Not only are the days longer and the weather warmer, but for those working in the wine industry, it’s the busiest season in the calendar.

Canada has one of the most beautiful and robust winery regions in the world. That’s why it’s important to showcase our award-winning wines to the world, as well as getting them into the hands of consumers in more traditional ways. This is just a taste of what we have in store for you, dear reader, in this issue of Crush.

In these pages, we take a look at new innovative ways that vineyards are man-aging their crops, as well as new technologies and products that make vineyard management so much easier. But it’s not all work and no play, we glance at our favourite four-legged staff members who prove that wineries are truly gone to the dogs. And always, we have our comprehensive winery and suppliers’ listings that are always well received in each issue of Crush.

a successful season at the winery. But

how does a winery continue its reach

beyond the appeal of the wine-tasting

tour experience?

Join the club – or create one. Offering

a wine club to customers is more than

just an extension of the customer

experience, it’s an emerging trend.

“We started out with 60 members and

we are now at a few hundred across

Canada,” says Naomi Burt, wine club

manager at Poplar Grove in Penticton,

B.C. “It’s definitely a growing market.”

Burt says their wine club membership

base crosses the country and most

out-of-province members return to the

winery when they are in the region.

She says many of them are members of

other winery clubs as well.

“Our tasting room is a huge selling

feature for our wine club,” she says.

“Visitors come to our tasting room,

taste our wines, and want to take that

experience home with them. Their

experience lingers longer when they

receive shipments of wine every four

months.”

And offering a wine club can grow a

winery’s reach outside of the winery

visit experience.

Honoure Black is the Manitoba wine

club representative for Poplar Grove and

she holds educational tasting events

throughout Manitoba – a growing

market for Poplar Grove.

“Clients who aren’t being romanced by

the winery are given a different level of

access to the winery,” she says. “There

are a lot of wine lovers in Manitoba

who know there is quality wine in the

Okanagan Valley.”

So far, the reception has been great.

Black says in just a year and a half,

club membership in Manitoba has

grown over 250 per cent. She says

educating people about Poplar Grove at

public events, boutiques locations, and

private home events has created a new

community of wine drinkers.

“This is wine that is not available for

retail in the Manitoba market, plus

club members are getting small lot

productions reserved exclusively for

them.”

By joining a wine club, customers

make a commitment to buy wine that

is delivered right to the doorstep in

temperature-controlled packaging

about three times per year.

“It’s a small commitment for the

convenience of having a selection

of award-winning wines on hand,”

says Burt. “Some people like it for

collecting, or entertaining, or just

everyday enjoyment.”

The wine club at Poplar Grove has

three packages to choose from: a

collection of six red varietals, six

white varietals, or a combination of

red and white. Members can change

their preference at any time during

the year.

While the most obvious advantage

for customers may be convenience,

membership definitely has its

privileges too.

“Our release schedule is based

around our wine club,” says Burt.

“Our members have access to the

first vintages before they are released

to the general public.”

Not only do members get first access,

but many vineyards will make

special lots of wine specifically for

club members. This summer, Poplar

Grove is planning to release a small

batch of Syrah exclusively for its

wine club members.

Having the ability to prolong the

I t’s fair to say that there’s plenty of change and innovation

happening with the McWatters family. In fact, Christa-Lee

McWatters Bond, director of sales & marketing for ENCORE

Vineyards Ltd., says that change and innovation have been

the constant motion of her family for years.

Whether it be opening one of the first vineyards in the

Okanagan to feature bordeaux varietals such as cabernet

sauvignon, merlot and cabernet franc, welcoming of their

new director of winemaking, Lawrence Buhler, in 2015,

or converting the PenMar theatre in Penticton into the

Okanagan’s first urban winery, the McWatters are always

moving forward.

“We’re pleased to be celebrating the one-year

anniversary of Evolve Cellars in Summerland, which

opened in May 2015. It’s the only winery in the

Okanagan with vineyards that stretch right to the edge

of Okanagan Lake,” says McWatters Bond. “Naturally,

we’re excited to share some pretty spectacular

vineyard views across the water and to the surrounding

mountains with our visitors… Our on-site kitchen will

also allow our guests to enjoy al fresco dining on our

patio, with a glass of wine in hand, of course. It’s going

to be a very busy summer!”

McWatters Bond knows a lot about wine and British

Columbia – she grew up in the wine industry alongside

her father, and watched as her family pioneered the

planting of their iconic vineyard in Oliver in 1993.

Before that, the majority of the wine produced in B.C.

was from cool-climate hybrids and other vinifera.

“Growing up at a winery, there was never a dull or quiet

moment. We did everything together as a family, from

working in the tasting room, to helping on the bottling

line, and of course working in the vineyard itself,” says

McWatters Bond. “We all helped plant that vineyard,

and in fact, it was one of the first things that formed

the foundation of our working relationship, which

happily continues to this day.”

While the McWatters family is proud of the strong

legacy they have created with their Oliver vineyard,

they are excited to move forward with their contact

grape colleagues who produce superb fruit, and grow

into their new roots at the historic PenMar theatre in

Penticton.

The new facility, which will be called TIME Winery,

will be fully renovated to include ENCORE Vineyard’s

winemaking facility, a barrel room, a custom-designed

fermentation hall, a tasting lounge, bistro, and a gift

shop. Additionally, the space will include a 75-seat

theatre that will be used for movies, performances,

cultural events, and other public and private functions.

“Our new neighbours in Penticton are hungry for

additional space for community events and we are

happy to be able to maintain the history and spirit of

the building,” says McWatters Bond.

“The public has been overwhelmingly supportive and

can’t wait for us to open.”o

I t’s been a year since B.C. VQA wines have hit

grocery store shelves, and if you ask winemakers,

distributors, and industry professionals, they’ll tell

you it’s been a success.

For Jayne and Paul Graydon of Saxon Estate Winery,

wine on grocery store shelves is a familiar concept

– the couple hails from Kent, England where it’s not

unusual to pick up a bottle of red at the store with

dinner. Since moving to Summerland, B.C. four and

a half years ago (the name ‘Saxon’ comes from the

owners who are Anglo-Saxons), the Graydons have

been producing 2,000 cases of B.C. organic VQA wine

on their small winery each year. Up until 2015, they

were selling these cases at small VQA wine stores,

restaurants, and at their winery shop.

Then, the B.C. government announced

that starting in 2015, the B.C. Wine

Institute B.C. VQA wine stores could

relocate onto grocery shelves.

“We’re loving this whole concept of

selling premium wine in grocery

stores. It’s the concept that we were

used to before we immigrated to

Canada – weekly shopping and getting

wine with groceries,” says Jayne

Graydon.

And wine sales have gone up –

has seen a 300-per cent increase

in sales since starting to sell their

products in Save-On-Foods stores

last year. They even started bottling

wine two months early this year to

keep up with the demand. Along with

putting their bottles on shelves, Jayne

and her husband also hold in-store

wine tastings, which she says can be

extremely valuable.

“If you sell 100 bottles of wine at a

tasting in one of the stores, 100 people

went into that store not intending to

buy wine – some didn’t know wine

was available for sale, and they’ve

gone in to buy their groceries and

they’ve come out with wine as well.

I think that’s a fantastic thing,” says

Graydon.

Success stories like Saxon Winery’s

are exactly what the B.C. wine

industry was hoping for when it

introduced the licensing last year.

President and CEO Miles Prodan

says that while liquor stores are

traditionally very supportive of

B.C. VQA wines, it’s difficult to find

enough shelf space for them among

imported wines, beers, and spirits.

“There are two things [wine in grocery

stores] is meant to do – provide better

convenience for consumers to access

B.C. wine, and to open access for

wineries. Traditional channels only

have so much space to dedicate for

B.C. wine,” explains Prodan.

Paul Martin, a distributor for six of the

wines sold on grocery store shelves,

says he’s noticed a different type of

shopping experience for customers

at grocery stores than liquor stores.

He says people seem more relaxed as

they push a cart and pay with credit

cards – and this means they’re more

likely to pick up a bottle of wine.

“At the end of the day, there’s still the

same number of people in B.C. – the

same number of people, the same

number of livers exist whether wine

is in grocery or not. What you’ve done

is made it a little more convenient,” he

says, noting that wine on shelves will

help continue the evolution of wine

culture in B.C.

In total, 73 recommendations came

through the Liquor Policy Review.

