It goes without saying that this sort of atmosphere would be welcomed all year round considering the economical position the nation is in. Christmas in Edinburgh can rival any in Europe. Of course it’s not only doors that need locks but windows too – so make sure your locksmith fits your window locks too.

Cutting keys is another area of experience for locksmiths. Why get your keys cut anywhere other than by an experienced, professional locksmith company?

Here We Go …I am sure you are all fed up of listening about the Tram service on what is happening & more importantly what is not happening. We all know they have been nothing but hassle from day one, but finally as taxpayers we have reached a milestone in the construction of the trams. The overhead power lines have been turned on for the first time, and although we are not able to use the service until the summer of 2014, we can now begin to see progress and possibly come to better understand where your money has been spent. The lines will be turned on at the 1.7 mile track from Dogar depot to the airport. There will be signs put in place to warn pedestrians to stay alert at all times as trams are surprisingly quiet modes of transport and realistically the last thing the council needs right now is someone to get injured during the testing process. Can you imagine the backlash? The protests and hate mail would be nothing short of comical. Now as someone with a view of scepticism about the tram services as to what purpose it will serve against the amount of money it will cost. I do have to at least commend the council in their efforts to take all necessary precautions in keeping the budget from escalating out of control and to keep the public safe.

But is this really enough to justify £776 million pound on a tram service which I honestly do not see benefits the public more than what the bus services already do. As somebody who lived in Belfast for a number of years, I can give an outsiders perspective in that when I flew at 7.30a.m. I would arrive in Edinburgh Airport have my bag collected, be on the bus by 7.55a.m, and be approaching the city centre by 8.30a.m. I am one person who has always praised the airlink service and in a way been jealous of the fact that Northern Ireland’s Capital does not have such an efficient service.

… Again!In such a delicate financial position is it really necessary for trams to be built right now? There is small businesses collapsing everywhere we look. Now you may read this thinking I am someone who is not thinking about the future of the city in terms of being on par with public transport with say the likes of London, New York & Tokyo. But as a city of such historical and cultural values we should be proud of the traditional bus service we have.

Let’s not try and push some futuristic mode of transportation that airs a sense of vanity. People come to Edinburgh for its strong historical principals and I think with the tram service put in place we may begin to lose these principals and who knows maybe in another 20 years time tower blocks may grace the skyline of Edinburgh and before we know it we will be living in a city based on vanity, egotistical architecture and other pointless futuristic features.

This is a cultural city based on historical principals and that is the way it should stay.

Nicolson Street Charity Shops Unite!

As part of a privately funded community based project in the Southside of Edinburgh, charity retail shops in Nicolson Street came together in the Southside Community Centre, kindly provided by Edinburgh City Council, for an evening of volunteer training presented by Lothian and Borders Police Safer Neighbourhood Team.

The new, privately, funded scheme is the first in Edinburgh to bring charity retail shops together, with the volunteer training evening, representing the first activity to be organised as part of the Nicolson Street Shop Watch project.

Located between the historic exhibits of the refurbished National Museum of Scotland and the newly developed artistic display spaces, galleries and installations that comprise Summerhall, Nicolson Street comprises a uniquely comprehensive collection of shops, offering an opportunity to pick up your weekly essentials at local and independent stores, whilst browsing (and in this writer’s case buying) beautifully presented; clothing, nik-naks, vintage, recycled and reclaimed wares.

One of the benefits of bringing retail premises in Nicolson Street together; is their strength through numbers. All retail premises, be they charitable, non-profit, community based or independent, face the same problems in the modern high street and by coming together, provide a strength in numbers, that each individual premises alone cannot offer.

The new initiative provides a forum for discussion and a means to bring together charities, communities, council services, and local businesses to better focus existing resources in order to improve and develop the wonderfully unique nature of Nicolson Street.

As this writer discovered, Nicolson Street truly is a secret Southside shopping gem and with initiatives as successful as the ‘Nicolson Street Shop Watch’, it is only a matter of time before it is discovered by the wider Edinburgh community.

Classic Christmas DinnerChristmas dinner is the perfect time to pull out all the stops and show off your impressive spread of festive delicacies. The high point of the holiday celebrations has to be the feast, a time to gather family or friends together and enjoy the best of local produce.

Traditionally roast goose was the preferred Christmas Roast in Britain until the new-fangled Turkey arrived from America in the 16th century. Now, no Christmas dinner is complete without a Stuffed Roast Turkey, especially Roast Turkey with Sage and Onion Stuffing.

