How long have you had your business “Just Muscle Cars” and been restoring cars?

Just Muscle Cars was established in 2002,

and has been in the business of buying and

selling quality performance vehicles for over

12 years now. As far as restoring cars and

selling them..... I can’t remember that long

ago.

What is your favourite car?

I love them all, but my favourite personal car

would be my VC Valiant drag car, which is

still under construction. (sponsors required...

hint, hint)

Favourite car you have restored and sold?

That is a hard question. There have been a

few. I would say one of the nicest cars I built

and sold was a HZ Holden Sandman utility. It

was a lovely car and the build went perfect.

It was sold the day it was finished and the

purchaser loves it.

What car/cars do you own and drive?

I have a few cars but I don’t really drive any

particular one. They all get shared and which

ever is registered at the time. Probably my

HT GTS Monaro, until I sell it.

What car does your wife drive?My wife Kylie-Jo drives a 1970 Dodge

Charger, which was purchased from a

museum in the USA.

Favourite thing to do in your spare time?

Spending time with my family is the best.

We attend a lot of drag racing and car

shows events.

Turn the most important meal of the day into a nutritional powerhouse!

The ultimate Egg & Ham Muffin

INGREDIENTS1 tbsp white vinegar8 eggs2 tbsp basil pesto2 tbsp plain Greek yoghurt4 wholemeal English muffins, split4-8 slices ham or prosciutto1/4 cup sliced, roasted red capsicum from a jar

Salt and pepper to taste

Serves:4

METHOD1. Poach the eggs: Bring eight centimetres of water to a boil in a large pan. Reduce to a bare simmer and add vinegar. Working in two batches, poach the eggs until the whites are just firm; 3-5 minutes. Using a slotted spoon, remove the eggs and put on a plate.

2. In a small bowl, mix together the pesto and yoghurt until smooth and thoroughly combined. Toast the split English muffins until golden.

3. Assemble the sandwiches: Evenly divide the ham, red capsicum and eggs between four of the muffin halves. Season with salt and pepper, then add the pesto mixture. Top the eggs with the remaining muffin halves.
