Dear God,It has been a joy to see all the write-ups about Tim
Tebow, the quarterback for the Denver Bronco. It re-minded me of the apostle Paul who shared with us inPhilippians Chapter 1 verses 12-18 about him beingpersecuted in taking a stand for being a Christian. Ithas given me more courage as a Christian. I hope thatwhen I am challenged, as Tim Tebow has been through-out his college and professional career, that I will notbe ashamed to take the same stand as he has.
I have enclosed the Bible passage for everyone to see.I hope that as they read it, they will be encouraged andbegin to share their stories with You. I have really en-joyed reading “Dear God” each month and hope thatothers will find it rewarding to their lives. I was hesi-tant, at first, to write but once these articles began tosurface, I knew I had to respond with a grateful heart.
These words from the Bible tell me how important itis for “the gospel” God’s Word to be shared, even whenpeople try to use them to cause trouble for others. Iwill do my best to remember these words and to applythem to my life.
“Now I want you to know, brothers and sisters, thatwhat has happened to me has actually served to ad-vance the gospel. 13 As a result, it has become clearthroughout the whole palace guard and to everyoneelse that I am in chains for Christ. 14 And because ofmy chains, most of the brothers and sisters have be-come confident in the Lord and dare all the more toproclaim the gospel without fear.
15 It is true that some preach Christ out of envy andrivalry, but others out of goodwill. 16 The latter do soout of love, knowing that I am put here for the defenseof the gospel. 17 The former preach Christ out of self-ish ambition, not sincerely, supposing that they canstir up trouble for me while I am in chains. 18 But whatdoes it matter? The important thing is that in everyway, whether from false motives or true, Christ ispreached. And because of this I rejoice…”

Apple Pie Rustica1 refrigerated pie crust (half of a 15 oz. package, or
pastry for one 9-inch single crust pie)1 (21 oz.) can Duncan Hines®, Comstock® or
Wilderness® Apple Pie Filling1 lemon
1 tablespoon butter or margarine, cut into smallpieces
1 tablespoon sugar1. Preheat oven to 425° F. Place pie crust on a rim-
less baking sheet lined with parchment paper. Dusta rolling pin and parchment paper with flour and rollpastry into a rough 13-inch circle.
2. Place pie filling in center of pastry, leaving a 2-inch border all around. Grate 1 teaspoon of lemonpeel; squeeze 2 teaspoons of lemon juice from thelemon. Sprinkle both over pie filling. Scatter butterover top.
3. Fold pastry back over pie filling to make anuneven edge of 11⁄2 inches, leaving center of pie fill-ing exposed. Sprinkle sugar over pastry border. Bake20 minutes until the filling is bubbly and the pastryis golden brown. Cool slightly. Serve with ice creamif desired.

undrained 1 can (21 oz.) Duncan Hines®, Comstock® or
Wilderness® Cherry Pie Filling 1 pkg Duncan Hines® Moist Deluxe® Classic
Yellow Cake Mix 1 cup chopped pecans or walnuts 1/2 cup (1 stick) butter or margarine1. Preheat oven to 350° F. Grease a 13x9-inch pan.2. Dump pineapple with juice into pan. Spread
evenly. Dump in pie filling. Sprinkle cake mix even-ly over cherry layer. Sprinkle pecans over cake mix.Dot with butter.
3. Bake 50 minutes or until top is lightly browned.Serve warm or at room temperature.

I think I’ve created almost as many apple saladsas there are leaves on an apple tree! Apples add somuch more than flavor when stirred into a palate-pleasing salad. They also add fiber and vitamins.Try this tasty harvest-time apple salad and see ifyou don’t agree.
1 (4-serving) package sugar-free instant vanillapudding mix
2/3 cup nonfat dry milk powder3/4 cup water1 (8-ounce) can pineapple tidbits, packed in fruit
juice, drained and 1/4 cup liquid reserved3/4 cup reduced-calorie whipped topping2 cups cored, unpeeled and diced Red Delicious
apples3/4 cup miniature marshmallows3 tablespoons chopped pecans1. In a large bowl, combine pudding mix,
dry milk powder, water and reserved pineap-ple liquid. Mix well using a wire whisk. Blendin whipped topping. Add apples, pineapple,marshmallows and pecans. Mix gently tocombine.
2. Cover and refrigerate for at least 15 min-utes. Gently stir again just before serving.Makes 6 (3/4 cup) servings.