It is advisable to order a fresh turkey well in advance to collect by the 23rd or 24th December. Remove the turkey from the fridge several hours before cooking, as it must be at room temperature before cooking to prevent the turkey drying out in the oven.

Prep Time: 45 minutes. Cook Time: 4 hours, 40 minutes. Total Time: 5 hours, 25 minutes (serves 12)

Ingredients:1 large onion, finely chopped1lb/450g pork sausage meat2 level tbsp fresh sage, finely chopped2 level tbsp flat leaf parsley, finely chopped1 oz/25g fresh white breadcrumbsSalt and pepper1 14lb/6.3kg oven-ready turkey4oz/1 8oz/225g streaky bacon, thinly sliced1¼ pints/1 litre poultry stock2 tbsp all purpose/plain flour¼ pint/150 ml Port2 tbsp redcurrant jelly 10g soft butter(Heat the oven to 220°C/425°F/Gas 7)

Prepare the stuffing: In a large bowl mix together the onion, pork sausage meat, herbs, breadcrumbs and a pinch of salt and pepper.

Slip your fingers under the skin at the neck end and loosen to create a cavity over the breast. Stuff the neck end with the onion and sage stuffing up to the breast. Tuck the loose skin underneath and secure with a fine metal skewer.

Smear the soft butter evenly over the breast and legs of the turkey. Lay thin slices of bacon neatly across the breast and top surface of the legs. Sprinkle the whole turkey liberally with salt and pepper.

Lay two large sheets of aluminium foil over a roasting tin large enough to hold the bird. Place the bird back down and fold the foil loosely over the bird leaving a roomy gap between the bird and the foil to allow steam to escape.

Roast in the preheated oven for 40 minutes then lower the temperature to 325°F/160°C/Gas 3 and cook for 3½ hours basting from time to time.

Remove the turkey from the oven, raise the temperature to 220°C/425°F/Gas 7. Fold back the foil on the turkey, remove the bacon and pour any juices into a jug or bowl. Return the turkey to the oven and cook for a further 30 mins to crisp the skin.

Remove from the oven and check the temperature with a meat thermometer placed into the thickest past of the thigh, the turkey is cooked if the temperature is 175°F/80°C. If you don’t have a thermometer the turkey is cooked if the juices run clear when the thickest part of the thigh is pierced with a small sharp knife. If the juices are pink return to the oven and cook until they run clear.

When cooked, leave the turkey to rest for 30 mins wrapped loosely with fresh foil before carving. Meanwhile make the gravy.

Pour all the juices from the roasting tin into the bowl or jug with the juices saved from the foil. Spoon off all the fat which will float to the surface and discard. Place the roasting tin on a high heat on the stove top, add the flour and stir to scrape up all the sediment from the tin. Cook for one minute. Pour in the port and stir well then add the stock. Bring to the boil and simmer for 5 minutes. Add the turkey juices, bring back to the boil and cook for a further 3 minutes.

Add the redcurrant jelly stir until dissolved then strain into a gravy boat or serving jug.

Battle Of The Badges

On Saturday 24th of November, the best of the of Lothian and Borders Police force will step into the ring to test themselves against our cities finest fire fighters, in a night of “ Battle of the Badges”. In what proves to be a exciting and fun atmosphere, it is a night humbled by the fact that the event was put together to raise money for Caudwell Children’s charity. Let us hope that the night is recognised for what fantastic opportunities and funding it may provide the children this charity supports. The real life heroes of our society are taking one step further to test their nerve, will and stamina against each other. And it can only be for the greater good of the community. As individuals we should all maybe take a step back and realise what is happening in our communities rather than global issues, that to be honest have little impact on our day to day living. Take a look at our own problems before we go fixing other peoples. There is heroes and commendable people walking through your streets right now and who knows it may be you one day.

With the Lothian and Borders police experienced from 29th April 2012, when they took on NYPD. You would have fully expected them to be the classier of the services and put on a real show of skill. But it was the fire brigade that will take home the bragging rights and showcase their win I’m sure over the course of the festive period. In a friendly rivalry between service men it is a lovely and humbling way to raise money for charity, but still benefiting from the boxing and event itself as Detective Mike Leask the team captain of The Lothian and Borders, “they’ve committed themselves every week, trained hard and during the training they have all lost a bit of weight as well and they have had real focus”.

I think it is time for both me and you to get up out of our seat and go do something for the benefit of others. Most of us do not even exercise or dedicate ourselves to something to benefit our selfish needs never mind the needs of others. The entire night is honourable and everyone who took part should be praised for their efforts.