Look for the big red barn in the sprawling

fields of Niagara-on-the-Lake, and you’ll find

Greg and Yannick Wertsch. There, the two

brothers make wine at Between the Lines, a

family estate winery on 40 acres of land that

they’ve lived on since young boys.

The story begins in 1998 when the Wertsch family moved

to Canada from Germany to grow grapes. After Greg

studied wine economics and Yannick studied winemaking

and viticulture in college, the brothers decided to return

to the farm to open a winery. Today, they make their wine

beneath exposed wood beams and oak barrels inside the

big red barn on their property.

“We wanted to be a more down-to-earth winery,” explained

Yannick. “We’re very open, we have a very farm-like style.

want to be a suit-and-tie winery where you tried to outdo

each other with how much you know about wine,” he said.

The Wertsch brothers grow their own grapes for all of the

wine produced at Between the Lines, and each wine is aged

only a few months. The focus is on cool-climate varieties

and stainless-steel-based wines, which Yannick says

are more aromatic and true to the grape variety without

influencing the taste of the grape with any kind of oak

or wood product (Yannick is the winemaker, while Greg

focuses more on the business side).

In January, the brothers released Origin sparkling wine

– the first sparkling wine in a can. So far it’s been a

resounding success, with the winery selling 30 per cent

more than its forecasted sales.

“We knew that we wanted to make something innovative,

we knew we wanted to make sparkling wine, and we didn’t

want it to go into the regular-sized bottles like everyone

else,” said Greg.

Cans of the pale gold VQA wine with aromas of bright

stone fruit and citrus are sold at the winery, farmer’s

markets and online, but the LCBO has also expressed

interest in taking some of the product. Up until now, the

brothers have only sold their wines at the winery, farmer’s

markets and restaurants, and these in-person sales are

extremely important to them.

“We try and make sure that almost every single one of our

sales is in person. For us, it’s a very personable experience

and for people coming in as well. We try and talk to

everyone and make sure they understand what wine is about

without preaching or saying that this is the wine they have

to like. It’s important for us that people get comfortable in

the winery. It’s about the experience,” said Yannick.

“We don’t want people to pick up a bottle, take it home, and

not like it. We want them to take it home and be proud of

that bottle, instead of making their decision based on Air

Miles,” agreed Greg.

Besides wine production, Between the Lines also hosts tours,

tastings, a wine club, and yoga in the vineyard on Sundays.

With a huge number of wineries in the greater Niagara

region, what makes Between the Lines stand out is the

relaxed atmosphere, in-person sales, and the young age of its

owners (Greg is the oldest brother at 32).

“For us, we are relatively young as winery owners, and it’s

been pretty much only a benefit for us. [It] lets us put a lot of

long hours in to make sure everything works. It’s not like we

went into this business without any experience – we grew up

in the grape industry,” said Yannick. o

action on market and demographic

trends related to consumer choice.

With digital communication and social media today,

consumers are much better informed in their choice of

products on the market and are increasingly seeking those

that incorporate environmental, social, and economic

values.

Generation X and the millennials are driving the next

wave of consumers in the wine market, with preferences

beyond the style, varietal, and terroir qualities of wine.

Although price and quality still influence their choices,

they are also interested in value-added factors, particularly

related to the triple bottom line of sustainability in the wine

production process. When buying, they are

reading labels on products and looking

for information on these values. Enter

certification!

A new era of relationships with

customers and between businesses

in the supply chain has emerged and

is rapidly changing traditional business

models

in the

food and

beverage

sector. The global shift in consumer

preferences toward businesses that

integrate social and environmental

factors has in turn created a new playing

field upon which businesses are seeking

suppliers that can satisfy the demand in

meeting those preferences. Consumers, retailers, and

hospitality businesses are favouring suppliers that can

verify commitment to sustainability throughout their

operations.

No better example than the recent announcement by the

Earls chain of restaurants to source its beef supplies from

producers that are certified in meeting standards for beef

raised under humane practices. Whether it’s certified beef,

free-range egg production, fair-trade coffee or sustainable

wine, markets are dramatically and rapidly changing

according to consumer values.

Progressive management practices that are certified

demonstrate a commitment to sustainability values, which

in turn result in innovation, competitive brand distinction,

and increased market share and reach. Certification

It offers a tool to

examine operational

practices with a view

to improvement in light

of industry standards that

integrate consumer values and

input in their development.

Certification initiatives provide

wine producers with specific

measurable standards and performance

goals that can guide and monitor

change to improve operations. Labelling

and logos identify producers that meet

sustainability standards and attract customers.

The certification process can also strengthen the many

environmental initiatives already underway in the wine

industry.

CertifiCation to level the playing field

Certification of sustainability in the wine industry in

Canada is in an early stage of development compared to

other countries. It is well advanced in New Zealand, South

Africa, and California, and supported by the FIVS Global

Wine Producers Environmental Sustainability Principles.

Sustainability certification and verification programs

are gaining traction at the international level, lending

a competitive market edge to producers. The industry

in Canada is beginning to introduce certification, with

sustainability programs developed in British Columbia

and Ontario. These can serve as the foundations to build

certification programs that enable better positioning among

competitors in both domestic and international markets.

The B.C. Sustainable Winegrowing Program has developed

a self-assessment guide which can be followed to initiate

a program or build upon already existing initiatives.

Developed through the B.C. Wine Grape Council, it is

organized into separate vineyard, winery, and winery

hospitality components, and provides a comprehensive

framework from which to select and work through different

elements of sustainability. Options for certification are being

studied.

The Ontario Viticulture and Winery Sustainability Certification Program has introduced a voluntary and

confidential self-assessment and certification program to

recognize environmentally sound, economically feasible,

and socially sustainable practices. It was established to

provide a marketing opportunity for raising awareness of

industry commitment to the environment and to increase

the ability of Ontario’s wines to compete at home and

abroad. The program was launched in 2015 and has received

a Premier’s Award for Agri-Food Innovation Excellence.

Sustainable Winegrowing New Zealand has become a wine

industry world leader in sustainability and certification.

Since introducing a sustainability policy in 2007, about

90 per cent of their wine produced is now certified. The

program provides a framework to improve vineyard and

winery performance in terms of environment, social, and

economic sustainability. It has also developed management

tools that address production issues and helps companies

develop environmental management systems.

Sustainable Wine South Africa has achieved certification

of more than 90 per cent of its wine. Certification comes

with a seal that indicates meeting requirements relating

to agrochemicals, unregistered chemicals, non-permitted

residues in grapes, natural predators in vineyards,

cultivation of virgin soil, registration and treatment of water

use, and the health and safety of workers. Compliance is

assessed annually through a self-evaluation questionnaire,

which is independently audited.

The California Sustainable Winegrowing Program has

evolved since 2003 into one of the most widely adopted

sustainability programs, fostering a culture of continuous

improvement in industry. Last year, there were more than

480 vineyards and 90 wineries that achieved certification.

They produced nearly 65 per cent of the wine in the state.

Communications, outreach and education have contributed

to the success of the program, which has held over 500

workshops targeting specific practices such as energy

efficiency and air and water quality.

Moving into the future with CertifiCation

Considering international market competition, as well

as opportunities for brand differentiation in domestic

markets, there is an urgent need to advance wine

industry sustainability and certification programs in

Canada. Although some B.C. and Ontario wine producers

acknowledge they need to become more engaged in

sustainability, time and cost are perceived as constraints.

When asked about sustainability, the common replies are

‘we are already doing that’ or ‘it’s just not a priority given

the time and costs involved’. There are always challenges

to business success and innovation, but therein lie

opportunities.

The long-term benefits of certification far outweigh the

initial and ongoing time and cost implications. Market

research clearly demonstrates customers are attracted

to and willing to pay more for sustainable products.

This not only offsets the initial investment for wine

producers but, combined with increased market share and

operational cost savings, results in opportunities for higher

profitability and a ‘win-win-win’ for producers, retailers,

and consumers.

Timely response to develop and enable certification

as a priority is needed now by the wine industry to

sustain and grow the business into the future. Industry

leadership is necessary, not only to expand participation

in sustainability programs, but also to act as an

enabler to develop certification as a vehicle to improve

environmental, social, and business performance.

