1. VEGETABLES AND FRUITS ARE THEBEST CLEANING AGENTS

Fresh vegetable and fruit juices can quicklyclean away excess acidic waste products andreplenish mineral and vitamins. Below is a listof some nutritious juices. When buying a juicer,choose one that is durable and efficient.

• Carrot Juice: Carrots grown from uncon-taminated fertile soil are sweet and fragrant. If

carrots happen to have a strange taste, do not usefor juicing. Carrot juice is a rich source of calciumand other minerals and a precursor of vitamin A,beta-carotene, which is protective against cancer.

Depending onone's needs andpreferences, onecan add somebeets or othergreens to carrot juice. In the morning or at noontime one can add a slice of ginger. One can drinkone or two glasses, up to four glasses of juicesper day.

• Celery Juice: Celery juice is a rich source ofnatural sodium. In hot weather, drinking celeryjuice will replenish lost sodium due to sweating.It helps to regulate body temperature. Eatingrefined carbohydrates from white rice or whiteflour can cause deposits of inorganic calcium in the

blood vessels and joints, resulting in kidney andgall stones and arthritis. Celery juice can help todissolve this excess calcium and eliminate it. Thejuice is beneficial in cases of high blood pressureand also for the lungs.

• Green Vegetable Juices: Any greens thatdo not have a strange taste are good for juicing.Green juices are beneficial for liver, lungs, heartand diabetic conditions. Bitter greens such as

dandelion, and endive are especially good forthe liver. Dark greens such as spinach andparsley are good. For those unaccustomed to thetaste, one can sweeten with cane juice or fruit

JUIce. One Vitamin Cpill added to the juicewill keep it fresh atroom temperature forone day.

Choose fruits grown in season. Sour fruitshave an alkalizing effect on the blood afterdigestion. Animal foods and sugar produce acidityin the blood. Most people who consume excessanimal products and refined carbohydrates tendto have acidic blood. Vegetable and fruit juiceshave a balancing effect.

Fresh orange juice diluted with water in amixture of half and half can help remove mucus.When one has mucus build-up, one can chooseto drink a glass of diluted orange juice everyhalf an hour for one day. Be sure the oranges ortangerines are organic.

• Fresh Lemon Juice: Use the juice of onelemon added to a glass of warm water. Drinkingthis first thing in the morning can help cleanse the

kidneys. If one has kidney stones or bladder stonesone can take the juice of up to 12 lemons a day(one at a time) diluted in warm water for 5 days.

2. HIGH POTASSIUM SOUPPotassium is one of the most abundant min-

erals in the body. The normal ratio of potassiumto sodium is about 4 or 5. Nowadays, the aver-age person takes in twice as much sodium aspotassium. Salt is the most common additive infood. Potassium is concentrated particularly in

Ingredients: All squash in season, such aspumpkin, winter squash, zucchini, winter melon,cucumber, butternut squash, acorn squash; rootssuch as jicama, beets, and grains such as barley,millet; red dates, plus dark greens such as collardgreens and kale.

Add enough water to cover the ingredients.Bring to boil then simmer for thirty minutes. Takeonly the broth. The ingredients can be used twice.

late the digestion. They are helpful in preventingand recovering from illnesses.

Basic ingredients:

Root vegetables such as beets, sweet potatoes,carrots, burdock, parsnips; dark leafy greens suchas kale, broccoli, tough parts of the vegetables(skin of broccoli); barley, millet, adzuki beans,black beans, string beans or squash.

Add enough water to cover the ingredients.Simmer for one hour or so, or cook in a ricecooker. Use the broth only. Can be cooked asecond time.

one can add Chinese herbs such as astragalus,codonopsis (dong shen), American Ginseng forstrengthening chi, or cumin, fennel, bay leaf,

thyme, and fenugreek.

4. WHEAT GRASS OR BARLEY GREENJUICEFresh wheat grass and barley green juice are

types of green vegetable juice. They are especiallyuseful when one cannot get pesticide-free fresh

vegetables. Green grass juices contain all the nu-trients the human bodyneeds. They also containthe highest quality ofprotein. They help todetoxify chemical andradiation pollutants.In our polluted environ-

ment, they provide a

supplement. It is bestto grow one's own.Otherwise one can buya tray of fresh grass.Dry powder can be usedduring emergencies.

Grow wheat grass at home for juicing

Planting direction: Choose organically-grownwheat or barley. Soak the seeds in water over-night. Next day, drain the water. Place the seedsin a large bowl and cover for two days. Preparea tray five to eight centimeter (5-6 inches) deep.

