Old-Fashioned Empire Apple Pie
2 cups all-purpose flour 1/2 teaspoon salt 3/4 cup shortening 5 tablespoons cold milk
* * * * 1 cup Michigan beet sugar 3 tablespoons flour 1 teaspoon cinnamon 1/8 teaspoon nutmeg 6 cups sliced, peeled Michigan Empire Apples 1 tablespoon margarine 1 teaspoon sugar
1. Combine the 2 cups flour and salt. Using pastry blender, cut in shortening untilmixture resembles coarse crumbs. Addall milk at one time, stirring with fork only until combined. With hands, gather dough into ball and let rest in bowl 10 minutes while preparing filling.
2. In large bowl, combine the 1 cup sugar,the 3 tablespoons flour and spices. Add Apples and toss until evenly coated;set aside.
3. On floured surface or pastry cloth, roll half of dough into 12-inch circle. Ease pastry into pie plate. Fill pastry with prepared Apple filling. Cut margarine into small pieces and place over filling. Repeat rolling of remaining dough, cut slits in top. Lightly moisten edge of bottom pastry with water. Place top pastry over filling and cut off excess pastry leaving 1/2 inch overhang. Turn top crust under bottom crust to seal, crimp. Sprinkle with remaining 1 teaspoonsugar.
4. Bake in 375o F. oven about 1 hour 10minutes or until golden brown and Apples are tender, covering edges with foil toprevent over browning, if necessary. Serve warm or cold.
Yield: 8 servings.
Per Serving, 1/8 pie: 460 calories,3 g dietary fiber, 21 g fat, 156 mg sodium.
Variation: Other varieties of fresh MichiganApples may be used, such as Gala, Jonagold,Golden Delicious, Ida Red, Jonathan, McIntosh,or Rome; or 2 cans (20 oz. each) Michigan Appleslices, undrained.

Apple Cabbage Salad
1/2 cup vanilla low fat yogurt 2 tablespoons low fat mayonnaise 1/8 teaspoon salt 2 teaspoons celery seeds 3 tablespoons honey 1 tablespoon spicy brown mustard 3 cups shredded green cabbage 1 cup julienne-cut, peeled jicama
(1-1/2 x 1/4-inch pieces) 4 cups diced red Michigan Apples 1. Combine yogurt, mayonnaise, salt, celery
seeds, honey and mustard. Set aside.
2. In large mixing bowl, combine remaining ingredients. Add yogurt mixture, tossing until combined. Serve immediately.
Yield: 8 servings.
Per serving, 1 cup: 90 Calories, 2 g Fat, 2 mg Cholesterol, 20 g Carbohydrates, 75 mg Sodium, 2 g Fiber.
Suggested Michigan Apple varieties to use: Empire, Gala, Ida Red, Jonagold, Jonathan, McIntosh, Red Delicious or Rome.
Variation: To omit jicama, add extra 1 cup shredded cabbage.

3 eggs3/4 c. Michigan beet sugar1/2 c. melted salted butter2 tsp. vanilla2 tsp. baking powder1-1/4 c. flour
Beat eggs and sugar very well. Add meltedbutter, vanilla and baking powder and againbeat well. Add flour and beat thoroughly. Dropby 3/4 teaspoons onto pizzelle iron and cook athigh temperatures quickly. Remove and shapevery quickly into cones with fingers and allowto cool.
Recipe Note: After pizzelles are totally cooled,store in airtight container until ready to servewith your favorite filling and or topping. Weserve these with the following filling fordessert on our Elk View Dinner Ride.
White Chocolate Mousse Pizzelle Filling
2 envelopes Knox unflavored gelatin2/3 lb. Superfine sugar2/3 c. water1 c. egg whites at room temperature2 lb. Finely grated white chocolate1 lb. Tub Cool Whip thawed
Soften gelatin in 4 TBS warm water in smallcontainer and set aside. Mix superfine sugar andwater together in small saucepan. Bring to a boilswirling occasionally but not stirring. In separatemixing bowl beat egg whites until soft peaksform. Add the sugar syrup slowly to the eggwhites beating continually and then continuebeating at the highest speed for 2 more minutes.Slowly add the dissolved gelatin mixture and con-tinue beating for 3 minutes at highest speed. Putmixture in large stainless bowl and gradually foldin the grated chocolate doing so gently. Coverwith plastic warp and refrigerate to chill thoroughly. When chilled, fold in Cool Whip.
Recipe Note: To fill pizzelles: Put filling in a gallonsize freezer zip lock bag and close tightly. Cuta small hole in a corner of the bottom of thebaggie and pipe into pizzelle cones. After fillingpizzelles top with your favorite topping. Weprefer Michigan red raspberries for a topping.It is just wonderful!

Salad: Prepare Napa cabbage and add choppedonions, pineapple, cherries, almonds, sesameseeds, and crushed noodles. Toss.