Assessments and audits for certification need to be

easy to follow and quick to adopt in order to facilitate

implementation. Extending resource capacity and funding

opportunities, as well as multi-faceted communications,

education, and outreach programs for raising awareness

within industry are recommended to bring into focus the

changing market place and potential rewards of certifying

the sustainability of wine produced in Canada.o

For some winery owners in B.C., it’s never a ‘ruff day on the

job – especially when their furry friends work alongside

them as greeters, security guards, and, occasionally, even

help with slurping up spills.

At Misconduct Wine Co. in Penticton, Marnier and Nutella are

among the winery’s dozen employees. The two Portuguese water

dogs act as four-legged mascots for the family-owned business, and

no visitor’s photos are complete without a snap of their friendly

faces.

Richard da Silva and Twylla Field, co-owners of the winery, consider

themselves lucky to be able to work alongside their dogs each day.

“It’s so nice to have them around, they are definitely part of our

family here. [We always have] people coming by to visit – people like

seeing them as much as they like our wines,” says Field.

She describes Marnier and Nutella as easygoing, friendly, and

outgoing dogs. The pair helps greet customers for tastings, chase

away deer and varmints, maintain quality control (Field once caught

Nutella, two, in the vineyard sampling grapes), and even assist with

bottling – a task Field says can get messy.

“They’re usually pretty good, but if any wine gets spilled, Marnier

loves wine, he’s there to clean up any spills. If he can sneak into the

manufacturing area, he’ll see if anyone drops any,” says Field, noting the

11-year-old dog likes both red and white varieties equally.

At Monster Vineyards, six-year-old Hiro and three-year-old Scout, a lab-

border collie mix, are official vineyard managers – it’s their job to deter

pests and dig up moles that can wreck vineyard root systems. For them,

being outside and around people is what makes them happy.

And at Tightrope Winery in Penticton, a bucket of balls sits at the front door

for greeters Hunter and Lucy. Both part labs, the dogs love to play fetch with

visitors, and owners Graham and Lyndsay O’Rourke encourage others to

bring their own dogs to the winery.

“We’re quite dog-friendly here. When people have dogs, they bring them

out and they have a play. A few dogs have come right in the winery. People

often come with children when we get into the summertime, and they love

the interaction with the pets,” says Heather, assistant general manager of

Tightrope Winery.

Winery dogs are so well-loved that Polyglot Publishing now releases a

winery dogs of B.C. calendar each year. The publication sells quickly, and it’s

become a collector’s item among dog lovers (some even seek out and visit

each of the 12 dogs every year).o

a winery in B.C. has paired up with a local college to research the use of UAVs in vineyards and figure

out what exactly the data will mean

for wineries across the country.

Church & State Wines and the College

of New Caledonia are collecting data

from UAVs (unmanned aerial vehicles

or drones) to monitor vineyard assets

and improve harvesting practices,

irrigation programming, and fruit

quality.

The idea began with John Pullen,

marketing director at Church & State

Wines. He saw opportunity to better

monitor vineyard assets from the air

rather than the ground (vineyard staff

typically use a quad when visiting the

field).

“The ability to effectively monitor

high-value grape crops through

to harvest is a major challenge

to producing quality wine in an

extremely competitive global market,”

says Pullen. “I see huge potential in

using this technology.”

So Pullen teamed up with Doug

Jamieson, an instructor at the College

of New Caledonia, to test out the

drones. Jamieson and a handful of

students are spearheading the two-

and-a-half-year research project that

hopes to prove beneficial to the wine

community.

Typically when vineyard managers

want to collect data, they pick

randomized plants throughout a block

and test each sample, which Pullen

says can be time-consuming. Using a

4K camera from above cuts down on

monitoring time and covers a larger

surface area of the 140-acre winery.

“In a minute and a half of being in the

air at an altitude of 150 feet, we’ve

been able to see things we wouldn’t

have expected from the ground,”

explains Jamieson.

“We immediately noticed there were

really big differences in colour in

vegetation. In one row it’s bright

green, and halfway though there’s this

yellow growth. [If you were] driving up

and down in a quad, it would be hard

for you to notice that distinct pattern

row after row.”

UAVs can also help with precision

harvesting – thermal imaging allows

workers to locate a hot central core

(a “hot pocket”) and work outwards

when picking. As well, these overhead

drones can help find the boundaries

of the ripest fruit and gain more data

to help manage canopy maintenance

and a more favourable picking

schedule.

Pullen says using UAVs can also help

with irrigation programs – it lets

workers practise deficit irrigation in

thermal zones as opposed to entire

blocks.

Eventually, the goal of the project

is to combine the aerial data with

ground data and find a correlation

between the two data sets to

hopefully create new and innovative

ways to monitor vineyards.

“Part of the fun for me is taking

that knowledge we have from the

data collected after harvest and

fermentation, sit down and taste

individual blocks from what we

know from the air, and then match

that with the information from the

ground and see how that translates

into the wine,” says Jamieson.

Right now, the drones must be

controlled manually, but soon Pullen

hopes to create pre-programmed

routes that can be flown

autonomously.

“A vineyard tech can take the drone

out and quickly drop it into a point in

the vineyard. The drone recognizes

where it is, and you press play and

the drone will fly around and collect

data and it’s uploaded right away,” he

explains.

Both Jamieson and Pullen predict

UAVs will prove to be a valuable

tool for the wine industry, and with

the technology becoming much

more affordable and the regulations

becoming much less confining, it’s a

serious possibility. o

Canada isn’t generally the first country that

comes to mind when thinking about wine, most

people look to the heavy hitters such as France,

Italy, Spain, and the U.S. It’s easy to forget the

United States’ northern neighbour, but Canada is slowly

becoming a noticeable player in the wine game.

According to the Canadian Vintners Association, “Canada

is the second-fastest-growing wine market in the world,

with wine consumption growing three-times faster than

the global average. [Canada] is the sixth-largest wine

importer in the world, and over the past decade, imports

have captured 75 per cent of Canada’s 150-million-litre

wine sales growth. Looking ahead, Canadian wine demand

is expected to grow by 50-million litres, or 11 per cent by

2018, making our country increasingly attractive to our

import competition.”

Even though Canada is starting to make a name for itself

in the global wine market, its wineries and vineyards are

small on the international scale. There are approximately

1,600 vineyards on over 26,000 acres of land in Canada

(winesofcanada.com) in comparison to the United

States which had 7,946 wineries as of October 1, 2014

(winesofamerica.com).

With such a burgeoning wine region down south, Canadian

wineries are challenged to make a name for themselves

across the border and must discover how to get their one-

of-a-kind wines to stand out in the American market.

Okanagan Crush Pad understands firsthand the unique

qualities Canadian wines have to offer.

“Canadian wines can stand out due to the unique style of

wine that we can make here. The Okanagan area has a

dry climate with a growing season that builds in intensity

through July and August, then cools off for the final two

months,” says co-owner of Okanagan Crush Pad Christine

Coletta. “You can expect good sugar levels, excellent

fruit development, and juicy, crisp acidity. These are all

hallmark of a cool climate wine, a style that is immensely

popular, as consumers move away from over-ripe, jammy,

over-oaked, high-alcohol wines.”

Since Canadian wineries tend to be smaller in size, many

of them are forced to think outside the box when it comes

to promoting and advertising in different countries.

Church and State Wines, located in the Okanagan, are

one of many Canadian wineries that participate in the

winebcusa.com program, which allows U.S. consumers

to purchase wine at the same price as the B.C. retail – a

great deal considering the current exchange rate of the

Canadian dollar.

“We’ve had tastings by Wine Spectator, Wine Enthusiast, we

participate in all the big U.S. competitions every year so it’s

more through a review and accolades than any sort of paid

media,” says John Pullen, marketing director at Church and

Canadian wines stand out to international consumers. The Okanagan area has a dry climate with a growing season that builds in intensity in the summer months.

State Wines. “Quality-wise, we’ve been slowly building a

reputation amongst critics and competition judges and the

people that follow international wines a little more closely.

We’re definitely on their radar and when we have visits or

connect with critics in the U.S. they say they’re tracking

our progress and following along with what we’re up to.”

Non-traditional, grassroots efforts have become a popular

trend for Canadian wineries and there is a major benefit to

organic efforts such as the ones Church and State Wines

employ.

Other wineries such as Okanagan Crush Pad have chosen

to take a more traditional approach and have also seen

positive results, even in the early days.

“We are really just beginning on this journey,” says Coletta.