Place soil in the tray. Allow a space at the edgeto let the excess water drain. Keep the soil moist.Spread the wheat sprouts over the soil. Coverwith a wet cloth. Place the tray in a dark placefor several days. When the wheat sprouts are afew inches tall, remove the cloth and put the trayin a cool place.

Avoid direct sunlight. Water everyday untilthe wheat grass is 18 cm tall (6 to 7 inches). Cutabove the roots.

Use a wheat grass juicer with a slow-movingmotor. If one does not have juicer, one can chewthe grass and spit out the pulp. Take one to twotablespoonful per day, no more than 1/4 cup(60cc).

If one feels nause-ated after taking thewheat grass juice, onehas taken too much,and the detox reaction can be strong. It is besttaken between meals on an empty stomach. Onecan dilute the juice with a little lemon juice. Donot take after six p.m. to avoid being too energizedand having difficulty going to sleep.

Wheat grass juice may be used externally as adisinfectant or as an eye wash for catarrh. Some-one reported using this eye wash once or twice

a day, and after sixmonths, the catarrh

was gone.Wheat grass

5. BENEFICIAL BACTERIAThe human body usually has over 400 kinds

of bacteria. Some are beneficial for digestion andelimination, some are neutral, and others, suchas putrefactive bacteria and pathogenic bacteria,

can be toxic to the body. When beneficial bacteriaare in the majority, the others are under control.

Beneficial bacteria take their nourishment fromplant foods. Putrefactive bacteria are fed by meatand fish. Taking plant food helps to maintainsufficient beneficial bacteria. They are importantfor the overall digestion, elimination, and supportof the immune system.

They are the first line of defence againstexternal pathogens.

When our water, air and food supplies arepolluted, it becomes necessary to supplementbeneficial bacteria. They help to detoxify thepollutants. Unfortunately, the beneficial bacteriaare killed by pesticides, preservatives, andpollution. Most people are deficient in beneficialbacteria.

The best sources of beneficial bacteria are freshvegetables and naturally fermented foods such assauerkraut, miso, yogurt, kefir, and commercial

supplements. ---

Sauerkraut can be juiced and added to other

vegetable juice. It will enhance the detoxifyingeffect, and will prolong the freshness of juice atroom temperature. II

6. ENZYME SUPPLEMENTEnzymes are catalysts for digestion. They are

inactivated above 60 degree °C or 165 degree OF.Eating only cooked food will result in a deficiencyof enzymes in the digestive tract. Fresh fruits,vegetables and sprouts are rich sources ofenzymes. Naturallyfermented foodssuch as sauerkraut,

pickled vegetables

and rejuvelacalso containenzymes.

Rejuvelac helps torestore health of thedigestive tract, aswell as replenish themissing nutrients inthe body.

Rejuvelac aged at room temperature for 24 hours is the most ideal.

Rejuvelac contains the nutrients found inwheat, such as vitamin E and additional nutrients

such as vitamin C, extra vitamin B complexes,including B 12 and enzymes.

Nowadays, people in the wealthier countriesmay eat a lot but are generally in poor health.Rejuvelac offers a convenient way to restore thehealth of the digestive system. It will also providemissing nutrients.

Rejuvelac tastes neutral and slightly sweet.

Occasionally it may be slightly sour, but shouldnever be putrid. If the wheat is not of goodquality - irradiated, for example - or the wateris polluted, then the wheat will not ferment. Itwill putrefy instead. In such case, it should beused for compost. Replace the wheat with goodquality wheat or use filtered or spring water formaking rejuvelac.

plate for twodays to sprout. Transfer the

wheat sprouts to a glass jar and add twice theamount of water. For each cup of wheat sprout,add two cups of water. Place at room temperature(25 degree QC)for 24 hours. In warmer climates,

shorten the time to 8 to 12 hours. Drink the water.

Extras can be kept in the refrigerator. One canmake a second batch by replacing the water andwaiting another 24 hours. This can be repeatedfor a third time. Temperatures too high or too loware not suited for making rejuvelac. One can drinkone to four glasses a day.

7. SWEATINGSweating is

an effective wayof clearing

the body ofpollutants, suchas chemicals frompesticides, plastics,hydrocarbons fromgasoline, and allindustrial wastes.Fat soluble pollutantsmight be stored in the body fat for many years.

