This is ideal for a quick supper dish.Experiment with your favourite spicemixture or curry powder instead of theCajun seasoning. Serves 4 INGREDIENTS4 x 175g hake fillets, skin on and boned4 teasp. Cajun seasoning1 tablesp. olive oil400g fresh baby spinach leavesknob of buttersalt and freshly ground black pepper

METHODPreheat the oven to 180C/350F/Gas mark 4.Place the Cajun seasoning on a flat plate anduse to dust the hake fillets, shaking off anyexcess. Heat an ovenproof frying pan. Add theolive oil and sear the hake skin side down for1 minute, then turn over and cook for anotherminute. Transfer to the oven and roast for 4-6minutes. The exact time will depend on thethickness of the fillet.