“We are seeking a distributor in the Pacific Northwest area

as a first step. The B.C. Wine Institute (BCWI) is there to

help its members and we will select a market to focus on

and ideally centre programming around that area. One

of the first steps is to garner media attention. The BCWI

recently attended a media marketplace conference in San

Francisco and reception to the wines was exciting. The U.S.

is a massive market and, like Canada, each region needs to

be approached with a different strategy.”

Marketing and promotional efforts are only the tip of

the iceberg when it comes to getting Canadian wines on

American shelves. There are also government regulations

each winery must adhere to. The main challenge in

exporting has to do with labelling, every label must be

approved before entering the United States, and different

states have different approval levels and processes.

“There are packaging requirements that outline warning

notices that we do not have to adhere to in Canada,” says

Coletta. Not only does the U.S. government have certain

label specifications, but they also require lab reports and

declarations of products when crossing the border.

Exporting wine into the U.S. is not an easy feat for

Canadian wineries, but based on the current trends of the

international wine market, it seems to be worth the effort.

According to the April 2016 issue of Canadian Geographic,

“Wines have been produced and sold in Canada for more

than 150 years, but it wasn’t until this century that

Canadian wines have really started attracting favourable

attention on the world stage. With exports on the rise

and vineyards opening up in new, previously untried

regions, Canada is poised to become a major player on the

international wine scene.” o

Driving up the long and winding

path towards Liquidity Wines,

you pass by dewy ponds,

colourful flowerbeds, flowing

vineyards, and a sculpture park of

16-foot trees made of rebar and

laced with growing plant life.

When Ian MacDonald purchased the old

vineyard eight years ago, his intention

was to turn it into an exceptional winery

and a distinctive public space. His team

spent five years upgrading the in-ground

technology before he began construction

on the winery complex, which includes a

bistro, winery, and tasting room.

The public viewing area, located on

a knoll on one side of the property,

has spectacular views of Vaseux Lake

and surrounding mountains. He says

he wanted to create the best place

to experience food, wine, and art –

something he calls the three pillars

of the customer experience.

An avid art collector for over 25 years,

MacDonald rotates approximately 70

works of art from his personal collection

throughout the Liquidity property to keep

things fresh, fun, and interesting.

“It truly is a gallery experience.”

The pieces vary between drawings,

illustration, photography, paint, and

mixed-medium. “It’s something to engage

the public and get them to interact with it,

think about it, and experience it,”

he says. “Even the building is

designed to encourage that.”

Glulam posts and beams surround

South Okanagan. MacDonald says

the front door was designed to look

like a viewfinder of a vintage camera.

Clean and functional spaces make

the view the priority and allows

for art to fit within the modern

environment.

MacDonald, who designed the

building, was deliberate with the

design so that the architecture

styling would fit with the landscape.

“Rather than trying to transport

someone to Spain or France, I felt it

was important that the architecture

was reflective of the natural state of

Okanagan Falls.”

His goal was to create an entire

experience for visitors. “You see the

view, smell the food, taste the wine,

and see the art,” he says. “We want to

have as many of the senses tingling

at one time.”

He says it’s common to see visitors

on a wine-tour-mission while

travelling in the region, often

planning back-to-back tastings. So

his goal for his customers was to

slow the pace down for a moment

and allow them to savour the

experience.

“I think you can do that with

the combination of experiences

happening. It transports you into a

different frame of mind, and when

that’s happening, I feel like we are

accomplishing what we set out to do.”

This summer will mark the third

year that Liquidity Wines is open

to the public, and just as the wines

change with the season, so does the

menu, and so does the art. o

as Canada’s $6.8-billion

grape and wine industry

continues to increase

its profile at home and

abroad, Ontario researchers are

focused on helping the industry

address several multifaceted

challenges in order to sustain its

economic impact, and meet its growth

potential.

Pursuing research that supports

grape growers, wineries, and their

marketers has been a core mission

at Brock University’s Cool Climate

Oenology and Viticulture Institute

(CCOVI) ever since it was established

with industry support in 1996.

“We’ve always worked to provide the

industry with applied research on

topics they’ve identified as priorities,”

says CCOVI director Debbie Inglis,

“but we can’t rest on our previous

accomplishments. CCOVI must stay

focused on continuing to stay on top

of emerging priorities and getting

solutions to those priorities back out

to the industry.”

As evidence of that, CCOVI recently

received funding to lead a five-year

$1.42-million integrated research

program to improve grapevine health,

wine quality, market competitiveness,

and the sustainability of the

Canadian industry. Senior scientists

Belinda Kemp and Jim Willwerth

will be collaborating with Inglis on

the program’s five projects, which

include identifying the best clone

and rootstock combinations for

Ontario’s climate and soil types,

developing vineyard practices tailored

to sparkling wine production, and

managing tannins in Canadian red

wines.

The cold hardiness and tannin

management projects within

this program will allow CCOVI to

collaborate with Agriculture and

Agri-Food Canada research scientists

across the country at the Summerland

Research and Development Centre in

British Columbia and the Kentville

Research and Development Centre in

Nova Scotia.

Grape growers will be able to use

the clone and rootstock results

to help overcome climate change

challenges and the project will also

commercialize precise decision-

making tools and real-time

monitoring technologies for growers

and winemakers.

To support this research, CCOVI

received a $600,000 grant from the

Natural Sciences and Engineering

Research Council (NSERC), $345,000

in funding from Ontario Grape and

Wine Research Inc. (OGWRI), and in-

kind support from industry partners

totaling $484,600.

TanninAlert – a red grape tannin

monitoring program.

TanninAlert will provide winemakers

with information about tannin levels

in their red grape varieties to assist

them in using techniques to optimize

the extraction of colour and positive

tannins from red grape skins, while

minimizing the extraction of bitter

tannins from seeds.

The program will follow the tannin

ripeness of Ontario red grapes

to develop a web-based platform

that will make the ripeness data

accessible to winemakers. These

tannins will be categorized into low,

medium and high, and winemaking

protocols to optimize red wine

quality will be shared by variety

and tannin level. The long-term goal

will be to establish a Canada-wide

tannin database for the benefit of

the national industry by leveraging

CCOVI’s partnerships across Canada.

picture it – 11 or 12 farmers huddled together

against the cold and dark in a primitive drive

shed. The year is 1856 and they have an urgent

problem. No one will sell them insurance on

their fledgling farms here in upper Canada. So they strike

a solution – write one another a personal IOU, so that if one

of the barns is hit by lightning and burns to the ground,

each of the others will vouch to rebuild it, together.

That scenario was the the actual beginning of the mutual

insurance system in Canada.

First known as “the farm mutual”, many people know of

the group of Ontario-based insurance companies that

have protected farms for nearly 140 years. Their name is

synonymous with the best, most complete agricultural

insurance available today. But not everyone knows the

degree to which they’ve grown.

Today’s “farm mutuals” work together as Ontario

Mutuals. Each of the 40 companies is still local, owned by

policyholders, and deeply committed to the community. But

together, they’re a financial powerhouse, recognized on the

global stage as extremely stable and strong. And, together,

the companies have built a full range of other insurance

products over the years, including, of course, auto, home,

and commercial, along with specialized niche markets. One

of those is winery.

The mutuals winery coverage addresses all four risks of

running a winery: loss of property, equipment, stock, and

general liability, including liquor liability. It’s a complete

program, geared to the small and mid-size winery, and also

includes:

• product recall expenses up to $50,000

• losses as a result of crime, equipment breakdown,

flood, and sewer backup

• loss of income

• off-premises stock and equipment

• damage or loss caused by pollution or power

fluctuation

Signage, stock spoilage, glass, wine leakage, even

the winery’s art collection, are all covered. As

One of the mutuals right in the heart of Ontario

wine country is Bertie and Clinton headquartered

in Welland, soon to move to Niagara Street, the

heart of Welland. Formed in 1880, Bertie and

Clinton Mutual Insurance employees answer

to a board of directors, who are elected by

policyholders. That means policyholders have a say in

the important decisions of the organization and how the

company is run. For example, in 2015, auto and property

losses were lower than expected and so there was excess

surplus left at the end of the year. Policyholders, through

the board, decided to refund some surplus to policyholders.

So everyone got a nice surprise in the mail: a cheque from

their insurance company.

policyholders, so visiting and getting to know them is part of what

we do.”

In fact, one of the unique things about the mutuals is their loss

control program. It’s a value-added benefit at no extra cost.

“Our claims service is second to none,” comments Siciliano, “but we

would rather help policyholders prevent a claim than suffer a loss.