Independent business owners will not spend their money over the phone there is too much risk involved with money being so tight.

As a local business you must be thinking, how am I going to compete within such a global market. I cannot stress enough that this is the time to network together, we must create business opportunities for each other so that we keep what money we generate local. As a business owner myself, I can only give my opinion on what I see day to day. Destination stores are a thing of the past, people are afraid to leave the house and spend money as they feel safe buying online. So it is so important to be attending networking events, spreading the word about your idea, you need to remind people that you are still here. Running your own business is a 24/7 job, we are part of a society now that with business models we need to continually reassess, taking a step back and saying “okay,” that didn’t work, analysing why it did not work & resolving the situation with a new foundation of ideas. You cannot expect to continue trading as you did 5 years ago. Do not forget your roots though and the original concept you came into your business with, but we just need to explore new avenues of how we can communicate your idea.

For example reading this ask yourself, “Who have I spoken to this month?” “What events have I attended?” “Do people actually know what I do?” Remember business is not just about generating sales from the general public, we can be generating money business to business. Why not create money making opportunities for each other? When you are in work tomorrow think about why you came into business ? And look up and down your street and think of how you can create a money making opportunity from the other businesses in the same area. You will be surprised at how many people you have never spoken to or even heard of.

Before you jump in at the deep end and begin pitching to somebody, research your competition & your geographical location, this will give you the unique selling points you will need to pitch to your customer. Your passion and drive will only get you so far. There is no point in having a great idea with no business concept. You have heard it before but not all great ideas make money.

What do accountants do?On the face of it, the answer is obvious: they do accounts, don’t they?

Well, yes they do, but should that be the most important consideration when choosing an accountant?

Think about it this way: last time you had some gas work done on a gas appliance the engineer who carried out the work has to be Gas Safe Registered but I bet you didn’t ask to see their certificate. I know we didn’t last year when we had a new hob. The guy fetched up with the hob under his arm and asked, “Where do you want it, pal?”

“Over there, please” I said, and he went to work.

I simply assumed he could do the job and it’s the same with accountants…they all do accounts. So how do you choose one over another?

I asked Renee Mackay of TaxAssist Accountants about what she thinks her job actually is.

“Of course the foundation has to be accurate work, everything hinges on that, but at the same time it should be a given.”

Okay, so if the accounts (and book-keeping, payroll, VAT and all that other stuff) are a given, how on earth does anyone chose one accountant over another?

Renee pauses for a moment before continuing. “I think its really impor-tant that clients feel comfortable calling or visiting their accountants as a first port of call rather than as a last resort”

There is something rather heartening about being in the wine trade at this time of year. It is by far the busiest month, and the hectic schedule of tastings and events will keep us rushed right up until Christmas itself.

However, like the butcher, toy maker or Christmas tree seller we are in the privileged position of directly contributing to many people’s special day. As such, this month we’ve got a few wines that would suit any Christmas day, pop into Appellation Wines on Dalry Road or call 0131 202 0985 to pick out a few yourself, or choose from one of our fabulous festive cases available now.

I believe that a wine must not only live up to a celebration, but should add to the festivities and sense of occasion. In that vein, we start as all celebrations must, and as many Christmas days do, with some fizz. There are times for Champagne and times for other sparkling wines, Christmas is most definitely a time for Champagne! Maurice Philippart, Cachet Rouge, £29 is a white Champagne made entirely of black grapes making it more robust and fruitier than those produced solely from chardonnay. Tart red berries lead a light and refreshing nose followed by the unmistakeable baked biscuit and toasty aromas that make Champagne what it is. Fine and creamy bubbles with zippy citrus acidity will make this perfect to drink while opening presents or with shellfish as a light starter.

Whilst Champagne is welcome anytime of the year, there are some wines, particularly reds that seem inexorably linked with the dark afternoons and cold nights in the run up to Christmas. Pinalta, Douro, 2005, £14.30 is such a red. From Northern Portugal in the region more famous for the production of Port, this deliciously complex wine shares many of the fruit and spice characteristics of its fortified cousin. The rich nose is dominated by confected red fruit, blackcurrant jam and a slight vanilla spice. On the palate, flavours range from blueberries to toffee to dark chocolate all balanced by excellently developed tannins. This is one to get stuck into and enjoy its many layers with a warming stew or red meat.

