•••• 1 banana shallot, peeled and

sliced

•••• 1 clove garlic, peeled and

crushed

• • • • 400g mixed fresh vegetables

like broad beans, carrots,

peas, spring greens, broccoli

•••• 100ml stock

•••• Juice and zest of 1/2 lemon

•••• Sea salt and freshly ground

pepper

•••• 150g creme fraiche

•••• 3-4 sprigs dill, roughly

chopped

•••• 1/2 tbsp olive oil

•••• 2 large mackerel fillets

Serves 2

Preparation time 15 minutes

Cooking time 15 minutes

Heat the butter in a sauté pan or

deep frying pan. Gently cook the

shallot for about 5 minutes until it

starts to soften and becomes

trans lucent. Add the garlic and

cook for an other couple of

minutes.

Add the vegetab le mix, cutting

anything large lik e carrots, to

match the size of the other

vegetables. Sti r for a minute or so ,

pour in the stock and lemon jui ce

and add the zes t. S eason, then

cov er and cook for 5 minutes.

Spoon in the creme frai che and dill

and cook for an other 3-4 minutes.

Heat another f rying pan with the

olive oil. Sli ce the mackerel fillet in

half lengthways , t aking out any

bones you may find. S eason the

fish then pan-fry for 2 minutes on

each side.

Serv e the mackerel on a bed of the

vegetables with plenty of lemon

wedges and some n ew potatoes.

Corfu is the greenest of the Greek islands, festooned with vines and olive groves

and tall cypress trees point-ing straight up to the sky. Gentle shores in the east, mostly shingle, sheer cliffs but gorgeous sands in the

west, lowlands in the south, mountains in the north, the scenery changes with every bend of the road.

Framed by wooded hills on the west coast, Paleokas-tritsa is one of the most idyllic spots, all crystal clear waters and crescent-

shaped bays meandering around cliffs and rocks. Pink villas peep through the trees like giant candy-floss, boats sail around the

coast and into gaping caves, most exciting the ‘blue eye’ where shoals of fish swim in a luminous patch of blue water.

Up on the headland, crowds head for the pocket-sized monastery, keen to set eyes on precious icons, light candles and enjoy pano-

ramic views over land and sea. In the distance, mead-ows spread across the slopes, sprinkled with pink orchids and wild gladioli

and isolated farms tucked in lemon groves. There are secluded coves, sweeping sands and quiet trails where rosemary and oregano

leave their scent in the air.

Meanwhile on the east coast, Kerkyra, the capital,

stretches across a penin-sula guarded by two Ve-netian forts. The ‘Old

Fortress’ is the most spectacular with ramparts and moat, courtyards, can-ons, museum and a light-house with dizzying views.

Mainland Greece is just across the water and in the distance you can see Mount Pantokrator, Corfu’s high-

est point, just short of 3000 feet.

Down town, the main square is occupied by a cricket ground, comple-

mented by an English bandstand and the elegant Liston Arcade modelled on the Parisian rue de Rivoli. Bars and restaurants spread

under the trees, horse-drawn carriages wait for custom and the Old Town beckons, a maze of paved lanes and stepped alley-

ways, tall buildings and spires jostling for space, hidden squares, souvenir stalls and balconies draped in laundry and flower pots.

Cruise ships dock on the western pier, yachts bob at anchor while fishermen unload the early morning catch.

A short distance from the capital is the stylish Achil-les Palace, not a ruin of an-cient Greece, as one might expect, but a flamboyant

19th century building in neo-classical style, com-missioned by Austrian Em-press Sissi to nurse a bro-

ken heart. Achilles was her hero and painting and stat-ues pay tribute among col-onnades, stucco work and

personal belongings of the empress and the next owner, Wilhelm II. But best of all is the fabulous pano-

rama from the gardens, where you might feel just like the beautiful Sissi or James Bond, since the pal-ace featured as a casino in

‘For Your Eyes only’.