Our customers feel the same. A winery offers up so many potential

areas of risk that sometimes the owner/manager can’t see it.”

That’s why the mutuals have a team of specially trained staff whose

sole purpose is to go out and visit insured properties to advise

ways to make them safer. They look for hazards like unsafe wiring,

overloaded fuse boxes, slip and fall potential, and much more.

The loss inspection specialist uses a number of high-tech tools,

including heat-sensing cameras, to discover any gaps.

“Far from checking up on you, the loss control specialist offers you

safety and prevention advice to help make life easier for you,” says

Siciliano. “A detailed report with recommendations follows the

inspection. It often becomes the company’s to-do list for the next

few months.”

A tractor is one of the most useful pieces of

equipment on a farm, but did you know it’s

also one of the most dangerous?

A recent article in Orchard and Vine by Carol

Reid of AgSafe reminds us of the staggering number of

fatalities on Canadian farms due to equipment and tractor

incidents. Between 1990 and 2012, there was an average

of over 100 deaths per year on farms in Canada. The main

causes of these deaths? Workers getting rolled over, run

over, or entangled in equipment such as tractor power

take-offs (PTOs).

Since 2009, in B.C. there have been 12 machinery-related

fatalities in agriculture. That represents 12 workers who

didn’t come home to their families at the end of the day.

The good news is there’s a solution, and it’s not

complicated. You can prevent injuries and save lives by

simply using your tractor’s roll-over protective structure

(ROPS) and wearing your seatbelt. Unfortunately, there

are still many farmers who operate their tractors without

putting up the ROPS. Take a trip through the Okanagan

Valley on any given day and you’ll likely see tractors on the

road without ROPS. If those tractors were to get too close

to the edge of the road, they could overturn into a ditch,

with potentially devastating consequences for the operator.

Even for tractors that do have their ROPS up, it’s still

dangerous unless the operator is wearing a seatbelt.

Working safely around PTOs is crucial to avoiding serious

injuries or even fatalities. Ensuring all shields and guards

are in place, and keeping a safe distance from a rotating

PTO could drastically reduce the number of incidents. Also,

before getting off the machine, remember to disengage the

PTO, turn off the tractor and make sure the parking brake

is applied and working properly.

Proper education, training, and supervision is important as

well. If you’re an employer, you’re responsible for making

sure your workers understand the hazards of their work

and have been trained on how to operate equipment and

tractors safely. Also, check in with your workers from time

to time to ensure that they’re following safe operating

procedures.

If you’re the one operating the tractor or working around

equipment, keep these safety tips in mind:

• Use the right piece of equipment for the job.

• Read and make sure you understand the operator’s

manual.

• Check to ensure the tractor is in good working condition

before you operate it.

• Always make sure all PTO shields and guards are in place

and in good condition.

• Ensure the ROPS is up, and always wear your seatbelt.

• Ensure tractor brakes are in good condition, working well

in both directions (forward and reverse), and properly

locked for higher speeds.

• Always drive at a safe speed, and be familiar with

the terrain slopes and conditions. Always review the

conditions of your work area for irregularities, such as

holes or other obstacles.

• Ensure all loads are properly secured, including large

bales, and objects being raised above the head level of the

operator.

• Turn on level ground whenever possible, and avoid soft

shoulders.

• When getting off the machine, disengage the PTO, turn

off the tractor, and ensure the parking brake is on and

operating effectively before you dismount.

• When operating a tractor with a front-end loader, keep

the bucket low when traveling and turning. Never leave

the tractor seat with the bucket raised.

a third-generation legacy began with the need for a simple rubber stamp.

When Warren Schram was unable to find one in London, Ontario in 1945,

one of the results of

experiencing favourable

growing seasons

and bumper grape

production is the accumulation of

inventory which may not align with

consumer demands or purchasing

habits. To further compound matters,

you may find that you are facing

storage capacity issues. Often, the

knee-jerk reaction is to price your

excess inventory at a deep discount

just to make room for new vintages

and varietals. While your cash flow

gets a small boost and your storage

facility gains elbow room, you may

inadvertently create some negative

fallout from adopting this strategy.

A change in consumer psychology

resulting from significantly

discounting your overstock inventory

can have undesirable effects that may

impact future sales and marketing

efforts. Consumers’ impression of

product quality is often linked with

price; significantly lower prices can

imply that the product is somehow

inferior. Further, consumers do

not relish feeling they were rooked

into paying the much higher price

when the wine was first released. As

such, they may boycott any current

or future purchases from your

establishment. While there has been

some injection to the cash flow, it may

not be sufficient to cover the cost of

production relative to the overstock

inventory. Further, it may not even

provide the necessary cash flow to

cover the cost of production for new

vintages. If the ultimate decision is to

significantly reduce the selling price

of the wine because timing dictates a

necessity to do so, then consideration

should be given to changing the

appearance and presentation of

the discounted wine. This can be

accomplished a number of ways such

as removing the discernable branding

and replacing it with a more generic

or casual labelling presentation.

Differentiating the discounted

overstocks from your primary/

premium vintages will minimize

negative consumer repositioning of

your products.

Let’s consider some other marketing

options that will effectively enhance

consumer demand, maintain

respectable profit margins, and

impact cash flows positively:

Offer a graduated discount pricing

option that is based on quantity

purchased. Customers that purchase

four bottles of wine receive a specific

discount, while the purchaser of

six bottles enjoys a slightly higher

discount.

Consumers purchasing full cases of

wine receive a larger discount or free

shipping.Bundle other useable wine

shop products with the purchase of a

specific quantity of wine, similar to a

gift-with-purchase. Feature an event

focused around your overstock wine

by targeting sales of this item to the

attendees.

Plan seasonal marketing opportunities

to sell larger quantities of wine,

such as holidays, Valentine’s Day,

and other calendar dates. Form

alliances with wedding planners or

event co-ordinators by relabelling

planting and growing grapevines follows the same

truth as in life – strong, deep roots make for a

happy and healthy individual.

A.M.A Plastics knows this, and that’s why they

believe strongly in the Ellepots they supply customers.

Ellepots are a sustainable rooting media for plant cuttings

which are widely used in seed propagation and tissue

culture production. There are over 100 trays with 16

diameters to choose from, and the Ellepots can work with

almost any cutting variety.

John Vezina, a former grower and now the A.M.A Plastics

Ellepots and pre-fill manager, says one of the questions he

gets asked most is of the difference between Ellepots and

regular pots.

“The Ellepot is an independent unit – there’s a quarter-

inch of air space around the unit, and that air space helps

promote root growth. Normally there’s only air in the top

or bottom [of a pot], but we have air that can surround

the Ellepot all the way through, which starts producing a

more fibrous root unit,” he says. Ellepot mixes are typically

blends of peat moss, perlite, and coir (depending on what

works best for each client’s needs).

Ellepots by A.M.A are sold across North America and

used in numerous industries including annual plants,

perennials, medicinal products, trees, and wineries.

One of these wineries is Chateau des Charmes, located

in Niagara-on-the-Lake. There, vineyard manager Miguel

Fontalvo has been using Ellepots for grapevine propagation

for the last seven years.

Before Ellepots, Fontalvo would use his own mixture in

another kind of pot, which he says wasn’t as productive.

“When we found out about them, we put our cuttings in

Ellepots and we could transfer them directly – we didn’t

need to handle them as much as before. The mixture they

bring us is really good for the development of the root and

has really good aeration,” says Fontalvo, adding that it’s

now easier to control humidity.

Chateau des Charmes uses sustainable practices to

produce award-winning wines. Ellepots also help them

with grafting plant varieties – this year Fontalvo ordered

16,000 Ellepots alone. He says the customer service paired

with a dependable product is what keeps him using

Ellepots in the vineyards.

“I like the routine, and we have a good relationship. I put

in my order, and the minimum of his delivery will be

between four and five days. He’s always reliable for what

I need and very organized. [John and his team] have even

been here to see what we’ve been doing, it’s very good to

work with them,” says Fontalvo.

One of A.M.A Plastics’ promises is that they will work with

each grower to find out what exactly they’re doing and

customize the best soil to suit that.

“Because we cover such a large potential area for an Ellepot

to be used, it’s really important we find out what they’re

growing and what their prior practices have been. I’ve been

a grower before, and I use all my growing experience as a

technical skill to help [customers] use them properly,” says

Vezina.

any wine, whether

vintage or varietal,

can be compromised

by hydrogen sulfide.

