How It All BegAnAfter graduating in 1984 from Culinary School and working in the food service industry for many years, Susan Titcomb-MacKay had “paid her dues” by working long hours during the evenings, on weekends, holidays, and, of course, all for that notoriously low pay.

Susan had reached a point where she became frustrated with the restaurant scene like most burned-out food service workers. She had even lost her desire to cook at home for her family. So in an effort to keep her passion for cooking alive, Susan and her husband, David MacKay, began exploring the option of self-employment. After looking at different types of delis, small restaurants, and even catering businesses, they were disheartened with what they found.

gettIng PersonAlOne evening in early February 1987, David and Susan were having dinner with some friends, Steve and Jill Wightman. Steve commented, “David, you are really lucky having a chef as a wife.” David responded with, “Oh, why?” Steve said, “Well, you get to enjoy all of Susan’s great-tasting meals every night.” David responded, “Due to Susan’s schedule, she is rarely home to help with the evening meal. So on her days off, she prepares several dinners for me and the children and puts them in the freezer as our solution for the what’s-for-dinner problem.” The Wightmans were fascinated with that idea and expressed interest in having Susan do that for them.

David and Susan pondered the idea and then approached Steve and Jill with the concept of a Personal Chef Service. The Wightmans signed up immediately and became Susan’s very first client. Steve and Jill quickly became accustomed to the added time they had each evening and the outstanding food that they were now able to enjoy. The Personal Chef Service concept had been born.

PersonAlly yoursOver the next few months on Susan’s days off, she went to clients’ homes and became their personal chef for a day. The concept was so well received and Susan was taking home twice as much money as her full-time job at the restaurant that she quit and became a part-time business owner starting Personally Yours Personal Chef Service – the first personal chef business dedicated exclusively to preparing dinners for families in their homes. Within a year, Susan was booked with clients, had a waiting list and had doubled her income working half the time. Soon thereafter, many of Susan’s peers began asking her if she could show them how to do the same thing. The idea of teaching and supporting others in their quest to become personal chef business owners became a reality.

A new BegInnIngIn 1991, the United States Personal Chef Association (USPCA) was founded. By the end of 1992, David and Susan had trained 15 Personal Chefs. In 1994, after being profiled on the CBS Morning Show, the demand for personal chefs skyrocketed. Today there are over 5,000 personal chefs throughout the United States and Canada who have been trained using the systems, methods and techniques developed by David and Susan MacKay. Everyday someone somewhere becomes a personal chef. Maybe the next one will be you.

VIsIonAryWith David and Susan’s vision, an industry was taking shape; however, it soon became evident that for personal chefs to be recognized and acknowledged as a legitimate career path, their education would have to be the most complete and comprehensive available. This led to the creation of the United States Personal Chef Institute (USPCI) in 1996, which in 2003 was renamed the Culinary Business Academy.

The Culinary Business Academy is the only educational organization licensed by a Private Post-Secondary Commission On Higher Education and dedicated to the art and profession of culinary business, including a Personal Chef Service. The Personal Chef Dynamics Program is comparable to the Undergraduate Course in that the same exhaustive attention is provided to clearly define the methods to launch and operate a successful Personal Chef Service. This program is condensed to three days in length and will not involve any kitchen-lab exercises or culinary theory. ACAdemIC PolICIes

GoalThe overall goal of the Culinary Business Academy is to provide the public with knowledgeable professionals who will strive to provide outstanding service and be the best in the Personal Chef Service industry. To achieve this, the Culinary Business Academy will:

♦ Encourage and support students by offering the most up to date and comprehensive Personal Chef Service education

♦ Meet the changing needs of personal chefs through innovation and technology

♦ Foster communication, cooperation and collaboration between students and Culinary Business Academy faculty

♦ Insure that the Culinary Business Academy is welcoming, friendly and service oriented for all students

♦ Develop, improve and maintain physical resources at the Culinary Business Academy to facilitate the latest state-of-the-art learning

Admissions The Culinary Business Academy has an open admission policy that provides individuals the opportunity to enroll in its programs. Students are considered for admission to the Culinary Business Academy regardless of sex, race, color, national origin, religion, age, marital status or disabilities.

Applying for AdmissionApplications for admissions will be considered at any time; however completed application must be received in a timely manner prior to the beginning of any course or program.

Prerequisites for AdmissionThere are no prerequisites for admission.

TuitionAll fees and tuitions are due upon enrollment and are non-refundable. Financial aid is not available and the Culinary Business Academy does not provide financing options.

AttendanceStudents are expected to attend all course meetings for the duration of the course. Those students who are absent or cannot complete the assigned work, will be given an incomplete (I) and will have one chance to reschedule or retake the course. There will be no refunds of any tuitions and fees for an incomplete in any course. If a student’s conduct interferes with others, is disruptive of teaching or is contrary to the established course practices, the instructor may ask the student to leave the course and issue an incomplete grade to the student for the course.

GradesAt the completion of each course, an exam will be given testing the student’s knowledge. The grading of those exams is as follows: A=Excellent; B=Above Average; C=Average; D=Passing; F=Failure and I=Incomplete.

GraduationUpon successful completion of all required studies for the personal chef program selected, a student will receive their personal chef diploma from the Culinary Business Academy. The requirement for successful completion of all courses is a passing grade in each course.

Grievance ProcedureA student of the Culinary Business Academy may file a grievance against a faculty member alleging an unfair or arbitrary decision in evaluating the student’s performance, or improper or unjust treatment in the classroom.

All grievances must be submitted in writing to the Executive Director. Upon receipt, the Executive Director has 10 calendar days to contact the student and respond.

If a satisfactory resolution is not reached with the Executive Director, the student must request in writing a conference with the President within 10 calendar days after the participant determines that the grievance cannot be resolved with the Campus Director. The Executive Director shall be in contact with the student within 10 calendar days after receipt of the request.

If the complaint cannot be resolved after exhausting the academy’s grievance procedure, the student may file a complaint with the New Mexico Commission on Higher Education. The student must contact the Commission for further details. The Commission can be contacted at 505-476-6511.

Cancellation NoticeThe applicant may cancel this enrollment agreement and receive a full refund of all monies paid to date if cancellation is made in writing to the Culinary Business Academy, attention to the Executive Director, and mailed/delivered to the academy at the address stated herein within three (3) business days after the date of enrollment.

Job PlacementThis institution does not guarantee job placement to graduates upon program/course completion or upon graduation.

Membership in the USPCA There are two primary levels of membership in the USPCA: Student and Premier. Individuals who participate in one of the Culinary Business Academy’s personal chef training programs will automatically receive a USPCA first-year Premier membership.

Student MembershipStudent membership allows individuals actively enrolled in a recognized culinary arts program, the opportunity to be involved in the personal chef industry. Student members can attend conferences and gain inside information while they continue their culinary studies.
