Grand Marnier Prawns serves 5 as an appetizer
grapeseed oil for frying 20 peeled prawns, 16/20 size or larger, butterflied 1 B/c cups cornstarch artisan salt and black sesame seeds for garnish
grand marnier mayonnaise 1 cup Grand Marnier 3 tablespoons dried orange zest, pulsed in a coffee grinder (see instructions) 4 cups freshly squeezed orange juice 2 cups mayonnaise
A day ahead, prepare the Grand Marnier Mayonnaise. Add the Grand Marnier to a saucepan and burn off the alcohol. (Caution: flames!) Reduce to a honey-like syrup and cool immediately.

Zest the oranges you’ll use for the juice. Dry out the zest on a sheet pan at low temperature in the oven. Cool, and pulse in a coffee grinder to create a powder.
In a separate pan reduce the orange juice to a syrup and cool immediately.
Combine prepared Grand Marnier, orange syrup and pulsed orange-zest powder with the mayonnaise and refrigerate.
To cook the prawns, heat grapeseed oil to 350 degrees. Dust the prawns thoroughly in the cornstarch, shaking off any excess starch. Fry the prawns until crispy and an opaque white, about 2 to 3 minutes. Drain on paper towels.
In a large bowl, toss the hot prawns in the Grand Marnier Mayonnaise to coat. Arrange on a platter and sprinkle with artisan salt (try lemon twist) and black sesame seeds. Skewer to serve as hors d’oeuvres.