Hydrogen sulfide (H2S) is formed

naturally by yeast during stressful

winemaking conditions. H2S

contamination occurs naturally as

a byproduct of conventional yeast

fermentation. These chemicals

impart strong sulfurous odours to

the wine, including notes of “rotten

eggs, garlic, and burnt rubber”. Even

at levels that can’t be detected by

the human nose, H2S will cause the

wine to underperform. Traditionally,

winemakers have had to expand

significant energy, time, and

resources in remediation efforts

such as aeration or the addition of

copper – both of which can negatively

impact wine quality – but, in extreme

circumstances, there is no choice

but to discard wine that is beyond

remediation.

Rather than wasting valuable

resources on remediation,

Renaissance Yeast is taking an

approach to using a H2S-preventing

yeast to eliminate the formation of

H2S altogether. Researchers at the

University of California, led by Dr.

Linda Bisson, isolated a yeast strain

that was naturally unable to produce

hydrogen sulfide from a winery in

Emilia-Romagna, Italy. In finding the

strain, they screened their (UCD’s)

entire strain collection and found this

one to be unable to produce H2S and

also able to ferment wine like typical

wine strains. In 2013, Renaissance

Yeast signed an exclusive license

for the technology and became the

exclusive developer of the patented

H2S-preventing technology that

is the result of a natural trait in

yeast that increases sulfur and

nitrogen utilization efficiency during

fermentation, thereby preventing H2S

formation. By breeding this unique,

naturally isolated yeast strain to a

variety of other strains, Renaissance

Yeast developed a range of proprietary

H2S-preventing strains that,

collectively, is ideal for use in a wide

variety of wine styles.

“As it is well-established that the

main source of H2S occurs during

yeast fermentation, it is advantageous

to address the issue at the point in

the winemaking process and not

after the reactive chemical has

had a chance to affect the quality

of the wine. Removing H2S after

it has already formed is not ideal

since it can further react to form

other defect-causing volatile sulfur

compounds, such as mercaptains and

disulfides. Essentially, we advocate

that prevention of this fault is better

than the remediation after the quality

of your wine has been compromised,”

says John Husnik of Renaissance

Yeast.

In a market increasingly dominated

by large retailers that demand just-

in-time production strategies; where

large blends of wines are bottled over

many months; and where climatic

changes are causing increases in

pH and reduction of acidity, the

danger of accelerated wine ageing,

with the associated loss of aromas

and freshness, is becoming a major

concern.

how does preMature ageing in wine oCCur

In non-enzymatic oxidation, oxygen

does not react directly. Rather, it is

through a redox reaction catalyzed

by transition metals (Cu+ and Fe2+)

that oxygen is converted into a highly

reactive radical, capable of oxidizing

a number of organic compounds. The

oxidation of phenolic compounds in

white wines can cause premature

ageing, browning or pinking, leading

to wine deterioration and loss of

quality.

In white wines, varietal aromas

and fresh fruit aromas are lost,

giving way to heavy notes of honey

and beeswax. The loss of aromatic

intensity is also accompanied by

browning and the development

of bitterness. With red wines,

premature ageing is characterized

by development of prune and

stewed fruit flavours together with

a flattened palate and an increase of

brown/orange hues.

In sum, premature ageing makes all

wines similar, with loss of varietal

identity and terroir.

For this reason, adopting strategies

that block these systems is an

effective way to improve wine

ageability and shelf life. These

strategies include:

• Reducing the content of catechins

(precursors to oxidation)

• Removing metals (catalyzers of

oxidation)

• Controlling redox potential

(decreasing the risk of oxidation)

• Controlling oxidation

Enartis has developed a new program

dedicated to the extension of a

wine’s shelf life. This program helps

winemakers preserve freshness when

wines are stored for a prolonged

period of time. The Shelf Life

Improvement (SLI) program includes

several products that can be used

throughout the winemaking process

and during storage.

Enartis Stab SLI (yeast derivatives,

PVPP and ellagic tannins). By

controlling and maintaining a

low redox potential, it protects

wine from oxidation and prevents

degradation of aromas during long-

term storage. While in suspension,

yeast derivatives and ellagic tannins

eliminate active oxygen and

acetaldehyde. These products act

in synergy against highly-reactive

superoxide ions formed in wine.

Enartis Tan SLI: (oak tannin Quercus

alba). By utilizing a low-production

process temperature, these tannins

are protected against oxidation.

In contrast to other oak tannins

exposed to high temperatures,

Enartis Tan SLI does not increase the

redox potential of wine, but rather

tends to decrease it slightly, and

maintains it over time.

Enartis Tan SLI maintains all the

other properties of oak tannins,

such as the chelation of metals

(copper and iron) and the capture

of sulfur components responsible

for reductive off-aromas. However,

owing to its impact on the redox

potential of wine, it is more efficient

at maintaining aromatic freshness

and improvement of shelf life.

and ageing of the staves from which

that there are no herbaceous or

The AQUA Wetland System’

“A constructed wetland for treatment of high strength winery waste water” Some notable

The AQUA Wetland System or AWS was approved in 2012 by the Region of Niagara where the flow rates are less than 10,000 L/day. Approval is for pre treatment of high strength winery wash water prior to discharge into a Class 4 septic system. In Ontario properties on which the daily sewage flows exceeds 10,000 L/day must receive approval through the Ministry of Environment and Climate Change. The AWS has also received approvals through this ministry for use at wineries.

In 2013, the harvest at Toulouse

Vineyards was a good one. We

were about 20-per cent over our

normal yield of two and a half to

three tons per acre. Coupled with that,

we were short on barrels and storage.

Being cheap and desperate for storage,

we purchased six Flextank Apollo

‘eggs’ to help store our 2013 vintage

of pinot noir until we could free up

our 2012 barrels. That gave us a total

of 1,380 gallons of storage for the six

‘eggs’ at a cost-effective price. We

were surprised how easy they were to

work with and handle.

Up to this point in processing and

settling wines, we mainly used our

Transtore 550-gallon stainless tanks.

In many cases, they were too large

for small lots. We also wanted to try

aging in the ‘egg’ with tank staves.

During the 2014 harvest, we used

our six eggs to settle fresh-pressed

wines and again to store small lots

prior to bottling our 2013 vintage.

Fermentation use was discussed

and we decided to try two egg

fermentations with 100-per cent

destemmed pinot noir fruit. We found

the finished wine to have great colour,

fruit, aromatics, and tannin structure.

We were very pleased with the results.

Being deep thinkers and tinkerers,

we decided to purchase 12 more

eggs for the 2015 harvest. During the

harvest, we did several traditional

fermentations, some with 50-per cent

whole cluster, some with 100-per

cent destemmed fruit, and some with

carbonic macerations.

For the carbonic macerations, we

filled the eggs approximately two-

thirds full with 100-per cent whole

cluster fruit, and purged all the air out

of the egg with CO2. We then parked

the egg for around 14 days until the

fermentation was near completion.

The ‘egg’ was then pressed off and

returned to another ‘egg’ to allow the

lot to finish fermentation and settle

before going to barrel. The resulting

wine had great aromatics and was

nothing like anything we had tasted

before. Our experiment worked great

and was very educational.

In our traditional egg fermentations,

the results were also very good

and closer to normal fermentation

expectations, but with increased

colour, fruit, and structure. These

fermentations were mixed twice a day

during the fermentation by punching

the caps down. The factory does not

recommend spinning the egg.

With the Flextank lugs and lifting

system, the eggs are a breeze to

empty. We used our barrel turning

bars as levers by welding three-

quarters of an inch square pegs onto

the bars which fit into the female

three-quarter inch square hole on the

lifting lugs. (See picture.)

I would recommend purchasing the

eggs with the lifting lugs, pallet,

sample valve, and the two one-and-

a-half-inch valves and flanges on the

tank. The thermometer is a nice extra

too, but we ended up not using it for

harvest. We plan to do many more

egg fermented wines and carbonic

macerations. The goal is to do at

least half of our total next year

fermented in the eggs, and we will

continue to use the eggs to settle

small lots and during filtration and

bottling.

not in use. We stack the eggs two

high on four-by-eight-foot sheets

of plywood after removing the lids

from the tanks. This way, we can

conveniently stack four eggs in the

space of two.