The Kanoni peninsula is just a stone’s throw away, home to ‘Mon Repos’, an elegant mansion built by

the British and later, sum-mer residence of the Greek royalty and birthplace of Prince Philip. Everyone is welcome to explore the

grounds and house now exhibiting centuries of the island’s history. Excava-tions around the estate have unveiled vestiges of

Paleopolis, the ancient city of Kerkyra.

But it is at the end of the peninsula that you find Corfu’s most iconic image.

Set on a tiny islet, the Vla-cherna monastery comes straight out of a fairy tale, flanked by a single cypress tree and the mere pencil

line of a gleaming cause-way.

The Fife Leg of the Lon-don 2012 Olympic Torch

Relay is an exciting mile-

stone on the road to the

London 2012 Olympic

and Paralympic Games. The Olympic Torch Relay

route has been planned to

allow the Olympic Flame

to come within ten miles

of 95% of people in the

UK. The arrival of the Torch in Fife represents a

unique opportunity for

Fifers to connect with the

Olympic flame, one of the

iconic symbols of the Olympic Games, and a

once in a lifetime oppor-

tunity to be part of this

sporting event.

An average of 115

Torchbearers a day will

carry the Olympic Flame

during its 8,000 mile jour-

ney around the UK before it arrives at the Olympic

Stadium on 27 July 2012

for the lighting of the

cauldron at the Opening

Ceremony, signifying the official start of the Lon-

don 2012 Olympic Games.

and Leuchars. Ending

with an evening celebra-

tion at Baxter Park in Dundee.

Day 26 – St Andrews to

Edinburgh. Then on

Wednesday 13th June the Flame will be back in the

Kingdom starting off the

day in St Andrews before

moving onto other

neighbouring local au-thority areas. The Relay

will return to the King-

dom traveling through

streets in Cairneyhill,

Crossford and Dunferm-line later that day. Ending

with an evening celebra-

tion at Edinburgh Castle,

Esplanade.

Scotland’s Gardens Scheme (SGS) was created in 1931 in

order to facilit ate the open-ing of private gardens to the

public as a means of raising

money to support the t rain-ing and pensions of the

Queen's Nurses, generally

known as District Nurses. Four years earli er The Na-

tional Gardens Scheme had

been founded in England for the same purpose.

The Scheme was an instant

success and the handbook in 1932 listed over 500 gardens,

mostly large country house gardens, which were open-

ing in return for a "voluntary

contribution". That year, £5,400 was raised

(equivalent to £242,800 to-

day) and as a result the dis-trict nurses' pension of £20

was doub led.

During the war years the gardens continued to open

although the number

dropped down to 300 or so. Proceeds however actually

increased as in true British

spirit garden owners tried to ignore the weeds and dug

for victory by growing vege-tables for sale in the f lower

beds. Teas continued to be

served on the lawns...without sugar. S uch

was the esteem in whi ch

garden openings were held that extra petrol was allowed

for special buses to bring

visitors from the mines and factories and owners were

issued with speci al applica-

tion forms for sufficient pet-rol to mow the lawns once a

month.

After the Second World War,

the National Health Service

took on the Distri ct Nursing Service, but

money was still needed to care for

retired nurses and

invest in training so the SGS continued as

before.

In 1961 an important decision was t aken to

allow the garden

owners, if they chose, to allocate 40% of the

gross takings from an

opening to a regis-tered charity of their

choice. At the same time it was agreed to make small

annual donations to The

Royal Gardeners' Benevolent Fund and The Royal Garden-

ers' Orphan Fund, now Per-

ennial and The Royal F und for Gardeners' Children re-

spectively.

Some 200 charities, both large and small, benefit an-

nually f rom the 40% gross of

the t akings that are donated to the charities chosen by

the garden owners whilst

60% net continues to be given to the benefici aries of

the Scheme.

Originally the gardens were

predominantly the large

grounds of stately homes with teams of gardeners

maintaining them. But now

many more small gardens open, from cottages to ter-

raced houses and in a com-

munity effort many neighbouring and nearby

properties open their gates

on the same day to en able visitors to delight in a range

of styles and plants within a few hours.

As much part of a day out to

see the gardens is the oppor-tunity to buy plants and to

enjoy tea and cakes and

some gardens offer activities to attract and entertain chil-

dren.