For better or worse, a key feature of the festive season is entertaining. Whether it’s a planned party or an impromptu visit by well meaning neighbours, it pays to keep something chilled at all times, if only for when everyone’s left! Look no further than The Den, Chenin Blanc, 2012, £9.90, a bright, fresh, fruity white from this year’s South African harvest. Bags of tropical fruit on the nose including candied pineapple, melon, and papaya suggest this might be a sweet wine. But on the palate the wine is crisp, dry and zingy with a great rounded texture. The perfect pick-me-up for that second round of charades.

your Health Guidance SpecialistThe media, press and Government perceive the nation to be an “obese” nation, and that may well be true, however I believe that working with clients on a regular basis I see the “real” people of our society. I see the people of Edinburgh wanting to change their lifestyle. The Government need to realise this and begin to educate and nourish the nation in terms of Health and Wellbeing. It we want the economy to grow we need to create a drive and want to move forward as a unit and not as individuals.

Nutrition in particular is a key factor in changing the way people live on a day to day basis. Let us look at some facts. Did you know that over 70% of the world’s diseases would be gone from this planet if everyone had access to nourishing and healthy foods? We are force fed FAD diets over the TV, convinced into buying a miracle shake that will help shed loads of fat. The fact is you won’t achieve anything from this drivel. Without proper guidance in calorie intake, macro-nutrient intake meal timing, resistance training and general exercise the way we live will continue to become more intense. We see global brands taking over everywhere we go and trying to make us healthier with ready meals etc etc etc... you have heard it all before. We need to be looking at little cafés like Flip on Nicholson Street, home cooked, all fresh grilled foods. No nonsense or frozen rubbish we see on every corner of every street. This sort of business is what we need more of and really is a prime example of encouraging healthier living.

Healthy living provides the kick-start to the greater world. Our moods change dramatically for the better, our sleeping patterns changes, our motivation and all round living becomes a happier time.

Let me take you through what I see the average person doing WRONG to get into shape and change their lifestyle.

Mistakes

1. Eating lots and lots of sugary and starchy fruit.2. Doing endless tedious cardiovascular exercises. 3. Endless amounts of sit ups.4. Not having carbohydrates at night time. 5. Biceps and chest are overworked.6. Women not doing any weight training.7. Buying any and every supplement on the market.8. Not knowing the difference between fat loss and weight loss.

Resolutions1. Eating lots of sugary foods can create a high amount of insulin production

and glucose, therefore using simple sugars as energy when really we want to be burning fat.

2. Cardiovascular exercise can create a state known as “catabolic”, this encourages muscle breakdown. This can lead to greater fat storage.

3. Sit-ups burn very little if any fat. “Six packs are made in the Kitchen.” Nutrition is they key factor for burning fat.

4. Carbohydrates can be eaten any time of the day providing your body can use them efficiently.

5. Biceps and chest are overworked whilst neglecting your legs and back. Young men are particularly notorious for this gym mistake.

6. Women do not have the same hormonal support as men. Women have very little testosterone levels and will never gain a large amount of muscle mass.

7. Buying all the supplements that our on TV or recommended by “their mate in the gym.” Your gym friend is wrong and only people with qualifications can recommend supplements.

8. Fat loss is different to weight loss, as losing weight may be losing weight in muscle or water. Fat loss you can burn fat whilst maintaining a similar weight to what you already are now. This is done through Nutrition and tailored training.

Flip! Flip! is the perfect sandwich shop for anyone looking for delicious natural food which doesn’t cost the earth. My boyfriend and I went to Flip! after hearing they were No.1 in Edinburgh for sandwiches and that they served healthy fast food!?

“Mr Flip!” offered us a free tasting of super healthy home made soup, which was gluten free, dairy free, low in salt, almost fat free but best of all it was absolutely delicious, so much so that we had to have more! We also enjoyed a warm mug of fair trade coffee, which really warmed us up.

I decided to have the Tex Mex wrap, the portion size and a side salad, which was made to order. The wrap was filled with juicy steak strips, salsa, roasted peppers, cheddar cheese, soured cream, jalapenos and iceberg lettuce. Needless to say I have had it numerous times since then! I loved the fact that nothing was fried!

My boyfriend tried the burrito with chicken, peppers, salsa, rice, cheese, soured cream and beans, wrapped up in a tortilla parcel … he said it was one of the nicest lunches he has ever had, and he felt great after it!

What we loved most about Flip! was the fact that we had an extremely healthy, low fat meal, made from all-natural ingredients, yet it tasted fantastic and was affordable! It must also be said that the staff were extremely friendly and accommodating. I would recommend Flip! to everyone, go and have a flippin’ good meal for a flippin’ good price!