On an aesthetic level, when we

give tours of our winery facility,

these ‘eggs’ are a topic of discussion

amongst our visitors. The winery’s

mascot is a Toulouse Goose. How

fitting to have our wines fermented

in these amazing goose eggs.

Vern was born and raised in

Oakland, and worked as an Oakland

fire captain for 27 years. When he

to move to the country and

live off the land. He found

an affordable piece of bare

land in Anderson Valley.

Although his friends told

him he was moving to the

boonies, he built a barn

and started planting his

vineyard. He planned on

being a farmer, but in 2002

there were heavy crop loads

for all and he couldn’t sell

his fruit. Refusing to waste

his fruit, he started making

his first pinot noir. Vern

wears many hats here at

a wine unless it’s something

he himself will enjoy

thomas Oppenlaender, operations manager

for Huebel Grapes, believes that the secret to

success in growing grapes is not growing more

grapes, but growing better grapes.

Established in 1984 with 40 acres in the heart of Niagara’s

grape-growing region, Huebel Grapes Estates has grown

into a company that produces several varieties from 250

acres of vineyards, while providing custom services for an

additional 400 acres.

Oppenlaender is passionate about the importance of

producing high-quality grapes and wines in Niagara.

“Quality is what keeps you in the game – nothing else

will matter,” he says. “As more and more grapes are

getting planted, your advantage will be if you have quality

grapes.”

Referring to Huebel’s extensive custom operation,

Oppenlaender says, “We do quite a bit of custom work

and offer turnkey farming, where we do everything

from planting to tying to harvesting. We don’t produce

necessarily for quantity only – we also produce for quality.

We farm their farms just like we treat our own.”

Huebel Grapes Estates works closely with winemakers to

meet the demand for grapes with specific characteristics

by paying particular attention to micro-nutrient

inputs and the use of various crop protection products.

Oppenlaender explains that to achieve specific results,

“We may have to put some InCa in here, which is supplied

to us by Engage Agro”. The company has had notable

success in trials with InCa.

“We have used InCa in conjunction with fungicides to

harden off the skin, and we’ve seen an improvement in

quality not only in wine grapes, but also in table grapes,

says Oppenlaender, noting that the added benefit of

greater consistency in ripening, “We could go in two or

three days earlier [to harvest] in the InCa-treated grapes

– you’re picking through once instead of picking through

twice, and that’s another good cost savings when you’re

picking table grapes. We like InCa for that reason and for

the added benefit of improved sugar.”

Oppenlaender stresses the importance of protecting

young leaves from downy mildew, explaining that “late

in the season, young leaves are your workforce. We use

Phostrol to keep things clean and make sure we get all the

sugar we can possibly get and the physical maturity of the

grapes.” He recalls one particularly wet season in which a

high-percentage young leaves were infected - in his words,

“it was ugly”. Two applications of Phostrol cleared up the

infection.

“When you seem to lose the battle with downy, you can

come in with Phostrol and take care of business. We

applied it only twice which makes it very reasonable.”

Huebel Grapes Estates continues to explore new chemistry

and solutions to boost grape quality. “We did some

work with Timorex Gold last year, and understanding

what Timorex can do, I think is pretty exciting,” says

Oppenlaender. “If I can go in with Timorex instead of some

other products to get powdery and possibly botrytis at the

same time, then it’s a very versatile product.”

Oppenlaender and his brother Matthias have recently

welcomed Matthias’s son Aaron to the management

team. A recent grad of the viticulture program at Niagara

College, Aaron has taken a hands-on approach to helping

produce high-quality grapes. They are optimistic about the

future of the Niagara grape industry and Huebel Grapes

Estates.

Oppenlaender points out, “I’d like to see our industry come

into its own. I think as we are producing better grapes and

the winemakers are producing better wines, we are seeing

consumers react positively to that because they are getting

a good product and good value.”

Oppenlaender anticipates an even greater demand for

Ontario wines and looks forward to meeting that demand

with high-quality Niagara-grown grapes. o

tivano fungicide could bring you the answer to

the question of yield or quality? Why not both?

The quality effect could be a key advantage

of Tivano fungicide developed by AEF Global.

Tivano fungicide is already registered in grapes, and

could prove to be a powerful tool to allow a higher crop

load while maintaining your quality parameters like

Brix, tannins, and anthocyanins. A tank mix of two

other of the company’s products, Buran and Sirocco, has

shown excellent results against powdery mildew in both

conventional and organic vineyards.

A Tivano application could allow you to support a higher

crop load and to obtain higher yield and quality in your

field.

Tivano is an organic acid-based biofungicide/biobactericide

derived from a controlled fermentation process. Recent

results in grapes show that along with fungicidal activity,

Tivano also has positive effects on quality parameters.

Tests conducted in 2015 in Quebec and Ontario pinot

noir vineyards have shown both increased yield and Brix

according to the age of vines and number of clusters

harvested.

In the Niagara region, the trial compared the benefit of

including Tivano in a full conventional crop protection

and nutrient program. This trial compared two different

thinning procedures (one cluster per shoot versus two

clusters per shoot). The Tivano-treated vines maintained

the Brix level with two clusters per shoot at the same

level as the one cluster per shoot in the control, while the

non-Tivano treatment two clusters program showed an

eight to 10 per cent drop in Brix. In a Quebec trial under an

organic crop protection program, we were able to harvest

a higher number of clusters in the Tivano plots because of

an unexpected effect on black rot. The Brix level and other

quality parameters (tannin, quercetin glycosides, and

anthocyans) were maintained in Tivano plots although a

higher number of clusters were harvested.

buran-siroCCo

Buran and Sirocco are two fungicides that can be tank

mixed to prevent powdery mildew in vineyards. The

active ingredient in Buran is garlic. Sirocco is a formulated

potassium bicarbonate pesticide. Used in combination, the

synergy between the products increases the effectiveness

over that of the two products used separately.

The combination provided control of powdery mildew on

leaves. An independent trial conducted in 2015 in Niagara

region on chardonnay has shown that the efficiency

against the Botrytis cinerea is comparable to a standard

chemical fungicide commonly used. Although the product

is not registered for Botrytis cinerea at the moment,

these results show the potential of this combination in an

integrated pest management or organic production system.

a Garde is a division of SML Stainless Steel Group

that has been proudly serving its clientele since

1966. Its areas of expertise include restaurants,

pharmaceutical, transportation, and industrial

La Garde’s fermentation tanks were designed by

winemakers, enologists, and engineers. Our tanks

are made from the finest 304 stainless-steel Grade 11,

which is 60-per cent thicker than gage 14 used by other

manufacturers.

La Garde’s rectangular shape fermenters are designed

to maximize the contact ratio must-to-juice through a

thinner cap to enhance the efficiency of the fermentation

process. The contact surface could be increased by up to 50

per cent when compared to a cylinder with the same floor

width. Therefore, you get more colour, more tannin, and

more flavours from your grapes with a cap of must that is

thinner and much easier to punch down. It facilitates the

pump-overs and reduces the cooling process. It also helps

the winemakers to save on time and helps them to be as

gentle and as minimal as possible with their interventions.

We produce all tanks “sur mesure”, meaning that they

are tailor-made to use every single inches of winery to

produce your wine. We can adapt the height, the width,

and the depth of the tank to reach the exact volume of

wine that you want to produce. Our rectangular tanks

could produce more than 30 per cent more volume of wine

than a cylinder tank for the same wall width that you want

to occupy. Actually, given the production volume that you

will need, we could reduce your winery floor plan and

therefore reduce your construction cost.

Our tanks are environmentally responsible. A big

advantage of working with La Garde’s tanks is the water

savings (up to 90-per cent less water) and the simplicity of

cleaning them. The reason why they are so easy to clean

is due to the orbital polish-finish that we proudly apply

to each of them. The exterior walls have a number four

polished-finish and the interior walls have a 2B polished-

finish with polished welds. The welds are so polished that

they are seamless. Although the tanks have a rectangular

shape, the inside is rounded so there is no sharp corner.

The other eco-friendly advantage is our cooling jacket

system. The spacing in the jackets is larger than with

any other tanks. It allows the glycol to flow within the

jackets with less head loss and a more rapid flow. The

heat exchange transfer is therefore more efficient and it

requires less energy to cool the wine. Aligning them side

by side also creates an insulation wall between them

which helps keep them at the right temperature.