Yellow Book which is a di-

rectory of gardens open throughout Scot land

(availab le f rom the website

or from bookshops).

But both regular and occa-

sional visitors can benefit

from using the excellent SGS website

the results down to a spe-cific day.

There won’t be many republ i-

summer. Even non -royal ists

will be caught up in the pag-eantry of Her Maje sty’s Dia -

mond Jubilee celebration s; an

event guaranteed, even more so

than the Olympics, to l ift the

nation’s spir its at a time of gen-

eral de spondency. As part of the

celebration s The Queen has

granted c ity status to f our UK towns: Perth in Scotland; St

Asaph in Wales; Chelmsf ord in

England and Armagh in North-

ern Ireland.

There was another time in his-tory when the country’s col lec-

tive spir its needed lifting – sixty years ago. Residential

streets were closed t o traffic so that local communities could

hold street parties. Bunting and Union flags hung from line s strung from upstair s windows

on either side of the streets. Makesh ift tables sagged under

the weight of sandwiches, jelly and custard and bottles of Tizer.

Games were organised, one of which consisted of the father of

a family threading a needle and cotton which he then handed to his impatiently wa iting off-

spr ing who would spr int down the road to the mother. The

mother would sew a button onto a square of material which

the offspr ing would then rush to the referee. Not all the fami-lies could part icipate in this

game; some of the fathers had not returned h ome eight year s

prev iou sly.

In the evening we sat round ou r

wirele ss sets to l isten to our new Queen’s speech : “…

Throughout all my l ife I shall strive to be worthy of your trust…”

In this speech the Queen also paid tribute to the support of

her husband, the Duke of Edin -burgh, and the speech is as

valid and a s rele vant today as it

was sixty years ago.

one constant: a tower of strength whose influence will

not be fully appreciated until she is no longer with us.

In a much earlier speech, made

in Cape Town on her twenty-first birthday, 21 Apr il 1947, the

then Princess El izabeth de-clared “ … my whole l ife whether

it be long or sh ort shall be de -voted t o your serv ice…” Well, we all know now that it was to be

long. We al so know that she meant every word she said.

How differently h ist ory would have read had her would-be

assa ssin, Marcu s Sarjeant, suc-ceeded in acquir ing a r eal gun and live ammunition. The men-

tally disturbed teenager fired six blank shots at the Queen as she

rode in the Trooping the Colour ceremony on 13 June 1981. He

was qu ickly overpowered by Police Sergeant John Wood-

cock and St John Ambu lance man John Heaseman. He told them “I wanted to be famous. I

wanted to be a somebody.” And he had written a diary entry: ‘I

am going to stun and mystify the world. I will become the

most famous teenager in the world.’

Fortunate not to have been sh ot

on the spot he escaped with five years imprisonment. But most

notable was Elizabeth II’s ma-jestic react ion to the in cident.

As her horse, n ineteen-year -old Burmese, panicked and re ared

she calmly brought him unde r control and continued with the scheduled r ide t o Horseguards

Parade, comfort ing h im with a few pats on the neck while

turning to smile at the cheering crowd.

This was, allegedly, the second attempt on the Monarch’s life. According to a retired senior

police officer in Austral ia he

was in cha rge of an inve stiga-

tion in 1981 after a train carry-ing the Queen and Prince Philip

coll ided with a large log which had been placed on the track after pol ice and a pilot train had

passed along the route. The retired officer, Mr McHardy,

who cla ims to have interviewed suspects including IRA sympa-

thisers says the Austral ian gov-ernment issued a su ppression order to avoid embarra ssment.

There has so far been no com-ment from Buckingham Palace

on the validity of these cla ims.

True or false I doubt that the

Queen loses much sleep over these stor ies. Sh e has, over the

past eight decade s, proved her -self indomitable.

It was the Queen’s con sort,

HRH Prince Philip, who pointed out that sometimes a posit ion is

more important than the per -son who occupie s that position.