A new year brings with it new ways to lose weight— reinventions of old methods, new weight-lossproducts and commercials urging you to try this orthat so you can be a new you in the new year. Thediets that have become the most popular are so-called low-carb diets. But are low-carb diets reallygood for you? What is a healthy diet?
Grain products, vegetables and fruits should bethe foundation of a healthy diet. Eating foods thatare moderate in sugars, salt and sodium, while alsobeing low in fat, saturated fat and cholesterol willensure proper nutrition. A diet that is full of varietywill keep Americans healthy.
Most of the popular low-carbohydrate diets have aone- to two-week period when carbohydrates arerestricted to 20 grams or less per day.Carbohydrates are slowly reintroduced into the dietafter the first two weeks until weight is maintained.The recommendation is to consume at least 130grams per day. Although low-carbohydrate foods arerestricted on these diets, eating foods high in proteinand fat is advised.
Because these diets restrict carbohydrates (amajor source of energy in the diet), the body beginsto break down muscle tissue for energy. When thisoccurs, water is released causing a diuretic effect.The rapid weight loss in the first two weeks on thesetypes of diets is due to water loss, not fat loss. Afterthe first two weeks, the weight loss will continue, butit is because of calorie restriction from the reductionof carbohydrates consumed.
The most effective, safe and long-term way to loseweight includes eating a balanced diet combinedwith participating in regular physical activity. In
order to lose weight effectively, the amount of calo-ries consumed must be less than the amountburned (i.e., physical activity). The results may begradual, but they are proven to be safe, and theweight loss will be long term, as long as lifestylechanges are made.

Thai Chicken and Mango Stir FryThis recipe uses fish sauce to add a burst of flavor
to the dish. Fish sauce is a popular condiment inSoutheast Asia. It’s made from salted, fermented fishthat is pressed to release the accumulated juices,which are bottled and sold as Fish Sauce. You usu-ally can find both regular and low-sodium brands inAsian specialty stores and in the Asian-food sectionof most supermarkets.
2 tablespoons plus 1 teaspoon fish sauce 2 tablespoons lime juice1 1/2 teaspoons cornstarch1 1/2 teaspoons brown sugar or Splenda brown
sugar blend4 teaspoons canola oil, divided1 pound chicken tenders, cut into 1-inch pieces3/4 teaspoon crushed red pepper2 cloves garlic, minced1 teaspoon minced fresh ginger4 cups bite-size broccoli florets1/4 cup water2 mangoes, peeled and sliced1 large red or green bell pepper, seeded and sliced1 bunch green onions, cut into 1-inch pieces1/4 cup chopped fresh cilantro1/4 cup chopped fresh basil, preferably Thai
1/4 cup chopped fresh mint1 lime, cut into 6 wedges (optional)1/2 cup cooked whole-wheat pasta or 1/2 cup
brown rice (optional)1. Combine 2 tablespoons of the fish sauce and
lime juice, cornstarch and brown sugar to taste in asmall bowl. Set aside.
2. Heat 2 teaspoons oil in a wok or large skilletover high heat. Add chicken and 1 teaspoon of thefish sauce and the crushed red pepper; cook, stir-ring, until just cooked through, 5 to 7 minutes.Transfer to a plate and set aside.
3. Add the remaining 2 teaspoons oil, garlic andginger to the pan. Cook, stirring, until fragrant,about 15 seconds. Add broccoli and water; cook,stirring, until beginning to soften, about 2 minutes.Add the mangoes, bell pepper and green onions;cook, stirring, for 1 minute.
4. Add the reserved sauce and chicken; cook, stir-ring, until the sauce is thickened and the chicken isheated through, about 1 minute. Stir in cilantro,basil and mint. Serve with lime wedges and overwhole-wheat pasta or brown rice, if desired.

I resolve to build a better brain in 2012. If you’relike me, the “think tank” can always use a little exer-cise, and it’s easier and definitely more fun to keepa resolution when you share the challenge withfriends and family. That’s where games come in.
Here are a couple of fun brain games to put smileson faces and help everyone in the family keep theirmind sharp.
Take Two!When you don’t have time for a standard Scrabble
board game, try this speedy version that uses theletter tiles without the board. My daughter taught itto us years ago, and our family is still hooked!
Here’s how:Turn all the Scrabble tiles upside down in the cen-
ter of the table. Each player takes seven tiles, turnsthem over and quickly creates words in his owncrossword arrangement in front of him. Each wordmust connect with another, as it would on a Scrabbleboard. As soon as one of the players has used allseven tiles to form his words, he shouts, “Take 2.”
Each player now draws two more tiles andattempts to work them into their arrangements.Continue this fast-paced play with each playerdrawing two tiles when someone shouts, “2.” As thegame progresses, players may rearrange their wordsas they work in the new letters.
When all tiles are gone from the center, the gameproceeds until one player has used up all of his let-ters. Count individual scores by adding up thepoints printed on each of the letters for all words
formed. Deduct points for tiles not used. Highestscore wins.
I-Spy Memory GamePull out your kitchen junk drawer, gather family
members around and say, “Ready, Set, Go!” Quietlystudy the contents for 20 seconds. Hide the drawer,and ask everyone to write a list of items they saw.Designate an amount of time for writing, dependingon ages of your kids. When time is up, read off youranswers, and the longest list wins. For anotherround, try other storage areas, such as a tackle box,sewing basket or your desk drawer when kids visityour office.
