may use a glass cleaner on the outside glass of theoven door. Do not immerse the door in water. Do not spray or allowwater or glass cleaner to enter the door vents. To avoid scratches, donot use oven cleaners, cleaning powders or any harsh abrasive cleaningmaterials on the outside of the oven door. Do not clean the oven doorgasket. On self-cleaning models the oven door gasket is made of a wovenmaterial which is essential for a good seal. Care should be taken not torub, damage or remove this gasket.Refer to "Cooktop cleaning" and "Cooktop maintenance" in the Careand Cleaning section.

48 Care and Cleaning

Consistent and proper cleaning is essential tomaintaining your ceramic glass cooktop.

Cooktop maintenance Cooktop cleaning

Do not:• Slide anything metal or glass across the cooktop.• Use cookware with dirt or dirt build up on bottom;

replace with clean cookware before using.• Use your cooktop as a cutting board or work

surface in the kitchen.• Cook foods directly on the cooktop surface

without a pan.• Drop heavy or hard objects on the ceramic glass

cooktop, they may cause it to crack.

For light to moderate soil:

Apply a few drops of the ceramic glass cooktopcleaner directly to the cooktop. Use a paper towelor use a non-abrasive, no-scratch cleaning pad toclean the entire cooktop surface. Make sure thecooktop is cleaned thoroughly, leaving no residue.

For heavy, burned on soil:

Apply a few drops of the ceramic glass cooktopcleaner directly to the soiled area. Rub the soiledarea using a non-abrasive, no-scratch cleaningpad, applying pressure as needed. Do not use thepad you use to clean the cooktop for any otherpurpose.

If soils remain, carefully scrape soils with a razorblade scraper, holding scraper at a 30 degree angleto the surface. Remove loosened soils with cooktopcleaning cream and buff surface clean.

Prior to using your cooktop for the first time, applysome of the cooktop cleaner supplied with your newappliance. Buff with a non-abrasive cloth or no-scratch cleaning pad. This will make cleaningeasier when soiled from cooking. The specialcooktop cleaning cream leaves a protective finishon the glass to help prevent scratches andabrasions.

Sliding aluminum or copper clad bottom pans onthe cooktop can cause metal markings on thecooktop surface. These marks should be removedimmediately after the cooktop has cooled using thecooktop cleaning cream. Metal marks can becomepermanent if not removed prior to future use.

Cookware (cast iron, metal, ceramic or glass) withrough or dirty bottoms can mark or scratch thecooktop surface.

Before cleaning the cooktop, be sure the controlsare turned to OFF and the cooktop is COOL.

CAUTION

49

Plastic or foods with a high sugar content:

These types of soils need be removed immediately.Permanent damage (such as pitting of the cooktopsurface) may occur if not removed immediately. After turning the surface elements OFF, use a razorblade scraper or a metal spatula with a mitt andscrape the soil from the hot surface. Allow thecooktop to cool. Use the same method for heavy orburned on soils.

Cooktop cleaning (cont’d)

Do not use the following on the cooktop:• Do not use abrasive cleaners and scouring pads,

such as metal and some nylon pads. They mayscratch the cooktop, making it more difficult toclean.

• Do not use harsh cleaners, such as chlorinebleach, ammonia or oven cleaners, as they mayetch or discolor the cooktop.

• Do not use dirty sponges, cloths or paper towels,as they can leave soil or lint on the cooktopwhich can burn and cause discoloration.

Aluminum foil and oven linersDo not use oven bottom liners or use aluminumfoil to cover the oven racks.

Using a liner inthe ovenrestricts theheat and airflow needed toobtain the bestpossiblecooking resultsfor any oven.

During self-clean the oven temperature canbecome hot enough to melt aluminum cookingutensils or aluminum foil if left in the oven. Thiscould result in permanent damage to the oveninterior and porcelain finish.

CAUTIONProtective liners—Do not use aluminum foil toline the oven bottom, except as suggested in themanual. Improper installation of these liners mayresult in a risk of electrical shock, or fire.

Damage to the ceramic glass cooktop may occurif you use an abrasive type cleaning pad. Onlyuse cleaning products that have been specificallydesigned for ceramic glass cooktops.

Problem Solution

Before you call

Oven smokes excessively duringbroiling

• Control not set properly. Follow broiling instructionsunder Setting Oven Controls.

• Make sure oven door is opened to broil stop position.

• Meat too close to the broil element. Reposition the broilrack to provide proper clearance between the meat &the element. Preheat the broil element for searing.

• Meat not properly prepared. Remove excess fat frommeat. Cut remaining fatty edges to prevent curling, butdo not cut into lean.

• Insert on broiler pan wrong side up & grease notdraining. Always place grid on the broiler pan with ribsup & slots down to allow grease to drip into pan (somemodels).

• Grease has built up on oven surfaces. Regular cleaningis necessary when broiling frequently. Old grease orfood spatters cause excessive smoking.

Flames inside oven orsmoking from oven vent

• Excessive spillovers in oven. For example this willhappen for pie spillovers or large amounts of greaseleft on the oven bottom. Wipe up excessive spilloversbefore starting oven. If flames or excessive smoke arepresent see “About broiling” in the Setting OvenControls section.

Oven control panel beeps &displays any F code error (forexample F10)