With typical clar ity he had put the concept in a nutsh ell: if a nation ch oose s to have a fig-

urehead then there must be a human to give that position

substance, but the human is secondary to the position, not

vice ver sa. For the pa st sixty years we have been fortunate in

having a per son worthy of that posit ion; a per son of su preme dignity and dedication the like

of which this country may never see aga in.

One time I was fl ying

across the country I lost

two items all because I

didn't want to misplace

them on the flight. We

could have been the three stooges searching for the

cord to Michele's head-

phones. You know the

story. I put them some

place safe and then had to

spend thirty minutes

searching through every

pocket and compartment

in my purse and my com-

puter bag. After I finally

found them; I lost the

cord to my headphones.

Luckily that cord had not been placed in a safe

place; it was hiding on the

floor under my foot.

In order to get myself

calmed down from the

chaotic start to our plane

ride I put on some music

that settles my nerves and

decided to write about our

little comedy routine.

Why do we put ourselves

though this. At one point I was so happy that my

sweet darling was not

with us on our trip. When

he does travel with us; he

likes to sit a few rows

away from us because I

fidget too much. He trav-

els light. This is not a term

that sidetracked people

are familiar with. Light for

us is a flash light to look

into that bottomless pit of

a handbag to help us find

what we are searching for.

I have been trying to fig-

ure out what the differ-

ence is between a man

and a woman traveling.

Robert has his wallet, a

comb, his glasses, a book

and just a car key in his

pocket. His bags can be

packed in about five min-

utes. He carries the bare

necessities unlike Michele

and I. We are prepared for anything. We have medi-

cations for stomach

aches, heat pads for sore

muscles and pills for

headaches. We have our

computers so we can still

work and we have our

tunes so we can sing. This

stuff has come in handy,

but the price we pay for

having too much stuff is

in time and frustration.

Yes we know it is here someplace.

The same thing happens

in our homes when we

have too much stuff. We

can't find what we need

when we need it. We don't

have homes for these

items. As my Granny has

always said, "Everything

has a place and every-

thing in its place". Can

you imagine this??

For sidetracked people

our clutter is clogging up

the valuable storage space

in our homes and the

stuff we need is homeless.

This is why we are always

searching and wasting

time hunting for what we

want. With less clutter we

release the frustration

that comes with losing

items. The funny part is

that the items that are usually right in front of

our faces in plain view

and our frustration level

blinds us.

My next trip I am deter-

mined to travel with less

and find more peace in

my journey. I can do this.

again? I have many times. It is almost a joke in our home when I say those black hole fateful words, "I need to put this in a safe

place. There are car titles that have been lost in the vastness of my safe places.

As the magazine goes to print, it’s

coming up for PSP Awareness Week

the theme for 2012 is “A Million to

Beat PSP” It’s not just about raising

money , although more funds are needed to invest in

the vital research and find a way to beat PSP

(Progressive Supranuclear Palsy) ) and CBD

(Cortico Basel Degeneration), it's also about raising

awareness of PSP and CBD and the need for more

research. My mum, Elizabeth Birrell and son, Scott

Reekie are taking part in the Anstruther Rotary

Club Coastal Walk on 3rd June to raise funds for

PSP. If you could spare a pound or two to help

their PSP fund raising efforts that would be great.

Crail Food Festival 15th - 17th June

The 2nd Crail Food Festival will take place in and

around Crail, bringing together a collection of

producers and businesses who will be exhibiting a

variety of local and regional produce. Celebrating

Crail and the East Neuk of Fife as a food tourism

destination , showcasing Fife businesses, caterers

and producers in a fun packed weekend. Details of

EAST NEUK COASTAL WALK - 3rd June

The Rotary Club of Anstruther is again organizing

the coastal walk to raise funds for charities. Now in

it’s 3rd year, it takes place on Sunday 3rd June.

Last year £10,000 was raised for 22 charities. The

start and finish points are in Crail, you will be taken

by minibus to your walk start point at either An-

struther Golf Club (6 miles), or the west end of

Earlsferry (13 miles). take as long as you like –

we will be at Crail when you finish, with a warm

welcome, a certificate of your walk and a medal.

Remember you will be walking for your chosen

charity , so please get as many sponsors as you can.
