Boston Crème Pie a layer of white chocolate ganache flavored with Madagascan vanilla & Tahitian vanilla seeds opens soon to be overwhelmed by the depth of the 70% dark chocolate ganache with honey. The finish is all about the dark chocolate, most satisfying!

Rum and Vanilla Panna Cotta Italian custard ganache complimented so well with Jamaican Rum and a hint of vanilla liquor. A milk chocolate cup topped with white chocolate and a décor of dark chocolate sprinkles are a perfect host for this complex cream center.

Coconut Crème Pie It’s all about the coconut crème right from the moment you bite into this decadent experience. Extremely light in white chocolate ganache as the milk chocolate cup creeps in only to be finished with the toasted coconut crunch. Truly a fine dessert experience.

Pistachio Fool coarsely chopped pistachio nuts within a pistachio and almond marzipan base topped with a pistachio whipped butter and cream white chocolate ganache. Dressed with dark chocolate and decorated with more pistachio nibs. Nutty, bitter and sweet all at once! Also balances well in white chocolate (offering an excellent pairing with a Muscat or dessert wine).

Key-lime Pie Tart flavor notes of key lime captured within a luxurious ganache of milk chocolate. The seal of white couverture complements the richness of this filling. Airbrushed green cocoa butter adds dazzling eye appeal.

Walnut Fudge Brownie A layer of walnut praline topped with a layer of rich dark chocolate ganache coated in dark chocolate and dressed with a toasted spiced walnut….just like a brownie. Perhaps a little vanilla bean gelato to finish!

Peach Cobbler dark chocolate hosts this intense rich butter and cream dark chocolate ganache. A peach syrup kick’s off the sweetness of the peach and helps keep the note in the background despite the intensity of the dark chocolate! The hazelnut crunch topping completes the experience offering a crunch and depth from the caramel note.

Raspberry Chocolate Cake A concentrated raspberry fruit puree together with a rich cake like dark chocolate cream ganache sealed in a dark chocolate shell and decorated with a raspberry motif. Great balance and a fine partner for Port Wines promoting a chocolate pudding finish.

Passionate Fool Never thought passion fruit could dance with dark chocolate but here it holds its own. A layer of passion syrup topped off with a rosette passion fruit crème and butter ganache and dusted with cocoa powder. Hosted by a dark chocolate cup it would be “foolish” to pass up such an experience!

Caramel Apple Pie Caramelized apples and cinnamon together with a hint of blackberry topped with fresh cream caramel in a milk chocolate cup! A crunch of crystallized sugar enhances the caramel’s character. Quite an experience!

Strawberry Mousse A whipped cream and butter ganache offer the texture of mousse, light enough to allow a clean finish from the wild strawberries delicate note sealed within a white chocolate cup. The red airbrushed finish offers a good contrast within the collection.

Caramelized Banana “Ban-offee Pie” came to mind when creating this one, banana and toffee only liquid caramel proved to be very appropriate pairing with the banana & white chocolate ganache. Quite an experience and appropriately placed as a dessert chocolate. Yellow cocoa butter airbrushed milk chocolate shell carries this exquisite filling well.

Flourless Chocolate Cake Robust Ghana cocoa liquor exceeds 72% total cocoa content in this rich cream ganache, a chocolate lovers dream! A dusting of French cocoa powder accentuates the palate. Offering this piece with a Cabernet Sauvignon or a full bodied Zinfandel wine pairs well to reveal a lingering chocolate cake & syrup finish!

Blueberry Crumb Pie The rich aroma of blueberries catches the sensory immediately. Encased in milk chocolate, blueberry syrup & concentrated blueberries explode in a butter ganache topped with caramelized hazelnuts. Another port wine partner capturing a caramel note and deep nutty finish. Grahams Six Grapes Port is an outstanding partnership.

Tiramisu A hint of moka liqueur lingers in the background as richness of the tiramisu ganache center fulfills the palate. A milk chocolate cup topped with white chocolate and a dark swirl complement this dessert experience well.

Maple & Pecan Pie White chocolate cream ganache and maple syrup topped with roasted refined pecans and milk chocolate all in a dark chocolate cup. The glazed pecan on top completes this chocolate with a great crunch texture.

Lemon Fool A citrus delight as the bitter notes of lemons combined with the Italian Limoncello liquor release from a white chocolate butter and whipped cream ganache. Paired with a tart citrus syrup sealed within a rich white chocolate shell. A bitter sweet melt away, satisfaction guaranteed!
