Navy Bean Puree (Paste)

Introduction Canadian Prairie Garden Purees (CPG) has introduced game changing, superior quality aseptic pulse (chickpea, navy bean, lentils, black bean) puree products that are entirely new to the marketplace. The innovation in equipment design, process control design & product development has resulted in high quality, high viscosity and very functional navy bean paste for use in the dips, as a meat additive and in the baking industry. Note: By May 2016 CPG will be producing navy bean puree on their fully aseptic system – the product will no longer be in the refrigerated format that was used for small-scale sales initiatives of the pulse purees. Innovation in product development, high viscosity processing & aseptic packaging

• Innovative, proprietary aseptic cooking process and packaging system has created truly unique value-added pulse crop products that facilitates many new retail food products for both food service customers and food ingredient manufacturers globally:

o Rapid cooking time - system fully cooks the puree in under 9 seconds (17 second hold time) followed by a very rapid cool down that delivers extraordinary product quality, creates fresh vibrantly colored purees with superior flavors and aromas and with enhanced nutrient retention – the all-natural purees have no additives, preservatives or dyes

o To make the navy bean paste – CPG mixes dry, freshly milled navy beans with water at the desired ratio to produce a slurry that is pumped through the cooker and then flash cooled before being sealed into an aseptic pouch with an aseptic filling head. The samples of the product are refrigerated because our R&D cooker is not FDA validated though it meets aseptic standards – customers purchasing the product after May 2016 will be buying fully aseptic navy bean puree produced on our CFIA and FDA Registered fully commercial, low acid aseptic process line

o Aseptic bag-in-box package format locks in the nutritional quality, freshness, and taste - shelf stable at room temperature for up to 2 years – reducing energy costs in storage and transport

o Maximum flexibility in package size: 10 kg (22 lb) pouch, 240 kg (528 lb) drums, 1300 kg (2860 lb) o Compact, environmentally friendly process plant design uses less energy, less water, less packaging

(recyclable), less chemicals, total waste stream less than 6% overall including peels on vegetables

When CPG’s highly innovative navy bean paste is used as an additive in the meat industry advantages include:

o Significantly reduced cost of the end product and increased sales margins o Can replace bread crumbs and other binders (with 10-20% navy bean) binds meat together very well o Allows a gluten-free label – replaces bread crumbs (cleaner label opportunity) o Navy bean paste improves moistness and mouth feel by holding in the meat juices o Can allow for a cleaner label opportunity as the navy bean replaces several other additives o Allows a reduction in the amount of salt required in the end product also allows a reduction of the spice

packets required due to the enhanced flavor of the bean paste resulting in added cost savings o Opportunity to use the product in vegetable-based products such as vegetable based burgers o Added protein - the navy bean has up to 22% protein by volume o Additional healthy fibre