Sweating can be induced through exercise,sauna, a steam bath or a hot bath. After sweating,drink clean water and replace body fat with onetablespoon of clean organic oil per day. The Dietshould be clean, using only organic vegetables,fruits and grains.

Sports and walking are all relaxing andpleasant exercises. Exercise until the heartbeatspeeds up and the lungs breath deeply.

9. ENERGY EXERCISEWhen the body's energy level increases, the

body will expel lower energy pollutants.Solid and liquid waste matter is removed, and

also "dirty chi." Energy exercise can quickly raiseyour energy.

There are many schools of energy exercises,

also called Chi Gong. They are in the category ofmovement, meditation or a combination of both.One can choose which form to learn according to

one's interests and opportunities. There are two

simple energy exercise:(1) Hand-clapping Exercise:

As the name suggests,this exercise is the simpleclapping of hands. Thepalms are energeticallyconnected to the entire

body. Through clappingone stimulates the chi or

life force throughoutthe body. Clapping

If we are concerned about disturbing others,then we can clap with hollow palms or differentparts of the palms, fingers against fingers, edgeagainst edge, etc. Five minutes of clapping perday is sufficient for health maintenance. To recover

from illnesses, one needs to clap ten to twentyminutes, or more. Detox reactions can causediscoloration of the palms, dryness or cracking.The body can also produce odor.

(2) Wutaishan Eight Step ExerciseWutaishan exercise begins at the head and

moves down to the feet. It can balance the wholebody.

Rubbing the feet at the end is the most impor-tant part, a natural complement to hand-clapping.

It is usually done before going to sleep. When do-ing it in the morning, skip the feet-soaking part.

METHOD: Fill a pan or bucket with hot water.Add a little salt to the water. Place the feet in thewater, covering the ankles.

accidents are all traumas that leave their marks in

the body and mind.

produce the tenden-cies of needing tocontrol others, hyper-activity, depression,suicidal, tendencies,

self-aggression,forgetfulness, inability to concentrate, and evenmental illnesses. These traumas can be storedin the life force for many years and also in the

right brain stem, interfering with the body's basicfunctions: heartbeat, breathing, and immunefunctions. For those who experience trauma inchildhood, in particular neglect and criticism, therisk of getting chronic illnesses is above average.The release of stored emotions and traumas

are important for health, and for recovery fromillnesses.

When I cried from hunger, she could notunderstand. Maybe my thin body set wasdetermined then, for it is generally understoodthat body types are determined in infancy

My diet as a child was typically Chinese: whiterice with vegetables, tofu and small amounts ofmeat and fish. Mother also made steamed bunsout of white flour. Fruits came from the back yardsuch as mangoes and guavas. Tomatoes werecheap so they were consumed sometimes as fruits.

Because money was scarce, we had very fewsnacks. At the very most we could have somebrewer's yeast tablets and an occasional cookie.

When I turned five, my father returned fromhis studies in the United States. He encouragedmy mother to cook us more meat. He believedthat Americans were taller because they ate moremeat. He also insisted that we drink milk. Every

morning a glass of milk was added to breakfast.

We lived in housing provided by the companywhich also took care of the grounds. I rememberevery week or so the workers would come to spraywhite clouds of chemicals to kill mosquitos. I amnow certain that the chemical used was D.D.T.. My

health was not good during that time. A Chinesedoctor felt my pulse and told me that my liverwas not good. I felt quite discouraged at the time,wondering if I had some incurable disease.

When I was eight, because of my father's work,the entire family moved to Michigan, in the US.,for two years. We felt we had arrived in Heaven.Whenever my father had time, he would takeus everywhere to sight see. Eating was an evengreater treat. We could have soft drinks, ice cream,chocolate, hot dogs, drumsticks, etc .. We wouldeven go to McDonald's occasionally to have ahamburger and French fries. We could watch onehour of T.v. every evening. On Saturday mornings

we could watch a whole morning of cartoons.Within six months, my hives which used to beinfrequent, became regular. They got more seriousthe second year. When I was taken to an allergyspecialist, I was found to be allergic to milk,peanuts, pollen and dust. I avoided those thingsbut still suffered from hives. When we returnedto Taiwan, we resumed the Chinese diet of freshvegetables and small amounts of meat and fish.We rarely had candies, ice cream and soft drinks.After six month, the hives cleared up.