La Garde’s tanks fabrication has been preceded by seismic

design objectives to resist to an earthquake of level 6

on the Richter scale. For instance, the Rodney Strong

6000-gallons tanks were designed following a finite

element analysis. Structural braces were welded around

the tank and reinforced corners support the base of the

tank.

Working as a safety professional for the

past 25 years has not only allowed

me to see changing legislation across

jurisdictions, but it has also allowed me

to witness a shift in culture. Where my children used to

groan when I reminded them to put their helmets on – no

lid, no wheels – it quickly became second nature for them,

and today as working young adults, they naturally look

for the equipment to protect themselves at work. When

they observe a roofer without a fall protection system,

they notice and they point it out. The next step is to have

them step in and say something, but that takes a lot more

confidence.

When you see someone working in an unsafe manner or

you see them taking shortcuts that could be risky, how

do you feel about speaking up? Do you shake your head

and walk by, hoping that nothing happens, or do you feel

confident to say something to them, and possibly keep

them out of harm’s way?

I’m at the stage in my life where I can no longer ignore

blatant risk that I see people subject themselves and others

too. The difference is that I have learned how to express

my concern so it sounds like I care, because I genuinely

do. If I were to walk by while shaking my head, I couldn’t

live with myself if something happened. I would believe,

and rightly so, that it was my

fault – because I have a voice.

A voice that may prevent a

tragic incident.

In no way am I

suggesting that

we should yell at

people and let them

know that they are

breaking the rules

and that the rules are

there for a reason –

that role is for a new parent. What I am suggesting is that

we need to tell those that are at risk that we care about

them and we don’t want to see them get hurt. We need

to remind them that there are people waiting for them to

come home from work at the end of the day.

In 2015, 122 people in B.C. did not go home from work

– they died on the job. Many of those could have been

prevented – maybe by that one passionate voice who

reminded them that they cared and that no job is so

important that you should risk your safety and ultimately

your life.

alcohol and total extract content with lab-grade accuracy.

Alex 500 measures alcohol with an accuracy of 0.2 per cent

v/v and determines density with an accuracy of 0.001 g/

cm³. With these numbers on their side, winery masters

can be certain that their wine’s taste and quality always

comes through. Best of all, they can handle the entire

measurement procedure themselves, to always be sure

that their taxes are correctly calculated, their winemaking

process is reliably monitored, and undesired deviations in

production are immediately corrected.

This speed is one of many differences that sets Alex

500 apart from the glass hydrometers still commonly

found in smaller wine cellars. In contrast to these, Alex

500 covers the entire wine measuring range, not just

Global Roadway Maintenance (GRM) is a

heavy hitter in the building envelope and

exterior maintenance sector. The company

provides commercial property and landscape

maintenance services to high-profile corporate clients

throughout Western Canada, across 3,400 job sites.

“As a single source provider, our clients don’t have to

deal with multiple vendors to make sure their project’s

aesthetics are maintained,” says Josh Bergsteinsson,

vice-president of business development. “We responded

process2Wine is a vineyard and winery

production management software program,

originating from Ertus Consulting, based out

of Bordeaux, France. The result of winery

consultant Alain Sutre’s need for data from his Canadian

and French clients to track their production from afar,

Process2Wine was commercialized in France in 2010, and

entered the North American market in 2014. Supported by

an office in Penticton, 10 wineries in British Columbia have

now adopted the software.

Process2Wine is a cloud-based management tool that

works in all stages of wine production, from establishing

the vineyard, through harvest, to the bottled and packaged

finished product. Process2Wine tracks every aspect of

viticulture and winemaking; capturing tasks, time spent,

analyses, spray records, additions, inventories, and even

goes as far as tracking tractors by GPS. Excise reports,

vintage reports, and wine lot traceability reports are

generated at the click of a button.

What are the advantages of vineyard and winery

production management software? Many wineries

use Excel to track their data, which results in complex

worksheets that can become corrupted with time

and copying, and are often difficult to decipher when

one winemaker leaves and a new one takes the reins.

Process2Wine avoids the downsides of using Excel to track

complex data. In Process2Wine, the data is recorded in as

much detail as you desire, is centralized, and is searchable.

Your data is backed up on multiple servers so data is never

lost. Multiple user accounts can access the software at

the same time and each user account is configured to the

requirements of their job.

Bench 1775 has been using the software for two years.

General manager Valeria Tait says it has improved

efficiency in the winery.

“We have many small lots, and keeping track of each one,

scheduling lab tests, and tracking blends was confusing

and time-consuming. Now we are on top of each lot. Before

adopting the software, we had pieces of paper everywhere,

but now all our work orders are scheduled and in one place;

analyses, inventories, and wine histories are accessible by

every department, and wine audits are straightforward. I

feel we are ahead of the curve regarding the traceability

regulations that are coming to the industry. We have

everything in place to comply.”

Process2Wine is looking to the future with the second

generation of the software, bringing a simplified user

interface across all platforms: personal computers, tablets,

and phones. In its newest iteration, a basic program

for smaller vineyards and wineries called Start, with a

more complete version called Start+ will be available for

Have you ever run short of labels for your vintage or need

a label for a new blend? Labels represent your brand to the

consumer and you want consistency and quality on every

bottle. The MacDay Label Systems offers a new way to

produce your labels.

Gemeny Winery and Vineyards of Maryland recently

took advantage of MacDay’s label-printing system when

they needed 3,200 labels of six different varieties to be

bottled now and an unknown quantity for another run.

We compared the costs of production and decided to fully

preprint labels for their larger production runs, and generic

labels for their smaller, yet-to-be-produced runs. The

generic label has all of the graphics the fully preprinted

label has except for the variable information of the wine

variety and vintage. The labels come in rolls and are fed

into the MacDay thermal-transfer printer that Gemeny

had purchased in 2012. MacDay’s custom software allows

Gemeny to accurately place the variable information on

the label. They can even use the same fonts as used on

the press-printed labels. Labels print one at a time and are

ready to be applied as soon as they are printed. It is hard to

tell the difference between the press-printed labels and the

thermal-transfer printed labels. This is the result Gemeny

MacDay Label Systems has been offering a solution

for high-quality variable printing for the past 15 years

When Eckhard

Kaesekamp is asked

what differentiates

his grapevines from

his competitors, he doesn’t hesitate.

“We test each and every vine for

viruses. It’s that simple. We don’t

believe testing a small percentage

of vines is good enough to ensure a

clean, high-quality vine,” Kaesekamp

says.

As he prepares to enter his third

decade selling grapevines in Canada

and the United States, Eckhard

Kaesekamp’s commitment to growing

virus-free vines has become even

more of a priority than it was when

he chose to leave Germany and come

to Canada to grow grapevines in

1987. He’s seen how the winemaking

industry has grown and he knows the

enormous investments that are put

into winemaking.

“I see the stakes at risk in this

industry. I understand what a high-

quality grapevine means to growers

and winemakers whose livelihoods

are on the line with the health of their

grape crop,” he says, adding that the

best way to give growers confidence is

by providing individual plant testing.

cost – something he’s been able to pull

Swiharts are continuing a long-time tradition.

Their goal since 1972 is to market a few

quality products. Select products include farm

equipment with their main focus on sprayers.

Their latest venture finds Swiharts teaming up with S3

Blowers from Swift Current, Saskatchewan to produce a

powerful new line of mist sprayers.

The Agri Mist Innovations line of mist sprayers features

the S3 fan, giving the air velocity to effectively spray a

wide range of applications. This powerful line of mist

sprayers are mainly low-volume, but capable of saturation

spraying as well. With low-volume spraying, the overall

volume and chemical usage can be considerably reduced

compared to conventional spraying. The high wind

velocity, along with the swirling action and cubic feet of

air volume, completely engulfs the canopy with a fine

mist.

Applications will cover a wide range from tall trees,

orchards, produce, vineyards, bushes, vining crops,

cattle, etc. The unique tank design allows for a lower

centre of gravity, added stability, and a compact design.

Lightweight and low horsepower requirement, combined

with high performance will set the Agri Mist Innovation

sprayer apart from the competition.

With the Agri Mist Innovations line of sprayers built in

Canada, Swiharts are looking forward to marketing in

Canada with reasonable prices.

While ozone has been used for a long time in the

disinfecting of produce, grapes, wineries, etc., various

companies are examining the possibilities of use in the

field. Swiharts will be experimenting with this ozone

concept as they move forward with S3 blowers and the

new Agri Mist Innovations line of sprayers.