After the completion of the eighth grade, myfather again moved the whole family to Michiganin the U'S. to pursue his doctoral studies. This timethe family budget was tight, so we did not havemuch chocolate to eat but we still ate ice cream,chicken wings and frozen vegetables. Lunch wasoften a sandwich with white bread and luncheonmeat (processed meat). It did not taste good but

we were just following the American way. Withinsix month the hives again became a problem.This time the doctor gave me anti-histamine pills.

The medicine controlled the hives but made mesleepy. I struggled to keep my eyes open duringclasses in school.

In the second year of high school, the wholefamily moved to Hawaii. I still suffered fromhives. A Chinese American doctor gave me shotsonce a month to control the hives. This lastedtwo years.

CHANGING TO AVEGETARIAN DIET

I entered the University of Hawaii in 1969. Aclassmate shared a book with me by Dr. Norman

Walker. The book mentioned certain foods thathelp one feel especially good. This book opened

the way and provided the first step to total healthof body, mind and spirit. I changed my depen-dency on medicine and shots to control hives.

Dr. Walker, in "Raw Vegetable Juices," discussedour body's needs for fresh unheated organicminerals. He also explained the harmfulnessand hazards of processed foods and flesh. Heprovided recipes for salads from many vegetables.He recommended finely grating the vegetablesfor better digestibility.

In a traditional Chinese diet, there was verylittle raw vegetables. I realized after reading thebook that my sickness was connected with eating.

On Christmas day that year I decided to become

a vegetarian.Mother continued to cook her delicious dishes

but I prepared my own salad of grated vegetablesof carrots, celery, cabbage, etc. I convinced mymother to cook brown rice and to buy a juicer. Ourfamily of eight consumed fifty pounds of carrotsin a week. In the first month of diet change, Iwas still tempted by a table filled with fish andmeat. I persevered with my new way of eating.I started the meals with salad, followed by cooked

vegetables and brown rice or whole wheat bread.Every week I would eat one pound of nuts suchas almond, or sunflower seeds. I was not onlystopped eating meat and fish but al so ice cream,potato chips, candies, cookies and cakes, as wellas soft drinks. After three months, when I saw fishand meat, not only was I not tempted, but also I

found their smell to be putrid.

I stopped going to the doctor for shots afterchanging to a natural vegetarian diet. He warnedthat my hives would return. That was more thanthirty years ago. I have not had problems withhives since then.

After changing my diet, my weekly headachesdisappeared. The entire body-mind was morerelaxed with fewer worries and I was less affected

by events around me. Seeing my change, motherchanged the entire family's diet within six months.The youngest sister was five years old, andthe other sisters were nine, twelve, sixteen andseventeen. The whole family'S health improved.When a flu epidemic would come to town, noneof us would get it. Initially my parents and I lostsome weight. One year later their weight returned

to normal. My mother was a bit overweight before,

but afterwards she was slimmer.Beginning with "eating", I took the first step

towards total health. In the last thirty years mydiet has followed the principles of:

1. Eat whole grains, vegetables, fruits, nuts,seeds, legumes, and sea vegetables.

2. Avoid processed foods, the more natural thebetter.

3. Choose locally grown food as much aspossible.

4. Choose food according to one's body typeand reaction.

5. Eat only when hungry. Don't necessarily eatat every meal time.

6. Whenever possible, buy organically grownfood.

While living in Hawaii, because the climate

was warmand pleasant,

70-90% of my dietwas raw. Breakfast

consisted of papayaand carrot juice. Lunch

was salad and whole wheat bread. Dinner was

steamed vegetables and brown rice. When Ientered graduate school, I lived in Boston withfour distinct seasons. My diet consisted of morecooked foods, and only 50% raw. Breakfastchanged to oatmeal or toast. In the ten yearsin Houston I also ate 50% raw and 50% cookedfood. In the thirty years I have travelled to threecontinents and more than one dozen countries.Eating has never been a problem. On the otherhand, because I knew about good eating, I did

have digestive problems afflicting others. In thethree years that I lived in India, other tourists had

many illnesses, but I gained twenty pounds.In the last decade the world is increasingly

facing a serious food crisis. Foods that can nourishthe body are more and more scarce. On the marketthere are a lot of "garbage foods" containingpesticide residues, food colorings, artificialflavorings, preservatives and other additives.

Illnesses resulting from nutritional deficienciesare on the increase. Even more alarming is thatpoor nutrition causes disturbances in behavior,attitudes and emotions, causing many family andsocietal problems. Promoting natural farming andnatural foods are a most urgent need, especiallyat the present time.

Chiu-Nan Lai holds aPh.D in Chemistry from the
